The competition was close but there could only be one victor. Monica Wagner took the title and the $1,000 prize with this well-balanced, and delicious meal. Golden BBQ Salmon with Crispy Corn Salad and Quinoa Serves 4 Prep: 10 minutes // Cook: 30 minutes Calories: 480; Fat: 29g; Saturated Fat: 3.5g; Carbohydrate: 27g; Fiber: 4g; Protein: 28g; Cholesterol: 60mg; Sodium: 340mg

½ cup quinoa 1 cup Wildtree Chicken Bouillon Soup Base, prepared according to package directions 1 tablespoon Wildtree Red Bell Pepper & Garlic Blend 4 (4 ounce) salmon fillets, skin on, scales and pin bones removed 4 tablespoons Wildtree Roasted Garlic Grapeseed Oil, divided 1 cup corn, frozen 8 asparagus spears, thin, chopped 1 red bell pepper 1 /3 cup Wildtree Golden BBQ Sauce, room temperature 1 Turn oven broiler on high. 2 In a small sauce pot, bring quinoa, Chicken Bouillon Soup Base, and Red Bell Pepper & Garlic Blend to a boil on high heat. Cover the pot and reduce to medium-low heat to maintain a simmer. Simmer for 15 minutes. 4 WILDTREE

3 Stir the quinoa and cover the pot for another 5 minutes off the heat. 4 Roast red bell pepper over an open flame until all sides are charred. Peel char off the pepper and cut into a small dice. 5 Heat 2 tablespoons Roasted Garlic Grapeseed Oil in a 10 inch skillet. Add corn to the pan and cook, stirring occasionally, until browned and crispy; about 5 minutes. Add asparagus pieces and roasted red bell pepper pieces and cook for 3 more minutes. Keep corn salad warm. 6 Grease a cold cast iron pan with 2 tablespoons Roasted Garlic Grapeseed Oil. Place salmon skin-side down in the pan. Turn the heat on high and cook the salmon on one side until the skin is crispy and dark brown; about 5 minutes. 7 Brush the salmon with Golden BBQ Sauce and place under the broiler for 2 minutes. Pull out from the broiler and brush again with the Golden BBQ Sauce. Broil for another 2 minutes. 8 Serve salmon on top of quinoa and top with the crispy corn and any leftover Golden BBQ Sauce.

Chicken Fajita with Mexican Street Corn

1 pound chicken breasts 3 teaspoons Wildtree Roasted Garlic Grapeseed Oil, divided 2 ½ teaspoons Wildtree Fajita Seasoning, divided

3 ears corn, husks removed 2 tablespoons mayonnaise, light 2 tablespoons sour cream, light ¼ cup crumbled feta 8 (6 inch) corn tortillas (grilled if desired)

Preheat oven to 350°F. Cut chicken into large cubes. Toss with 2 teaspoons Roasted Garlic Grapeseed Oil and 1 ½ teaspoons Fajita Seasoning. Transfer to a baking dish and cover with foil. Bake for about 1 hour or until chicken is tender and shreds easily. Meanwhile heat a grill or grill pan over medium heat. Rub ears of corn with remaining 1 teaspoon Roasted Garlic Grapeseed Oil. Grill corn on all sides until many of the kernels have browned. Once corn is cool enough to handle, cut the kernels from the cob. Add corn to a bowl along with mayonnaise, sour cream, remaining 1 teaspoon Fajita Seasoning, and feta. Serve shredded fajita chicken on corn tortillas with Mexican street corn. Can be served with additional toppings such as avocado, scallions, cilantro, or salsa.

2 cups water 1 cup wild rice ½ cup Wildtree Cranberry Poppy Seed Vinaigrette, divided 2 sweet potatoes, peeled and cubed 2 tablespoons Wildtree Roasted Garlic Grapeseed Oil ½ teaspoon Wildtree Rancher Steak Rub 6 cups arugula ½ cup pistachios In a saucepan, bring water to a boil. Add rice, reduce heat to a simmer, cover, and cook for about 45 minutes or until rice is tender and liquid is absorbed. Transfer to a bowl and toss with 2 tablespoons of Cranberry Poppy Seed Vinaigrette; refrigerate until chilled. Meanwhile, preheat the oven to 350°F. Toss sweet potato with Roasted Garlic Grapeseed Oil and Rancher Steak Rub. Spread in a single layer on a baking sheet. Bake for 25-30 minutes, stirring after 15 minutes, or until tender. Transfer to a large mixing bowl and cool slightly. Add the cooled rice, arugula, and pistachios. Toss with remaining Cranberry Poppy Seed Vinaigrette.

1 cup buckwheat flour ½ cup oats 1 teaspoon baking powder 1 teaspoon baking soda 1 tablespoon Wildtree Hearty Oatmeal Mix-In: Sugar & Spice

In a large saucepan, toast the millet over medium heat for 4-5 minutes or until it turns golden brown. Add the water and bring to a boil over high heat. Once boiling, cover, reduce heat to a simmer, and cook for about 15 minutes. Remove from heat but leave covered for 10 minutes more. Transfer to a large mixing bowl to cool. Once millet has cooled add the remaining ingredients and toss to combine. Can be served on pita with hummus and lettuce.

In a mixing bowl combine buckwheat flour, oats, baking powder, baking soda, and Hearty Oatmeal Mix-In: Sugar & Spice. In a second bowl whisk together the milk, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and whisk until combined. Heat a nonstick skillet or griddle over medium heat. Grease the pan and scoop ¼ cup of the batter for each pancake. Cook for about 2 minutes on each side. Serve with fresh fruit and syrup if desired.
