4In a large skillet, combine the coconut milk and Thai Green Curry; bring to a gentle boil over medium heat. 4Add the mussels, cover, and cook until the mussels open. 4Serve with lime juice and cilantro.


ROAST PORK WITH VEGETABLES

Tarragon Roasted Squash with Fresh Apples Serves 4 2/3

cup honey cup Wildtree Tarragon Simmering Sauce salt and pepper, to taste 2 large winter squash, skins removed, diced large 1 red apple

4Preheat oven to 400°F. Whisk together honey and Tarragon Simmering Sauce. 4In a medium size bowl, dress the squash with ½ the tarragon-honey mixture and season with salt and pepper to taste. Line a sheet pan with aluminum foil and spread squash in an even layer. Place squash into preheated oven and roast for 45 minutes - 1 hour; until fork tender. 4While the squash is roasting, cut the apple into ¼ inch half-moon slices. Store the apple slices in a container filled with water to prevent browning. 4When the squash is tender, remove from the oven and return to the original bowl. 4Drain the water from the apples and add to the bowl. Add the remaining tarragon-honey mixture and mix with a spoon until coated. 4Serve warm. Apple Cranberry Roast Pork Serves 8 ½ cup apple cider ¼ cup Wildtree Worcestershire Sauce 2 tablespoons Wildtree Garlic Galore Seasoning Blend 3 pound pork loin roast ½ cup Wildtree Apple Cranberry Jam salt and pepper 4In a bowl, combine the apple cider, Worcestershire Sauce, and Garlic Galore Seasoning Blend. Transfer to a large ziptop bag with pork; marinate in the refrigerator at least 30 minutes. 4Preheat oven to 350°F. Remove pork from bag and place in a large baking dish; reserve the marinade. 4Season the roast with salt and pepper. Add about 1 cup of water to the bottom of the pan and cook, uncovered, for 45 minutes. 4In a bowl, combine the reserved marinade with the Apple Cranberry Jam. Pour over the roast and continue cooking another 30-40 minutes or until the center of the roast reaches an internal temperature of 145°F. 4Remove from oven and allow the pork to rest for 10 minutes before serving.
