The Rotar y clubs of Winchester and Frederick County are bringing back An International Af fair of Food & Wine on May 19 at Historic Rosemont Manor. It’s an elegant cocktail event where fine food is paired with fine wines from across the world. Instead of a caterer, this year chefs from local restaurants have “adopted” a country and will be preparing small plates inspired by the nation. The wines will be poured by actual representatives from those countries’ wineries, thanks to local distributor Kysela Pere et Fils, Ltd. Live classical music and a silent auction, featuring chauffered winery tours and beach vacations, round out the evening. The event benefits the Northern Shenandoah Valley Substance Abuse Coalition. SUMMER SIPPERS A look at a few new wines for the summertime

by JENNY BAKER photography by GINGER PERRY, JEFF TAYLOR, SCOTT MASON Imagine this scene: you’re sitting at a bistro in France, doing as the French do and enjoying wine with your lunch. A few tables down you see construction workers doing the same, with glasses of a beautiful pink wine at their place setting. It may cause you to do a double-take — they were drinking rosé. That was what happened when Justin Bogaty and his family visited France a few years ago. The scene inspired the winemaker to create a similar wine — light, refreshing, fruity yet dry — for his winery in Frederick County, James Charles Winery, and Valerie Hill where he serves as winemaker. The JB Winemaker Series Rosé, available at James Charles Winery and Veramar Vineyard, utilizes viognier and chambourcin skins which are macerated into the clear juice from chambourcin grapes, creating the pale pink color. Rosés are not blush wines, like a white zinfadel, where the color is created by combining a red wine and a white wine. Bogaty said that rosé colors are hard to bind, and that it tends to drop out after a couple of years. Using viognier skins produces a darker, more vibrant shade of pink than what you would commonly see with a French rosé. The dryness and fruit-forward palate makes it a perfect summer wine. As for Bogaty’s favorite warm-weather wine, it’s hard for him to choose; it all depends on the moment. “It’s life changing when you have the right wine, the right food, the right atmosphere, and everything just comes together... It just sends chills down your body. It is a life-altering experience. It’s magical.”

JB WINEMAKER SERIES ROSÉ James Charles Winery & Veramar Vineyard If you like your summertime wine fresh, fruity with aromatics of watermelon, strawberry, honey dew, and some cantelope, this rosé is for you. Made with 100% chambourcin grapes, it’s extremely easy to drink — and very dry. Bogaty says it’s as bone dry as they can get it — .06 residual sugar, which he says is almost immeasurable.

JB WINEMAKER SERIES PETIT MANSENG James Charles Winery & Veramar Vineyard Valerie Hill has always had a rosé under the Cameo label, but it has traditionally been sweet. Co-owne r S h aw n Stef fey s a i d that through customer requ ests , each year they have made it drier. Their rosé is intensely fruit forward with a hint of spice and toast. It's supple fruit flavors of sweet black cherry and orange zest make this wine comparable to France’s Loire-Valley’s cabernet franc rosé wines.

Petit manseng is starting to rise in popularity, following a similar trajectory as viognier did a few years ago in Virginia. This is Bogaty’s first try at this wine, which is already is getting the attention of Robert Parker’s “The Wine Advocate.” No official rating is in yet for this dry white wine with notes of pineapple, peach and honey, but stay tuned.

We asked the public for their favorite local dish recommendations — something they’ve enjoyed lately from a locally-owned restaurant that just blew them away. The responses ran the gamut from fine dining to food on a stick, classic dishes to new and inventive. We couldn’t have been more excited to read what readers recommended. Some things we learned: folks here love shrimp and grits. It was the most popular dish of all, which was recommended from a variety of local restaurants. People prefer their beef of the highest quality, and their steak dry-aged. We’ve got several recommendations of the red meat in the results, from burgers to filet mignon. And locally-sourced is important, too. Peruse the culmination of the 20 most recommended dishes, which are presented in no particular order. Get ready to call in a reservation or dial for pick up. 8

This seasonal risotto currently contains monkfish, flounder, swordfish, shrimp, scallops, calamari, mussels, and clams. Cooked together with white wine, and just the right amount of tomato and garlic, this light Northern Italian dish is popular during Lent and all year long, said Executive Chef and owner Franco Stocco. Take a 28-day dry-aged, hormone and antiboitic-free filet mignon from a ranch in Maryland, and let executive chef and owner Will Mason work his magic. Grilled and served alongside broccolini and blue cheese gratin, and topped with an oyster-mushroom demiglace. While Mason changes the presentation of the filet regularly, Barton Chasler of Winchester said it’s “always cooked perfectly, seasoned perfectly,” every time you go. Executive chef and owner Cheryl Ash uses an artisan blend of four different grits and four cheeses C she then “slow cooks it and beats it like mash potatoes to for the base of this southern favorite, which make them nice and fluffy,” she said. Add in locally sourced pork, red eye gravy made with chicory coffee from New Orleans, and sauces from the shrimp and sausage, “it’s a party in your mouth,” as Judy Whitacre of Capon Bridge, WV said. This is not your average burger. Executive chef Steven Ferrell said it’s a blend of three types of houseground beef, most of which is Wagyu: chuck, short rib, and another steak they feature on the menu like sirloin. The bun is a house-made potato roll, served with five house-made sauces including a mango steak sauce and truffle aioli. Paired with Lyonnaise potato wedges cooked with herbs and confit shallots, this meal is “worth the drive from D.C.,” according to reader Brent Inscoe. Executive chef and owner Ed Matthews sources the beef from Mar tin’s Farms in The Plains, where “Bill Martin raises the finest beef I have ever had,” he said. Though Matthews changes the preparation of the short ribs often — sometimes for a risotto or a ravioli — the current interpretation features it served with trofie pasta, spinach, pesto, tomatoes, cream, and Pecorino Romano. According to Tiny Luciano, an owner of the family business, Pad Thai “is like McDonald’s or pizza” and available on every street corner in Thailand. While that may be the case, Access readers can’t get enough of their version of the national dish of Thailand. Made with shrimp, chicken, pork, or beef, this classic noodle dish contains bean sprouts, scallions, crushed peanuts, red tofu, tamarind sauce, which you can then make as spicy as you’d like. People are picky about their crabcakes. The extra lumpy crab cakes at Region’s 117 “are delicious!” said Brianna Marsten of Winchester. “Lump crab meat paired with all the right flavors. I love how they don’t use much filler either, just tons of crab.” Executive chef Scott Bilstad said they use colossal lump meat from the Blue Swimming Crab out of Little River in Rappahannock, keep the fillers to a minimum, and add in fresh herbs. “It’s a ver y simple dish,” said executive chef and owner Frederick Boukaïa of the braised lamb over white beans. Cooking styles in the south of France feature similar simple dishes, prepared with herbes de Provence, rosemary and thyme. These fresh, dry-packed scallops go from a seafood market in Maryland to the restaurant in only 2 hours. Kept on ice until the moment they hit the pan, executive chef Dan Kalber sears the delicate muscles in unsalted butter and olive oil. The current presentation features the scallops with ginger and scallion Jasmine rice, baby bok choy, carrots and coconut curry sauce. As Mike Wilt of Winchester said, “The aged beef adds a depth of flavor to the steak that is much richer, more complex than a typical steak. The steak is more tender, too. For Caleb Rittenour, who owns the restaurant with his father Ben, it’s all about the ingredients. Developing their wood-fired pizza crust was a pursuit in passion. “We changed it up a lot at first to see what we liked… Crispness, the chew and the bite. We did a lot of research to get what we have today.” The temperature of the woodfired oven reacts with the dough and creates a “little smokiness in the crust,” resulting in a unique pizza. This is not just any roasted chicken. Peruvian-style chicken is a dish you won’t forget: crispy, spicy skin on the outside, tender soft meat inside. Owner Leivi Mazariegos said they use fresh chickens, which are marinated one full day before putting them in the roaster. The chickens rotate over charcoal for two hours before customers get to enjoy it with sides like rice, corn salsa, or yucca. “The beef comes from Crabill’s in Toms Brook, so it’s ver y local,” said kitchen manager Hunter Blackford. We’ll let Winchester resident Darien Rose Morgan’s recommendation speak for itself: “The extra thick handmade tortilla is both crunchy and soft in the center, like a tamale. Dinner last night: Grilled local sausage, roasted fennel with minted yogurt sauce, and green couscous from one of my favorite cookbooks, “Plenty” by the amazing chef Yotam Ottolenghi. Most unusual thing you've eaten: Growing up next to a butcher in rural Pennsylvania, we often ate all sorts of offal that other customers didn’t want — liver, kidneys, sweetbreads, etc. Of everything, my mother’s stuffed beef heart stands out in my memory as the most unusual. Dream talent? To play an instrument, sing, have my own band. . . basically channel Bonnie Rait. First job? I was a nanny to four unruly kids. Running a retail food establishment is akin to running a giant household, so it prepared me well! Favorite wine region: Right now, Italy, particularly the Piedmont. But there is also a lot of exciting wine becoming more available out of Central and Eastern Europe.
