LOCALLY LOVED PIZZA Why we can’t get enough of Biga Pizza. If someone says “pizza” and you ask “cheese or pepperoni?” then you clearly haven’t been to Biga Pizza. Sure, you can grab a classic cheese pizza from Biga (and it will be delicious, no doubt), but you can also bite into a slice fresh out of the brick oven, covered in house-made fennel marmalade, locally sourced bacon, melted gouda—should we keep going? You get the point. The owner, Bob Marshall, has been living in Missoula since 1990 and running Biga for over a decade now. It all started when, as Bob told us, “The stars aligned at just the right moment 15 years ago, when we had a 1-year-old and were expecting our second child. There was an existing pizzeria for sale, and I recognized the potential.” He jokingly added, “My wife and I had, up until then, been working for other people and decided, ‘Why not open a restaurant with life already super busy?’” Life would only get busier as Biga gained recognition and, consequently, a devoted following of pizza lovers. The difference is in the ingredients, the creativity and the care. “Local ingredients are harvested at their prime and won’t sit on a truck or at a warehouse for long amounts of time. Plus, purchasing locally infuses revenue into our local economy… When we created (and evolved) our menu, we chose ingredients from the palate of available local goods.” Their menu continues to keep us on our feet, as Biga changes its offerings with each passing season and new local crop. So, if their iconic Flathead Cherry Pizza isn’t on the menu, that’s because the ingredients aren’t in season. And if it is available, then order up, because it’s perhaps one of the most creatively delicious pizzas you’ve ever tried. Bob’s devotion to local ingredients means he serves up some seriously fresh pizza, and 6

SOME REALLY GOOD CHICKEN Savor the perfect chicken sandwich at M-80. Missoula’s food scene grows more diverse (and delicious) with each passing year, and that goes for our community of food trucks, too. A number of these new mobile eateries popped up in 2020, and one that’s gaining traction quickly is M-80 Chicken. M-80 was the product of a few things—community support, COVID-19 hardships and a passion for fried chicken. The owner, Nick Jackson, made Missoula home eight years ago and attended the University of Montana, but it wasn’t until after graduation that he found his love for Southern food. “My band, Newlyweds, went on tour right after college and we ended up spending a lot of time in the South. I fell in love with the food and couldn’t get it out of my head.” After returning home and seeing a shortage of fried chicken, he began experimenting with new recipes himself. In the midst of the COVID-19 pandemic, he turned bad news into a new opportunity and changed the course of his career path. “When COVID hit, I got laid off from my office job and decided to pivot to something I really cared about. I wanted to fill a gap in the Missoula food scene, and be involved with this community that I love so much.” And with that, M-80 was born. Nick is currently living in downtown Missoula with his fiancée, McKenna, their two black cats and a new puppy, and he gets to run his own business and make delicious fried chicken full time. When it comes to their menu, they keep it simple and do it right. “With M-80 Chicken, what you see is what you get. We don’t claim to be the fanciest meal in town, but we serve up some really good chicken that people love. I spend a lot of long hours in that truck making sure everything is up to our standards, and everyone gets quality chicken.” Aside from cooking great food, Nick loves the community aspect of owning a food truck in Missoula. From fellow business owners to repeat customers, Nick told us, “We’ve felt supported from Day One and we hope to pay that back as much as possible.” That sense of local pride is evident as soon as you make it to their order window, where tourists and locals alike are greeted like friends. “We like to get to know our customers, and we want them to feel like they know us. When you come to M-80, you know you’re going to see me, have a good time hanging out in line and walk away with some really good chicken.” M-80 can usually be spotted outside of KettleHouse Brewing near Missoula’s Hip Strip, and their signature “hot sando” pairs perfectly with a cold pint. And just as much as you’ll enjoy the chicken, you’ll love supporting these friendly, talented and resilient Missoula locals. 8

MAKE IT AT HOME: 406 BURGER (Serves 4)
Is that name a little cheesy? That’s because this burger is, too. Meet the 406 Burger: a Mannix beef patty stuffed with Tucker Family Farm’s Petrichor blue cheese and topped with your favorite local veggies served on a toasted Wheat Montana bun. 100% Montana. 110% delicious. INGREDIENTS + 2 lb Mannix ground beef + ½ wheel Tucker Family Farm’s Petrichor Blue Cheese + 1 ½ tsp Salt + 1 tsp Black Pepper + Hot Sauce + Toppings (your choice) + Wheat Montana buns DIRECTIONS 1. Season your Mannix ground beef with a dash of hot sauce (we prefer Arthur Wayne’s varieties). Add in the salt and pepper and combine. Form eight thin patties measuring ¼ lb each. 2. Cut the Tucker Family Farms Petrichor into fourths, rind included. 3. Place one cube of cheese in the center of a beef patty and, using another beef patty, cover the cheese and mold the edges together. You should not be able to see any cheese at this point. Repeat for all four burgers. 4. Fire up that grill! Grill burgers on both sides until desired internal temperature is reached. 5. Slice veggies for your toppings. We went with an heirloom tomato, red onion, and fresh beet greens. 6. Optional: face down, grill the Wheat Montana burger buns for 30 seconds to char. 7. Place your burger on a bun and top with desired toppings.

ARTHUR WAYNE HOT SAUCE Visitors and locals alike seek out the iconic “Made in Montana” tag, and for good reason: Montanans are skilled artisans, especially when it comes to food. One such product that has become a staple in the Missoula community is Arthur Wayne’s hot sauces. Arthur Wayne is originally from Northern California, but he moved to Missoula in 2009 for a change of pace. “I just decided that I was over city life [in California]. And so we came out here and started a new life.” He studied nutrition and kinesiology in school with the goal of practicing sports medicine, though he also dreamed of owning his own business. As he started a family and put his career in sports medicine on hold, Arthur stumbled upon a different dream of creating natural hot sauce products. He never sought out to create a hot sauce business—it happened organically in his home kitchen one day as he was making breakfast and searching through his fridge for the right condiment. “I stood there, and I took them all out and started looking at the ingredients and thought, ‘I can make something just for fun. Let’s try it.’” Growing up in a Mexican American family with wonderful cooking by his mother and grandmother inspired Arthur Wayne’s recipes for his hot sauces, and Missoula’s love for all things local gave him the push he needed. “Here in Missoula, people are all about local. Everyone gets excited about this wonderful cheese from this one farm and all these wonderful products made in Montana, and that inspired me. The community inspired me. Living here for a couple of years and having already a background in making hot sauce for myself, a lot of my new-found friends told me, ‘Wow, you really need to do this.’ It was more of the community and my friends pushing me to release my sauces, and just the warm feeling from people that made me feel like it was okay [to go for it]. I never thought that I would make hot sauce for a living. It was just a hobby. But as more and more people responded to my sauce, I woke up one morning and knew that this is what I needed to do.” Making hot sauce for friends evolved into a stand at the farmers market, and from there Arthur Wayne Hot Sauces just continued to grow.
