Our Appellations at a Glance Located between 41° and 44° North, Ontario’s Wine Country is situated in the heart of the world’s fine wine zone. Stretching across 17,000 acres (6,900 hectares), our vineyards are made up of complex limestone-based soils created by glaciers thousands of years ago. Ontario’s appellations, geographically defined wine areas, benefit directly from their proximity to three of the five Great Lakes of North America, the largest freshwater system in the world. This unique combination of latitude, lakes and limestone is the foundation on which Ontario is making globally acclaimed wines.
Lake Erie North Shore Sunny days & Cool breezes • Ontario’s southernmost region benefits from warm temperatures and a long growing season • The increased sunshine and the warm, shallow waters of Lake Erie afford excellent ripening conditions for more full-bodied wines • This appellation includes Ontario’s newest sub-appellation, known as the South Islands, which includes well-known Pelee Island
Prince Edward County Lake winds & Stony soils • Lake-effect temperatures, a limestone base and stony soil create concentrated fruit with a uniquely crisp minerality • Ontario’s northernmost region is a virtual island at the eastern end of Lake Ontario with more than 800 kilometres of shoreline, including renowned Sandbanks Provincial Park

While you might think Ontario is too far north for growing grapes, Ontario’s wine regions actually share the same latitude with other well-known wine regions including Tuscany and Oregon. If there were to be a “most famous” soil type for producing fine wine, it would probably be limestone. Ontario’s soils in the Great Lakes basin vary from sand to clay to rock, with a high concentration of limestone from an ancient seabed that was exposed to over one million years of glacial activity. Ontario is one of the few wine regions in the world that is founded on limestone, similar to Burgundy and Champagne. Limestone nutrients and minerality produce a special lift and elegance in our wine.

Sparkling – Bubbles on the Rise! Celebrate the everyday by popping open a bottle of VQA sparkling! Ontario’s cool climate and limestone soils produce some of the world’s best sparkling wines. Ontario VQA bubbly is incredibly versatile, so it’s easy to match with any cuisine.

WINE FLAVOURS ARE INFLUENCED BY Sweetness Residual sugars from the grapes balance with acidity to build flavour. Acidity Another element natural to the grape that creates tartness and brightness. Tannin The astringency or “chewiness” of some wines that gives them structure. It can come both from grape skins and oak barrels.

Every winery experience is unique – casual to formal, private tastings to group settings – so contact the wineries directly to book your personal tasting experience as many require reservations. To get the most out of any tasting experience remember these 4 simple tips:
See, Swirl, Smell, Swish See the Colour
Hold your glass up to the light and take note of the colour. This gives you a hint about the grape variety – and indicates the age of the wine or vintage.
Swirl the Glass
Gently swirl the wine and watch how it coats the glass. A more viscous wine is said to have “legs” – more alcohol and body.
Smell the “Nose” of the Wine
Get in there! Start with soft sniffs and then stick your whole nose in the glass to take it all in. Think about the aromas you smell, from berries to spice to smoke.
Swish the Wine Around Your Mouth Don’t be dainty. Let the wine contact every part of your tongue. Describe the experience. Sweet or dry? Light or full bodied? Do you taste the aromas you smelled? Remember: spitting is not considered rude, which is why most wineries have spittoons lined up at the bar. Keep in mind: tasting is subjective, so there’s no “wrong” answers. The more time you take tasting, the more you learn which regions and grapes you like better. And it’s a lot of fun along the way.

Winemaking 101 Winemaking is an art – a delicious masterpiece in a bottle. Ontario VQA winemakers and vintners bring their passion and dedication to every bottle they craft. Visit your favourite winery and book a tour today to see first-hand the transformation from grapes to wine.
Journey of a Table Wine Starts Here Harvesting/Picking When the grapes are at optimal ripeness they are picked, often by hand, in order to choose the best clusters for the wine.
Sorting/Crushing Harvested grapes are then sorted to remove any leaves or damaged berries and then gently crushed to break the skins of the grapes.
Fermentation The fermentation process begins when yeast becomes active and starts to consume the natural sugars in the grape juice, and starts to convert them into alcohol. Depending on the wine style, this process may or may not include contact with grape skins.
Pressing Red Wines: After fermentation is complete and the desired colour and flavours are achieved the wine is gently pressed to remove the skins, seeds and pulp. White Wines: Immediately after the de-stemming/ crushing step the juice is gently pressed to remove the skins, seeds and pulp.

Bottling The wine is transferred into glass bottles, labelled and ready to enjoy!
Fining/Filtering The wine is sometimes fined and filtered to remove any unwanted particles. Some winemakers choose to skip this step resulting in cloudier and oftentimes more “rustic”-style wines.
Aging
Some wines are aged in oak barrels to develop more complex and balanced flavours, others are aged in stainless steel tanks. This step will depend on the grapes used and how the winemaker wants the wine to taste. Aging can last from a couple of months to many years.

Icewine – Truly Canadian Luscious and luxurious, Ontario VQA Icewine has highly concentrated and pure flavours made from grapes that have been left to freeze naturally on the vine. Ontario’s ideal climatic conditions set the stage for producing some of the finest Icewine in the world.
• The naturally dehydrated and frozen grapes are typically harvested between December & February • It must be -8°C or colder for both picking and pressing of Icewine grapes • The remaining juice is incredibly concentrated, sweet and rich which is then fermented to make Icewine
Ontario produces over 95% of Canada’s Icewine • Vidal, Riesling and Cabernet Franc are the most common varieties • Gewürztraminer, Cabernet Sauvignon and Chardonnay are produced in small quantities • Ontario has been producing Icewine every year for over 35 years

ORGANIC • Certified Organic uses 100% of grapes grown without chemical pesticides, herbicides or synthetic fertilizers • Compost, compost teas, green manure and cover crops are often used as fertilizer
BIODYNAMIC • Generally certified through Demeter Farm Standard • The guiding principle is that the farm is a living organism • Self-contained, self-sustaining, following the cycles of nature
VEGAN • Uses only vegetable-based alternatives (no animal products) for winemaking processes • Most wines are vegan-friendly but check with the winery • Several Ontario wineries are VegeCert certified
GLUTEN-FREE WINES • Most wines are gluten free, but check with the winery to confirm • Gluten can be used in the fining process, but this is rare
NATURAL WINES • “Natural” has no legally defined meaning or official certification or government regulations • Applies to wines made with the loose concept of “nothing added, nothing taken away”

Wine is a beautiful thing but it is still alcohol – choose a designated driver or arrange for a hired car. You also don’t have to swallow every drop. Use the spittoons in the tasting room to dispose of any unwanted wine. Finally, make sure to taste some of the delicious food available en route so you are not tasting on an empty stomach.

LACEY ESTATES WINERY The Lacey family purchased the property in 1982 and dug into the Hillier clay-loam soils of their property on the Closson Road in 2003 to plant what would become 12 acres. They made their first wines in 2007. The focus is on hand-crafted, small-production wines from their estate vines. Winemaker Kimball Lacey is sinking his County roots deeper every year while Liz Lacey runs the well-appointed tasting room and retail store.
Norm Hardie apprenticed for 6 years under top producers in Burgundy, South Africa, Oregon, New Zealand and California before putting roots down in PEC. His wines can now be found in top wine boutiques and restaurants in Europe, Tokyo, New York and Singapore. ALVENTO WINERY
2027 Cellars was started in 2007 by winemaker Kevin Panagapka and his wife Jodie. Named after the grower number allotted for the vineyard, this virtual winery, based out of Calamus Estate Winery focuses on terroir-driven, single-vineyard Chardonnay, Pinot Noir, Riesling, Pinot Gris and Cabernet Franc from the Niagara Escarpment. The focus on “terrior” and the individuality of each single vineyard creates wines with a sense of place, quality and personality.
Established in 2001, Alvento Winery offers visitors a unique boutique Wine Country experience. This 13.4-acre vineyard features an authentic 19th century barn with renovated tasting room, as well as luxurious accommodation located on the estate.

The distinctive, Mission-style winery sits just below the forested Niagara Escarpment with a view of Lake Ontario and rolling vineyards. Though opened in 2002, the winery’s vineyard planting dates back to the late 1970s and early 1980s. Over 20 different wines are crafted by Australian Winemaker Philip Dowell. The terrace offers excellent views to enjoy with wine-by-the-glass service.
Back 10 Cellars is a small 10-acre vineyard located between Beamsville and Vineland that is producing small-batch wines made from low-yielding vines planted in the red soils of the Lincoln Lakeshore sub-appellation. Look for artisanal, award-winning Riesling, Cabernet Franc, Rosé, Pinot Noir, Chardonnay and sparkling wines, grown by Andrew and Christina Brooks and crafted by Winemaker Dave Johnson, from this boutique operation.

Located overlooking Balls Falls, this 42-acre property boasts a 200year-old barn and a 90-seat multi-level deck overlooking the vineyard. The Patio restaurant is open May to October or you are welcome to bring your own picnic or visit the “Gouda Girl Cheese Bunker”. Join them for stargazing nights with their telescope. Calamus hosts events in the Barn loft and outside barn for up to 150 people.
Cloudsley Cellars is a small-lot, premium winery that is quickly gaining a reputation for fine cool climate Pinot Noir and Chardonnay. Five generations of the Mowat family have farmed in Niagara; the last two are responsible for Harbour Estates, which has been growing grapes and making wine since 1999. Ken Mowat makes a wide range of affordable wines, with notable success for Riesling, Pinot Gris, a white blend called Sunrise and a red blend called Midnight. Inspired by the red dust that covers everything, Redstone Winery was named for its intensely red clay soil and large stones. This family estate winery is set among 35 hectares of pristine vines in the St. David’s Bench. Founded in 1978 by Canadian wine-industry visionary Paul Bosc, the winery continues to innovate with pioneering viticulture research. Wines ranging from well-structured single-vineyard wines to bold reds built for aging are crafted by Amélie Boury from grapes grown on the winery’s own farms using sustainable farming techniques.
Colaneri is a family-owned winery that hand-harvests grapes to produce premium VQA award-winning wines from its surrounding vineyards. Most of the red, white and dessert wines are made in the traditional Italian Appassimento method of drying grapes. The large portfolio of wines include Ripasso, Amarone and Recioto styles. FAQs | Need-to-Know Information I’ve never been to a winery. What should I expect? Our Wine Country ambassadors will be happy to see you! They love talking wine and are great resources on what to see, do and taste in the area. Each winery is unique and will vary in size and personality. Most wineries are comprised of a retail area to purchase wine and a tasting bar where you can book a tasting experience. Some will have onsite restaurants or patio and picnic areas to enjoy as well.
Is there a recommended way to age Ontario VQA wines? There are a number of determining factors when it comes to aging wine, such as the vintage and the varietal. If you’re at a winery, put the question to one of their staff. Otherwise, the following are a few guidelines to follow with respect to aging wines: • For fresh, unoaked white wines and rosé wines – up to one year
I am travelling to Wine Country. Should I call ahead to make an appointment? Many wineries require reservations for tastings. Every winery offers a unique experience – some offer drop-in tastings, while others offer structured tastings by appointment only. If you are travelling with a group larger than 6 people be sure to call ahead, particularly if you are visiting smaller wineries as space in the tasting room is sometimes limited.

I’m eager to go on a wine tour. How should I approach this?
VQA is a system that regulates wines of origin, ensuring the wine is made from 100% Ontario grapes and meets specific quality and labelling standards. It is Ontario’s version of appellation control that has existed in Europe’s great wine regions for over 60 years.
Most wineries offer tours of their vineyard and winery, typically for a nominal fee. Visitors will learn about the history of the winery, visit the vineyard, see how the wine is produced and taste some of the wines. To start, consult the winery listings to find out what times they offer these sessions and the types of tours that they host. Where can I eat in Wine Country? Many wineries have on-site restaurants and bistros. Casual patio fare is often available during the summer months. The regions also boast wonderful restaurants that offer locally sourced ingredients and local VQA wines. Or stop by a farmers’ market and pick up the makings for a picnic lunch – refer to the winery listings to see which wineries have picnic space. I’m interested in having wine shipped directly to my home – what’s the policy around this? Many wineries are happy to arrange shipping to your home if you live in Ontario for a small fee. Ask the retail associates at each winery or check out their online stores for details. If I’m travelling with wine, what’s the best way to keep it? If travelling by car, it is best to secure the wine in a cooler or box and out of direct sunlight or extreme temperatures. If travelling by plane, ensure the wine is well secured in strong shipping packaging to avoid breakage. Once a bottle is opened, how long will the wine last? On average, opened wine will be fine for up to three days. It’s important to properly seal your wine and store it in a cool, dark place. If it’s white, keep it in the refrigerator; if it’s red, you can store it at room temperature. Be sure to seal your sparkling with a special closure to keep its bubbles longer! I’m going to the United States. What are the rules for bringing wine across the border? When travelling from Canada to the U.S. each adult over the age of 21 is allowed one litre of wine. Any additional wine is subject to an IRS tax of 21 cents per additional litre regardless of the wine’s price. *Please verify with Customs for any updates or new policies.

VQA is all about place. Our wines reflect their inherent tie to special places in Ontario – Niagara Peninsula, Lake Erie North Shore, Prince Edward County – places where the soil, the slope, the sunshine, the warmth, the rainfall and the craftsmanship yield distinct grapes and exceptional wines. Find out what special place your wine comes from by looking for the region or sub-region name between the VQA letters on the label. What is vintage variation? Each unique growing season has an impact on the growth of the grape vine and the fruit it produces, and in turn the wine made from that harvest. Wine character can be a delicate thing and knowing about each vintage can help predict what the potential is for its wines. Seasonal conditions can also vary between appellations and even between micro-climates within a small appellation. But vintages are not always universally “bad” or “good”. While one variety might enjoy the scorching heat, others will thrive in cooler weather. And remember, grapes are just one part of the equation – the winemaker’s skills shine through in every wine and every vintage. Sustainable Winemaking Ontario Certified Sustainable Winemaking Ontario Certified is a certification program that ensures wineries adhere to environmentally sustainable practices. Certified wineries are identified by the green leaf logo beside their winery description in the Guide. To be certified, Ontario wineries must complete an in-depth survey that is verified annually by an independent auditor that tracks winemaking activities from soil to shelf. When consumers see the green leaf logo, they are guaranteed that the winery and their respective wines have travelled a sustainable path.
