PASTORAL LETTER & CHURCH MEETINGS This is the time of year when many people seek to have a fresh start; it is a time of optimism a time when we hope this year will be better than the last. It is a time of year when we make all kinds of resolutions to try and stop this or that, eat less, exercise more but before too long many of them have fallen by the wayside. It is also a very important year for us as a nation as come September we have the opportunity to vote on whether we stay part of the United Kingdom or go our own way and with such a vital decision it is important that we weigh up all the pros and cons before deciding. So fresh starts new beginnings are very much in people’s minds. Yet we know from experience that it is something that seems an impossible task for try as we might we just never seem to experience it, old habits come back, guilt wears us down life just gets so messy. The message of the bible and the good news of the gospel is that God in Christ offers each one of us a fresh, start a new beginning,
indeed a whole new life. What would you give for that, a new start that gives a clean slate, a clear conscious, a peace that passes all understanding, a joy that comes from deep within, and a hope that is sure and certain? The good news (gospel) is that YOU don’t have to do anything because everything that needed to be done to secure this new life this fresh start this new beginning has already been DONE. How, why, where? We have just been remembering the birth of Jesus and the reason the real reason that Jesus was born is given in the words of the angel to Joseph; you are to give Him the name Jesus, because He will save His people from their sins. Jesus lived a sinless, spotless life taught God’s word went about doing good and ultimately and willingly went to the cross where He died for you and for me. By turning from our sins and by trusting in what He has done we can have that fresh start that new beginning that will last and last and last. CS Lewis once said this

PARLIAMENT BLOG & TIDE TIMES While this is the January edition I'm writing this column at the tail end of November and very much looking forward to time with family and friends over Christmas. While I am certainly not going to complain about travel up and down to London, since I chose to stand for election, it does make you appreciate the quieter moments. I find doing a bit of home cooking for visitors is a great relaxation so time to dig out the recipe books before a very busy 2014!
A very happy 2014 to everyone and no sooner are we past New Year but we're looking ahead to Burns Night. This year it's Elgin Town Hall for me for Yes Moray's Burns Supper. The politics of it aside I know there is an array of fantastic speakers, birth local and visitors to Moray but I am especially looking forward to hearing some of Moray's most talented young musicians. "I know many others will be at Burns Suppers throughout Moray so here's to the Bard for his fantastic legacy!

Dark chocolate and coffee terrine with coffee crème anglaise Ingredients
For the Terrine
s vegetable oil, for greasing s 600g/1lb 5oz dark chocolate, roughly chopped s 600ml/1 pint 1½fl oz double cream s 8 free-range egg yolks s 125g/4½oz caster sugar s 75ml/3½fl oz cold water s 125g/4½oz boudoir biscuits or sponge fingers s 200ml/7fl oz chilled coffee
For the coffee crème anglaise s 200ml/7fl oz double cream s 200ml/7fl oz milk s 25g/1oz roasted coffee beans s 6 free-range egg yolks s 75g/3oz caster sugar s 40-50 chocolate-coated coffee beans
Preparation method 1. For the terrine, lightly grease a 1.5kg/3lb 4oz loaf tin with a little oil and line with cling film, pressing into the corners. Place the chocolate into a heatproof bowl set over a pan of simmering water to melt (make sure the bottom of the bowl doesn't touch the water). 2. Once melted, remove the bowl from the pan and stir in half of the double cream. Set aside. 3. Place a clean heatproof bowl over a pan of simmering water (again making sure the bottom of the bowl doesn't touch the water), add the egg yolks and sugar and whisk for 3-4 minutes, or until the mixture is pale and thickened. 4. Whisk the egg and sugar mixture into the chocolate until well combined, then whisk in the cold water. 5. Whisk the remaining double cream in a bowl until soft peaks form when the whisk is removed. Gently fold the whipped cream into the chocolate mixture until just combined. 6. Dip the boudoir biscuits or sponge fingers into a bowl of the chilled coffee, then arrange the soaked biscuits vertically along the sides of the prepared loaf tin. Make sure there are no gaps between each biscuit. 7. Spoon the chocolate mixture into the centre, then tap the tin lightly on the work surface to even out the mixture, ensuring the mixture goes into the corners. Cover with cling film and chill in the fridge for at least two hours, or until set. 8. For the coffee crème anglaise, place the double cream, milk and roasted coffee beans into a pan and bring to a simmer. 9. Whisk the egg yolks and sugar together in a bowl, then slowly pour in the warm cream mixture, whisking continuously until well combined. Pour the mixture back into a clean pan and cook over a low heat for 4-5 minutes, or until the mixture coats the back of a wooden spoon. 10. Pass the mixture through a fine sieve into a bowl and allow to cool slightly before chilling in the fridge for at least 30 minutes. 11. To serve, remove the terrine from the fridge 30 minutes before serving to allow it to soften slightly. Turn out from the tin onto a plate and remove the cling film. Using a hot knife, thickly slice the terrine and place a slice onto each serving plate. Spoon the chilled crème anglaise around the plate and decorate the plate with a few chocolate-coated coffee beans

Dreaming of... Australia Australia is a huge destination for many and is, of course about as far as you can get, in distance, from home. Whether it is Sydney, Melbourne or one of Australiaâ&#x20AC;&#x2122;s other fantastic cities, there is always plenty to do. There is culture and entertainment, live music and festivals and art galleries and museums.

On the way and the return there are a variety of stopovers in cities such as Bangkok, Hong Kong, Singapore, Dubai or San Francisco, or relaxing on a beautiful South Pacific Island such as Raratonga. The country is so vast that it covers 3 different time zones and it is around 2,800 miles from Perth in the west to Brisbane in the east. Much of the country is arid desert, mainly in the centre, with the population generally living nearer to the coastline. One of the worldâ&#x20AC;&#x2122;s most famous cities Sydney is loved for its Opera House, Harbour Bridge (the coat hanger), waterways and lifestyle. Melbourne and its surrounds are particularly popular with sports enthusiasts and lovers of the great outdoors. There is the world heritage wilderness of Queenslandâ&#x20AC;&#x2122;s Fraser Island with its massive sand dunes, coloured-sand cliffs, silent rivers and 120km of spectacular beaches. There are freshwater lakes and towering rain forests with rare plants and bird species and from August to October you may well spot a humpback whale. There are several ways of getting about in Australia, including the flexibility of a motorhome, self-drive, escorted tours, generally by coach, which have a certain air of quality about them, and trains such as the Tilt train from Brisbane to Cairns and the Ghan train from Adelaide to Alice Springs. When you visit Uluru (Ayers Rock), the worldâ&#x20AC;&#x2122;s largest monolith, a sunrise or a sunset tour with an Aboriginal guide will be an unforgettable experience. Anything that, in happening causes itself to happen again, happens again. It doesn’t necessarily do it in chronological order, though, and this is what happens when you turn leftover turkey into the coolest dinner. Greetings brothers and sisters of the cookery revolution. Could I please have your attention for a minute. Relax and return your seat to the upright position and fasten your seatbelt. There are no exits; please read this recipe before we take off.
Thai Green Curry For the paste: 10 bird's eye chillies 3 tbsp chopped lemongrass 1 tsp lime zest 1 handful of coriander 1 tsp chopped red turmeric 2 tbsp chopped shallots 2 tbsp chopped garlic 1 tsp shrimp paste Ground white pepper and salt
For the curry: 5 tbsp coconut cream 1 tsp fish sauce ½ tsp sugar 180ml chicken or vegetable stock 180g chopped leftover turkey, 100g pea aubergines 2 lime leaves, shredded 3 red chillies, de-seeded and finely sliced Handful of Thai basil leaves
1. Pound the paste ingredients one by one in a pestle and mortar, making sure each is well incorporated before adding the next. You can use a food processor, but you won't get quite such good results. 2. Heat the coconut cream in a small saucepan, and allow to come to the boil. Once it has reduced and begun to split, add 4 tbsp curry paste and mix, stirring continuously until aromatic – taste to see whether the spices are cooked. 3. Add the fish sauce and sugar to taste, pour in the stock and bring back to the boil, then put in the turkey, and the aubergines. Simmer until cooked through, then stir in the lime leaves, red chilli and basil leaves. Stir in a little more coconut cream if it's too spicy, and serve with jasmine rice.
