As summer draws to a close I think we can generally rejoice in the better than average weather that we have had over the last few months. I understand that during July and August we were often 2 or 3 degrees above average and sometimes as much as 9 degrees above. Perhaps we should be thinking of renaming ourselves the Northern Riviera!

PASTORAL LETTER & CHURCH MEETINGS Why England is so much better than Scotland … Ha! Now that I’ve got your attention we can actually get down to the real subject! You see it’s very easy to get drawn into arguments and discussions because of headlines we read or because of statements people make but often if we listen for a while we find that a lot of what people say is not said in order to further discussion but simply to vent their own anger and to have a good old moan. I don’t want to stray into a discussion on the issue of Scottish Independence as I value the windows in my house and the paintwork on my car too much! But just as people get very heated in defence of their viewpoint on this subject, and just as it causes real division between people, so it is that the topic of Christianity can do the very same thing. It’s one of those “Marmite” topics which people seem to either love or hate. Some people think Christianity, and religion in general, is the root cause of all evil in the world but a quick glance at the Communist regimes which held to atheism such as the old USSR, North Korea or China shows that
people don’t need religion in order to commit acts of evil! As G. K. Chesterton once wrote in response to a newspaper article: “Dear Sir: Regarding your article ‘What’s Wrong with the World?’ I am. Yours truly.” He was right. Whether you like to hear it or not, you and I are sinners. We lose our tempers, we become jealous, we hate others and we do a whole load of other stuff that is not good or right. How often has it been the case that the things we have said, or the things we have done or the things we are doing, are the root cause of division in our families, streets or places of work? Divisions are part and parcel of this life and Jesus Himself divided opinion regarding his identity. In John’s Gospel we find on numerous occasions that peoples’ strongly held beliefs concerning who Jesus really was were greatly divided. We read in John 7:40-43 some of the people said, “This really is the Prophet.” Others said, “This is the Christ.” But some said, “Is the Christ to come from Galilee? … So there was a division among the people over him. Again in John 9:16 it says the people were in division concerning

Him, some people saw His miracles and believed but others thought He was sinner. Once more in John 10:19-21, after Jesus says He is the Good Shepherd we read: There was again a division among the Jews because of these words. Many of them said, “He has a demon, and is insane; why listen to Him?” Others said, “These are not the words of one who is oppressed by a demon. Can a demon open the eyes of the blind?” And ever since His life, death and resurrection people have been divided over who Jesus really is: an incredible deceiver and delusional madman or God in the flesh who came to take away both your sins and mine. There are indeed many things wrong with religion – I am, no doubt, one of them – but Jesus only ever did that which was right and good and wholesome; caring for the poor, the sick, the outcast and the downtrodden. PARLIAMENT BLOG & TIDE TIMES My joint summer surgery tour around the constituency with Angus Robertson highlighted a number of issues that are of major concern in several communities. Issues that were brought to my attention or that were further explained included serious water pressure issues for Forres residents and concerns over a planning issue in Portgordon. Alongside well-publicised major issues were a number of small and more personal cases that were of vital importance to those concerned. All of them underlined the importance of surgeries and how they ensure we never lose direct contact with constituents. It has, for the most part, been a glorious summer here in Moray but now we are turning our attention to the challenges of keeping warm with winter just around the corner. Energy prices remain an issue that produces a large number of letters from constituents, many of whom are facing the pressure of rising bills. Along with SNP colleagues at the UK Parliament I have been continually arguing the case for a better and fairer deal for rural communities such as ours. It is good to see then that the UK Government are undertaking a study that could see the 5p a litre fuel in the Highlands and Islands extended to areas such as Moray. Action is long overdue in the face of energy bills that have increased on average by 61% over the last five years. The Scottish Government are helping as far as they can through measures such as the freeze on council tax, it is about time Westminster recognised the problems we face.

Scarifying the Moss Out – How, When and How Much ? My friends at Spotlight Magazine have asked me to lay out what’s involved, as there’s so much gardening talk about scarifying at this time of year on TV gardening programmes, and in newspapers and magazines. How? – there are 3 commonly used methods; by hand with a spring rake; with a light electric-scarifier; with a heavy blade-scarifier. When? – as a general rule , outwith the growing season. Most folk do this sometime before Xmas or in the New Year before Spring.

How Much ? – hand raking is free, but hard going and only really feasible for smaller lawns. A medium or large lawn really needs machinery assistance. A light electric scarifier can be bought for around £100, and is good for removing moss, but doesn’t really remove thatch build-up. A blade-scarifier can be rented for around £60 per day, but you have to do the work yourself ! Or you could get help from GreenThumb or somebody else. Chef’s Confidential Grilled fillet of sea bass Served on a warm potato and chorizo salad Serves 2 2 fillets of sea bass 8 spears of asparagus 6 sundried tomatoes 6 cooked baby potatoes, cooked and sliced 2 raw chorizo sausage, sliced 2 cloves of sliced garlic 1 lemon 100 grams of butter Method Trim the asparagus and cook in boiling water for 2 minutes then cool. Start to fry the sliced chorizo and garlic slowly in a non-stick pan. Season the fillets with salt and pepper and drizzle with olive oil. Place the seabass fillets skin side down on a baking tray. Put under a pre heated medium heat grill and cook for 2 minutes on each side. Add the potatoes and sundried tomatoes, fry for 1 minute. Then add the asparagus. Add the butter, when melted squeeze in half a lemon. Arrange on the bottom of 2 plates, place the sea bass fillets on top. Served with a slice of lemon.

A Country Inn... with Restaurant Standards!
It is a while since I have eaten at The Old Mill Inn and I was interested to see how it is getting on. The bar was already set high - I had heard some very good things about the Old Mill - could it live up to it? Well - it exceeded our every expectation.
but excellently cooked and presented. Apart from the ooh's and aah's coming out periodically the meats were described variously as "melt in the mouth", "gorgeous", "sauce to die for" etc. The flavours were subtle and unexpected - a real treat and not at all expensive.
Some friends and I (quite a mixed bunch!) went in on a Friday lunchtime and were warmly welcomed by the owner himself, Kevin Edwards. He talked us through the menus and was both pleasant and informative. He is obviously a very hands-on owner and takes a great pride in using exclusively fresh produce (mostly local) and also his wide range of Scottish Real Ale.
I like to think that I am a bit of a burger expert - well I am a man! I often try the burger when I am out and I believe that it is a good bellwether for the standard of the chef. Burgers are easy to cook but not so easy to get perfect. The Old Mill burger was perfect in every sense. Using 100% beef and made to their own recipe it was both juicy and tasty and with a slice of in-house smoked bacon on top - pretty unbeatable. I was a happy man!
The first surprise was the huge breadth of choice on the menu - something for every taste from the tried and tested to the more adventurous. Although none of us actually had a steak we did see one whizz past and it looked really tempting. Kevin told us that all his steaks are from locally reared beef aged in controlled environments in Elgin. It is one of his best selling meals and he has special steak nights on Mondays where there are discounts to be had.

The adventurous among our party ordered a selection of "Scottish Tapas" for the main meal. This worked really well between two people. They ordered six in total which was just about the right quantity. I went "standard" with a burger and my other friend had the ribs and crispy chicken. The Tapas were chosen from a selection of about 15 different plates and were absolutely fantastic. They arrived on a stacked plate presentation in "Theatre Style" and were both really tasty and fun - something really different
Two of our party ventured into the puddings. The Raspberry Meringue was exceptional but could not match the Fruit Garden. Put simply, The Fruit Garden was a triumph of creativity and flavour. If, following this review, you are tempted to visit the Old Mill, I recommend that at least one of you tries the Fruit Garden. The flavour combinations of fresh summer fruits, mousse and chocolate were absolutely sublime but the really clever trick was to make it look like a plant pot, complete with garden stones (not really stones!). It is an absolute must and great fun. The Old Mill Inn is a fantastic country pub that has achieved restaurant standards in its presentation and cuisine. It does not pretend to be the cheapest food but if you are the type of person who enjoys your food you will really enjoy the meal. The welcome is warm and friendly and not intrusive. In short I am not surprised that it is getting such rave reviews – try it for yourself!

Chef’s Confidential Green Cardamom Panna Cotta Serves 4 10g gelatine leaves 450ml milk 380ml double cream 70g caster sugar 6 whole green cardamom pods Method Place gelatine into cold water to soften. Place milk, double cream, sugar, cardamom pods into a heavy base pot. Slowly bring to the boil. Simmer for one minute then take off the heat. Squeeze the water from the gelatine, then add to your cream mixture and stir in well. Remove the cardamom pods using a spoon or a sieve. Dreaming of... ...a Skiing Holiday As the warm weather starts to turn autumnal we turn our minds to that wonderful winter pastime – the skiing holiday. Europe has become closer and closer with dedicated flights from Scottish airports, mainly Edinburgh and Glasgow with some from Aberdeen and now Inverness.
A good skiing holiday is a total change to your normal routine, but it is not a lazy option – skiing (or snowboarding) itself uses muscles that we don't otherwise use every day and although exhilarating, it can be hard work to ski all day every day for a week or a fortnight. People who make the most of the daylight hours, getting out onto the slopes after 9am but before 10am, see the best groomed snow of the day. How people can party all night and ski all day we have never figured out, but we find skiing more rewarding than partying anyway, so a good night's sleep is always required. It is a great advantage to be able to test your interest in skiing at a Scottish resort – if you like it you can continue to use the local facilities at weekends but it is tempting to go to the greater snow fields of Europe, and then the ultimate treat is in North America and Canada. In Europe the popular countries are France, Switzerland and Austria. French resorts tend to be high such as Tignes (the highest in France) or Chamonix which is a small French industrial town surrounded by three clear skiing areas. Swiss resorts tend to be picturesque and Alpine-like, including Verbier and Zermatt – Verbier is high with good skiing, and is a mecca for the British if that is what you want, whereas Zermatt has retained its charm as a Swiss-style resort. Zermatt also offers huge areas of skiing as just over the mountain under the shadow of the Matterhorn you are into Cervinia in Italy – another wide range of pistes. Austria, although not the highest resorts, offers the most charming and stylised resorts such as Kitzbuhel and St Anton. The west coast of Canada has wonderful skiing in Banff, Lake Louise and Whistler, where the winter Olympics were held in 2010. Whistler offers so much choice there are even 2 mountains to choose from, both offering guides to show you round. The ski lifts are generally larger and wider than European ones, as are the pistes, and the mountain restaurants are enormous and modern, but very efficient. The ski police keep you on your toes. The final but very important consideration is the cost of your skiing holiday. The key components are your flights, your accommodation, your food and drink bills, your equipment hire (skis or snowboard and boots), and your lift passes, but these can range enormously in price and there are always some very good deals around.

Fossil fuels are non-renewable, that is, they draw on finite resources that will eventually dwindle, becoming too expensive or too environmentally damaging to retrieve. In contrast, the many types of renewable energy resources-such as wind and solar energy-are constantly replenished and will never run out.
Most renewable energy comes either directly or indirectly from the sun. Sunlight, or solar energy, can be used directly for heating and lighting homes and other buildings, for generating electricity, and for hot water heating, solar cooling, and a variety of commercial and industrial uses.
The Future is Clean! abundant element on the Earth. But it doesn't occur naturally as a gas. It's always combined with other elements, such as with oxygen to make water. Once separated from another element, hydrogen can be burned as a fuel or converted into electricity. Not all renewable energy resources come from the sun. Geothermal energy taps the Earth's internal heat for a variety of uses, including electric power production, and the heating and cooling of buildings. And the energy of the ocean's tides come from the gravitational pull of the moon and the sun upon the Earth. In fact, ocean energy comes from a number of sources. In addition to tidal energy, there's the energy of the ocean's waves, which are driven by both the tides and the winds. The sun also warms the surface of the ocean more than the ocean depths, creating a temperature difference that can be used as an energy source. All these forms of ocean energy can be used to produce electricity.
The sun's heat also drives the winds, whose energy, is captured with wind turbines. Then, the winds and the sun's heat cause water to evaporate. When this water vapor turns into rain or snow and flows downhill into rivers or streams, its energy can be captured using hydroelectric power. Along with the rain and snow, sunlight causes plants to grow. The organic matter that makes up those plants is known as biomass. Biomass can be used to produce electricity, transportation fuels, or chemicals. The use of biomass for any of these purposes is called bioenergy.
