I’ve been up to Glenlivet recently where the hills meet the sky and you really can’t hear anything but the birds; it’s bliss and an antidote to the hustle and bustle of everyday life. Tramping along on one of the recognised ‘Whisky trails’ with sheep as your neighbours really ĚŽĞƐ ŐŝǀĞ LJŽƵ Ă ƐĞŶƐĞ ŽĨ ƉƌŽƉŽƌƟ ŽŶ͘ Out here at the foot of the Ladder ,ŝůůƐ LJŽƵ ĂƌĞ ũƵƐƚ Ă Ɵ ŶLJ ƐƉĞĐŬ͕ ƐŵĂůů ĂŶĚ ŝŶƐŝŐŶŝĮ ĐĂŶƚ ĂŐĂŝŶƐƚ ƚŚĞ ŵĂŐŶŝĮ ĐĞŶĐĞ ĂƌŽƵŶĚ LJŽƵ͘

We should all get out more into what’s left of our wilder places, it provides solace and is uplifting and if you want inspiration then the Scalan at Glenlivet is just the place to find it. It’s years since I was last at the Scalan; once one of the most important Catholic ƐĞŵŝŶĂƌŝĞƐ ŝŶ ^ĐŽƚůĂŶĚ͘ ,ĞƌĞ͕ ƵƉǁĂƌĚƐ ŽĨ a hundred priests; some of them ‘Heather WƌŝĞƐƚƐ͕͛ ƚƌĂŝŶĞĚ ĂŶĚ ŽƌĚĂŝŶĞĚ ĂŶĚ ůŝǀĞĚ ƚŚĞŝƌ ůŝǀĞƐ͘ EŽ ǁŽŶĚĞƌ ƚŚĞLJ ǁĞƌĞ ĂďůĞ ƚŽ ĐŽŶĐĞŶƚƌĂƚĞ ŽŶ ƚŚĞŝƌ ƐƚƵĚŝĞƐ͕ ƚŚĞƌĞ͛Ɛ ůŝƩůĞ ŝŶ ƚŚĞ ǁĂLJ ŽĨ ĚŝƐƚƌĂĐƟŽŶ ŚĞƌĞ͘ zŽƵ͛Ě ŚĂǀĞ ŶĞĞĚĞĚ ĚĞƚĞƌŵŝŶĂƟŽŶ ƚŽ ƌĞĂĐŚ ƚŚĞ ƐĞŵŝŶĂƌLJ ǁŚĞŶ ŝƚ ǁĂƐ ŝŶ ƵƐĞ͕ ĨŽƌ although today the road goes most of the ǁĂLJ ƚŚĞƌĞ͕ ŝŶ ƚŚĞ ĚĂLJƐ ŽĨ ƚŚĞ ,ĞĂƚŚĞƌ WƌŝĞƐƚƐ ƚŚĞƌĞ ǁŽƵůĚ ƉƌŽďĂďůLJ ŚĂǀĞ ďĞĞŶ ůŝƩůĞ ŵŽƌĞ ƚŚĂŶ Ă ƚƌĂĐŬ͘ ƵƌŝŶŐ ƚŚĞ ǁŝŶƚĞƌ ǁŚĞŶ ƚŚĞ weather was bad it may even have been ƵŶƌĞĂĐŚĂďůĞ͕ ĐƵƚ Žī ďLJ ĚĞĞƉ ƐŶŽǁ͘ 8
ƵƌŶƚ ĚŽǁŶ ĂŶĚ ƚŚĞŶ ƌĞͲďƵŝůƚ͕ ƚŚĞ building that you see today is a basic 18th century building which from 1716 to 1799 ƐĞƌǀĞĚ ƚŚĞ ĂƚŚŽůŝĐ ĐŚƵƌĐŚ͘ KŶĐĞ ŝƚƐ ĚĂLJƐ ĂƐ Ă ƐĞŵŝŶĂƌLJ ǁĞƌĞ ŽǀĞƌ͕ ƚŚĞ ^ĐĂůĂŶ ǁĂƐ ƵƐĞĚ ĂƐ Ă ĨĂƌŵ ƵŶƟů ƉƵƌĐŚĂƐĞĚ ďLJ ƚŚĞ ^ĐĂůĂŶ ƐƐŽĐŝĂƟŽŶ ĨƌŽŵ ƚŚĞ ƌŽǁŶ ƐƚĂƚĞ ŝŶ ŽƌĚĞƌ ƚŽ ƉƌŽƚĞĐƚ ŝƚƐ ŚĞƌŝƚĂŐĞ ĂŶĚ ŚŝƐƚŽƌLJ͘ The Scalan is a simple but fairly long ŽďůŽŶŐ ďƵŝůĚŝŶŐ͕ ŚĂƌůĞĚ ĂŶĚ ƐůĂƚĞĚ ǁŝƚŚ ĂŶĐŝůůĂƌLJ ďƵŝůĚŝŶŐƐ ĐůŽƐĞ ƚŽ͘ dŚĞ ƌŽŵďŝĞ burn runs to the front of it and on the grassy area surrounding the burn the young priests ŝŶ ǁĂŝƟŶŐ ƚŽŽŬ ƚŚĞŝƌ ĞdžĞƌĐŝƐĞ ĂŶĚ ŐĂŵĞƐ͕ ĨŽƌ ĞdžĞƌĐŝƐĞ ǁĂƐ ĚĞĞŵĞĚ ĂŶ ŝŵƉŽƌƚĂŶƚ ƉĂƌƚ ŽĨ ůŝĨĞ Ăƚ ƚŚĞ ^ĐĂůĂŶ͘ dŚĞ ďƵƌŶ ĐĂŶ ďĞ ĨŽƌĚĞĚ but there is a bridge if you don’t fancy wet ĨĞĞƚ͘ dŚĞ ďƵƌŶ ďƵďďůĞƐ ŝƚƐ ǁĂLJ ƚŚƌŽƵŐŚ ƚŚĞ Scalan’s grounds where one of the older ďƵŝůĚŝŶŐƐ ůŝĞƐ ďƌŽŬĞŶ ĂŶĚ ĚĞƌĞůŝĐƚ͘ KĨ ƚŚĞ ŽƚŚĞƌƐ͕ ƚŚĞ ůĂƌŐĞƐƚ ďƵŝůĚŝŶŐ ŽŶĐĞ ŚŽƵƐĞĚ ƚŚĞ ĨĂƌŵ ŚŽƌƐĞƐ͕ ŝŵƉůĞŵĞŶƚƐ ĂŶĚ Ă ŵŝůů ĂŶĚ ŚĂƐ ƚŚĞ ŵŝůů ǁŚĞĞů ƐƟůů ǀŝƐŝďůĞ͕ ĂůŽŶŐ ǁŝƚŚ ƐŝŐŶƐ ŽĨ ǁŚĞƌĞ ƚŚĞ ǁĂƚĞƌ ŽŶĐĞ ŇŽǁĞĚ ŝŶƚŽ ƚŚĞ ŵŝůů͘

I’m talking about scarifying again of course. This will also be featuring in all the TV gardening programmes and magazines about now, and it is what we at GreenThumb spend all winter doing. We will have 3 heavy blade scarifier machines out clearing (at the last count) 1,000 lawns round here. – oh joy !
mechanical help is really the best option for anything more than quite a small lawn. You can hire a blade scarifier for the day at some garden machinery centres, but be warned, these are pretty vicious machines and it’s only too easy to “plough” your garden, and then need a new lawn ! An “average” lawn usually takes 2 experienced crew half a day to do with machines and blowers. The best time to tackle this is either side of Christmas. Scarifying is never recommended in the growing season because the very nature of the exercise is pretty traumatic for the grass, and some recovery time is required, during which time it looks pretty shabby. Doing it off-season allows recovery, then you put on a spring feed, and have a season of decent grass to mow. Enjoy !
Scarifying moss and thatch out is undertaken to clear the lawn surface of all the dead material and moss to allow fresh grass plants to dominate the lawn environment, providing the best conditions for absorbsion of sunlight, moisture and nutrients. If this task is overlooked (or avoided), the following season there is even more build-up, and in no time, the lawn is more moss than grass. There’s nothing like the feeling a Landrover gives you; it’s solid, higher up than most vehicles and its ability in ice, snow, mud and muck is legendary. It can quite literally pull above it’s weight, for my old Series IIA was quite capable of ƉƵůůŝŶŐ ůĂƌŐĞƌ ǀĞŚŝĐůĞƐ ŽƵƚ ŽĨ ƐƟĐŬLJ ƐŝƚƵĂƟŽŶƐ ǁŚĞŶ ƐƚƵĐŬ ŝŶ the mud. For years as the children grew I soldiered on with the new 4x4, I even came to like it, but as my youngest child took her own driving test and no longer needed ‘Mum’s taxi’, the new 4x4 began to fail. I longed for another Landrover and began to look around at what 30 years had done to this classic vehicle. Ingredients 450g 100g
chicken breast mini fillets Hamlyns Scottish Porridge Oats 50g Hamlyns Scottish Oatmeal 1 tsp smoked paprika 1 tsp cumin 1/4 tsp salt 1/4 tsp white pepper 50g plain flour 2 eggs, beaten Spray oil
Method
1. Preheat your oven to 180c 2. Combine the oats, oatmeal, smoked paprika, cumin, salt and pepper in a shallow bowl.
3. Sieve the plain flour into a second bowl.
4. Beat the free range eggs in a third bowl.
5. Coat each chicken breast mini fillet
with flour, then dip it into the beaten egg and finally into the oaty mixture making sure it is fully covered.
6. Place the goujons on a baking sheet and spritz them with spray oil.
7.
Bake for 25-30 minutes in total, turning and spritzing again after 15 minutes. After 25-30 minutes, the oats will be starting to brown and the chicken will be cooked through.
8. Serve with your favourite dips.
Scottish porridge is synonymous with the country and has been for many a century. Since late medieval times, oats have grown in Scotland as the staple diet of crofters most probably as oats are highly nutritious and a sustaining food, perfect for the inclement weather often found in Scotland. With no methods of preserving the oats, a thick paste was often made with oats and water. This was then cooled and stored in a wooden (porridge) drawer. From the drawer, the paste (porridge) would be eaten over several days. As the porridge, when cold becomes somewhat thick and solid, this was useful as it could be cut into thick slices and eaten for lunch or fried for breakfast. Traditionally porridge was cooked in a heavy saucepan with water and a little salt. The porridge was stirred with a wooden spurtle a thick wooden stick. Superstition would have you believe the porridge should be stirred only using the right-hand and in a clockwise direction to ward off evil spirits. Originally only made with water and salt, the paste, or porridge as it became known, bore little likeness to the thick, creamy mixture we know today. Nowadays, when time is often short, many opt for instant porridge and a microwave; I am not sure that will keep evil spirits away.

Loch Spey is not a large loch; it sits in the open and is surrounded by wet, boggy ground. It’s also surrounded by hills ĂŶĚ ŝƚ͛Ɛ ĨƌŽŵ ƚŚĞƐĞ ŚŝůůƐ ĂŶĚ ƚŚŝƐ ǁĞƩ Ğƌ ŐƌŽƵŶĚ ƚŚĂƚ ƐŵĂůů ďƵƌŶƐ bring the loch alive. An outlet from the loch begins the river, but here it’s narrow; no more than a couple of metres wide, meandering slowly and its usually not deep. There are few people to see the infant river, only a couple of bothys populate the isolated area and red deer are more frequent ƚŚĂŶ ǁĂůŬĞƌƐ͘ ĂƩ ůĞ ŐƌĂnjĞ ƚŚĞ ďŽŐ ůĂŶĚ ŝŶ summer and you can only imagine how bleak this place must be in winter. Fishermen frequent the many pools and stretches of water along the Spey and not for nothing is the river known as one of our greatest salmon rivers. The Spey is home to other species as well as salmon though, one of which, the freshwater pearl mussel is quite a rare creature. The Spey is important as habitat for the freshwater pearl mussel due to its high water quality. The Spey has several tributaries, the largest of which is the ǀŽŶ͘ dŚĞ ǀŽŶ ũŽŝŶƐ ƚŚĞ ^ƉĞLJ ŽŶ ƚŚĞ ĂůůŝŶĚĂůůŽĐŚ estate having established itself high in the hills around Tomintoul. Other tributaries include the Dulnain, the Feshie, Tromie, Truim, Fiddich, Nethy, Calder and Druie and it’s these rivers that feed the Spey to make it the seventh largest river in the UK.
