elcome to the September/October edition of The South Wilts Magazine. The season of mists and mellow fruitfulness has arrived. The nights are drawing in and it’s time to get cosy - what could be better then than our selection of delicious curry recipes - a great variation on the standard korma or chicken tikka and easy to recreate at home. See p16 for the recipes! Find Xmas gifts at Rockbourne Fair

O

ver 3,500 visitors expected to attend the upcoming Rockbourne Fair are promised a day of festive fun and seasonal shopping! With over 90 stalls the fair provides a variety of Christmas gifts and treats, beautiful jewellery, home accessories, luxury clothing

and regional food and drink available from a selection of thoughtfully handpicked retailers. This annual shopping fair returns to Salisbury Racecourse next Wednesday, Thursday and Friday (18 - 20 October) and is expected to attract thousands of people from Wiltshire, Hampshire,

Dorset and beyond. It really is one of the region’s ‘must-attend’ events. The Fair will remain open until 7.30pm on the Thursday evening for late night shopping and, as ever, there will be plenty of free parking. All proceeds from the Rockbourne Fair are donated to the Stars Appeal, Salisbury Hospital’s Charity. Jane Corani, who is a member of the voluntary organising committee, said “Rockbourne Fair makes a wonderful day out, With gifts for all ages, and the delights of the amazing food hall, there is something for everyone. Autumn planting with Orchard Park

S

ummer moves to autumn and with it the bulb planting season arrives as the garden centres fill up with the most wonderful selection of daffodils, tulips and a whole range of miscellaneous bulbs that need planting now to create the spring displays that we enjoy so much after the winter has passed.

“Smaller bulbs such as crocus and the snakes head fritillary can all be planted now to let the bulb roots establish” Orchard Park’s bulbs are supplied by one of the most famous bulb growers in the UK; Taylors Bulbs of Holbeach. Like Orchard Park it is a family firm with a strong reputation, and has a long history of producing the best quality bulbs around. You

will find the best choice of bulbs early in the season and avoid disappointment, but you can plant right up to the end of November or even later if needs be.

Held on Thursday 21 September, guests will have the opportunity to taste 10 different gins, some from as far away as Australia and the USA, some from homely Yorkshire, good old London and all sorts in between. 2 tbsp coriander leaves Plain mini pappadums, to serve

Method Preheat the oven to 200ºC. Heat the oil in a large, flameproof casserole and cook the lamb and onion for 5 minutes until browned. Stir in the rice and turmeric and cook for 30 seconds, then add the curry paste, butternut squash, sweet potato, stock and apricots.

Cover the dish and bake for 30–35 minutes until the rice is tender and the stock absorbed. Meanwhile, sprinkle the almonds into a frying pan and toast for 2–3 minutes until lightly browned. Fluff up the rice with a fork and scatter over the almonds and coriander. Serve this one pot wonder with mini pappadums on the side.

Ingredients 1 tbsp sunflower oil 330g diced lamb shoulder 1 onion, thinly sliced 225g basmati rice ¼ tsp ground turmeric 2 tbsp korma spice paste 350g pack diced butternut & sweet potato 500ml hot lamb stock 75g dried apricots, diced 2 tbsp flaked almonds

Ingredients 1 tbsp sunflower oil 1 large onion, chopped 1 pack essential Waitrose 6 chicken thigh fillets, cut into chunks 2 tbsp Madras spice paste 1 small butternut squash, peeled, seeded and cut into 3cm cubes 400g can chopped tomatoes 150g pot natural yogurt 28g pack fresh coriander, leaves roughly chopped Naan breads, to serve

Ingredients 1 tbsp sunflower oil 1 large red onion, finely chopped 6 cloves garlic, finely chopped 1 tsp cumin seeds 400g dried red lentils 2-3 tbsp Rogan Josh curry paste 1.5 litres chicken stock, hot 6 skinless chicken thigh fillets, cubed 235g pack Waitrose Ready Washed Spinach Cooked basmati rice and natural yogurt, to serve Method Heat the oil in a large pan and cook the onion, garlic and cumin seeds

for 5 minutes until softened and golden. Add the lentils and curry paste and stir for 1 minute, then add the chicken stock and bring everything to a simmer.

Method Heat the oil over a medium heat in a large saucepan and cook the onion for 3–4 minutes until softened. Add the chicken and cook for a further 3–4 minutes. Stir in the curry paste, squash, tomatoes and 150ml of water. Cover and simmer for 25–30 minutes, stirring occasionally, until the squash is tender and the chicken is cooked through with no pink meat. Divide between shallow bowls and top with a spoonful of yogurt and a sprinkle of coriander. Serve with warm naan bread. For a meat-free version of this dish, swap the chicken for paneer cheese.

Stir in the chicken and cook gently for 25 minutes until the lentils are tender and the chicken is cooked through with no pink meat. Add the spinach and cook for 1-2 minutes until just wilted. Serve with cooked basmati rice and spoonfuls of yogurt. THESOUTHWILTSMAGAZINE

f there is one time when we want things to go as simply as possible – it’s when we move to a new house. It’s possibly one of the top stressful experiences most of us will face and can leave even hardened optimists feeling that the world is conspiring against them.

To help, here are ten great packing hacks that will make your moving day run like a well-oiled machine.

KEEP ESSENTIALS SEPARATE To get you through the big day, pack a bag with essential things including your laptop or tablet, toiletries and water. Perhaps a tea bag or two is also in order, just to make sure you have that well deserved cuppa when you most need it. Make a list of what you’ll need on the day and get it ready before you do anything else.

HAVE PLENTY OF BUBBLE WRAP Do a good audit of what you need to pack and what’s going to need wrapping before the move. That means having enough bubble wrap or old newspaper to hand so that you can cover everything. It’s always best to have too much than too little.

USE CLOTHING TO WRAP If you find yourself short of bubble wrap, use your clothes to wrap ornaments and other delicate objects. Socks are great for objects

such as stem glasses if you’re short of the usual wrapping tools. LABEL BOXES PROPERLY To save you lugging boxes around at your new home, make sure you label them properly. Clearly identify if they are fragile, what they

contain and, just as importantly, which room they are supposed to go in.

PROTECT YOUR TOILETRIES The last thing you want is to get to your new home and find your toiletries and make up is in a bad state. Protect compacts by opening and putting a cotton pad over the powder or stop bottles leaking by unscrewing and wrapping in clingfilm around the neck before putting the top back on.

DON’T BREAK YOUR PLATES Crockery and plates can easily get broken. To give them more chance, wrap properly and stack vertically rather than horizontally.

USE YOUR DRAWERS If you don’t have enough boxes for packing, utilising your dresser drawers is an excellent option.

Rather than unloading all the clothes, pack them into sealable bags to keep them safe. You’ll be surprised how much space it saves when moving.

BUY SOME SANDWICH BAGS They’re cheap but very, very useful. If you need to dismantle a

bed, for example, they’re a great container for the screws so you don’t lose them. They’re also brilliant for odds and ends such as jewellery and toiletries.

TAKE A SNAP OF ELECTRONICS Items like computers and home entertainment systems can be difficult to reconnect, especially if you’ve lost the manual. To jog your memory take a quick snap of the connections with your smartphone. That way you can refer to it when you get to your new home.
