THE ENCHANTED GARDEN OF LIGHT

Bath’s American Museum & Gardens has announced the return of The Enchanted Garden of Light, a sparkling festive trail of illuminations through gardens and woodland, after a hugely successful first year.

Running from 1- 31 December, families and friends will be transported once again into a magical after-dark adventure through light displays which will emblazon the entire house, gardens and woodland in glorious colour.

What’s new for 2022? Building on the success of last year, this year’s trail has a new extended route, and all new exciting light installations. There will be an atmospheric woodland lodge meeting point at the start of the trail, for friends and family to join together and enjoy delicious warming food and drink.

The event is perfect for families of all ages, with a step-free route throughout, perfect for pushchairs. Children will be given a lantern at the start to carry along the way, plus there’s a great climb and slide play area, and under-fives go free! Tickets are booking fast, so early booking to secure your perfect date and time is recommended - book via the website.

WILD, WILD WOODS AT THE POUND

Last Christmas, Scratchworks Theatre Company delighted audiences of all ages at The Pound with their winter spectacular The Snow Beast. This December, the gang return to Corsham with another festive treat, Wild, Wild Woods, a

bow-slingin’ fairy-tale mashup with a surprising eco-friendly twist!

Deep in the woods, the legend of a hooded hero rustles through the trees. Some know her as Robin, but first, she was Lil Red. Moons ago, a

hungry pack of wolves came for Lil Red’s village. With nothing but the cape on her back and her trusty bow and arrow, Red and her ragtag band of merries are on the run.

Saddle up and join the outlaws as this western fairy-tale comes to life with foot-stomping music, imaginative storytelling and a whole heap of junk from the recycling bin. Wolves made from bin bags, cardboard steeds and a vicious newspaper goose will have you discovering that one person’s rubbish is another person’s goldmine.

LIGHT SWITCH ONS & MARKETS

CORSHAM

On Friday 2 December, the Christmas Lights go on in Corsham in the town’s traditional, familyfriendly way with a Christmas market, entertainment, live music, fairground rides for younger children and lots, lots more. Plus, of course, Father Christmas will be there, along with his reindeer.

This year the Christmas market will open at 3pm to give shoppers plenty of time to browse and buy Christmas gifts. There will be everything from mulled wine and freshly baked mince pies to Scandinavian baby toys, pickles and chutneys to hand-crafted Christmas stockings. The music stage kicks off at 5pm with the Shing-a-lings who play a fusion of Latin, Soul and R&B. The Lights go on at 6pm, and the fun continues until around 7.15pm.

Bradford on Avon is hosting their annual Christmas lights switch on Friday 25 November - the traditional lights switch on is at 6pm in Westbury Garden, accompanied by Christmas Carols. There will also be entertainment and activities for all, including music, amusements, food, a gift fair in St Margaret’s Hall, Santa’s grotto and a mistletoe trail which will run from Friday 25 November to Friday 16 December.

Westbury continues to build a reputation as one of the best destinations for events in Wiltshire. The Christmas in Westbury event comes hot on the heels of the much-loved Wiltshire Chilli Fest and White Horse Soapbox events earlier in 2022. Trowbridge’s lights switch on lantern festival is taking place on Friday 18 November. The lantern parade, comprising of hundreds of colourful, handcrafted willow lanterns, starts at The Civic from 6pm and will be led by a colourful samba band! The switch on itself will take place in Fore Street from 6.30pm.

On Saturday 3 December Christmas in Westbury will be lit up with a brilliant market of more than 30 stalls, all selling perfect stocking fillers right before the big day. There’s also a huge kids’ area, with mammoth inflatable slides, funfair rides, circus workshops, puppet shows and, of course, Father Christmas in his Market Place grotto. In Frome Christmas wouldn’t be the same without the Light the Night lantern parade and this year it comes with the sweet touch of ‘Gingerbread Town’. Taking place on Friday 25 November from 5-7pm, the event in the town centre also features local music, foodie treats and of course the lights switch-on.

This Christmas the doors to Stourhead House will showcase the beautiful decorations that have been handcrafted by a team of craft volunteers and flower arrangers. I have been buying tulip bulbs from the market for my mother, mother in law, daughter in laws and neighbourssome beautiful colour bulbs around this year. Even if you only have space to plant a pot of them it will be some welcome colour in the early spring.

'INSTANT' SUPPERS

GARLIC & SOY CHICKEN THIGHS

Serves 4

Here is a recipe we’ve been enjoying that is sweet, salty and has a gentle kick of flavour from the garlic, ginger and chilli. I’ve given the instructions for bone-in skin-on thighs in the main recipe, but for less faff skinless thigh fillets can also be used (see notes at the end). There’s also guidance for if you don’t have an Instant Pot. Basically I’m saying there’s no excuse not to try this recipe.

If you don’t eat chicken I think this would be excellent with jack fruit too, in fact I’ll just test that and be right back…

Ingredients

1kg chicken thighs, bone in, skin on Oil (1 tbsp vegetable oil with 1 tsp sesame oil)

½ instant pot cup or 80ml (gf if required) soy sauce

½ instant pot cup or 80ml (gf if required) tomato ketchup

½ instant pot cup (up to 80ml on measure) soft light brown sugar

4 cloves of garlic, crushed

2 inches ginger, grated Chilli flakes (optional)

1 Instant Pot cup (160ml) water

Method

Set the instant pot to sauté mode. Add the oil and then seal the chicken thighs for a couple of minutes on

each side. You will need to do this in at least two batches. Remove the thighs once sealed until all are done. Turn sauté mode off.

Mix the rest of the ingredients together (use the chilli flakes if you’d like a kick to the sauce. I used a teaspoon of them).

Return the thighs to the Instant Pot and pour the sauce over the top. Put the lid on and set the vent to sealing. Set the instant pot to cook on poultry mode (or high pressure) for 20 minutes. Allow to depressurise naturally for five minutes and then cover with a tea towel and then carefully switch to venting.

Remove the thighs, and then skim any fat from the top. Switch to sauté

mode for a few minutes to reduce the sauce until thick and syrupy. Either pour over the thighs to serve or shred the meat from the thighs and return to the pot to coat in the sauce.

Serve with rice and steamed vegetables.

n.b This dish can also be made with skinless, boneless thighs. In which case simply place everything in the pot and cook on high pressure for 10 minutes. Shred the chicken and reduce the sauce on sauté mode.

If not using an instant pot, cook, covered with 360ml of water added, for 90 minutes in an oven at 170°C. Check periodically to ensure it isn’t drying out and add a little water if necessary.

This month FRAN STEVENS, aka The Food Wife, shares some delicious recipes made in double-quick time using her Instant Pot.

SAUSAGE & PASTA CASSEROLE

Serves 2

A perfect weeknight family meal, this sausage casserole is a one pot, Instant Pot, quick and easy satisfying meal that can be easily scaled up. The only things you scale up here are the sausages (2 per person), the carrot (1 per person), the pasta (75-100g per person) and the cups of water (1 per person). It requires about five or so minutes of work, and the Instant Pot does the rest. It’ll be on the table in no time.

Ingredients

1 tbsp oil

1 red onion, large dice

1 clove of garlic, finely chopped

1 pepper, deseeded, large dice

2 carrots, peeled and cut into 1cm thick slices

4 sausages, cut in half (v/gf if required)

150g-200g dried pasta (gf if required)

500g passata

1 tbsp balsamic vinegar

1 tsp Worcestershire sauce (v/gf if required)

Pinch of sugar

Ground black pepper

Pinch of salt

320ml water

Method

Using sauté mode, add the oil and onion to the Instant Pot and sauté for

a couple of minutes. Add the garlic and pepper and stir, followed by the carrots and sausages.

Lightly brown the sausages for a couple more minutes, stirring occasionally. Add the wet ingredients, salt, pepper, sugar and pasta. Stir.

Close the lid and set the valve to sealing. Manually set the Instant Pot to high pressure for half the cooking time detailed on the pasta packetaround 4 or 5 minutes.

Once the Instant Pot has finished, carefully, using a tea towel and handle of a wooden spoon, turn the valve to venting to do quick release. Check seasoning and serve!

You can make this on the hob; cook the pasta separately, following the packet instructions. Make the sauce (without the water) in a pan on a medium heat, following steps 1-3, then cook for about 20 minutes on a low simmer. Stir through the cooked pasta and serve.

BUTTERBEAN STEW

Serves 2-4 as a main or 6-8 as a tapas

This is a frequent meal in our house this autumn and winter. It’s cheap, easy and delicious. Hat-trick!

If you don’t have an Instant Pot then you could make this on the hobfollow the instructions using a lidded pan but it will take a lot longer to achieve that rich sauce and soft beans. Let me know how it turns out!

Ingredients

1 tbsp olive oil

1 onion, halved and sliced

2 cloves garlic, peeled and crushed slightly with a back of a knife

2 roasted peppers (from a jar) roughly cut into strips

1 tbsp tomato purée

2 tins of butter beans (incl their liquid)

1 tsp smoked paprika

1 tbsp chopped parsley (to serve)

Method

Set the instant pot to sauté mode and add the oil, onion, garlic and peppers and stir for 2 minutes.

Add the paprika and tomato purée and stir for a further minute before adding the butterbeans (including their water).

Put the lid on and ensure it is switched to sealing mode. Place manually on high pressure for 10 minutes and then use a tea towel and a long handled implement to use the quick release valve.

Remove the lid, season to taste and switch back onto sauté mode for five minutes to allow the rich sauce to reduce. Add the chopped parsley as a garnish before serving.

We like this with crusty (garlic) bread to dip into the rich sauce. It would also work well with rice or include it as part of a tapas.

MEET THE CHEF

What was your first job in catering?

I worked at The Bath Arms, Crockerton, at the age of 15. I was employed to peel veg but instead was thrown into service and haven’t stopped since.

Where have you worked previously?

For most of my career I worked for Von Essen Hotels the Luxury Family Hotel group in their 2 AA rosette restaurants. During my time there I worked under some fantastic chefs and was able to develop my career from chef de partie through to sous chef and finally head pastry chef.

What were the first dishes you mastered?

One of the first dishes I mastered was a twice baked cheese soufflé. At the age of 17 after carefully watching my head chef, at the time, for a year before being allowed to attempt to make it, I still know the recipe by heart now!!

Do you have any favourite local suppliers?

All of our fruit, veg and meat is sourced as locally as possible with our main bulk of ingredients coming directly from our own Poulshot Lodge Farm shop. I also make savoury pastries to sell at the farm shop and

have even created my own blend of sausages to sell there. One of the things I find most fascinating is being able to farm our own grass-fed beef then watch the entire journey from field to plate.

What is your personal favourite dish from your menu?

This is tricky as our menu changes frequently in order to use the freshest seasonal produce. One of my favourite dishes to make - which always goes down a treat - is ale smoked guinea fowl terrine, medjool date purée and a pork bon bon.

What is the most memorable event you have cooked for?

One of my most memorable events was whilst cooking for Keith Lemon, Holly Willoughby and Fearne Cotton. Keith left his guests and decided to come into the kitchen and started cooking with the team whilst telling us numerous jokes.

When you get a day off, which local pubs and restaurants do you like visiting?

On the rare occasion I have time to myself I like to try different restaurants that have a focus on using local ingredients in unexpected ways. I enjoy visiting Oak restaurant in Bath as well as Osip in Bruton.

When you cook for friends, what’s on the menu?

When I am entertaining friends, you’ll usually find me cooking over coals, beneath our orchard using our own seasoned apple and cherry wood to

bring flavour into prime cuts of meat or cooking my own freshly caught trout nailed on cedar planks directly in the coals.

What is your favourite tipple?

It has to be The Newt’s Ice Cyder. Guilty pleasure? Eating way too much ice cream, especially after a long day in the kitchen.

Finally, if there was one piece of advice you could give to someone who wanted to start a career as a chef, what would it be?

Cheffing is something which takes passion and creativity as well as long hours; don’t be afraid to experiment with ideas and don’t be afraid to keep learning, you can always learn from those around you. Don’t hold yourself back; if you’re no longer learning it’s time to give yourself a new challenge.

TALKING PICTURES

The idea of taking up digital photography can feel daunting, with some being put off by the techy aspects of the hobby: the camera settings, theory and unfamiliar equipment. From the outset, all of these things combined may feel like a vast amount of information, and consequently too high a mountain to climb. If you’ve considered pursuing photography as a hobby but have experienced this mental obstacle, it’s important to remember two things: firstly, you know more about photography than you think, and, secondly, like trying anything new (and walking on the moon) you only need to take one small step at a time. Let’s consider these points in more detail and help you on your way to turning an interest into a real passion!

YOU KNOW MORE THAN YOU THINK

The basic definition of a photographer is someone who takes photos, so, even if you are

taking them on your phone, still consider yourself a photographer! And if you take snaps relatively frequently, have a tendency to take photos of particular subjects, like skies, butterflies or pics of friends, and are taking multiple images of the same subject to get the most aesthetic shot, you’ve already been developing some fundamental building blocks of photography – practice, inspiration and composition.

ONE STEP AT A TIME

Before you frighten yourself by investing in the latest digital camera or ordering an encyclopaedia-sized photography master guide, consider taking an incremental and pressurefree approach to improving your skills; take more photos than usual on your phone, read a photography blog about an area that interests you (pet photography for example), watch YouTube tutorials or attend a beginner’s workshop.

GARDEN JOBS

1. Clear fallen leaves This isn’t just to keep the garden tidy, wet leaves can be slippery on paths, and leave your lawns soggy and brown. It’s also especially important to clear leaves from ponds to ensure water is healthy for fish and other wildlife. Leaves can be gathered up to make leafmould.

2. Raise containers up onto feet to prevent waterlogging In wet weather, raise pots up off the ground on ‘feet’ or similar to keep the bottom of the pot out of the water and prevent compost freezing.

3. Plant tulip bulbs for a spring display Tulips are amongst the most popular of bulbs, valued for their brilliant flower colours and shapes. Plant in autumn for a show of spring flowers. Choose from a large range to suit the situation.

4. Prune roses to prevent wind-rock Shrub and bush roses can grow very tall by autumn; cut back stems by between a third and half their height. This will stop the plants swaying in the wind and becoming loose in the soil.

5. Plant out winter bedding Combining it with evergreens ensures good colour and interest throughout autumn and beyond, and by limiting your colour palette (purple, white and green is a good mix) it looks a bit more contemporary.

6. Cover brassicas with netting if pigeons are a problem. Pigeons peck at leaves, tearing them, often just leaving the stalks and larger leaf veins behind. To avoid accidentally trapping or injuring birds and other animals, always ensure netting is kept taut, and check regularly for holes

7. Insulate tender plants from frost When it is not practical to lift or move tender plants, the best way to protect them from the winter cold and wet is to wrap them up. Get this done when the first frost warnings of the autumn come, usually around now. Bubblewrap works well.

8. Lift and store dahlias, cannas and tuberous bedding begonias Alternatively, in milder areas with good drainage, you can protect the tubers by covering them with an extra thick mulch - (there is a risk your plants will succumb to long periods of cold/wet though.)

9. Tidy up stakes and other supports as late flowering herbaceous plants die down for winter. Leave attractive seedheads in situ where possible as they look attractive covered in frost and provide overwintering spots for insects like ladybirds.

10. Feed the birds In winter provide foodstuffs with a high fat content to help keep birds warm. Feed regularly too so they won’t waste vital energy visiting your garden when there is no food.

#ENERGYSAVINGHACKS

1. Switch off standby

You can save around £65 a year just by remembering to turn your appliances off standby mode.

Almost all electrical appliances can be turned off at the plug without upsetting their programming. You may want to think about getting a standby saver or smart plug which allows you to turn all your appliances off standby in one go.

Check the manual for any appliances you aren’t sure about. Some satellite and digital TV recorders need to be left plugged in to keep track of any programmes you want to record.

2. Draught-proof windows & doors

Unless your home is very new, you will lose some heat through draughts around doors and windows, gaps around the floor, or through the chimney. Professional draught-

proofing can cost around £225, but can save around £125 a year on energy bills. DIY draught proofing can be much cheaper.

3. Turn off lights

Turn your lights off when you’re not using them or when you leave a room. This will save you around £25 a year on your annual energy bills.

4. Careful with your washing

You can save around £34 a year from your energy bill just by using your washing machine more carefully:

• Wash at 30°C instead of higher temperatures.

• Reduce your washing machine use by one run per week for a year.

5. Avoid the tumble dryer Tumble dryers use a lot of energy: if possible dry clothes on racks inside where possible or outside in warmer weather to save £70 a year.

6. Spend less time in the shower

Keeping your shower time to just 4 minutes could save a typical household £95 a year on their bills.

7. Swap your bath for a shower

Some of us enjoy a long soak in the tub but swapping just one bath a week with a 4-minute shower could save you £20 a year.

8. Be savvy in the kitchen

Kettles are one of the most used appliances in the kitchen. But many of us will admit that we at least occasionally boil the kettle with more water than we’re going to use. Avoid overfilling the kettle and save yourself £13 a year on your electricity bill. You could also consider fitting an aerator onto your kitchen tap to reduce the amount of water coming out without affecting how it washes or rinses. An aerator attaches to the spout of taps and is cheap and easy to install – and could save you £30 a year.

9. Fill your dishwasher

Only run your dishwasher when it is full to reduce the amount of water you use. Reducing your dishwasher use by one run per week for a year could save you £17.

10. Top up the insulation

Effective insulation of your hot water cylinder is important: even if you have thin spray foam or a loose 25mm jacket, you can benefit from increasing the insulation to a British Standard Jacket 80mm thick, saving £70 a year in the process. Insulating your water tank, pipes and radiators is a quick and easy way to save money on your bills.

The 23-year-old made a great impact on debut against Gloucester on Saturday 8 October, making over 50 metres from 12 carries and beating six defenders. Then, against Saracens he was credited by stats service Opta with gaining a stunning 254m in attack while beating 11 defenders (a Bath Rugby record) and giving two try assists. He was also unlucky to have a fantastic try of his own disallowed for a questionable knock on in the build up.

“Ollie made a big impression on me straight away,” Head of Rugby Johann van Graan said. “I believe he will make a real difference to Bath Rugby in the years to come.”

Lawrence has seven England caps to his name and scored his debut Test try against USA in the summer of 2021. He can consider himself unfortunate to have missed out on selection for the upcoming Autumn International series.

GLUTTON FOR PUNISHMENT

Back on 2 October I finally ran The London Marathon, although, as I will come on to later, ‘ran’ is a loose term!! This was the eighth time I had applied and so felt very fortunate to be accepted and to be able to join around 50,000 other runners in what turned out to be one of the best experiences of my life.

It did not all go completely to plan leading up to the big day. I had started training about three months earlier... 26 miles is a long way so best be prepared... and things were going well until I had an old calf niggle rear its ugly head exactly three weeks before the actual day. This meant I couldn’t run at all for

and managed, just, to cross the line in 5hrs 24mins.

One paragraph about how I completed the London Marathon doesn’t really seem enough does it? There were so many other parts of the day though which deserve a mention. The crowds lining pretty much the whole route were amazing, the encouragement - and sweeties - helped me get through some really tough moments. I run for Avon Valley Runners, a running club in Trowbridge, and seeing fellow AVR peeps spectating was wonderful. I also had a random lady shout to me at mile 18 “Avon Valley Runners!!! I’m from Trowbridge too”, which was unexpected but lovely. There was also a man competing

pain I’m not sure I conveyed that too well! Helen was very chipper and the fact that she waited for me and encouraged me to finish is the mark of a true, true friend and for that I will be eternally grateful, even though as we crossed the line it looked as though she was taking an octogenarian relative out for his daily walk. Thank you Helen.

A last and final and most important mention must go to my beautiful family who made the trip up to The Big Smoke to stand very near the end, in the shadow of Big Ben, to cheer me on to the finish. It truly was a sight for sore eyes(and legs!!!). Thank you Lisa, Georgia and Dougie and my lovely sister in law Kate for supporting me when I needed it the most... I love you all.

Would I ever do it again? Well we will see as I have entered the ballot for 2023 and will find out at the end of this month whether I am in or not!!!
