utumn is here. As you read this we may well be enjoying a wonderful Indian summer, but as the kids embark on a new academic year, and the garden starts its inevitable decline, it is an inescapable truth that 2015 is nearing its end. Fear not though, the last few months should be cracking. I mentioned the kids going back to school, it may well be that you are a parent looking at your child’s next stage of education. From nurseries and pre-preps to sixth form and further education, our bumper education special covers each stage of the education cycle. Head to page 43 to find out more. And if you are a parent, take a look at our feature on this month’s Bath Children’s Literature Festival (page 58), it features the biggest names in the industry. One of the joys of autumn is the wonderful new food season that it brings with it. Our Eat the Seasons page should whet the appetite, our recipes (page 29) will hopefully inspire, and some of our featured establishments might well encourage you to venture out and enjoy some great local food and drink. GIN AUSTEN & FRIENDS AT THE HOLBURNE The very first event in the packed calendar for the GREAT BATH FEAST is an invitation to join Gin Austen & Friends at the Holburne Museum on Thursday 1October (5pm-8pm). Guests will be invited to sample the delights of the ’Spirit of England’ in the splendid setting of the Museum’s Ballroom Gallery. The Bath Gin Company is one of nine regional distillers who will be offering samples and sharing their expertise. AMERICAN MUSEUM IN BRITAIN HOSTS TALK BY LOYD GROSSMAN Dr Loyd Grossman, CBE OBE, will deliver a lecture at the American Museum entitled ‘How to Paint History’ on Friday 16 October 2015 at 7pm. Grossman will discuss the genesis and influence of Benjamin West’s most famous picture, The Death of General Wolfe, and explore the personality of the artist who travelled from the backwoods of Pennsylvania

to the state rooms of Buckingham Palace and the Presidency of the Royal Academy. The Death of General Wolfe signalled a revolution in historical painting that influenced the work of Gericault, Courbet, Manet, Picasso, Lichtenstein, and others. Loyd Grossman explores both why Wolfe has exercised such a magnetic grip on our

imaginations for almost 250 years, and how West helped to lay the foundations of a modern attitude that has affected the way we live and think ever since. CORSHAM PICTURE FRAMER AWARDED HIGHEST QUALIFICATION Steve Hible of Right Angle Picture Framing Ltd. in Corsham High Street was pleased to hear that he has become only the 12th framer internationally to receive the Guild Commended Framer (Advanced) qualification in conservation framing. Although Steve has been a picture framer for over 35 years, he says that he studied for six months to prepare for sitting the exam. The qualification means he has shown he is able to handle and frame items of significant value and importance in

ways that will preserve them for future generations. “I have worked with a number of local museums and conservators and love the job of presenting historic pieces in the best possible way.” says Steve. IT’S MAGNA FLORA AT SALISBURY CATHEDRAL Salisbury Cathedral’s Magna Carta Celebrations reach a floral crescendo in September with up to 500 flower arrangers from across the diocese creating a grand scale flower festival themed around Magna Carta. Around 20,000 visitors are expected to visit during the Magna Flora festival week, 15 – 20 September. Amongst the astounding floral art works they’ll encounter are a series of giant, 6ft x 3ft fantasy flowers, two of which will be hung high in the Cathedral Quire with silk Hydrangea heads at their centres, and a series of massive hanging lampshades, approximately 4ft in diameter. An ambitious central display designed to run the full length of the nave depicts the country in chaos before Magna Carta on one side and ‘in order’ on the other. In the North Aisle, 25 panels of flowers, each 12ft high, feature every Baron present at the sealing of the Magna Carta. It’s not just flowers on display, either. The Cathedral also uses the festival to showcase the talents of local musicians. Twice a day the North Transept is transformed into a performance space where the three festival designers - Michael Bowyer, Pam Lewis and Angela Turner - demonstrate floral design, accompanied by live music. Along with private events the Country Park arranges lots of public events throughout the year too. In July they hosted the hugely popular Village Pump Festival and on Sunday 30 August is The White Horse Festival, a wonderful event for all the family

So as summer moves towards autumn why not head over and discover one of its main attractions, the Sign of the Angel? About to celebrate its first birthday, this stunning country inn oozes character and has developed a fine reputation among local foodies. The ‘Angel is owned by brothers Jack and Tom Nicholas and their business partner Jon Furby, who is also executive chef. Tom says “In our first year we’ve been keen to focus on the whole experience for the customer. Every element is important, be it the quality of the food, the friendliness of the welcome and

eptember is a busy month for harvesting as summer moves on and autumn arrives. As such this is the last month for runner beans and broad beans but don’t despair there is a host of freshly available veg this month including squashes, celeriac, cavolo

From the hedgerows you should find plenty of blackberries, elderflower for wine or for flavouring drinks. Sloes and crab apples should be around too. On the veg plot the rush to get things into the ground slows but it is worth

sowing some winter hardy spring onions ready for spring as well as lettuce like Arctic King – sow now ready for an early spring harvest. We think of lettuce as a summer crop but actually they don’t like too much heat and are surprisingly hardy. Autumn onion sets can also go in now to provide an early crop and plant out spring cabbages to slowly develop for next year. Winter is on the way! It’s super healthy, delicious and bang in season as we head into autumn. Our main recipe comes, as usual, from Waitrose, and we have more courtesy of Game-to-Eat.

VENISON STEAKS & CHICORY WITH A BALSAMIC GLAZE Serves 4

Ingredients 1 pack venison steaks (approx 300g) 3 tbsp balsamic vinegar 150ml red wine 2 medium heads chicory (approx 250g), trimmed & halved lengthways 2 tbsp olive oil 2 tsp fresh thyme, roughly chopped, plus extra to garnish

Method Place the venison steaks in a large bowl and pour over 1 tbsp each of the balsamic vinegar and red wine. Allow to marinate in the fridge for 1 hour. Brush the chicory with 1 tbsp of the oil and cook on a hot griddle for 2 minutes on each side until softened. Heat the remaining oil in a large frying pan and fry the venison for 12–14 minutes for medium, turning

occasionally. Remove, set aside and cover to keep warm. Add the thyme, remaining vinegar and wine to the pan and heat until the glaze is reduced by half. Place 2 chicory halves on each plate. Slice the venison and arrange on top. Drizzle over the balsamic glaze and garnish with more thyme. Serve with a green salad and new potatoes.

Method Place the shoulder in a roasting tray and season well then sprinkle over the chopped thyme. Roast in the oven 160ºC for 3 hours. Remove from the oven and allow to rest for at least 30 minutes. Add a little extra fresh thyme before serving with your favourite roast accompaniments

DUCK PIE

Sauté the onion and garlic and add the flaked duck, thyme and prunes. Pour over the stock and bring to the boil.

Ingredients 8 duck legs 200g chopped red onion 20g fresh chopped garlic 10g fresh thyme 50g prunes 100ml chicken/game stock 600g mashed potato 200g hispi cabbage

Place into a serving dish and pipe on the potato, then season, place under the grill to colour and serve with some hispi cabbage, or whatever greens you wish.

Method Season and sear the duck in a hot pan then roast in the oven 140ºC for 3 hours. Once cooked, remove from the oven and allow to cool slightly before taking all the meat off the bone.

SLOW ROASTED SHOULDER OF VENISON Serves 4

Ingredients 1 venison shoulder Sea Salt Freshly milled black pepper Chopped fresh lemon thyme

BLACK PUDDING PHEASANT EGGS Serves 4

Ingredients 12 pheasant eggs 500g black pudding 150g panko breadcrumbs 50g flour 1 egg Method Soft boil the pheasant eggs for 2-3 minutes then place in cold water and peel carefully. Place the black pudding between two sheets of cling-film and roll out to even thickness. Wrap each egg with the rolled out black pudding and place into the flour. Whisk the remaining egg in a shallow dish to make an egg wash, then flour the boiled eggs well and place into egg wash. Remove from egg wash and roll in the breadcrumbs until completely covered. Deep fry in hot oil until golden brown and serve with a little mayonnaise.

This month we caught up with RICKY FORD, head chef at Timbrell’s Yard in Bradford on Avon. Since opening this spring, it’s created quite an impression on the local dining scene… Are there any hobbies that you pursue in your time off? I’d like to say yes, but sadly no! When you cook for friends, what’s on the menu? Simple is good so I can spend more time with my friends and family and not in the kitchen. I’m all for everyone digging in. A big one pot wonder such as venison tagine is what I’d go for. What’s your favourite kitchen gadget? My Rationale oven, I’d be lost without it. What was your first job in catering and how has your career progressed? I’ve been cooking since I was 15 and my first job was at The Woolpack in Beckington as a commis chef. I worked my way up to senior chef de partie then took a senior chef de partie role at The Bath Arms in Horningsham. I learnt the most at my roles as chef de partie at Bishopstrow House and as head chef at The Museum in Farnham before arriving here at Timbrell’s Yard.

With my cooking I really try keep it simple; let the produce do the talking. 32

What was the first dish you mastered? Dark chocolate truffle cake. As most chefs I started on the desserts section and this really stands out in my mind as being my first culinary achievement. Do you have any preference with local suppliers? I only use local suppliers… What is your favourite dish on the menu? Our new lamb dish, grilled Barnsley chop, braised fennel, courgettes, capers and borlotti beans. Do you have a food philosophy? Yes. With my cooking I really try keep it simple; let the produce do the talking.

Three Daggers Brewery We caught up with GM of the Three Daggers Group ROBIN BROWN to find out more about the brewery, their beers, and their new beer bus!

We experiment with occasional one off brews and are now also selling to chef Tom Aikens in Canary Wharf. Do you attend any events or festivals? You’ll see us at Bristol’s Grape & Grain Festival 18-20 September - we will be selling our beers from our amazing 1968 vintage Citroen beer bus which has been fully renovated and adapted and features four hand pumps. It’s available for hire as well!

How did your association with The Three Daggers Brewery begin? I started in November last year. Previously I lived and worked in the French Alps running a ski chalet company so overseeing the brewery is a new experience for me but I’m thoroughly enjoying it.

as 72 pint casks which we supply with all the gear you’ll need to serve the beer at an event or party. Who devises your beers, and which are the locals’ favourites? All our beers have a unique recipe and are masterminded by Head Brewer, Michael Andrews. We grow our own hops at Priory Farm, less than a mile from the brewery, and in October we’ll be using these to brew a special ‘green’ beer. Earlier this year we brewed a new stout, Daggers Black 4.5% ABV, and this is proving a real hit with our team and regulars alike!

Where can we enjoy your beers? On our site in Edington we have our pub The Three Daggers, the brewery and, above that, our farm shop. You can enjoy our beers at all three. A particular highlight are our tapas nights on Thursdays. We also sell to pubs throughout the South West and London. We can also organise 18 pint and 36 pint What’s the secret to your success? Consistency. We have developed a bags in boxes of beer (they come with small, fantastic range of ales which are their own tap so ready to serve) as well meticulously brewed by Michael and his team and which are earning a great reputation throughout the region.

On Saturday 3 October we are having a mini beer festival where you can come and try our ‘green’ beer, enjoy a BBQ, great local food and music.

he Telegraph Bath Children’s Literature Festival, the largest dedicated children’s book festival in the UK, is now in its 9th spectacular year. This is a festival bursting at the seams with vibrant activity for children of all ages, their families and friends. Kitchens are often considered the ‘hub of the home’ - have you enough space? Could it be that by moving a wall, or incorporating a small side room, the space could be more productive and useful? If you are going to install a new kitchen, then adding on a small amount of building work may only add a little to the project, but a lot to how the kitchen can be used.

Plan your space - what do you want to use it for? Is this just to be a kitchen, or is to be a dining room as well, do you need a comfortable seating area, a workplace for children’s homework, a mobile phone station, a computer desk? Write a list of what the space needs to accommodate - how the family will use it?

Talk things through with all your family – plan together A new kitchen impacts on the whole family so involve the whole family - let them have their say before you start planning. Get their ideas as well and make everyone feel part of the project. Putting in a new kitchen is disruptive, so be prepared and get everyone involved.

onfession. Over the last few weeks I’ve been worrying so much about whether or not my daughter will behave on our forthcoming holiday that I made what can only be described in young person’s speak as “an epic fail”. I forgot she needed a passport. I was making my list of things to do before we set sail (regular readers will no doubt be aware that I don’t mind a ‘to-do list’, being ever-so slightly obsessive compulsive) but her requirement of a passport hadn’t come onto my radar mind until my wife mentioned it rather matterof-factly the other day, nonchalantly slipping a “we’ll have to get little G’s passport sorted in the next few days” into a conversation and unknowingly sending me into a panic. All I could see before me was a near apocalyptic encounter at the passport office. I had previously read about queues going round the block lasting days, causing normally passive adults to start ranting and raging about the state of the Home Office. I immediately envisaged having to cancel the whole trip, until my wife manfully volunteered to take the matter in hand and take the little one to the passport booth to get her photograph taken. Really, the way my wife pretends like these things are easy is infuriating. This time though I had the last laugh. It did not go to plan… As anyone who has tried to get a passport photo correct will tell you it is a virtually impossible undertaking. There are so many rules, the background has to be a certain colour, you can’t smile and if you do you can’t show your teeth. No hair across the face, face a certain size,

all kinds of strange things you can and can’t do that will mean rejection if you transgress. To comply with all of these when you are an adult is tough enough. When the subject is two and a half years old and frankly couldn’t care less where we go on holiday as long as there are picnics, ice cream and sand (preferably all mixed together) it becomes a totally different experience again. Apparently getting my daughter in the right pose was like wrestling with Olly the Octopus while he was trying to shake hands with all his mates who had turned up to watch the fun. First problem is that the twirly seat doesn’t go high enough to take a picture of a toddler, and did I mention she had to be in the picture by herself? I couldn’t help but snigger (internally it must be said as I value my life) when my wife described a scene whereby she was standing outside the booth, on one leg, the other leg outstretched through the curtain over the too-low seat. The child then had to sit on my wife’s leg facing the right way, not smiling, not moving and not excavating nostrils for yummy snacks while she, lunging from the waist, retrieved the money, put it in the slot and pressed the green button for go. This all done in full view of

the bystanders wondering what the strange out-of-breath, red-of-face lady standing on one leg was doing. Oh, and then my daughter wanted to press the buttons and the whole thing really did descend into chaos. In the end we did the sensible thing, cut our losses and got it done by a photographer. It is a lovely photograph, very sweet and perfect for the passport office. When it arrived she was so excited that she had her own passport, just like mummy and daddy’s. In five years time, though, she will need another one…is it wrong to send a seven and a half year old kid to get their own passport photo done?
