LONGLEAT’S NEW SKY SAFARI SHOW

The skies above Longleat will be filled with the spectacular sight of dozens of hot air balloons as part of a brand new ‘Sky Safari’ (16 - 18 September). The event is the latest in a year-long series of celebrations to mark the 50th anniversary of Longleat Safari Park. To honour the milestone, 50 balloons, one for each year the safari park has been open, will be launching into the air. Over the three days a sky-full of hot air balloons in a variety of shapes Longleat’s first hot air balloon extravaganza will include a night glow event

and sizes, including Longleat’s very own ‘flying lion’, will be making a series of mass ascents into the sky above the Estate. Among the other confirmed attendees will be Puddles and Splash, a pair of cute penguin-shaped balloons, who will be making their only UK appearance this year at the event.

THE 10TH BATH CHILDREN’S LITERATURE FESTIVAL The largest dedicated children’s festival in Europe will soon be 10 years old. ANTIQUES VALUATION DAY AT LOWDEN WEDDINGS AT

Lowden Garden Centre is busy organising Antiques Valuation Day in a bid to raise money for Cancer Research UK. Lowden will be hosting an Antiques Valuation Day with BBC’s Kate Bliss (Bargain Hunt & Flog It) on Friday 23 September from 10am to 3pm. This fundraising event will give you an opportunity to obtain professional valuations for a fee of £3 per item or £5 for two, refreshments will be available. Lowden decided to organise the event to raise awareness of Cancer Research.

THE MOUSETRAP RETURNS TO SWINDON Agatha Christie’s beloved murder mystery The Mousetrap will return to Swindon’s Wyvern Theatre on the final leg of its record-breaking UK tour. Second season launch for The Neeld

T

he Neeld Community and Arts Centre was opened by Chippenham Town Council in February 2016 following a major refit including new retractable tiered seating, professional sound and lighting equipment, bar and air conditioning. Their opening weekend

featured Oliver!, West End show Showstopper! The Improvised Musical and has already welcomed major acts including comedians Mitch Benn, Andrew Lawrence and Andy Ford, musicians The Coal Porters and Calan and family shows with the Berkeley Ensemble and Story Pocket Theatre.

he George at Woolley, on the outskirts of Bradford on Avon, has become one of the most popular dining spots in the area since being renovated by Alison Ward-Baptiste and Alex Venables last summer. The duo have put their heart and soul into The George and as a consequence it has been reborn as a proper community pub, offering everything from top cuisine to a friendly bar; exquisite afternoon teas to gourmet dinners and even family Sunday lunches.

eptember is a busy month for harvesting. This is the last month for runner beans and broad beans but don’t despair there are a host of freshly available veg this month including squashes, celeriac, cavolo nero, leeks, beetroot, swede, turnips and a mixture of purple cauliflower (cape broccoli) romanesque and normal cauliflower. Hopefully you will see this change in the seasons reflected in your local restaurants as well as your farm shops. Some of the English salads crops are now coming to an end but you will see some great fruits including the first English coxes appearing along with plums, figs, damsons, quince and

medlars. From the hedgerows you should find plenty of blackberries, elderflower for wine or for flavouring drinks. Sloes and crab apples should be around too.

Sometimes you can’t beat a bit of convenience. This month enjoy these delicious, fuss free, dishes from Waitrose.

EASY BEEF PASTITSIO

Serves 4

stirring to break up the meat, until browned. Pour in the tomato and garlic pasta sauce and bring to a simmer. Cook for 2–3 minutes, then set aside.

| recipes Method Preheat the oven to 190ºC. Put the squash in a roasting tin and scatter over the garlic and sage, then drizzle over the oil. Roast for 30 minutes until the squash is tender and golden. Meanwhile, cook the macaroni in boiling water for 8–10 minutes until tender. Drain well and set aside.

EASY OVEN-ROASTED SAUSAGE RATATOUILLE Serves 4

Ingredients 2 peppers, seeded and cut into long pieces 1 aubergine, cut into 3cm chunks 1 courgette, thickly sliced 1 red onion, thickly sliced 4 cloves garlic, unpeeled 2 tbsp olive oil 1 tbsp chopped fresh rosemary 250g cherry tomatoes 340g pack 10 Heck Chicken Italia Sausages 1 tbsp tomato puree 150ml hot chicken stock Crusty bread, to serve

Stir together the sundried tomato paste and stock, and pour into the tin. Increase the oven temperature to 220ºC. Return the ratatouille to the oven for a further 10 minutes until the vegetables are tender and the sausages are nicely browned and completely cooked through with no pink meat. Divide between bowls and serve with crusty bread. Cook’s Tip For a spicy flavour, try adding chunks of chorizo to the recipe with the ingredients with the cherry tomatoes.

EASY ROAST BUTTERNUT MAC & CHEESE

Melt the butter in a pan and stir in the flour. Remove from the heat and gradually stir in the milk to form a smooth sauce. Return to the heat and cook, stirring continuously, until it comes to the boil. Reduce the heat and simmer for 2 minutes. Remove the sauce from the heat and stir in two thirds of the grated cheese. Preheat the grill to high. Stir the macaroni into the cheese sauce, then carefully fold in the squash, taking care not to break it up. Spoon the mixture into an ovenproof dish and scatter over the rest of the cheese. Place under the grill for 3–5 minutes until bubbling. Cook’s Tips It’s easy to make a double quantity of this recipe, then divide it between two dishes. Use one freezer-proof dish and you can cover and freeze a batch for up to one month.

Serves 4-6

Stir in the cherry tomatoes then sit the sausages on top. Return to the oven for 15 minutes.

Method Preheat the oven to 200ºC. Place the peppers, aubergine, courgette, red onion and garlic in a large roasting tin. Drizzle over the olive oil, scatter with rosemary and toss together, then roast in the oven for 20 minutes.

Meet the Chef This month we caught up with the head chef at The George Inn in Sandy Lane, WYN JONES, to talk cooking for Simon Cowell and homemade ice cream. What was your first job in catering? My first job in catering was as a KP, doing the pot washing. This gives you good grounding and I progressed from there once I had finished catering college to commis chef and I’ve never looked back. I love my job! Where have you worked previously? Born and bred in Wales, most of my career has been centered around Cardiff where I am from. I have worked in some branded restaurants to serve my time as commis chef, but really started to learn my trade while working at 5 star hotels like Mercure Holland House and St David’s Bay Hotel, where I also found myself cooking for distinguished guests and celebrities. What was the first dish you mastered? Eggs Benedict. Getting the sauce right is the hardest part of any dish. Do you have any favourite local suppliers? The majority of our suppliers are local so it’s hard to single one out. We are very lucky in the westcountry, we have some of the

best producers on our doorstep delivering daily. If pushed I would say Stiles Butchers Bromham, I could walk to them from The George! What is your favourite dish on the current menu? I do like to have a vegetarian dish that is a little different so I would go for the Queen Anne Artichoke tart with Amaranth salad, but the dish everyone is talking about at the moment is the stuffed saddle of rabbit. It’s a great dish and uses the whole of the rabbit and presents the meat cooked three ways. What is the most memorable event you have cooked for? Mmm, I would say Simon Cowell but I am not going to tell you why it was the most difficult - readers can use their imagination! When you cook for friends, what’s on the menu? Sharing platters and one-pot wonders definitely keeping the

whole thing sociable and not spending the night in the kitchen cooking three courses. Roast partridge with pork and cranberry stuffing, wrapped in bacon and served on a bed of Puy lentils is great as it looks like you have been slaving away all afternoon! SUPER FOOD FAMILY CLASSICS CHICKEN FAJITAS SMOKY DRESSED AUBERGINES & PEPPERS Sticking to super-lean chicken breasts is the key to making super-food fajitas, and also provides us with a great source of protein, ensuring our muscles stay strong and healthy. Put 1 tablespoon of oil into a bowl with the vinegar, chilli sauce, oregano, paprika and a pinch of sea salt and black pepper. Crush in the unpeeled garlic through a garlic crusher and mix together. Peel and halve the onion, slice into 1cm-thick wedges, then slice the chicken lengthways 1cm thick and toss both in the marinade. Leave in the fridge for at least 1 hour, or preferably overnight.

Serves 4 Total time: 40 minutes, plus marinating 2 PORTIONS VEG & FRUIT olive oil 1 tablespoon red wine vinegar 1 teaspoon chipotle Tabasco sauce 1 teaspoon dried oregano 2 teaspoons sweet smoked paprika 2 cloves of garlic 1 large red onion 2 x 200g free-range skinless chicken breasts 3 mixed-colour peppers 1 large aubergine 2 limes 1 bunch of fresh coriander (30g) 1 ripe avocado 4 large seeded wholemeal tortillas 50g feta cheese

Blacken the whole peppers and aubergine over a direct flame on the hob, or in a griddle pan on a high heat, until charred and blistered all over. Pop the peppers into a bowl and cover with clingfilm for 10 minutes, then scrape off most of the black skin, discarding the stalks and seeds. Pinch the skin off the aubergine and trim off the ends. Nicely slice it all 2cm thick, dress on a platter with the juice of 1 lime and a few picked coriander leaves, then taste and season to perfection. Cook the chicken and onions in all that lovely marinade in a large non-stick frying pan on a medium-high heat for 6 to 8 minutes, or until cooked through, turning halfway. Peel, destone and finely slice the avocado, and squeeze over the juice of half a lime. Warm the tortillas in a dry frying pan for 30 seconds, then keep warm in a clean tea towel. Take it all to the table, with the feta and the remaining coriander leaves, and let everyone build their own. CAL

SQUASH & SAUSAGE RISOTTO RADICCHIO, THYME & PARMESAN A little sausage goes a long way in this delicious dish. I’ve paired it with sweet squash, which gives us a hit of vitamins A and C, both of which we need to keep our skin nice and healthy. Finely slice the chipolatas and place in a large high-sided pan on a medium heat with 1 tablespoon of oil, the fennel seeds and chilli flakes. Stir and fry while you chop the squash into 1cm dice (leaving the skin on and deseeding), and peel and finely chop the onions. Stir the veg into the pan, then cook with a lid ajar for around 20 minutes, or until the squash is starting to break down and caramelize, stirring regularly. Simmer the stock in a pan on a low heat.

Serves 4 Total time: 55 minutes 2 PORTIONS VEG & FRUIT

4 higher-welfare chipolata sausages olive oil 1 teaspoon fennel seeds ½ teaspoon dried red chilli flakes ½ a butternut squash (600g) 2 onions 1.2 litres organic veg or chicken stock 125ml Chianti 300g Arborio risotto rice 1 radicchio or 2 red chicory 300g cottage cheese 15g Parmesan cheese 2 sprigs of fresh thyme

Push the squash aside, and pour the Chianti into the pan. Let it cook away, picking up all that goodness from the base of the pan. Stir in the rice for 2 minutes, then gradually add the stock, a ladleful at a time, stirring and waiting for each ladleful to be absorbed before adding the next. Repeat this, stirring and massaging the starch out of the rice, for 20 minutes, or until the rice is cooked but still holding its shape, and the risotto is oozy. Finely slice the radicchio or chicory and stir through the risotto with the cottage cheese, then taste and season to perfection. Portion up and serve with a fine grating of Parmesan and a sprinkling of picked thyme leaves. CAL

Let the Games begin... at 3am!

am writing this in the dark. It’s a midsummer morning and I am up so early the sun has yet to show itself. That can only mean one thing…it’s The Olympics. I’ve just finished watching the daughter of a good friend of mine (Siobhan-Marie O’Connnor) qualify for her swimming final in the fastest time and in a new British record. That’s what I was up at sparrow’s fart for and, given I know her quite well, I think that is perfectly acceptable behaviour. That I am then still up, still awake and watching Edward Ling win

The women have been living with sand getting into unmentionable places for years… How do you like that boys?! I have also been watching judo, archery, hockey, and lots of other sports that up until now would not really have merited more than a cursory glance as I was navigating

Who knew shooting could be so interesting? Once he had secured his medal I should have gone to bed but no, I stayed up and watched some Croatian chap steal the gold from under some Italian chap’s nose. It was the Italians fourth Olympics by the way and he had won two silvers and one bronze previously so he was desperate to get the gold… I quite felt for him when it didn’t happen… The things you learn!! Earlier on the same evening my wife and I had been transfixed by the diving and the gymnastics, wifey more so than me although I am not sure why. On another - unrelated point - I know we live in austere times but surely they could have found enough

through my sports channels on my way to the rugby, cricket, cycling or athletics. The thing is though all of the people you see at The Olympics, in whatever sport, put in a massive amount of work. They make huge sacrifices in their personal and family lives to get to where they are, often without any recognition except maybe once every four years, for a couple of days, someone like Edward Ling or Katie Clark (synchronised swimming since you ask) get the fame and support they deserve, they get to know what it feels like to be Jess or Mo for short while... ...Well, I’m at it again. It is early, 4.15am to be precise and once again dark. I did get to see Siobhan win a silver medal though so that more than makes up for it. I have to say though

after doing this yesterday too the other sports have kind of lost their lustre a bit. While it might be nice to see how the fencers are getting on or how the gymnasts have fared I think it will be nicer to go back to bed and have a bit of a snooze. The Olympics are amazing and once every four years it’s lovely to be able to care about people and sports that you would never normally see…but at 3am?! I am now appealing directly to the IOC (as they will obviously be reading this!). Can you please only award the games to countries that lie on the Greenwich Meridian from now on. Then I can watch through fully open eyes, maybe even over a nice lunch or dinner with a glass of something bubbly. Then I’ll be able to properly function throughout the working day without having to take a nap. Come to think of it I do love my afternoon naps. Maybe Rio was a good choice after all!
