A MODERN TAKE ON

ANCIENT GRAINS arbs are all the rage today. From those seeking to diet, to those that are gluten-sensitive, to diabetics and to those seeking a more natural diet, discussion inevitably turns to grains and other sources of carbohydrates. One result is the re-emergence of ancient and alternative grains. These historic foods can offer a variety of dietary (and culinary benefits). Some are gluten-free, some are high protein, some affect blood sugar so slowly and mildly that they are ideal for people watching their weight or blood sugar. There is definitely a place in a healthy diet for ancient and alternative "grains," but you will want to do your own research to see which fit into your regimen since there is such a variation from product to product. To date, the challenge for many is incorporating these foods into a healthy diet that is also rich in flavor to match the nutritional benefits.

Amaranth One of the world's oldest grains, amaranth is a South American grain that can be used in place of rice. Both gluten- and wheat-free, amaranth is high in protein (9g per cup) and is nutty enough to make for a good breakfast alternative. Barley Barley is a rich, bulky grain originally from Ethiopia and Southwest Asia. Use barley flower to make breads, muffins, and cookies, stir-fry it with vegetables, or blend it in stews and soups. 190 Channels There are numerous other ancient and alternative grains – not all of which are even grains. If you find the distinct, often nutty flavor of one, it's worth exploring the others. Chefs catering to the health conscious have certainly re-discovered these ingredients and they are appearing on menus everywhere. Quinoa might be the most popular today. It's almost ubiquitous and its popularity is even stressing producers' ability to grow and bring it to market. While restaurant chefs are adept at incorporating it into complicated dishes, home cooks who simply substitute it for more common carbs or grains can be disappointed. Its slight, nutty taste begs to be partnered with stronger flavors from across the range of taste to bring out the best. Fortunately it pairs well with many flavors, such as in this recipe. Greek quinoa salad Cook two cups of quinoa following directions, and consider substituting the boiling water with organic vegetable or mushroom stock. Cool. Then mix with a variety of vegetables: • 3 Roma tomatoes, chopped • ½ of a chopped red onion • ¾ of a chopped cucumber • ½ chopped sweet bell pepper Toss the resulting mix with a dressing of olive oil, lemon juice, dry oregano, minced garlic, salt and pepper to coat and to taste. Finish the dish with crumbled feta cheese, Greek Kalamata olives; garnish with pickled Greek peppers. Serve as a main dish for lunch, pre-dinner salad or side dish. Add grilled chicken or shrimp to easily transition the dish into a very healthy entrée that will surprise and delight guests.

t has been over three years since I interviewed German photographer TeeJott for a Wire Magazine cover story about his work, which included photos of some of the gorgeous models he photographs. You can visit wiremag.co/issue01_2015 to read that interview and browse through the sexy model photos. I recently thought about TeeJott's wonderful photographs and decided to contact him for an update about his work. Like any talented artist, TeeJott has continued to evolve and his model photography has taken more of a documentary project nature, showing the development of his beautiful models. Rafa Carvajal: For those who missed our last interview in 2015, tell us how your photography work has evolved since then. TeeJott: Before 2015, my work was surely more influenced by my 12 year experience in working on film-material and in black and white. I still publish my calendar each year in black and white, but since then, I have adapted my style more and more to the new possibilities of digital technology, which in effect means that my pictures are more colorful and more often presented in color. In regards to the content, I can say that my photos have evolved to a more lively, dynamic composition. The other major change is my new casting procedure, with a much more rigid evaluation of the model applicants before I start to work with them. The advantage: Since 2015 most new models work exclusively with with me for 1-2 years. Starting from a newcomer level via TeeJott model level to the TeeJott top model level. I have basically opened a sort of TeeJott model academy, and thus my photo projects can also be viewed as a documentary project that shows the development of my models.

RC: What major modeling photography have you done in the last three years? TJ: As part of my new model development strategy, I identified three main models that I have made the best, and had the most important shoots with since 2015: Hagen (Instagram: @hagenrichter), Patryk (Instagram: @str0id), and Fabian (Instagram: @fabianxarnold). I call them my "Three Musketeers." All three have become well-known instagram stars in Germany with an international following also. My most important photo shoots have been with these three models. I even had a spectacular model event with the three TeeJott top models as a main fan attraction in 2016, you can find a video by visiting wiremag.co/tjymg16. RC: Describe your photography style. TJ: Iconic, full of power, evoking a fantastic story in your mind. RC: Where do you currently get your inspiration for your photography work? TJ: In one word: Instagram. In more detail: I follow two sorts of people, dreamboys Ă la Shaan Mendes, Manu Rios, Ben Azelart on the one side; and good looking, ken-doll-style fitness models like Attila Toth, David Laid, Mario Hervas and Tyson Dayley. But this is only a short excerpt of the people I follow. I like to give myself a complete overload of impressions, then sleep on it and create my own interpretations of the ideas I have seen on my following photo sessions.

RC: What have you learned through photographing people? TJ: I have learned to listen very, very carefully to others and their stories. After 22 years of working with young men, I know a lot about motivating people. I know how to teach others to look ahead, believe in the future, and use their full potential. All those years of working with young male models have basically taught me to be quite a good motivational coach. RC: What has been your favorite photo shoot since our last interview, and why? TJ: The Ibiza photo shoots with Hagen Richter in 2016. I am an absolute fan of Ibiza – I believe in the magical spirit of Ibiza – and Hagen is one of the most beautiful blonde men on earth. So, that was an ideal combination. Magical moments, great sunsets, a hot summer and an unforgettable five days with photo shoots, club nights and crazy cross-country tours over the island. Only five days on this wonderful island in the mediterranean sea, but a unique moment in time. RC: What surprises you the most when you look back at your work? TJ: That I have always managed to climb to the next, higher level of excellence, although each and every time I thought, "this is it" and that I would not be able to get better than that. RC: What is your current struggle? TJ: Two words, no budget. Too many ideas for my far too limited budget! I always have to decide between options. For example, I have many great model applicants all around the world, but no budget to visit them or let them fly to Germany. I have such great models in my team in Germany, but can't afford to rent the locations that would be perfect, etc. I accept that as an inevitable challenge, but it starts getting on my nerves. RC: Why do you think people love your photographs so much? TJ: Well, that is a difficult one. If I listen to my fans, then I guess they more often than not tell me that a "typical" TeeJott photo has the power to touch you in a way that can be described roughly like this: When you look at a TeeJott photo, it makes you love life and believe that one day you will meet the model on the picture… somewhere… someday. RC: Is there anything else you would like to share with Wire Magazine readers? TJ: Oh, sometimes I am really jealous of you in Miami with all those beautiful men! But then, I realize that on each day beauty can be found in every region of the world. This is my message: Try each day to look for the hidden beauty in your surroundings, because this magic is a treasure that is waiting to be uncovered by each one of us.

SINGER, SONGWRITER & SONIC ACTIVIST amuel L. You would think that all these "top chefs" might end up spoiling the whole meal by throwing together a handful of unrelated singles just so they could add their personal signature to the dish, but The Architect is just the opposite. Even with the wide range of styles sprinkled throughout the collection, Faith's distinctive voice ties them all together seamlessly, like a well-written story filled with just the right balance of highs and lows. In a recent press statement, Faith explained that she "wanted to look outside of myself. I'm coming at politics from the perspective of the common man or woman, observing why people are suffering. On previous albums, I've been more concerned with the past, but now I'm looking forward because of motherhood and wanting to change things for a better future. It's a marriage of old and new." Everywhere we look, entertainers are injecting their political views into their work. Screenwriters do it in their films and TV shows, actors slip it into their acceptance speeches, but infusing socio-political messages into pop music can be a risky move even for the most praised artist. Remember Madonna's American Life? In this case, the result is a provocative yet entertaining collection of sonically impressive tracks that – like the skyscrapers that tower over major cities around the world – could elevate our definition of popular music. Rhythm Nation, Part II anyone?
