Or maybe not. Maybe your life doesn't look like others or like the ones on TV. Maybe circumstances converge so it's you and another single friend, a partner who is just not that into it, maybe even a new man in your life you're just getting to know, or two other friends. What to do when you're hosting and Chinese food just won't do it? It's you, your cooking skills, some prep time, tradition but not too much tradition – and just a few hours to make something memorable. Shhh, don't panic. Honestly, it's not that tough a situation. You can impress friends, and if it is about a new guy, you can definitely score points. Duck breasts are nothing to be afraid of. They're elegant but easy. You can find them in good markets. Truthfully, I order from a purveyor I like and keep them already orange-marinated as regular items in my office deep freezer (yes, yes, I know...) for regular use. If you self-marinate (pun intended), crush some garlic and release the oils of some fresh rosemary in some orange juice and cover the breasts overnight. Take them out of the liquid the next morning to drain and dry a little before you cook them. Either way, pat dry and season with salt and pepper, a little olive oil, just before use.

Prepare the rice per instructions for the particular rice. Season liberally with butter, salt, and pepper. The mushroom ragout – also easy. Cook your favorite mushrooms, as long as those aren't white or button mushrooms for goodness sake. Try chanterelles or porcini or both. Sautée in a combination of butter and olive oil, garlic, salt, pepper, and thyme. After they are cooked to near fork tender, sprinkle a little bit of flour on them, cook on medium-low heat until the fat and flour blend and gets slightly golden brown. Drizzle in a quarter cup of beef broth, reduce until just slightly more liquid than the consistency of gravy and remove from heat. Its texture will come together as it sits another two minutes or so. While I prefer roasted asparagus, grilled is easiest with this meal prep. Simple snap asparagus, toss with olive oil, lemon, salt, and pepper, toss on a grill or grill pan on medium-high 10 WIREMAG.COM #49 2018

Pan-sear or grill duck breasts lightly at medium-high heat, starting with skin side down. Here is what is important to remember. Duck skin, which covers a layer of fat, is the most delicious part of a duck and you want to get it right – seared but not burned and just so the fat is rendered. So, start with the idea of 4-5 minutes down, basting with butter if pan searing. Add a little fresh rosemary and garlic to the butter if that is the case. When the skin is nicely seared, flip the breasts, cover and finish over another starting four minutes. Now "starting" is important here. Cook times will vary based on temperature and degree of saturation from the marinade. Good opportunity to break out the cooking thermometer. Duck breast needs to get to about 140 degrees for medium. Duck isn't chicken or turkey. Well done is bad mojo. You want a little pink in the center. Then, remove the duck and let finish cooling and retracting its juices while you finish off the rest of the meal.

heat, flip periodically and when they are slightly soft and have a pleasing color, they are good to go. No sauce needed – the mushrooms accentuate the duck, rice and asparagus. Assemble the plates as your guest(s) finish their seafood and you will present one memorable surf and turf experience – one that doesn't intimidate you or the diners. As for dessert... well, as I have written before, I buy desserts if I am going to offer one. Just not my cup of tea. That said, for a meal like this, I might poach fresh pear halves in red wine, fresh cinnamon sticks, and allspice and serve with crème fraiche. Or grill banana halves and top with slightly browned butter, lightly toasted slivered almonds and shredded coconut. Traditional? No. Easy? Pretty much. Memorable? Hopefully. To preview Art Gaysel 2018, Wire Magazine sat down with photographer Courtney Charles, one of the artists who will be displaying his photographs and shooting his "Ken" doll works of art during the fair. Rafa Carvajal: Tell us about your work as a photographer. Courtney Charles: I've been a photographer for almost a decade now, but I feel I didn't truly find my voice until recently. I never thought I'd find an audience for my unique style, and yet here we are.

RC: Describe this photo series to our readers and explain how it came about. CC: Funny enough, I was originally inspired by someone's overly FaceTuned selfie that they posted. They looked so plastic that I thought, "why don't I just make someone plastic?" What started as a statement on how fake we've become online, over time the series has grown into a fun exploration of sexual realism. As life-like sex dolls have become quite topical lately, so many people discuss it as if they themselves would never have sex with one. I like exploring the idea that I'm creating these really sexy inanimate objects and then watching people struggle with their attraction to them. Someone left the perfect comment recently, "This is a very confusing erection." Several models have even said that they think they look hotter without nipples. It's exciting to think of what the future holds for our sex lives. It's not often an artist gets to explore the future of sexual attraction.

RC: Who were your models for this series, and how did you find them? CC: I've photographed almost 100 models for the series at this point and it's all just been by word of mouth and friends of friends. NYC has no short supply of sexy gays who want their picture taken. RC: Why did you decide to pursue photography as an art form? CC: I've always been a very visual person. I decided to pick it up as a hobby after I got bored of knitting scarves for my relatives. When I finished my first photo shoot with a friend, I realized that this was exactly what I wanted to do. RC: Describe your artistic work in 3 words. CC: Colorful, futuristic and witty. RC: How did you become involved with Art Gaysel to exhibit your work this year? CC: The owner of HĂ´tel Gaythering reached out to me after seeing my work on Instagram. I'm so honored to have made a series that so many people enjoy.

RC: What are you looking forward to the most about being a part of Art Gaysel? CC: I can't wait to be inspired by all the other artists' work and see the pieces that they love the most. All too often the pieces that get the most likes online are the most uninteresting from an artistic standpoint, but those are the ones that online algorithms push to the top of our newsfeeds. There are only so many ways to photograph a butt before you get bored. RC: What do you enjoy the most about your work? CC: I enjoy making people like things that they never thought they'd like. When you see a middle-aged white woman press like on your photo of a campy fisting doll, that's peak success right there. RC: Is there anything else you'd like to share with Wire Magazine readers?
