DAILY GRIND NEW YEAR, OLD RULES, SAME GAY
VOTING ON CASINO CHANGE IS A DISTRACTION
BY ANTWYONE INGRAM Already nearing the second month of 2012, more than half of you have successfully disregarded your New Year’s resolutions – it happens. The fitness resolutions have been replaced with Twinkies and remote controls, the love and relationship resolutions have been replaced with the renewing of Grindr Xtra and Manhunt accounts, and the “a whole new me” resolutions are the people with the same pretentious attitude. None of the above should be surprising, nor should you be too hard on yourself; simply blame Miami. Probably the worst habit of Miami inhabitants is blaming the city for their increasingly unhealthy behavior and not-so-hospitable demeanor, and the gay community wears this hat extremely well. Often times, some of us rather not take responsibility for our actions so we blame our surroundings, as if Miami has some unsightly supernatural force that encourages us to be, for lack of a better word – assholes. I’m not quite sure where heterosexual people get that the gay community in general is the most welcoming community of them all,, and I’m not quite sure who told them the gay lifestyle was Sesame Street, but not all gay people operate that way. It’s a very sad truth but there is an overabundance of prejudice and discrimination within our community that has become increasingly overwhelming for some gay men. As a result, many gay men chose to remove themselves from the scene, or conform to which scene they “think” they fit into. This is a problem; gay men shouldn’t let their surroundings or any particular scenes define who they are, nor should they let the attitude of those around them influence their own. Individuality is not unattractive, there are enough “carbon copies” pumping around Miami. I’m not encouraging you to be a hippy, Mormon, gay rights activist, or wear meat dresses like Lady Gaga because you were “Born This Way,” but just remember who the hell you were prior to moving to Miami. Don’t let Miami (or your correlating scene) consume you. You still have values, you still have morals (well, not everyone), and you still have integrity. Being gay does not make anyone less of a man, so retire your flock of Heathers and hang up that whole Mean Girls scenario because, at the end of the day, you are still a man, you still have a scrotum, and being holier-than-thou “just because” is not a good look on anyone.
BY MICHAEL W. SASSER Every once in a while, democracy is dragged out of the philosophy closet and paraded around as a noble means to any end. For those students out there, let me point out that the US was never intended to be a democracy nor has it ever been one. We’re a constitutional republic, which means governance by representatives who are limited in their scope of power by constitution and precedent (to a lesser extent). Democracy is an undesirable social goal. Ask any Roman left over from the fall of the Empire. Democracy, entitlements and coveting led to the collapse of the Empire -- ironically as it is doing in the US, but that’s for another column. But once in a while the political class whips out the majority rule, or has a public vote forced upon them. Whoever supports the idea throws around platitudes like “let the people speak” and “it should be a community decision.” Of course simultaneously they’re manipulating media and buying off special interest votes with one promise or another. Just let the people decide by voting, and then by golly, we know [fill in the issue] will work out just fine! Hogwash. Yes, voters can make a difference on stark issues such as dumping a corrupt and incompetent county government. But that is the exception that proves the rule -- a rule that the political class can manipulate 99 percent of public votes if it is unified. That’s exactly what the current discussion over a vote on the possibility of changing the laws governing casino gambling is all about. It’s a distraction. Were it to ever happen, understand that the goal would be alleviating elected politicians of any responsibility for the outcome, and instead placing that responsibility on the electorate. Of course the objective of the political class is the influx of campaign cash that casinos would bring; and you can bet that much of the ruling class would exert all of its collective power to bring this cash cow to South Florida.
It’s unfortunate, but the unity of the gay community that was present in the Stonewall era is long gone. Gay Pride has become less pride and more party. We cry wolf when someone stereotypes our culture, but who is giving them reason to? I’ll wait for your answer; it’s not a trick question.
Power in the form of influencing media during the debate period ahead of any possible vote. Power as in buying off high-profile community institutions that are all too easily manipulated when the promise of financial support arises. Power in the form of a disingenuous campaign. All of that power would be employed to make a public vote go the way the political class wants it to. And it would have all the resources of the gambling industry at its disposal. Self-determination is good. Voting is preferable to rule by fiat. But let’s not be fooled into thinking it’s a panacea or even a legitimate means to determine the gaming issue. It’s just another system of control and influence.
Let the theme of this year be individuality with a sprinkle of idiosyncrasy (look it up). All of this “follow the leader” fuckery is for the birds - food for thought.

In Madonna’s first television appearance, the fresh-faced 25 year-old uttered the words “I wanna rule the world.” Ever since those words fell from her lips back in 1983, the material girl has not only had the world at her feet; she’s kept us talking about what she’s done, what she wore (or didn’t wear) and what she’s going to do next. Between her recent Golden Globe win, her upcoming album and her highly-anticipated Super Bowl halftime show, it’s obvious 2012 will be no different. This Sunday the Queen of Pop is set to tackle the Super Bowl halftime stage. As the big day gets closer, she admits the pressure is doing a number on her nerves. During an appearance on The Tonight Show she admitted, “It’s the most nerve-wracking thing I’ve ever done. The Super Bowl is kind of the holy of holies. It’s the sacred show of America. And I have to go on in the middle of that holy of holies and put on the greatest show that was ever been put on before…It’s a little bit like a circus act – get in there, roll out my carpet, put on my show and get the f– off.” Her flash concert at the 50−yard line hasn’t been lost on her critics either; mainly a certain British Golden Globe nominee who offered this advice via Billboard.com: “Make sure you lip-sync good.” Oh, Elton. Let’s keep the green on the field, shall we? No beautiful stranger to the magic of marketing, Madonna’s Super Bowl stint conveniently coincides with the release of her new single “Give Me All Your Luvin” from her upcoming album, M.D.N.A. The ecstatic new album (scheduled to touch down on March 26) is also the first down of a $120 million play Madonna recently penned with Live Nation Entertainment and Interscope Records. For her 12th studio album, Madge huddled up with some of the hottest names in dance music including Martin Solveig and Benny Benassi. In true Madonna fashion, the diva teased us earlier this week with a peek at her Mert and Marcus shot album cover and news of the “GMAYL” video premiering on the February 2 episode of American Idol. The official track will be released worldwide the next day, leading up to what’s expected to be the gayest Super Bowl ever. L-U-V Madonna! WIRE COVER: ODYSSEO: THE EQUESTRIAN MAGIC OF CAVALIA Benjamin Aillaud, Equestrian Director, is responsible for selecting and training the horses. His love of horses is evident in his care of the horses that he rides before his interview. Born in France, Aillaud began his love affair with horses at an early age. At six he bought his first horse and began jumping, vaulting, and riding. Twice vice-champion of the world and four-time champion of France in four-horse carriage, Aillaud has acted as equestrian director for Cavalia since 2009. “This is not a job,” he says. “My credo is to build a dream and live it and I have. At eight I said I wanted to be a dream transformer and I have achieved that.” His love for horses is also evident in his teaching methods. “It’s important to be gentle,” he says. “I teach with love.” Aillaud choreographs all the horse numbers and works with all the riders. “What we do gives a great feeling to the audience.” And indeed it does. The performers of Odysseo are a unique breed and have become a giant family. Ten nationalities of performers comprise the “cast” of Odysseo, many auditioning several times before being accepted to a Cavalia company. One of the African acrobats came to the auditions with a tape of his family of performers. The company was looking to hire four acrobats but hired ten, a group comprised of family members and friends that have been performing together for three years. These nimble acrobats have the audience screaming with their multiple flips, jumps, and somersaults. Aerialist Andrea Legg, originally from Vancouver, has been with the show from the beginning. “I love the show. It’s a big family.” Choreographer Darren Charles, from the U.K., draws from his vast experience in ballet, contemporary dance, and acrobatics to choreograph Odysseo. He works with the humans. “When working with performers I look for heart, confidence, showmanship,” he says. “They also must be intelligent.” Watching the performers work, on and off stage, one recognizes not only their dedication and hard work but also their love for the job. “This is the life that many of these performers have chosen,” said JeanDavid Pelletier, tour publicist. “They prefer traveling and performing, they would never choose a nine-to-five job.” Odysseo offers those nine-to-fivers an escape into an enchanted three-dimensional forest that comes alive under a sky of moving clouds. The forest transforms before your eyes into several fantastical worlds, an African plain, an expanse of rolling hills, a desert, and an ice forest. Odysseo takes you to a world where dreams and reality intertwine. The visuals are spectacular to the point that you can’t believe what you’re seeing. For the finale, the stage fills with water to create a lake in which 35 horses and their riders gallop at the foot of a waterfall. This effect, which at first seems an illusion, is created by superstrong water pumps that flood the stage with 80,000 gallons of water in three minutes. It’s an incredible image of horses, riders and performers running, galloping, and jumping in this man-made lake. The feeling is of joy and of freedom; the performers and the horses are having the time of their life. Odysseo is a dream, a spectacle, a magical world that will not be forgotten.

Foodies and wine aficionados take note as the 11th annual edition of the Food Network South Beach Wine & Food Festival is just weeks away. America’s favorite wine and culinary extravaganza has scheduled an impressive itinerary of events for this year’s Festival from February 23-26. One of the featured events is Swine & Wine presented by Pat LaFrieda Meats and hosted by actress Debi Mazar and her husband Gabriele Corcos. Mazar, best known as press agent Shauna Roberts on the HBO series Entourage, and husband Corcos are co-stars of the new cooking series Extra Virgin. Swine & Wine, which has already created quite a buzz for this first-time event, is guaranteed to bring pig roasting to a whole new level. Scheduled for the last day of the Festival, Swine & Wine has gathered an impressive group of chefs and local Miami friends, each with their own special preparation techniques for pig roasting. Set at the Biltmore Hotel, this group of pig slayers will spend the entire day prepping seasonings and rubs that pair well with wines for this walk-around tasting of pork flavors from around the world.
Craklin’ and Pickle Salad. Executive chef, restaurateur and television food personality, Marc Murphy, will undoubtedly entertain the crowds with his Southern Style “Porchetta” with Corn Bread & Andouille Stuffing. Chef Seamus Mullen, owner of Spanish Restaurant Tertulia in New York, will be using Iron Chef talents to prepare Smoked Berkshire Pork Jowl and Whole Suckling Pig. Jorge Padron, owner of Padron Cigars, Mayor Carlos Gimenez and Coach Isiah Thomas will be preparing their pigs “Cuban Style.” Chef Jonathan Waxman, one of the pioneers of California cuisine, will offer up his unique dish of Blood Orange Pig Tacos. Celebrity Chef Marcela Valladolid, author and the host of the Food Network show Mexican Made Easy, will be serving Cochinita Pibil. Swine & Dine guarantees to be a delightful afternoon of tasting. A DINNER TO REMEMBER! As Publisher and Editor in Chief of Wire Magazine I am fortunate to get invited to a lot of restaurant openings, media dinners, and tastings. Everyone once in a while I have a dining experience that completely exceeds my expectations and I can categorize as exceptional. Such was the case last Wednesday, when STK Miami’s new Executive Chef Aaron Taylor hosted us to a truly mouth-watering and memorable dining experience. Aaron Taylor comes to chic steakhouse STK inside the Gansevoort Miami Beach, with nearly 12 years of experience from such well admired restaurants as the award-winning Pierre’s restaurant in Islamorada, Florida, The Keystone Ranch in Colorado (ranked No. 1 in the state by Zagat) and Meat Market in Miami Beach. “STK has always been one of my favorite restaurants in Miami,” says Chef Taylor. “I admire its stylish adaptation of American steakhouse classics and was honored when The ONE Group approached me with the opportunity to bring a new energy to the menu.” Aaron Taylor is passionate for the use of locally sourced, seasonal ingredients, and he has infused a variation of local seafood and game dishes into STK’s menu. Our five-course dinner gave me the opportunity to enjoy some phenomenal dishes. We started with a delightful Buratta Salad with homestead heirloom tomato, Kalamata olive, basil and sea salt. Our second course was a Hawaiian Heart of Palm Salad made with fresh – not canned – hearts of palm with local citrus, avocado, arugula, and a tasty Habanero vinaigrette that left me craving for more. This salad also reminded me of my childhood in Costa Rica eating fresh, locally grown hearts of palm – there is nothing like it. The next dish was a Sea Bass that melted in my mouth. It was heavenly! So much so that I had to personally compliment Chef Taylor on how amazing it was. He accompanied it with pickled onions, Edamame, oyster mushrooms, and a yummy passion fruit sauce. The fourth course was a Chili Rubbed Rack of Lamb with roasted baby beets, maple sweet potato, complemented with a wonderful rosemary port demi. Our fifth course was a phenomenal Dry Aged Bone in Rib-Eye that was so tender it also melted in my mouth – proof positive of a perfect menu item in a great steakhouse. Our dessert sampler was also fantastic. I highly recommend the Banana Guava Bread Pudding – divine! The other thing I loved about STK Miami was the vibe, the ambiance, and the music. The restaurant prides itself on having a spacious DJ lounge, a second-level V.I.P. bar and a styling bistro dining area adorned with white leather banquettes with a crocodile leather trim – all beautiful elements that are sure to please your senses when you go to STK for dinner. Every so often a person gets to a point in their training program where it seems they are working hard but getting no results. This is a strength “plateau.” When you get to a plateau something needs to change. If you have been doing the same routine for 3+ months then you may need to “shock” your muscles to get them to grow! Challenge yourself: by putting in more exercises into your routine without using more time. Or you can try to get the same routine done in less time. This means less time between sets and it requires a fast recovery rate. Heavy / Light: On heavy days, use as much weight as you can for 3-4 reps, and on light days put on as much weight as you can for 12-15 reps. This is good for people who train six days a week working each body part twice per week. Forced reps: A forced rep is when you are trying to lift more weight than you can lift by yourself and you need your partner to help you. This is great when you are at your failure point and you need a little help to get the last one up. Partial reps: are a great way to get your muscles to burn. When doing partial bench press reps, you should only lift the weight about four inches off of your chest. This goes for any other exercise as well. Only do the first half of the rep. 21s: Instead of doing the full motion of the rep, do only the first half of one full motion for seven reps. Then do the second half of one full motion for seven reps. Then finish off with seven reps of full motion for a total of twenty-one reps. Isolate: your muscles to get the most out of a particular workout. Doing leg extensions are a great isolation workout for your thighs. For biceps, I recommend doing dumbbell curls, for legs, do extensions one leg at a time. Isotension: This is when you continuously flex and relax your muscles before, between, and after your workout and even between sets. Negative reps: These happen when you are lowering the weight. If you can hold it easily, then it’s not enough weight. Slow reps: By using a lower weight, you can do any exercise in slow motion. This forces you to do a good slow negative rep. Cheating: is when you lose your form just for a second to help get you through a tough spot in your workout. Pyramid reps: Have a maximum goal weight in mind. Start well below that and add 10 to 15 pounds of weight after each set until you reach your goal. Heavy Duty: Going right to your usual workout weight right after warming up. You skip the pyramid and go straight to the heavy weight. Supersets: This can be done two ways actually. 1) You can superset the same muscle group. i.e. doing pushups or dips between sets of bench press, and 2) You can superset opposing muscle groups. i.e. doing pull-ups between sets of bench press. Stripping Weight: To do these you start heavy and do as many reps as you can until you are completely fatigued. Then you “strip” some weight off of the bar, maybe 10-20 pounds depending on the exercise, and go again until you are fatigued at that weight.
