No night out in South Beach would be complete without TWIST, and Friday nights are some of the best. Guests of all kinds couldn’t wait to get some late night fun with great beats, hot dancers, and a variety of bars for their choosing. “Never A Cover… Always A Groove.”
I want to address one of the most neglected aspects of any workout routine – the warm-up and flexibility. Stretching can help your body get ready for exercise. It is also an essential part of recovering from aerobic activity. All exercise sessions should end with stretching. The more flexible you are, the less likely you are to be injured during exercise. The simplest way to warm up is to do an aerobic activity at an easy pace. How long you spend warming up will depend on your fitness level. If you are new to exercising, your body will respond better with a longer warm-up routine. Adding stretches to your warm-up routine may improve your exercise performance. Once your muscles are warm, spend a few minutes on stretching. Keep in mind that an effective cool-down gives your body time to recover. Your cool-down begins as you gradually decrease your intensity level at the end of your aerobic exercise session. For example, if you have been walking at a quick pace, begin cooling down by slowing your steps and taking your arms out of the movement. Walk at a comfortable pace until your breathing and heart rate have returned to normal. Once you are breathing easily, stretch while your muscles are still warm. When people are pressed for time during their workout, usually stretching is the first thing that is eliminated. This is a huge mistake and can reduce the effectiveness of exercise. By increasing your flexibility, you can improve your ability to move around. You will have less muscle tension and your posture will likely improve. Most importantly, stretching after each workout reduces your risk for injury. Get the most out of your flexibility training by following these simple guidelines: • Holding a stretch for 10 to 30 seconds. Doing it for any less won’t sufficiently lengthen the muscle. Stretch the muscles gradually and don’t force it. Avoid bobbing. Bobbing or bouncing while stretching may damage the muscle you are stretching. This damage may even cause scar tissue to form. Scar tissue tightens muscles and can get in the way of flexibility. • Even if you are a righty, it doesn’t mean that you should neglect the left side of your body. Make sure you stretch both sides equally, so all of your muscles are evenly ready for action. • Always warm up before your stretch. Stretching cold muscles can cause injury. • Stretch slowly and gently. Breathe into your stretch to avoid muscle tension. Relax and hold each stretch 10 to 30 seconds. • Do not bounce your stretches. • Stretching should not hurt. If you feel pain, take the stretch easier, breathe deeply, and relax into it. I think I bring some new and unique talents, not only to Dr. Tachmes’ practice, but also to all of Miami.
Dr. Leonard Tachmes, one of Miami’s premier plastic surgeons, has added a new member to his already very successful practice. Dr. Roger Pielet, a board-certified plastic surgeon and facial rejuvenation specialist, recently joined the team at Miami Beach Plastic Surgery Center & Medspa. Dr. Pielet, who comes to Miami from a private practice in Chicago, will be bringing his expertise in rhinoplasty and sliding genioplasty techniques, as well as highly sought-after buttock augmentation capabilities. Dr. Tachmes, practicing in Miami since 1994, opened the Miami Beach Plastic Surgery Center & Medspa in February of last year. Dr. Tachmes tells us he is very pleased to welcome Dr. Pielet to his practice. Dr. Pielet, known for his expertise in rhinoplasty, has been featured on Discovery Health channel and the Oxygen Network’s Oprah After the Show. Wire Magazine chatted with Dr. Pielet about his practice and his move to Miami. What is your connection with Dr. Leonard Tachmes? We met during our fellowship in plastic and reconstructive surgery in the early ‘90s. I understand that you and Dr. Tachmes have been friends for over 20 years. How did your friendship start? It started in the trenches. When we first met, I had a broken wrist and a cast on my arm. I think he was worried that I was a slacker and he would have to carry the weight of both of us. Fortunately, I quickly learned how to manage with one hand for about six weeks. We had a similar background, work ethic, etc., and maintained a close friendship all these years. Why did you decide to join Dr. Tachmes’ practice in Miami Beach?
You’re known for your renowned rhinoplasty and sliding genioplasty techniques. What patients are best suited for these procedures? The best candidate is someone who is interested in facial harmony and is realistic about the outcome. I use computer imaging as a teaching tool. It allows me to show someone what he or she can expect; it also allows that individual to give me feedback based on the visual representation. You are also skilled in buttock augmentation, which can either increase or redefine the contours of one’s lower body. Is this a technique that works for both adding shape to the buttocks and trimming down the size of the buttocks? In general, I have not had requests for “trimming down” of this area. I, personally, do not do a lot of liposuction; however, this would be an option. I find that people who do not have enough fat elsewhere on their bodies are potential candidates for buttock implants. If a patient is having cosmetic surgery, what do they need to do to prepare? It is important that they communicate with the doctor. We do a very good job of preparing the patient in all aspects of the procedure. This includes educating, explaining and managing expectations. Do patients come to you with unrealistic expectations of cosmetic surgery? Fortunately, this is not a common occurrence. I spend a lot of time with each new patient so I can get a sense of his or her motivation, goals and expectations. What’s the time range for recovery from cosmetic surgery? For many procedures, people are usually back to work within a week or so.

What type of people are not candidates for cosmetic surgery? People with unrealistic expectations and/or other medical or psychological problems that would increase their risk of an undesirable outcome. Most of the surgeries I do are entirely elective and it is imperative that we do not take any unnecessary risks. What do you see as the difference in the Chicago and Miami markets for cosmetic surgery? In general, the Midwest tends to be a bit more conservative. We also do not see as much “competition” from unqualified doctors. I feel it is very important to distinguish ourselves, Dr. Tachmes and myself, as Board Certified Plastic Surgeons and to educate the public on what sets us apart. Do some people come to you for the wrong reasons? Yes, but I think I am pretty good at sorting this out at the initial consultation. I personally see all new consultations and ask specific questions to determine their reasons for desiring specific changes. What are some of the cases that you’ve seen that cosmetic surgery has improved someone’s life? To be honest, pretty much everything I do should result in a positive influence on someone’s life. If there is any negative impact, whether it is medical, emotional, physical or financial, it simply should not be done. What happens if someone isn’t happy with the results? The most important thing is to determine why someone isn’t happy. There are three main reasons I can think of. First, if I didn’t spend the time to understand what someone wants, including his or her goals and expectations. Second, if I failed to explain what can and can’t be accomplished with the particular procedure given their starting point and what they hope to achieve. Last, someone would not be happy if the skill level and experience of the surgeon is sub-optimal. As far as the first two, we are less likely to have someone unhappy if we spend the time to establish a thorough understanding. And the third is highly unlikely with either Lenny or myself given our training, skill level and experience. Is there an age limit to cosmetic surgery? Chronological age is usually irrelevant as long as someone is in good health and understands details of the procedure. What kind of research do you recommend for someone thinking of cosmetic surgery? First and foremost, they should check out the credentials of the physician performing the service. It should be a Board Certified Plastic Surgeon. Also, ask to see examples of his or her work. Is there anything else you would like to tell Wire Magazine’s readers about yourself, your practice, or your relationship with Dr. Tachmes? I am honored to join forces with Dr. Tachmes. We worked really well together over 20 years ago and have been friends for all those years. It is as if our friendship and careers have come full-circle and we are entering an exciting new chapter. So far, Dr. Tachmes and all of Miami have been extremely welcoming.

Few recording artists have moved the world like Whitney Houston has. Her platinum voice set our hearts in motion in the mid 80s and they haven’t stopped dancing since. Every one of us has at least three Whitney songs that take us back to a happy moment in our lives or gave us the courage to get through tough times. For over two decades her inspiring vocals and comforting lyrics of strength and uplifting emotions have been a beacon for anyone struggling with loss, fear, helplessness and betrayal. Although at times those songs were all we needed to get through, sadly they weren’t enough to keep her with us. Houston began singing in her church choir when she was only 11 years old. With a long line of female singers in the family, like her mother (Cissy Houston), godmother (Aretha Franklin) and cousin (Dionne Warwick), it was only a matter of time till Whitney brought her voice out of the chapel and into the spotlight. While performing at a club with her mother, the New Jersey native was discovered by Arista Records mogul Clive Davis who immediately took her under his wing and helped her record her first album. Her 1985 debut, Whitney Houston, was the best-selling debut album by a female at the time. Rolling Stone named it the Best Album of 1986 and one of the 500 Greatest Albums of All Time. Her second album Whitney (1987) became the first by a female artist to debut at No. 1 on the Billboard 200 albums chart. With album sales totaling over 170 million, she’s also one of the world’s best-selling artists of all time and the only artist to have seven consecutive No. 1’s on the Billboard Hot 100 (“Saving All My Love for You,” “How Will I Know,” “Greatest Love of All,” “I Wanna Dance with Somebody (Who Loves Me),” “Didn’t We Almost Have It All,” “So Emotional” and “Where Do Broken Hearts Go”). By 2009, her list of achievements landed her in The Guinness Book of World Records as the most-awarded female act of all time. She’s received 415 awards in all, including two Emmys, six Grammys, 30 Billboard Music Awards and 22 American Music Awards. Musical success wasn’t enough for the ambitious diva who also starred in the box office hits, The Bodyguard (1992) and Waiting To Exhale (1995). One of the most memorable songs of Whitney’s career emerged from her film debut—the iconic ballad “I Will Always Love You.” It was only fitting that another musical phenomenon, Jennifer Hudson, perform the song at last week’s Grammy Awards in memory of the star who inspired her career. Jennifer punctuated her emotional serenade with a slight change in the lyrics: “Whitney, we love you.” And we do. We will always love you, Whitney Houston. So I started watching this film and I said to myself, “self, what’s this all about?” It seemed dull, dull, and dullier. “What was Greg Kinnear thinking when he took on this role?” Then all of a sudden, the film takes this funky turn and I’ve fallen through the ice and am absorbed in the story up to my neck…and it keeps getting better and better. With rapid and unexpected plot twists and turns and a climax that just sings, Thin Ice is a small gem of a film with great performances and a crafty everyman story. Very reminiscent of both Fargo (1996) and A Simple Plan (1998) for its Bible-Belt characters and wintery location, Thin Ice carves out a place all its own that holds your attention and takes you on a dangerous journey of deceit and double-dealing. The story goes like this, a Wisconsin-based conman insurance salesman (Greg Kinnear), separated from his wife (Lea Thompson), broke, and precariously near the end of his rope, discovers that an elderly client (Alan Arkin), whose account he stole from a new associate, has inherited an extremely valuable violin from his ailing sister and is not aware that it’s worth $25,000. Hatching a plan to grab the violin and sell it himself, Kinnear tries to build a friendship with the befuddled old man. But Kinnear is hopelessly out of his depth and that’s when things start to get really complicated. Kinnear is wonderful in his endless desperation, Arkin is masterful as the old man, and Billy Crudup is explosively dangerous as a locksmith caught up in the whole scheme. The writer-director team of the Sprecher sisters (Clockwatchers − 1997), themselves Wisconsin natives, show they have an intimate knowledge of their subject and place it on the screen beautifully, warts and all. Good job everyone. Thin Ice gets all the elements just right, taking the audience on a wild ride with an abundance of cannily plot contortions combined with some wonderful comic touches that will have you agonizing right along with the main character. It a solid enjoyable film experience. Rating: 4 Stars (out of 5) Thin Ice is rated R (Under 17 requires accompanying parent or adult guardian). Time: 97 min.

Having grown up in a family food business started by my grandpa Mario and my grandma Cavita in their garage, I love food. The day I discovered the Food Network I was in heaven. I remember watching Chef Emeril Lagasse for hours every night and going online to save his recipes to my computer and Blackberry so I could prepare the dishes later. My passion for food and dining led me to discover so many other great chefs whose shows on the Food Network entertained me for hours, but also educated me on the fine art of cooking and dining. Harvard Business School taught me how to succeed in business, but the Food Network taught me how to succeed in the kitchen. The knowledge I acquired over the years by watching so many amazing chefs on the Food Network and the Travel Channel was a great culinary education. The cooking skills I learned from my mom growing up were fantastic, but top chefs and culinary celebrities such as Emeril Lagasse, Giada De Laurentiis, Alton Brown, Rachel Ray, Bobby Flay, Guy Fieri, Paula Deen, Robert Irvine, Anthony Bourdain, and Andrew Zimmern helped me truly build on the basic culinary abilities my mom taught growing up in Costa Rica.

and skills with me and Wire Magazine’s readers − and I am forever grateful to them for it. I will never forget going to Michy’s to prepare Michelle Bernstein’s famous fried chicken and walking out a couple of hours later having learned how to make two versions of her fried chicken (single dipped and double dipped), her wonderful watermelon salad, and fresh pasta. Michelle wanted us to learn and took time out of her really busy schedule because she really cares. So did Douglas Rodriguez at De Rodriguez Cuba with his delicious sangrias, Peter Vaulty at Red Steakhouse who taught me all about the best cuts of beef and how to prepare a perfect steak, Timon Ballon at Sugarcane who showed me how to make the best octopus I have ever eaten, and Tim Nickey, an accomplished deep sea sports fisherman who also happened to run China Grill at the time and knew not just how to catch the best fish, but how to prepare it to perfection. Just when I thought I have met most of the great chefs who make Miami their professional home, I had the opportunity to meet two phenomenal young Executive Chefs, Todd Erickson from Haven South Beach and Paula DaSilva from 1500°. These two young emerging superstar chefs run two of my favorite restaurants in Miami and truly prepare some of the best food I have every tasted in my life. So after dining at their respective restaurants, and finding out they will both be participating in this year’s Food Network South Beach Wine & Food Festival (February 23-26), I had to sit down with both of them to learn more about their restaurants, culinary delights, and backgrounds. It was that love of anything and everything culinary that led me to embrace the idea of bringing dining and Wired Inside the Chef’s Kitchen to the pages of Wire Magazine. Doing these editorials opened my eyes to a wonderful new universe by allowing me to cook with some of Miami’s best chefs in the kitchens of their top restaurants. I have had the great pleasure of cooking with too many chefs to name them all here, but a few of my favorites are Michelle Bernstein, Douglas Rodriguez, Peter Vauthy, Timon Balloo, and Tim Nickey. These culinary professionals are all very accomplished in their own right, but they are also wonderful human beings that made time to share their knowledge Here is what Todd and Paula had to say.

How would you describe Haven to a Wire Magazine reader who has never been there?
What is your inspiration for creating Haven’s cocktails?
Haven is definitely a multi-sensory experience. From the moment you walk through our front door, you are surrounded by welcoming and intriguing sights, sounds and aromas. Water trickling down our river rock wall, sexy beats emanating from our DJ booth. Aromas of fresh herbs and grilling skewers waft from the kitchen. Warm and friendly staff to cater to your every whim − not to mention the 110” video wall capable of transporting you to any locale on the planet. Haven has a little something for everyone.
When we created the original cocktail menu, we all wanted there to be a nice cohesion between the kitchen and bar. With that agreed on, Dana (our bar manager) and I came up with cocktails that utilize the finest in fresh herbs, vegetables and fruit purees. We also utilize small batch distilleries and liquid nitrogen for some extra fun and excitement.
Describe the Haven concept for Wire’s readers.
As with our cocktails I utilize liquid nitrogen. I make the ice cream bases every morning from scratch using delicious and sometimes crazy ingredients, such as bacon, black beans or Cap’n Crunch! When the order comes in for the ice cream, I add liquid nitrogen to order. The -320 degree liquid nitrogen instantly freezes the cream into a sweet dreamy confection fit for the snootiest connoisseur or pickiest kid.
The concept of Haven is to make this space your haven. We provide delicious, world-class small plates, sexy leather banquettes, amazing cocktails, exciting scenery, great music and friendly service in order to make the guests as comfortable as possible. Sink in, drink up, chow down, repeat. What is your inspiration for creating your menu items? Haven’s menu is sexy, playful, light and adventurous. I have broken it down into seven sections that include raw bar, salads, sushi, crisp, skewers, sliders and desserts.

How do you craft your amazing ice cream desserts?
What is your favorite thing about being the Executive Chef at Haven? My favorite thing about being the Executive Chef at Haven would be the interaction with my guests. I love chatting with them, listening to their stories and recipes. They teach me how to be a better chef!

Who is your greatest inspiration and why? I would be lying if I didn’t say my mom. In addition to her I’m inspired by many non-food related sources: fashion, art, nature, and weather are all great sources for menu inspiration. What’s in store for you in the future? Total world domination. Can you share with Wire readers what you are doing for this year’s Food Network South Beach Wine & Food Festival? I will be preparing Ahi Tuna Poke with sweet potato purée, coconut curry and white truffle ponzu for 5,000 hungry, culinary enthusiasts in the grand tasting tent next Saturday.

How would you explain what your restaurant 1500° is all about to Wire Magazine readers who have not dined with you? Our food is all about letting the main ingredients shine. We use as much local produce and products available to us, and we are constantly changing our menu to reflect the freshest ingredients, as well as to give our returning diners new options to try every time they come in. We have a fun and friendly staff who are passionate about food and drinks and work hard to take great care of our guests. Describe your 1500° farm-to-table concept? We work with about 12 local farmers in Florida that provide us with everything from chicken or duck eggs, to pork, beef, fruits and vegetables, and cheeses. We also work with several other growers in other states that are able to grow other specialties that Florida is not able to produce. We really strive to make this a priority for us, not only to bring the freshest and best tasting food to our guests but to also support our local farmers that share our passion for food and have been perfecting their craft for many years. Tell us about your garden by the pool at the Eden Roc. Our garden is fairly small and we are now on our second location attempting to find the best spot where it gets the most sun and least amount of wind. Last year, we had it positioned a little better and were able to grow a variety of vegetables like tomatoes, eggplants, fennel and plenty of herbs and greens. This year, with the new location, needless to say, it has been a challenge for us, given we are on the beach and the garden is poolside. It does provide us with a small amount of fresh herbs and greens for us to use on salads and some special dishes. What are some of the food items that you source from local farms?

of vegetables is endless at this time of the year. In the summer, we see a big shortage and have to source outside the state and change the menu drastically. What inspires you to create your menu items?

How did your experience working in your family’s Brazilian restaurant influence your cooking? Working for my parents gave me such a solid foundation and instilled strong work ethics in me. I learned at a very young age what is was like to work hard and long hours to make something work, and how important it is to be passionate about what you do. Both my mom and dad cooked and did everything. I’d also have to say that one of the most important things I learned from them was seasoning food properly with salt! Can you tell Wire Magazine about your culinary background and how it has allowed you to develop the 1500° dining experience? Working in my parents’ restaurant for 8 years, followed by culinary school at the Art Institute of Ft. Lauderdale and then 10 years working with Dean Max at 3030 Ocean.

A variety of things like availability, reading books and magazines, dining out, and the seasons. For instance, in the winter I crave warmer and heartier foods than the summer months when I like lighter and cooler fare.
What was it like working for Dean James Max as his Chef de Cuisine at 3030 Ocean? I was a very young cook when I started working with Dean and credit him a lot for teaching me about the importance of respecting the product and that simplicity does not need to translate to boring. First, he taught me to work as closely to his style as possible and later on let me fly on my own by making my own dishes while sticking to the 3030 concept. Tells us about your appearance on season five of Hell’s Kitchen with Gordon Ramsay. What was the best part of being on the show? What was the worst part? It was one of the most intense and most difficult experiences in my life. Gordon is a really intense chef that demands perfection from the contestants. I never had any issues with him because I too always had high standards in my own kitchens and was also raised that way with my parents. The best part was on the days that we would win a challenge and get to enjoy a torture-free afternoon and also, the nights that Gordon would “shut it down” and service would end! The other best part was the very last day when I was done! The worst part, of course, was having punishments; they were brutal. What is your favorite thing about being the Executive Chef at 1500°?

Coming to work everyday and working with my team, having fun and being creative! The rush of service is also awesome and intense. I love when I go out to talk to guests and they tell me what a wonderful experience they had. Can you share with Wire readers what you are doing for this year’s Food Network South Beach Wine & Food Festival? Beach Channel is producing a show to air after the festival and I will be Mike Justiz’s co-host for the evening at the Burger Bash as we interview chefs and guests! I will also be participating in the Best of the Best and Thrillist’s BBQ and Blues at the Eden Roc.

SASSER Ah, to be a fly on the wall of meetings of the big political muckety-mucks like national mayoral groups and their ilk – the ham-handing, the back-slapping, the unabashed embrace of bureaucracy. A few years ago, I got to experience such a thing, almost first-hand. A new elected official attended such a meeting and reported back his impressions. On this occasion, the report I got was an amazed recounting of how – when big city officials get together – bragging rights go not to the mayors who balanced budgets or made hard decisions and not to mayors who cut taxes or cut crime. No, achievement in the eye of this group of significant elected was infrastructure – concrete put down, things built, usually for transportation, although there were also props delivered for those politicos who’d managed to get new palaces for their municipal governments. Transportation projects are the local political classes’ favorite things. They include all the things politicians like, such as positive press, funneling public money to the concrete lobby for return later at election time, etc. On the surface, the political class always considers transportation infrastructure to be “progress,” and that is always good. So needless to say, as a reasonably savvy political observer I was less than thrilled to learn that Miami-Dade is edging towards its new (wheeled) trolley
system. Oh, they’re couching it as transit but it’s really part of the new Miami-Dade Taxpayers Baseball Stadium. As planned, the $20 million project will run through the Brickell, Overtown and downtown areas and west to the hospital district before finally culminating at the new ballpark. That terminus at our new stadium stands out, doesn’t it? The full county commission is expected to approve, er, I mean “consider” the item soon. The idea is led by Commissioner Bruno Barreiro, which in this case, isn’t a ringing endorsement for either the man or the plan.
I wonder sometimes if maybe the county commission might accomplish more if they just moved out of their current estate and into the Marlins’ new stadium.
I realize the political class loves attending baseball games. Who doesn’t? But wasn’t that whole Metrorail thing supposed to be expanded to – oh, I don’t know – places where it might get used the most and help alleviate traffic? What, maybe that can happen if the stadium becomes a hub. I wonder sometimes if maybe the county commission might accomplish more if they just moved out of their current estate and into the Marlins’ new stadium. Because that stadium seems to mean more to the county than, well, the actual public does. At least our enlightened leaders will have something new about which to brag the next time they’re rubbing shoulders with their peers. I’m sure local taxpayers are just thrilled.
