Sandy Brook Farm was established in 2013, currently operating 230 non-contiguous acres with 55+ head of breeding beef animals (Belted Galloway & Red Devon), 60 head of breeding sheep (Katahdin), 4 head of breeding swine (Tamworth, Red Wattle and Large Black) and poultry. Our beef and lamb is grass-raised and grass-finished, never any grain. Though we have chosen not to have our animals certified organic, we actively practice these methods and feed our pigs and chickens certified organic grains.

This tiny operation specializes in Freedom Ranger pastured chickens, which are bred for flavor. The chickens range from dawn to dusk and are brought in to keep them safe at night. These are strong, healthy birds that know how to forage and need no medication to grow. In addition to pasture, they are fed a mixture of grains purchased from the local feed mill that is light on corn/soy. Viola’s also has pastured pork sold by the 30 lb. box. In addition to meat, an assortment of vegetables is offered in season, as are red fall raspberries.

Sort through wheat berries carefully, discarding any chaff. Rinse well under cool running water. Place in a large heavy saucepan. Add 2 parts water to 1 part wheat. Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 20 minutes, then turn off, leaving the cover on. Drain and rinse. To serve hot, use immediately. Freezes well.

Thoughts on Food, Togetherness, and the Community Dinner March 15, 2018 By: Jessica M. Beaupre

For the last eight years, I’ve thought constantly about the food that goes into our mouths each day. I grew up on the north-side of Milwaukee with three sisters and quickly learned that I was one of the only children that came home to a home-cooked meal. A meal made from my mother and grandmother doing the best they could with very little money in their pockets when there was cheap fast food all around. My sisters and I were envious of all the other children that got to eat fast food each night but eventually learned we were blessed. Blessed to eat together each night at the kitchen table. After growing up and moving out of my parents’ house, I went to live with my sister who had married and started her own garden for self-sustainability. Within these few short years I realized that my sister and this small garden, were the biggest inspiration of my life. We worked hard in the garden, no doubt, but we reaped the rewards, for we spent little to no money feeding ourselves with nutritious foods that tasted like no other! We even built our relationship with each other; our own little community. One taste experience at a time I gained respect for true, whole foods that are so nutritious they can act as medicine. As we build relationships with our local community, we can find the ripest, most nutritious foods as close

to our homes as possible. In doing so, we support our community by creating more jobs, enriching local wealth, and reducing fossil fuels used to put food on our plates. Eating good food, together has taught me that a meal is not just for ingesting and digesting food, it is an experience, and a truly great one at that. This experience is an opportunity to change your relationship with the food that you eat and with the people around you. We choose those who we would like to eat and enjoy a meal with. This is an opportunity to nurture and grow our relationships with them at the dinner table. When eating together, we can relax and share our feeling with those we dine with, expressing emotion. Whether we share a laugh, a story, or a concern, we share something together along with a meal. We create community. Nourish has shown me and made me part of a community that is so beautiful. A community of collaborative and empowering individuals that I am privileged to have met. They have taught me so much that I will carry with me including educating the community and positively influencing community wellness overall. I’m excited to share a meal at Nourish’s Community Dinner with you all before I continue my journey in Milwaukee as a food coach for the summer months, then continuing forward from there. 2018 Featured Farmers Market - Get to Know your Market & Farmers The Jacksonport Farmer’s Market is held every Tuesday morning at Lakeside Park at the corner of Highway 57 and County Highway V in Door County. It is held, weather permitting, from May 15th to October 28th from 9 a.m. to 1 p.m.

Several booths feature a variety of homemade candies and other treats so you can enjoy some great food while at the market.

The Jacksonport Farmer’s Market, now beginning their ninth season, features nearly 30 local Door County vendors, providing a wide variety of fresh produce and local Door County fruit (strawberries, Sue Jarosh raspberries, cherries, blueberries) in season. Most of our regular dedicated produce and fruit vendors have been with us for nine years. Many have regular customers that arrive early to seek out their homegrown favorites. We feature several organic vendors who have beautifully presented produce fresh for your supper table. A number of vendors feature beautiful hand crafted products and gifts for the home. You’ll be pleased to see the outstanding quality of work and enjoy talking to the local craftspeople. Many do custom orders for our guests. Bakery vendors feature a variety of fresh breads, Danish, croissants, kringle, coffee cakes, cakes, cookies, granola and pies. Jams, jellies and honey are available, all locally produced or baked in Door County.
