Cecil acted like, and was, a celebrity before most of the world ever heard of him. He was regal, and carried himself like royalty. I think there was a bit of a diva in him. None of the dozens of other lions we encountered in Zimbabwe or Botswana seemed to love the camera like Cecil did. We first heard of Cecil while heading off on our initial game drive in Hwange National Park, Zimbabwe in August 2014. A really large, black-maned lion, older now, he had been chased out of his territory and had his pride taken over by a younger rival. Not content to sulk about at the edge of his former domain, Cecil teamed with another older male, Jericho, and they charged back in to reclaim his territory, vanquish his rival and win back the pride. Determination, teamwork, and never surrendering, never letting go of what was his. And he even gets the girl(s) back at the end. Totally Hollywood, and it was as if he knew it.

We first saw him from about 60 or 70 meters away, lying in the grass, the cubs and some of the females behind him under heavy branch cover, one female up on the branches, protecting the pride. Our guide pulled the vehicle to a halt as Jericho roared away from behind us in the distance. We sat and just watched, taking a few photos and filming from the distance. Then everything seemed to stop as Cecil arose and walked in the direction of Jericho’s roar and towards our vehicle. Cecil’s size, color and swagger were enough to take your breath away as I took picture after picture while Pamela filmed from behind me, but the “Cecil Show” didn’t stop there. He walked forward until he was about four meters away from the side of the vehicle and stopped. Right in front of us. And posed. Calmly. Then he very kindly turned around and posed some more. We knew he was looking back to check on the pride but you almost thought he looked as good in left profile as he did in right, and he knew it. He turned again, posed for a moment then swaggered off into the distance to see what Jericho was up to. We went very quickly from tourists to conservationists.

How in the world was it possible to go from that Hollywood story to the nightmare of hearing that Cecil was baited out of his sanctuary, lured off the reservation, blinded with a spotlight, shot by someone whose inadequacies with a crossbow rivaled his inadequacies as a human being, made to suffer for 40 hours before finally being shot and killed with a high powered rifle, skinned and beheaded with his carcass left to rot in the sun for “sport”?!? For “fun”?!? For a $55,000 thrill?!? To become a rug in someone’s “man cave”? Then the rage grew, yet in moments of clarity became motivation. Something MUST BE DONE. And so on a late Sunday evening less two and a half weeks ago, two pictures and the video of Cecil we took was posted on a Cecil the Lion Facebook page we initiated, with no clue as to what we might do with it. A day later we added a little website telling the story of two of the thousands who have met and experienced Cecil, and www.CecilTheLion.org was created. Since then 30,000 people have given the page their thumbs up/like and up to 1.3 Million views were registered from people from all over the world. The page became a place to mourn, to explode with rage, anger, sorrow, to lash out, to vent and more than anything, to express a driving need to DO SOMETHING. And a global community was born in under a week, people fed up that there are those willing to destroy a beautiful animal who was a source of income to an impoverished area, who will never be seen again. Men, women, young, old all wanting to do something to force change. In these two and a half weeks thousands have been raised through generous donations and the sale of t-shirts all designed by artists of this Facebook community and offered on the website.

“Save the Lions – In Memory of Cecil” is a crowd funding effort that will donate 100% of any monies received directly to WildCru, the group who tagged Cecil and other lions, tracking their activities in Hwange National Park. Without the collar put in place by WildCru, investigators would not have known that Cecil had been lured/baited away from the safety of the park and may never have found his body. WildCru was also the suggested recipient for donations made by Jimmy Kimmel during his opening monologue on his July 28, 2015 broadcast.

Cecil was given a place to roar on these pages, where the community gets to see their tributes posted in art, in poems, in tears, in petitions being circulated, in their donations and the wearing of the t-shirts, all shared with each other. A loud, communal roar. A video showing the global nature of the community was quickly produced to celebrate World Lion Day on August 10. “Selfies for Cecil” is a celebration of #CecilLives and how his spirit is creating a movement. With pictures sent in from around the world accompanied by renowned Canadian recording artist Bruce Cockburn’s iconic song “Wondering Where the Lions Are”, all showing where #CecilLives.

Cecil stopped being a lion when his body was ripped apart, and he became a symbol, a spirit. And his spirit has unleashed an outcry for an end to the destruction, threatening and endangering of the world’s shrinking supply of dozens of animal species. But it is more than that, because you can feel and hear that the outcry is also about the rape of the planet, the destruction of its natural resources and wild habitats, a world where profits and greed outweigh any sense of global connectivity or social responsibility. Where Cecil has become the flashpoint for all of the anger behind all of those things. We are at a tipping point. And things will change. That will be Cecil’s gift back to everyone who stood up for him, for his pride, for the lions of Africa. Never give up, teamwork prevails, be relentless in going after what you want. The changes that will take place as a result of Cecil’s slaughter will be the Hollywood ending he deserves. “Today more than ever before, life must be characterized by a sense of Universal Responsibility, not only Nation to Nation and human to human, but also human to all other forms of life.” - His Holiness the Dalai Lama This is the mission.

Angama Mara has opened! This much anticipated newcomer to Kenya’s bespoke safari scene has taken just 11 months to build since the first peg was planted – a ground breaking achievement in itself. Kenya’s newest and most ambitious lodge will open in June 2015. Taken from the Swahili word for ‘suspended in mid air’, Angama Mara rests on the rim of the Oloololo Escarpment, which forms part of Africa’s Great Rift Valley, with magnificent views expanding over the Maasai Mara’s acclaimed Mara Triangle Game Reserve. There is little that is conventional about the creation of Angama Mara: translated from Swahili to be suspended in mid-air, it is the only luxury lodge to be set high up on the Great Rift Valley Escarpment, with views that stretch for miles across the Maasai Mara 300 meters below. Its 30 tented suites, split between two totally separate camps, have been crafted by Nairobi’s finest tent maker, using the world’s largest custom built cutter/plotter and a further 42,000 man hours to complete. A dream come true for Steve and Nicky Fitzgerald who first visited the site nearly 15 years ago, the lodge is also situated where the romantic ‘Ngong Hills’ scenes were filmed in Out of Africa. Inspiration for Angama Mara has continued to be drawn from this classic safari era – one of romance, canvas and elegant simplicity – with modern influences bringing in a high design to the tented suites and an architectural drama to the guests areas. 65

The two totally separate and intimate camps, each of just 15 tented guest suites, have been designed by architects Silvio Rech and Lesley Carstens of Ngorongoro Crater Lodge, North Island and Mombo fame. Floating 300 meters above the Mara, each tented suite hangs onto the edge of the escarpment offering 180-degree views from the 11m glass-fronted floor-to-celling windows. A new and beautifully proportioned version of the classic safari tent, they each have a light footprint and a detailing that has been kept purposefully minimal allowing for the uninterrupted views to play the dominant role. With every touch-point of the guest experience lovingly considered throughout the design process, even the decks have been dropped down so as not to obstruct the views. Flexibility and ingenuity is at Angama Mara’s core with days planned around what the guests want to do, and when. As their wishes change from day to day guests will have the opportunity to enjoy the knowledge and companionship of more than one guide. The guiding team will also endeavour to match like-minded guests with each other: birders will go on safari with fellow birders and serious photographers the same. First-timers to Africa will be guided differently to old-timers. Holding guiding in the highest regard, Angama Mara’s guides have been chosen for their ability to find animals off the beaten track, their great knowledge and storytelling skills but most of all for giving their guests an unforgettable safari. 66

Angama Mara’s access to the acclaimed Mara Triangle, a remote part of the Maasai Mara renowned for the year round quality of its game viewing as well as for the reduced number of vehicles that can access it. Wildlife viewing can also be enjoyed straight from the lodge looking down onto the plains below whilst resident game around the lodge is plentiful too. The game viewing in the Mara Triangle is considered among the most outstanding in Africa. Indeed, guests will descend a private track directly from the lodge and 10 minutes later find themselves surrounded by great herds of Africa’s mammals. Every day will be tailored around what they dream to experience. They may choose game drives that last a morning or the whole day, follow animal trails on foot along the escarpment with a Maasai guide, look back at the lodge early one morning from a hot air balloon or visit a manyatta in a neighbouring community. Guests who long for a day to just be may quietly observe animals roam from high above and raptors ride the thermals right from their tent’s deck. They will be able to go for a run in the fitness room, cool off in the pool and relax with a massage in their tent. They may choose breakfast on their private deck, a picnic lunch in the far reaches of the Reserve, a romantic sundowner on a blanket on the ‘Out of Africa’ kopje and a barbeque dinner around the fire pit. With a no-set-schedule rule Angama Mara’s guests will be discretely taken care of by 140 staff, all of whom are Kenyan, from the lodge manager down. And finally, it is not usual to see those with 30 years in the luxury safari industry having a hands-on approach in the day to day running of the business. A number of the original landmarks remain intact in the new structure. From the grand, revolving door at the entrance, to the reception and foyer with its black and white terrazzo tiles, familiar wrought-iron balustrade and original, inlaid hand-painted tiles. The recognizable black and white chequer-board floor has been re-instated throughout, with new tiles being manufactured by Union Tiles and Lovisa, makers of the original mould for the Oyster Box pattern tile that was copied. Makanyi is located in the southern sector of the South African Timbavati, an area dubbed as “The place where something sacred came down to earth”. Here guests enjoy a truly vast game viewing area, whilst the lodge itself is 856 hectares in size it has direct traversing rights over a further 6,000 hectares and is directly adjacent and open to the 2.4 million hectares of the Kruger National Park. The Timbavati Private Nature Reserve is not only home to an abundant variety of wildlife and birdlife but also to the famous “Big Five” and the extremely rare and world-renowned white lion, and and such a sighting is something you will remember forever. It is also a bird watcher’s paradise with over 350 types of birds to spot and teeming with an abundant variety of different species of wildlife, from fascinating nocturnal creatures down to the tiniest insects. The architecture of Makanyi is clean and contemporary, cleverly blending seamlessly into its bush surroundings. Decorated to the highest standard of luxury and design, offering the ultimate in comfort. There are a total of 7 open plan suites, 5 Classic and 2 Honeymoon, of approximately 140m2 each making them some of the largest rooms to be found in the bush. A mere 75 km from Port Elizabeth towards Grahamstown, Eastern Cape, South Africa. Shamwari is the crown jewel of private game reserves situated in the malaria free Eastern Cape, the birth place of Nelson Mandela. This privately owned 25 000 hectares of prime natural terrain has received numerous international awards. Shamwari is an exploration of nature with close encounters of free roaming wildlife and the coveted big five with a choice of unique lodges, an exclusive private villa and the adventurous Explorer Camp. In 1990, Adrian Gardiner, a successful businessman from Port Elizabeth bought a small farm as a week-end getaway for his family, this consisted of 1200 ha of African bush, a dream he had always had, growing up in Zimbabwe. Drought and financial difficulties led a number of neighbouring farmers to place their land on the open market and Adrian managed to buy up these parcels of land at very reasonable prices. His African dream soon extended to 7000 ha. Being an avid reader, Adrian spent time researching CJ Skead’s historical accounts of the Eastern Cape, as well as journals and historical diaries of the 1820 Settlers. In doing so he discovered that the Eastern Cape was once considered the richest wildlife areas in Africa. Over years all of the indigenous fauna and flora had been eradicated by agriculture, farming, hunting and drought. Early hunters and pioneers, Cornwallis Harris and Sparrman documented the existence of the “legendary BIG FIVE” in the area. Substantive evidence dating back to the 18th century, was found to indicate that the Eastern 118

Cape supported vast herds of Cape Buffalo, Zebra, Black Wildebeest, Rhino and that prides of Cape Lion roamed freely in the hills. In 1853 the last Black Rhino in the Eastern Cape was killed. In 1856, the last free-roaming lion was shot on the parcel of land now called Shamwari. In 1857 the sub-species of Cape Lion, was hunted to extinction and in 1919 the last Cape Buffalo was hunted and killed. In 1919 a legendary hunter was invited by the Administrator of the Cape to hunt down and exterminate a small herd of Elephant, which was considered a danger and a menace by the local farmers in the area of Addo, near Shamwari. By 1931, when Addo Elephant Park was established as an Elephant sanctuary only 11 Elephants were left of the once vast herds. What began as a small family retreat, has now possessed Adrian and captured his passion – to return the land and the area to its once proud and pristine condition, teaming with indigenous plant, insect and bird life and supporting herds of free-roaming animals of all species once prevalent in the area. He wished again to hear the majestic roar of lions as they hunted and ranged where they once did 150 years ago. 119

His vision soon extended to include the preservation of history and indigenous tradition and culture. The viability of sustaining and growing this dream took on, of necessity, a commercial aspect. Thus in 1992 Shamwari Game Reserve was born, with a small passionate staff of 7 and immense commitment and determination to make Conservation profitable. Extensive scientific research was undertaken and the convergence of 5 ecological bio-systems, malaria-free climate and summer and winter rainfalls ensured that an unequalled diversity of wildlife could be supported. A systematic and scientific re-habilitation program was launched, handin-hand with carefully considered game re-stocking procedures. Adrian developed a close and enduring relationship with renowned conservationists, Dr Ian Player and John Aspinall. The concept of conservation and tourism working in synergy was possible. On 15th October 1992, Shamwari was officially opened, receiving its first guests into Long Lee Manor, circa 1916, the original Manor House, once owned by the Fowld’s family. Highfield and Carn Ingly, two 1820 Settler cottages were also, at this time lovingly restored and opened to guests. An Animal Rescue and Educational program was launched, in partnership with the Born Free Foundation to home rescued big cats from captivity. 120

The Julie Ward Centre was opened on 30 September 1999 with five bush enclosures. Over time Shamwari grew and established itself and by the year 2000, the Reserve was large enough and stocked sufficiently to support large predators. A dedicated and systematic re-introduction program was launched and finally in October 2000, the first lions were brought back to the Eastern Cape and released at Shamwari to fulfil a dream. Today over 5000 head of game range freely, having been bred and/or re-introduced into Shamwari, now a Game Reserve stretching over 25 000 ha, consisting of 6 separate lodges, employing over 325 local staff and most importantly has been returned to its rightful ownership – Pristine Eastern Cape Fauna and Flora. Rather than expand at the existing Julie Ward Animal Rescue Centre, a new education centre and sanctuary has been established in the Northern part of Shamwari, near the town of Alicedale. Opened on 5th November 2006 and named after the main sponsor, the Jean Byrd Born Free Animal Rescue and Education Centre operates in the same way as the other centre and provides increased educational facilities for schools as well as provide further enclosures for more rescued big cats. 121

Chef Michael Broughton’s trademark sauces have become the cornerstone of the award-winning chalkboard menu at this Stellenbosch restaurant, which has a brand-new offering for foodies in search of a sweet deal this winter. Michael honed his skills as Head Chef at the Mount Grace Country House and Spa in Magaliesberg before opening Terroir. Prior to this, he was chef-patron of the highly successful Broughton’s in Gauteng, where he was the recipient of two Eat Out Top 10 awards and a string of other accolades. Surrounded by the vineyards of the exquisite Kleine Zalze Wine Estate, Terroir has earned a solid reputation for outstanding and inventive contemporary cuisine and excellent service. Apart from Chef Michael Broughton’s perennial favourite signature dishes, the chalkboard menu changes with the seasons, with flavours ranging from the Mediterranean, through to the East, and back home to Cape Town. Michael sums up the philosophy behind the food at Terroir as follows: ‘It’s all about big bold flavours, where the basic ingredients in every dish are stretched to the top of their flavour profile’. With Terroir recently celebrating its 10th anniversary with the launch of ‘Terroir – the Cookbook’ (Struik Lifestyle), which depicts the synergy between the restaurant’s deceptively simple food and the highly acclaimed wines of Kleine Zalze. Since opening in 2004, Terroir has achieved an Eat Out ‘Top 10’ restaurant award eight years out of 10 – a remarkable achievement in the Cape, which is becoming increasingly recognised globally as a gourmet destination. Broughton had Terroir’s loyal, local customers in mind when he decided to introduce the new Winter Plates deal in addition to the a la carte menu. ‘I want to portray warmth, comfort and generosity on the plate, while still offering value for money’ he explains. A choice of dry aged Angus sirloin or fresh fish will be complemented by a glass of Kleine Zalze Vineyard Selection wine. This being Terroir, the Winter Plates also come with inspired accompaniments characterized by a knack for razor-sharp seasoning and layers of intense flavour. Roast potatoes, twice-cooked fries or roasted root vegetables will go with the steak, while a crunchy winter salad or a ragout of tomatoes, white beans and mussels will pair well with the fish. Accompaniments will change throughout the season, depending on the produce. ‘The Winter Plate a hearty meal in itself, but it may just as easily form part of a two- or three-course meal simply by choosing extra courses from the a la carte menu. It really depends on the occasion or how hungry you are,’ suggests Broughton. 160

Terroir’s a la carte menu will be shorter and sharper this winter – three starters, two mains (in addition to the Winter Plate options), two desserts and a cheese plate. ‘A tight edit on the winter menu allows us to change it more often – even daily – depending on the best available produce, the weather and what we feel like cooking,’ says Broughton. Satisfyingly wintry newcomers to the chalkboard menu will include a starter of braised chicken wings with corn, ginger, miso and boudin blanc; and a Vietnamese-style pho, given the Terroir touch. ‘I have always loved the combination of fresh egg noodles, crunchy greens and a punchy broth. A pho may be a humble dish, but the same fundamental cooking foundations I believe in still apply,’ says Broughton. For dessert, a sophisticated but fun take on a classic Rum Baba is made with Cognac and served with marshmallow ice cream, chamomile jellies, and ‘tie-dye’ pineapple. A sweet ending of roast pear with hazelnut cannoli, chocolate sorbet and orange cream sounds equally tempting. Main courses will include a succulent springbok pie with corn and curry butter; roast chicken with foie gras, truffle and mushroom; and lamb two ways with yoghurt cream, smoked paprika and mint oil. Whether a Winter Plate or a multi-course feast from the a la carte menu, the creation of every dish produced in Terroir’s kitchen speaks of authenticity and provenance, and is a labour of love.

Terroir’s formula for success is based on every member of the Terroir team, both at front-of-house and in the kitchen, working hard to get the basics right. Consistency needs to be the common thread in everything that we do, from the service to the quality of ingredients and degree of creativity that goes into each element on the plate. Food and wine pairing is a key focus at Terroir. Like the menu, the wine list changes on a regular basis. Wines are selected on the basis of quality and their ability to stand up to the depth and intensity of the sauces that define Broughton’s Frenchbased cooking style. 2014 was an important year for Terroir, the TV series Seasons at Terroir, depicting the inner workings of the kitchen, launched on the National 166

The launch of Michael Broughton’s cookbook “Terroir- the cookbook” celebrating Terroir’s 10th year anniversary and Terroir being voted the Tenth Best Restaurant in the Top 10 category at the 2014 Mercedes-Benz Eat Out Restaurant Awards, South Africa’s very own ‘Foodie Oscars’. The 47 rooms and suites Kleine Zalze Lodge with its stylishly decorated, set alongside the first fairway of the championship De Zalze Golf Course. Iconic red wine producer Alto marks its 90th year as a wine estate this year with its latest vintages reflecting a proud tradition of excellence. Renowned for its award-winning wines of elegance, depth and complexity. The lands draping the ancient granite shoulders of the Helderberg Mountain near Stellenbosch that are home to Alto have been farmed since 1693. They used to be part of a larger farm called Groenrivier, translated as “Green River”. It was acquired in the 1920s by Hennie Malan, who set

the farm on a new path to exceptional wine making. Hennie and his son, Manie, gave the farm the Latin name Alto, a reference to the altitude of the vineyards, the surrounding mountains and their aspirations. In the 1960s a new father-and-son team were at the helm – Piet du Toit and Hempies, the well-known rugby Springbok who continued the fine red-winemaking traditions of his predecessors until July 2000 when Schalk van der Westhuizen took over. Reflecting a proud heritage of committed red wine craftsmen, Van der Westhuizen is only the fourth winemaker at Alto in 90 years. 170

Van der Westhuizen is a man of few words and prefers his wines to do the talking, of which they do extremely well. Winemaker Van der Westhuizen has, for 15 vintages, produced award-winning wines at Alto, but all good things come to an end, as the saying goes. On June 30, 2015 this tall, quiet and unassuming man will hand over the reins to his successor, his son Bertho, but only after father and son have spent two months working together on this well-known wine estate. No farewell is ever easy, and nor is this one, neither for Alto nor Schalk. This native of Stellenbosch has wine in his veins. He was born on Neethlingshof outside Stellenbosch in 1953 where his father was the manager for 30 years. In 1973 he took over the reins as winemaker and manager from his father at Neethlingshof and in 2000 he was appointed wine maker at Alto in the so-called Golden Triangle. From the outset Schalk made an impact, not only at Alto but also in the wine industry as a whole. He received his first award in 2003 when his Alto Shiraz 2001 took gold at the authoritative Decanter World Wine Awards, and many followed. Schalk celebrated his first decade at Alto with the introduction of the estate’s flagship wine, the Alto MPHS 2007, a blend of cabernet sauvignon and cabernet franc. The name MPHS represents the initials of the estate’s first four winemakers, Manie Malan, Piet du Toit, Hempies du Toit and Schalk van der Westhuizen. Schalk says the fact that his son has taken over the reins from him makes the parting somewhat easier, “but it still feels like a final farewell to a loved one, and that’s never easy”. He admits he is leaving Alto’s vineyards and cellar in good hands, but it is going to be some time before this award-winning wine estate is out of his system. 172

Bertho says the fact that he started out in the vineyard before moving to the cellar stands him in very good stead and is the best way to learn. “A winemaker must have a feeling for the vineyard. The old adage that a good wine is made in the vineyard is very true and my knowledge and experience in the vineyard have so far helped me tremendously.” The 35 year old winemaker is very proud to take over the reins from his father in the vineyard and cellar of one of South Africa’s foremost red wine producers. “If you talk to anybody about red wine, Alto’s name will be one of five estates mentioned, and usually in the top three. Its reputation for classically structured wines is well-deserved, and it is therefore a massive honour and privilege to be able to make wine here. The vineyards thrive in the estate’s unique terroir, and my role will be to work carefully and judiciously in the cellar with the best fruit from the vineyards.” The fact that he has to fill the rather big boots of his dad doesn’t concern him. “My dad has left deep tracks on Alto, and yes, they’re big boots to fill, but I know I can always rely on his advice and input. It will require passion, commitment and hard work to maintain his very high standards in both the vineyards and the cellar, but I’m looking forward to the challenge. “Good enough was never good enough for him and, like him, I will always strive for perfection with every wine made in Alto’s cellar.” Alto is part of Cape Legends, an extensive collection of superlative quality, award-winning wines from several boutique estates situated in and around the Cape Winelands.

For Takuan von Arnim, the dynamic Cellar Master at Franschhoek’s Haute Cabrière, stepping into this role as its new generation custodian has been a balancing act of sorts: while proudly honouring the von Arnim family legacy, his task has been to take this well-loved brand boldly into the future. Takuan is the eldest son of Achim von Arnim, the pioneering wine grower who established Haute Cabrière in 1982 with the vision of becoming the

first estate in South Africa to specialise in the production of wines in the style of Champagne. In just 33 years the brand, characterised by its iconic Haute Cabrière Chardonnay Pinot Noir, its fine Pinot Noirs, its celebrated Pierre Jourdan MCCs, and its lively Tranquille blend, has become firmly entrenched in the hearts and homes of wine lovers in this country and beyond. For much of the past two decades, the younger von Arnim has worked closely beside his father to grow Haute Cabrière’s distinctive portfolio of wines. Takuan might have been born into the family business, but it was expected he would have to prove his commitment and passion, and work 176

his way up. Starting out as an apprentice in his father’s cellar, he was sent to Germany to obtain formal qualifications in wine growing and cellar management. He returned to South Africa in 2004, officially joining Haute Cabrière as Production Assistant, then Assistant Cellar Master which has culminated in his current position as Cellar Master. Taking on the reigns, he says, has been about forging an independent style to that of his father while remaining profoundly respectful of the
legacy that was created. “It’s not about putting a bigger foot down or changing what is already a golden recipe,” he says, “but rather taking the brand to another level. However, if I don’t have my own identity or expression in this art, Haute Cabrière will never evolve.” Takuan credits his wife, respected wine professional Christiane von Arnim, as being a major force in shaping the brand’s evolution thus far. Christiane served as Haute Cabrière’s Marketing and Administration Manager, and later as its Managing Director, with her highly focused and strategic influence in leading the brand’s transformation leaving an indelible mark. She moved to a new position at one of South Africa’s top wine distributors. 177

“Many of the changes we’ve implemented have been more invisible to the eye,” notes Takuan, citing the rigorous administration and accounting systems that have helped not only to control costs but also dramatically improve quality and what Haute Cabrière is able to deliver to its customers. “There are so many things still to get done,” he adds. Takuan has taken a holistic approach to the changes that have been implemented, from focusing on the brand and the marketing style to making the cellar more production driven and closely addressing the integrity of the wines. “This is the next step in the evolution of Haute Cabrière,” he says. Takuan himself couldn’t be happier than when he’s in the cellar, where he is able to expand his vision for the estate’s wines. This year is the first vintage of which he has taken full control. He says there have been many “tweaks” made, with his father’s consent, which have contributed to the wine style 178

“becoming even better”. He is also to be found continuing his father’s tradition of festive sabrage demonstrations, cellar tours and tastings of the estate’s MCC and still wine ranges every Saturday, proving that some things never change. Always integral to Haute Cabrière has been its singular winegrowing philosophy - Sun-Soil-VineMan. The phrase represented Achim von Arnim’s conviction that a wine is grown rather than made, and thus the ultimate expression of terroir. While this philosophy remains true, Takuan believes its explanation can be expanded to encapsulate the growth of the brand. “The message is that, while staying true to the philosophy that underpins the brand, there is more to it. We’re adding to it but remaining true to where we started,” says Takuan. “With Haute Cabrière, my parents created a diamond,” he explains. “My intention is not to change it, just to polish it”

The location for Naibor allows guests to experience wildlife from a prime position in the heart of the reserve yet within a short drive, they can enjoy the freedom of the conservancy.
