In Zambia’s iconic South Luangwa National Park, The Bushcamp Company operates six exclusive Bush camps in the remote south of the park, as well as the award -winning Mfuwe Lodge just inside the main park gate. Set out from any of these secluded, intimate camps and you will be guaranteed an unrivalled wildlife experience in one of the last unspoilt wilderness regions of Africa – the very place where the African Walking Safari was pioneered. Arguably the most famous, the South and North Luangwa Parks were created in 1938, with additions of land, what is now the South Luangwa National Park’s boundaries were finalised in 1972. The Park is mostly set on the floor of the Luangwa valley, set between the meandering Luangwa River, with its myriad ox-bow lagoons to the east and the steep Muchinga Escarpment to the west. It has been said that wildlife experts have listed the South Luangwa to be amongst the top of wildlife sanctuaries in the world. The concentration of wildlife around the heart of the park, the Luangwa River and its lagoons, is some of the most intense in Africa and in the world. The concentration of wildlife in the South Luangwa is above average, and there is also an excellent diversity of mammals and birds – there are some 60 mammal species, of which 14 are antelope species alone, and over 400 species of birds of which 39 are birds of prey and a further 47 are migrants. In addition, the South Luangwa is also reputed to have the highest concentration of leopards in Africa, with an estimate of 1 leopard for every kilometre of river in the Luangwa Valley – making for an increased chance of a visitor seeing one of these fascinating and beautiful cats. The Luangwa River itself is home to huge populations of hippo and crocodile. The Park is also home to the endemic Thornicroft’s giraffe, and Cookson’s wildebeest. In terms of predators, lion is abundant, as are leopard, and there is a good population of wild dog. Visitors will also have the chance to see good herds of elephant and buffalo. The best way to take in what this incredible African environment has to offer, is by their now famous “walking safari”. To add to the Park’s richness, one would experience the dry bare bushveld in the winter months and a lush green wonderland in the summer. 28

The Mfuwe Lodge is located just inside the South Luangwa National Park and around 45 minutes’ drive from Mfuwe International Airport and is open all year round. The Mfuwe Lodge’s beautiful accommodation in the form of guest chalets, all decorated with a true African style to fit in with the bushveld surroundings. The open plan central lodge facility incorporates reception, lounge, dining and bar areas, under a thatch roof supported by palm poles and dominated by two impressive chimneys at opposite ends. There is a broad timber deck where the swimming pool is situated overlooking the main lagoon which is a spectacular view. Each year the Mfuwe Lodge has some very special guests that pay a visit to the lodge, since the Mfuwe Lodge in Zambia happens to have been built next to a wild mango grove that one family of elephants have always visited when the fruit ripens. When they returned one year and found the luxury accommodation in the way, they simply walked through the lobby to reach their beloved grove of trees. At least three generations of one particular elephant family have returned annually and their unusual dining habits and unique behaviour has been the focus of many a TV documentary, photograph, video, newsworthy article, and even children’s books.

The ten-strong elephant herd is led to the lodge each day by the matriarch, since the hotel was built directly in the path of the elephants’ route to one of their favourite foods – Wild Mangos. The animals come in two-by-two. Hotel staff and visitors have gotten used to the elephants’ impromptu strolls through the lobby. The most interesting thing about these elephants is that this is the only herd that comes through, and they come and go as they please. The family group, headed by the matriarch, return every November and stay for four to six weeks to gorge on wild mangos - up to four times a day.

The elephants are not aggressive but one wouldn’t want to tempt them. It is the elephant’s choice to be here and they have been coming here for the past decade. There are other wild mango trees around, but they prefer the ones at the Mfuwe Lodge. The lodge was unwittingly built upon their path and the elephants started walking through afterward. The hotel is set in an idyllic national parkland. Naturally, the lodge becomes busier for both elephants and guests during November. The lodge gets people visiting during the elephant migration because of the unique experience of being so close to wild animals in an unusual environment, a totally natural phenomenon, as the elephants come of their own accord and certainly a rare but magnificent sight. 39


CHAMILANDU, THE BUSHCAMP COMPANY - ZAMBIA

Chamilandu Bushcamp is situated in an ebony grove on the banks of the Luangwa River of the South Luangwa National Park, this prime rive location is a perfect for a bird’s-eye view of the wildlife that the river and its lagoons attract. There’s nothing quite like waking up at Chamilandu. Early morning views don’t get much better than the rippling waters of the Luangwa River, the gentle rise of the Chindeni Hills and a vast African sky – especially when you’re lying in a four poster bed in a handsome stilted tree-house. You don’t even need to leave your bed to see the wildlife – from your unique vantage point you can watch as animals roam across the landscape, or swing through the trees above your head. There are just three stilted chalets at this exclusive camp, set on the riverbank beneath a soaring ebony grove. Enjoy a sundowner from the comfort of the thatched bar and dining area, as you watch the wildlife do the same at the river. Exceptional game viewing and understated elegance make Chamilandu a place to remember.

Chindeni Bushcamp is a tranquil tented camp on the edge of an oxbow lagoon with the Chindeni Hills providing an amazing backdrop within the South Luangwa National Park. In an enviable location on the edge of a lagoon where hippo chortle and elephant wallow, stands Chindeni – undoubtedly one of the most beautiful tented camps in the South Luangwa. There’s something about sleeping under canvas that ignites a sense of adventure in everyone. At Chindeni you can combine that thrill with style and comfort in one of its four opulent tents. Gaze out from your private veranda onto the lagoon which attracts birds and animals from miles around. Or settle back in the central lounge and dining area – a glorious expanse of varnished decking arranged on several levels around the surrounding ebony trees, boasting, of course, the same spectacular view of the serene lagoon and its inhabitants across to the Chindeni Hills. In terms of activities, they also have guided walks, game drives and night drives, same as all the rest of the camps under management of the Bushcamp Company in the South Luangwa National Park. 43


KAPAMBA, THE BUSHCAMP COMPANY - ZAMBIA

Kapamba Bushcamp is a remote and romantic camp situated in a prime location on the Kapamba River, and one of only two Bushcamps to be open from April to January – the other being Zungulila. In a remote corner of the South Luangwa National Park lies Kapamba, a camp that combines the isolation and superb game-viewing opportunities of a true bushcamp with a touch of luxury. Set on the banks of the shallow, spring-fed eponymous river, Kapamba is surrounded by some of the park’s richest wildlife. Watching an elephant take a dip in the river can be quite an experience when you’re lounging in your own private plunge pool. The central bar and dining room is positioned under a huddle of matumi and sausage trees, with a wide deck that stretches out with views of the Kapamba River. And if that’s still not close enough for you, why not enjoy your favorite beverage from the middle of the river itself, your feet dipped in the cool, crystal shallows. 44

KUYENDA, THE BUSHCAMP COMPANY - ZAMBIA

A charming and rustic camp that offers a true taste of the African bush. There’s something undeniably special about Kuyenda. Set beneath shady trees by the Manzi River, it may be the simplest of our camps but Kuyenda embodies the authentic charm of old Africa with its cluster of traditional thatched grass huts and back-to-nature feel. As for the wildlife, you hardly need look for it as it will come to you. Settle down in the lounge and look out over the rippling grasses of the neighbouring plain where the drama of the African wilderness is played out each day. Kuyenda’s intimate atmosphere is only enhanced by the extraordinary couple who regularly run the camp – the ever-hospitable Babette Alfieri and Phil Berry, one of Zambia’s most experienced naturalists. Situated within a privileged Wildlife Management Area between Northern Tanzania’s Tarangire and Lake Manyara National Parks, lies 55 000 acres of raw, untainted African bush – the Chem Chem Wildlife Concession. Created by Fabia Bausch and Nicolas Negre’s deep passion and commitment for Tanzania’s incredible natural heritage and the African wilderness. Nicolas was born and raised in France, but has lived in Tanzania since 1995. His natural passion for wildlife, extensive knowledge of the African bush and fluent Swahili has made him one of the region’s most sought after guides. This passion, combined with his deep knowledge and understanding the bush and its wildlife, means that Chem Chem’s guests experience the truly sensual safari. Fabia grew up and lived in Switzerland. Her early career included 12 years immersed in the financial corporate world, where she exceeded the expectations of her colleagues and seniors alike, turning often stressful situations into invigorating opportunities. The ‘Pink’ season is so called for the enormous flock of crimsonlegged, pink-feathered Lesser Flamingos that migrate between the alkaline lakes of the Great Rift Valley – in which Chem Chem Wildlife Concession lies. Approximately 2.5 million flamingos travel together, in massive V-shaped flocks – an exceptional sight to see – as they make their way to the very unique and rare habitat that sustains them. Although there is no guarantee from year to year that the flamingos will descend on Lake Manyara: the permanent structure of Chem Chem Lodge’s main house was built to reflect and honour the form of a flamingo with its wings spread wide for landing.

Jackie speaks with Jaco Grové, editor of WO’GOA AFRICA WO’GOA: Take us to the beginning, what inspired you to pursue cooking professionally? Jackie Cameron: I grew up in a family where by everything happened around the kitchen/dining room table. It was a very natural process when deciding what to do after school. My grandfather had his own Butchery in Pietermaritzburg, KZN, and both my grandmothers came from a farming-family background; eating from the land was key. My mother also enjoys cooking and entertaining friends and family. WO’GOA: Being a renowned chef yourself, who did you look up to as a role model and how did he/she inspire you? Jackie Cameron: More than looking up at one individual chef or person I have looked, studied, worked with and eaten with some fantastic people over the years. This has all contributed to who I am today and what I want to achieve in life. I am mostly inspired by my parents and how hard they have worked to give my sister and I all that we want. Because of their hard work and dedication they have opened many doors for me. I will never be able to thank them in words for everything. They are the people I strive to impress and never want to let down. 140

WO’GOA: At a very young age, you started to work at Hartford House at Summerhill Stud. How did you get the position as head chef there and please tell us about the experience working at such a “glamorous” venue. Jackie Cameron: Hartford will always be a beautiful spot. Yes, I was young but then the team was also very young, in amount of years of experience, when I started there. The most remarkable things was how we all grew and learnt together. I had free range to do what I liked so my growth was molded by all that I wanted to achieve. Every year…6 months, I put aims and goals in front of myself and my team of which once had been spoken about had to be achieved. Leading by example is the only way to do something and through many years of hard work and long hours I got my team to understand exactly what my mission was. A team needs every individual person to see the dream to be able to achieve anything. My staff/team made me get out of bed every day and bounce into work. There is nothing in the world that can compare to the growth and development of another human being and working with my lady-cooks made me concrete my need to get into teaching and training. 143

WO’GOA: How do you go about designing your menus and also picking the wines for your award winning wine lists? Jackie Cameron: Everything to me is about relationships and never forgetting where one comes from. I have been invited and cooked overseas about 30 times over the years. After having eaten in the top restaurant in the world I realized to set myself apart from any other restaurant in the country in the world I had to make my food to another level to truly celebrate “local heritage”. I always celebrate local flavors and ingredients together with the point of getting to know native cuisines. I’m busy studying Indian cuisine and trying to work with as many Indian’s as possible so to learn first-hand. I’m always in the process of spending time with a sangorma. I have a desperate need to know as much as possible. My wine list took me initially forever to compile because I was so pedantic in the fact to showcase the stories behind each of the wines and the wine makers…I deeply believe people need to know the stories and why these wines are special. There are so many wines out there but what makes this wine more special to the next. My food and wine pairings are unique and precise for the individual dish. Sometimes I can go through 10 bottles of wine before I get to the wine I feel is best. I look at a wine to compliment the food the wine must take the dish to the next level. It does become a problem because I get to the point that I can’t eat the specific dish without the specific wine …it completes the dish. WO’GOA: At your time at The Hartford House, were there any celebrities visiting and did you ever cook for them? Jackie Cameron: Celebrities don’t interest me (in the sense of the word) to be honest… people who have worked extremely hard for what they have achieved is what interests me. I am in awe when around people who are achieving greatness in their life and making a difference to others in and around them. WO’GOA: You have been a celebrity chef yourself on some South African cooking shows like Ultimate Braai Master and MasterChef South Africa. Tell us about the experience and the pressure of how it is cooking and appearing on television. Jackie Cameron: Anything that is outside of one’s day-to-day normal happenings is considered pressurized. I thrive on putting myself in different situations that tests everything within me. I have realized that most of the issues I truly stress about is time only wasted. I am who I am. I never try and be someone else when I’m on TV. You either like me or you don’t … I am real to what I believe in so going onto TV is not difficult for me. I do battle though with repeating word for word sentences that I am told to say I much prefer conversation rolling off the tongue in more of a natural way.

WO’GOA: You are now the proud owner of your very own School of wine and food. What inspired you to have your own school and what training do you offer at the Jackie Cameron School of Wine and Food? Jackie Cameron: This is something I have known I want to do for years now. I find different personalities and characters interesting. I love getting to know and manage people to get the best out of them. I mostly see more potential in other human beings then what they see of themselves. I offer an international (City & Guilds) accredited course both the Diploma in Food Prep and a Diploma in Patisserie. We host the only chef course in the country that offers the WSET (Wine Spirit Education Trust) level 2 wine course. The learners do a level 2 First Aid course, fire training. My school is aligned with Nelson Mandela Business College for stress management courses. A four day bread baking course. A 16 part French appreciation course. An intense cake icing course. Much time is spent with suppliers and growing their own. The list goes on … WO’GOA: What is the next challenge or project for Jackie Cameron? Jackie Cameron: Every day is a challenge and a new project for me. But the next great deadline is getting my next recipes book in on time. WO’GOA: Who is Jackie Cameron when she is not cooking and teaching? Any other hobbies? Jackie Cameron: I’m always working and I am not joking when I say I work flat-out from 5pm to 12pm every day. There is much on the cards but I do try and make time for friends and family. And when I am in my friends and family company I try to be as relaxed as possible. WO’GOA: What is your personal favorite wine and why? Jackie Cameron: I could never pin-point one wine as I have so many that are favorites for different reasons; depending on my mood/the outside weather or play a part. WO’GOA: Having a successful career as an international chef, what advice do you have for an aspiring chef? Jackie Cameron: Put your head down and work, never complain…that is just embarrassing. You have to work harder, faster, smarter and longer than the next to get ahead. 149

Jacques Erasmus It is a universal truth that things must change and as nature embraces its own flux with the changing of the seasons, so too does Jacques Erasmus, the creative and culinary mastermind of the chic café Hemelhuijs. Since its inception in October 2010, Erasmus has transformed this creative space according to the seasons and his menu is an ever-changing celebration of seasonal ingredients and inspirations. For many food-and-design aficionados, Hemelhuijs is a favorite, familiar haunt that constantly surprises and offers something new with each visit. This winter is no exception. As always it is the food that draws one to the warm, beautiful interiors of Hemelhuijs again and again. The menu exemplifies the love for the coldest of seasons. ‘Despite the brutality of winter it is the comfort and the nourishment of the winter flavors that I love’ Jacques says. The menu is an honouring of simple flavors from winter memories of baked quinces and the fragrance of burning peach wood. So under the heading ‘Humble Beginnings’ you will find the comfort of slow-cooked onion soup, topped with brioche and baked with Kleinrivier Gruyere or if you prefer a cream of roasted cauliflower and chestnut soup with hints of truffle. Under ‘Warm the Heart’, you will find the familiarity of pan-fried lamb kidneys with mushrooms, mustard and Marmite toast soldiers. Or farm style beef and cabbage ‘frikadelle’ served with truffled bean and potato mash. 151

There is also white pepper fried calamari dressed with radish, green apple and miso mayonnaise. Or an open burger of slow roasted beef brisket with prune and peppercorn cream. And for those who could eat breakfast all day long there is the sweetness of oldfashioned sago ‘melkkos’ with a generous dusting of cinnamon, or French toast with homemade quince marmalade and brie. There are poached farm eggs with artichoke hearts and Hollandaise and there are lightly toasted ‘mosbolletjies’ with homemade anchoïade. To drink, you can enjoy hazelnut dark hot chocolate ganache with steamed milk or vanilla dulce du leche with thyme steamed milk, when the weather is cold or enjoy freshly crafted juices like pear, naartjie and carrot, or winter melon, apple and lemon when the wintry sun is out. In the mood for something cool and alcoholic? Then consider the quince and prosecco Bellini or a white pepper and orange blossom gin with tonic and freshly pressed ruby grapefruit. On the design front, the walls of Hemelhuijs have been painted a river clay terracotta shade and are accented with muted delft tones of blues and whites. Mounds of quinces, when available, are artfully displayed because at Hemelhuijs seasonal produce is visually celebrated as well as deliciously offered on a plate. Against one burnt orange wall stands the multitude of gold-labeled brown laboratory bottles filled with flavor compounds developed by Jacques and known as Flavour Intense. 152

An avenue of blue eucalyptus trees greets visitors to the historic Allée Bleue Estate the renowned estate in Franschhoek. Old Cape Dutch buildings are scattered about the area, and peacocks roam freely. At the reinvigorated Allée Bleue Bistro Chef Beau du Toit is putting the emphasis on fresh and local produce. The Bistro, conveniently situated at the entrance to the estate, is set in a charming building that boasts two open verandahs overlooking the gardens and play area – ideal for enjoying a lazy lunch on a sunny Winelands day. Inside, original art and photographic prints adorn the walls, and an antique stove provides a cozy atmosphere during the cooler winter months. One thing’s for sure, a warm welcome is on the menu all year round. Newly appointed chef, Beau du Toit, brings his effervescent energy to this classic space. Beau has made a name for himself both locally and internationally. After studying at Zevenwacht Chef School, he completed an apprenticeship under Bertus Basson and Craig Cormack at All Things Culinary, and went on to become head chef at Basson’s Overture Restaurant, a multiple award-winning establishment in the Stellenbosch Winelands. After a stint in London as chef de partie for the Michelin starred David Thompson Thai restaurant, Nahm, Beau returned inspired. Today his love for local fare as well as expert ability in flavor combinations stands him in excellent stead in his new position as Head Chef at the Allée Bleue Bistro.

The menu has had a complete makeover, it is now much more compact, and makes the most of fresh, seasonal ingredients. As a tempting starter, each table gets a fresh garden salad of leaves picked that morning, sprinkled with sea salt, a few shavings of parmesan and a dash of mustard vinaigrette adding a tangy aspect. Served alongside delicious farm bread, it’s tempting to fill up on this alone! The small but well-formed menu offers breakfast and lunch. Fresh farm eggs are poached to perfection, served with king oyster mushrooms and baked beans. Or opt for the homemade granola with seasonal fruits and yoghurt. For lunch, there are light as well as hearty options. Every day sees a different vegetarian special, made from the produce that is delivered that day. The likes of cold carrot soup have featured, with a wonderful thick purée of carrot served with a rainbow of perfectly roasted carrots and microherbs for added freshness. The calamari starter offers plump calamari tubes stuffed with fresh herb pesto and served with zesty tartar sauce; while the hake stir-fry with its sour tamarind dressing, sweet coconut rice and crispy fried ginger is a nod to Beau’s international experience at Nahm restaurant. Robust dishes are also on offer; think tender pulled pork pie served on creamy mash with roast veg of the day; or beef sirloin, venison and ‘skaapstertjie’ burger served with handmade sweet potato chips. 161

Simplicity and freshness are the other key ingredients he has added to the Allée Bleue Bistro since he started working there at the end of 2014. “Being situated on working herb farm, and surrounded by local producers, well, it doesn’t get any better,” Beau says excitedly. Herbs are picked in the morning and on your plate the same day. Making the most of this bounty of fresh produce from the farm has resulted in simple dishes packed with flavor. “We want our food to be accessible,” Beau enthuses. Allée Bleue’s perfect location at the turn-off from Stellenbosch to Franschhoek adds to this accessibility. In fact, the friendly and decidedly unpretentious atmosphere at the Allée Bleue Bistro is what sets it apart from the rest. While Allée Bleue is most widely known for its wines, fruit and bistro, the 200ha estate is ranked among the top three herb growers in the province. Allée Bleue’s herb production takes place in 31 hydroponic tunnels spread across 2.4ha is one of the Western Cape’s biggest herb producers, packing between 1.5 and 2 tons of fresh herbs weekly!

The immense herb tunnels on the estate are something truly unique to experience, Allée Bleue invites foodies, gardeners, families and anyone interested in how herbs are grown to take a tour of their herb farm under the guidance of the estate’s resident herb grower, Lario Moolman. “With herbs, the learning process never ends,” she says. “And even if you have years of experience, this is no guarantee of success as herbs are a living plants, impacted by constant changes in the environment and weather. Plus, we’re continuously looking for ways to improve what we do.”

The Allée Bleue Bistro prides itself in its local and family friendly approach. Parents can sit on the verandah while kids enjoy the jungle gyms. Even the local farmers from the area are regulars for breakfast: “Everyone orders the vanilla cinnamon French toast with syrup and bacon!” Beau jokes. He opts for a hands-on approach, often serving diners himself to get involved as much as possible with the experience at the Bistro. All Allée Bleue estate wines are available at the Bistro, well-priced and by-the-glass too. A new introduction, adding to the relaxed bistro feel, is a monthly featured craft beer. A local brewery is invited to promote their craft beer at the estate, a launch event is held on the first Saturday of each month, and then this beer is available on tap for the remainder of that month. Beau even uses some of the beer in his dishes, and recently created a Black Dog Stout ice cream – providing a refreshingly bitter and creamy end to a meal. The crème caramel, however, is a showstopper dessert, with dark caramel, seasonal stone fruit and sable biscuit crumb. To inspire diners to take a touch of Allée Bleue home, Beau’s handmade products such as smoked olives, pickled chillies and Allée Bleue olive oil, as well as the small potted herb centerpieces on each table, are all for sale at the Bistro!

The Crocodile Kruger Safari Lodge is one of a few lodges found in the well reserved wildlife sanctuary called Marloth Park. Marloth Park is situated right next to the impressive Kruger National Park, bordering on the south of the Kruger near the Crocodile Bridge entrance with only the Crocodile River separating the two from one another. Marloth is also well known by tourists as a vacation town for local and international tourists alike as it has numerous private houses and lodges for vacationers to rent for their stay while there are loads of activities to keep the entire family occupied for the entire duration of their stay, like swimming pools, a tennis court, restaurants and a bar. Although it is known as a vacation hotspot with private property, most of the park remains completely natural, with no fences and the gardens remains natural as well. Although there are small game roaming freely, like zebra, giraffe, warthog, ostrich, wildebeest and kudu amongst other, the freedom of movement is remarkable. Tourists can ride a bicycle or go for a walk on their own through the African bush and experience the peacefulness and the crisp fresh dry air of the lowveld. While walking along the Crocodile River, visitors can watch spectacular wildlife scenes in the adjacent Kruger National Park.

Crocodile Kruger Safari Lodge has a miraculous view over the Kruger and the Crocodile River from most of the rooms and from the poolside deck and bar. Breakfast is also served by the poolside with a nice variety of cold meats, yogurt, cereals and juices to get you started while the kitchen prepares your eggs and toast to your liking. 168

When Christopher and Stella found Azura back in 2007, their vision was to take people to undiscovered places of authentic natural beauty, enable them to stay there in luxury, while at the same protecting the environment and positively changing the life of a local community. Uitkyk wine legacy lives on in the flagship Carlonet All great wines share at least one thing - a dogged, long-term commitment in the pursuit of excellence and the Uitkyk Carlonet surely ranks among them. Produced for almost six decades, the award winning Uitkyk Carlonet is treasured by wine-cognoscenti for its heritage and the superior quality that is born from timehonoured skill and experience. “Wine sets the tone of an event; its nature can be anything from frivolous to serious. For many, the Uitkyk Carlonet represents a pinnacle of achievement and as such, has been handed down from each generation of wine lovers to the next,” says Uitkyk winemaker Estelle Lourens on the eve of the release of the Carlonet 2011. “When it is served, it is most often the dramatic centrepiece of a meal or an intimate gathering of friends. More than a mere stalwart that ages well, Uitkyk Carlonet has become entrenched in wine lore.” Reflecting this ascent, the wine’s name hails from one of the farm’s pioneering founders. Uitkyk was established in 1712 when land was granted to settler Jan Oberholzer. Vines were however first planted here more than two centuries later, in 1929, by the owner at the time, a Prussian émigré, Hans von Carlowitz. He recognised the winemaking possibilities inherent in the high slopes of the farm with their well-drained soils. So, with the help of his son, Georg, he developed the vineyards. Situated on the south-western slopes of the Simonsberg Mountain, Uitkyk has a view across the Cape Flats to Table Mountain in the distance. Its elevated position is the reason for its name too, which means “look out”. It provides a splendid setting for the striking manor house, a neo-classical masterpiece completed in 1788 that is one of the only three 18th century, double story, flat roofed, Georgian style houses left in the country. 194

During the restoration of the house, two beautiful murals were discovered on a wall in the entrance hall, buried under 15 layers of paint. Their meticulous uncovering was preceded by painstaking research; samples of paint fragments taken from the murals were sent to Europe for analysis. Where possible, similar natural pigments were used in their restoration and the two delicate panels portray the seasons of summer and spring. Much of the colourful bird, plant and insect life so meticulously depicted, can be found on Uitkyk today. In March 2011 Uitkyk became a Biodiversity & Wine Initiative (BWI) Champion. More than half of the 600ha property falls within the Greater Simonsberg Conservancy and is set aside for conservation and provides natural corridors for fauna species to move freely and thrive. It has only 150ha under vine. This care for the environment is reflected in its wines, which have been in the care of Estelle Lourens since October 2000. After graduating with a degree in viniculture and viticulture from the University of Stellenbosch, she explored the wine regions of Australia, Tasmania, New Zealand and America. Estelle returned to South Africa in 1997, working as assistant-winemaker at Neethlingshof and then at Stellenzicht before joining Uitkyk. Under her leadership, the estate’s wines have won numerous awards in local and international shows. She has admirably borne the responsibility of the Carlonet tradition too, indicative in the latest release. Made from 100% Cabernet Sauvignon grapes, the Uitkyk Carlonet 2011 is dark ruby in colour. Its aromas are reminiscent of dried fruit, especially prunes, berries and spices, with shades of vanilla oak that cascade onto the palate where the wine shows silky chocolate in its fine, balanced and lingering poise.
