Toast To The New Let’s get the introduction out of the way, this is my first issue as editor and it gives me the greatest pleasure to introduce WO’GOA…something is always brewing which is dedicated to Goa. Goa is a land of rich cultural heritage which makes Goa very unique. Goa can be explained in three words, Relaxed, Laidback and Susegad which one would often connect the word to Goa; however Susegad actually means Quite when translated from Portuguese. Goa has plenty to offer apart from it’s rich cultural heritage and being India’s smallest state, in its true sense of large five star hotels and resorts which co-exist in harmony with beach huts and shacks, both have their own charm and form an important part of the Goan culture. The Portuguese influence has blended with the Indian influence thus forming elements of a unique culture and this blend makes Goa very unique. The publishing team comprises of respected names as contributor, travel writer, consultants that is complimented by a passionate core group of brilliant creative minds. The publication is positioned to deliver unrivalled editorial coverage focusing on what’s hot, where to stay, eating out, nightlife, art & culture, events and festivals. As it turned out, the Taj Group’s loss would be the international restaurant scene’s gain. Chatty, warm and utterly unassuming Virendra looks after the front of the house while being the official “taster”...now that’s one hell of a job! The couple work side-by-side in planning and executing every single detail, a journey that has culminated into a straight-forward, friendly and knowledgeable service, mirroring the simplicity of much of the restaurant’s cooking. Despite Reverie being an English word derived from the French verbiage unlike most others which have a Greek or Latin origin, A Reverie doesn’t serve French food, far from it, in fact. This restaurant is a proponent of Modern European cuisine with Asian & local influences, combining it with the finest indigenous ingredients and traditions come to the fore, often in a highly technical, avant-garde way. Meals here tend to be epic, with a large menu, so come hungry. Almost a decade and a half old, A Reverie has featured in the list for the best restaurant in India for its entire life and relentlessly produces creative and exciting food that continues to delight both diners and critics alike. The massive churches & chapels at nooks & corners of Goa, the imposing Forts at many strategic locations are a feast to the eyes. The frescos (wall paintings) in the St. Francis of Assisi Church at Old Goa are unparalleled to any in Goa. The adjoining Museum of the ASI in Old Goa literally takes one through a journey of the different ages that the land of Goa has gone through. The visitors can practically see the artifacts that have been lined in the imposing building of the Portuguese era. But the actual credit to be given to the Portuguese vis-à-vis creation of architectural assets is the ingenuity in creating basic infra-structures, which put to shame the modern techniques, by surviving for a period of over a century or two, whilst new constructions are seen to collapse all over Goa. What was built for horse carriages in the year 1632-34, the Ribandar Causeway and the Old Pato Bridge at Panaji, is today impressively standing the tremendous strain of thousand heavy vehicles every day, whilst we have the collapse of the 16 year old Mandovi Bridge to compare with. It is a tragic fact that similar to the collapsed Mandovi Bridge is the attitude of us Goans. It is very easy to point a finger to the generations before ours, and rightly so; they never made an attempt to instill a sense of pride in our own land. As we step on the threshold of the Golden Anniversary of our beautiful “State of Goa”, we should take time to see in what ‘State” we have treated these heritage structures. There is an emergent need for the Department of Education to make it compulsory for educational institutions to atleast take their students to this heritage wealth of Goa, when they are still there. Projects and interschool / College competitions must be organised based on these structures and its history. The impressionable youth of Goa in the NSS Units of every College and Higher Secondary, must be made to contribute their work, on a periodic basis at locations such as the over-looked Forts, temple & mosque ruins, etc, instead of wasting their time in some jungle trying to construct a road, which washes away in the first drizzle. These students, who are indeed the future strength of our State, must be assisted by the Archaeological Department, which is portrayed as over-burdened and at the same time extremely lethargic and apathetic to Goa’s archaeological wealth. It is said that “distance makes the heart grow fonder”; rightly so, the Goans who have travelled or settled abroad are today returning to seek their roots here in Goa. Some have to return with depressing memories as their roots have been uprooted by the construction lobby and in the name of development. Goa is known for its scenic nature and the long stretches of the beaches along the Arabian Sea. States in India are aggressively promoting Tourism based on the heritage structures in their land and portray in it as God’s Own Country, which is undeniably true. But what is also true is that wherever is the country of God, Goa is “Gods Own Abode”

ndrzej Andy Zyla’s culinary journey is interesting, a simple down to earth person who arrived in London from Poland in 1999 and stumbled on his first job as a wash upper for a small family run Greek Restaurant “Karavas” and in a short time he was asked if he wanted to work on the grill, he realized that he started to like working on the grill and had a good vibe of the kitchen. A few months later Andy was told that he showed great promise and should consider being a chef, today he says “I will not change my profession for a million dollar”.

During my first days in Panjim, a friend took me with him and we were just driving in and around Panjim city. While looking at more or less recently (means past 20 years) constructed buildings, I was shocked to see all those blackened facades. I asked my friend when this horrible firestorm had happened? He answered with a somehow astounded and at the same time amused look, there was nothing such as a fire and it is just black mold.

A closer look at Goan architecture of the past, reveals a few indications to make it such a unique style and well adapted to the climate (sunshine and rain) as well. First of all it is the height of the buildings, one or at most two stories only. The mighty sloping roofs with their huge roof overhangs. Still the coconut trees next to them are taller, shading the roof with their branches. Then the two major types, the more inward courtyard house and its more extrovert cousin with street-facing verandahs. Coming from a country where ninety percent of sloped roofs are constructed with wood, it was good to see those imposing hipped roofs after all the cast-in-concrete roofs. As it is with most of old buildings the detailed craftsmanship makes the charm of it, be it the woodwork or the flooring.

I would call Gerard da Cunha together with Lady Helen Hamlin and Dean de Cruz true lovers of careful integrated Goan architecture. Gerard da Cunha has done a great job while restoring the Reis Magos Fort and so did Dean de Cruz with the amazing Nilaya Resort. Goa is not famous for beaches and sunshine only, but also for its rich cultural diversity and their exceptional built heritage. Let us work towards keeping them intact for future generations to come.

But it was a pleasure every time we met on social occasions and shared political canards. A man of very few words, yet with an infectious sense of humour, Goa’s most loved cartoonist, the late MARIO MIRANDA on whether he prefers buxom women to anorexic, as an off-shoot to his often well-endowed female cartoon caricatures he drew. Recipe Serves Four 800gr of Baltic or Atlantic Cod, skinless 160gr girolle mushroom 100gr green garden peas 10gr sea salt 6gr fresh ground black pepper 50ml olive oil 80gr butter 2 red radish, sliced and kept in iced water Pea shoots or herbs flowers as decoration For Fennel Puree 4large fennel bulbs, trim the stalks and bottom root 500ml good quality olive oil 2garlic cloves Lemon zest from 1 lemon Sea salt flakes to taste For Green Shellfish Jus 600gr of langoustine, prawn or scampi heads 200ml olive oil 450gr of aromatic garnish (carrot, onion, celery, tomato, bouquet garnish) 800ml of water 100gr spinach and parsley leaves Salt to taste Method Start with the shellfish jus. SautĂŠ all the prawn or scampi heads on the large frying pan with olive oil and chopped aromatic garnish. Transfer all sautĂŠ items to pot, add water and simmer for at least 45 minutes. Strain and reduce it for another 20 min. Once cold add the spinach and parsley and using a hand blender, blend and strain it again. It should have a green colour, if required add more parsley or spinach for a more vibrant colour. Fennel Puree - Cut and trim the fennel bulbs, place then in a pot with olive oil, garlic and lemon zest. Cover the pot tightly with cling film and cook for 45-50min till the fennel is very soft. Place the cooked fennel in the blender and emulsify it by adding olive oil slowly. It should have a velvety texture. Season it with sea salt. Cut cod in 4 pieces (around 200gr each). Season it with sea salt and pepper. Pan Fry the cod till it is crispy and brown. Add mushrooms, peas and butter to the same pan and cook it together for about 2min. Arrange all ingredients on the plate the way you like it. Use sliced red radish and pea shoots as decorations.

asparagus and samphire, ratte potato, saffron and verjus cream Recipe Serves Four 800gr Salmon fillet, skinless 450gr asparagus, only green top parts 240gr samphire 200gr potatoes Dill leaves 1 large cucumber seeded and diced Sea salt, freshly ground pepper 80ml good olive oil 30gr butter For verjus and saffron cream 2 cloves of garlic chopped 2 banana shallots chopped 0.5 fennel bulb chopped 120ml of verjus 500ml good quality fish stock 100ml double cream 6 sprigs of saffron 30gr butter Sea salt to taste Method For Verjus Cream Combine the shallots and garlic and cook them in the sauce pan with butter. Once softened add saffron, verjus and fish stock and let it simmer it for 30min. Strain and thicken it with double cream. Season it with salt as per your own taste, the verjus cream should have a slight sour taste and beautiful yellow colour. Take the asparagus and slice them in thin long strips. Keep them in iced water together with samphire, which has to be washed and bottom brown bits need to be taken off. Boil the potatoes and peel them. Roughly chop the dill. Pan Fry the salmon till brown and crispy. To serve, take the asparagus, samphire and potatoes, keep them in hot water for max 1 minute. Sprinkle with olive oil, chopped dill, and season it. Careful as samphire has salty taste itself. Arrange vegetables and fish on the plate sprinkle them with diced cucumber and add as much verjus cream as you like. recipe & photograph Andrzej Andy Zyla
