A Guide to Worcester’s Many Cultural Markets Vol. IV, 2017
Created by the Worcester Academy students of Grade 8 2016-17
“Let’s Eat!” A Guide to Worcester’s Many Cultural Markets Volume IV (2017) The city of Worcester is a diverse and thriving community, a gateway city for many who have come to this country from around the world. As a result, Worcester and the surrounding areas feature dozens of specialty food markets. The 8th graders at Worcester Academy have created the “Let’s Eat!” guidebook series to honor and share the stories behind these markets. During the winter of 2017, teams of 8th graders visited the markets featured in this guidebook, taking photographs, interviewing customers and staff, surveying grocery items, and taste-testing ready-to-eat foods. Each team compiled their findings in a separate chapter, including a general overview of the market and its offerings as well links to additional online resources about the regional culture, cuisine and geography. Our students have researched new cultures, communicated with non-native English speakers, and tried new foods that they may never have known existed. We hope this book will guide you to do the same! Enjoy! This volume of “Let’s Eat!” builds on three previous publications: Vol. 1 (2014) - devoted to the markets within walking distance of our school; Vol. 2 (2015) - extending further afield to markets around the city; Vol. 3 (2016) - reaching more deeply into and beyond Worcester’s neighborhoods to discover yet more specialty markets. “Let’s Eat!” Volume 4 revisits some markets and discovers others for the first time. Special thanks go to the market owners and staff, who graciously welcomed these students and supported their efforts to get to know the diverse cultures of Worcester. We hope you enjoy traveling through this city with us! This guidebook is a multi-disciplinary project of the Worcester Academy Middle School Visual and Performing Arts Department in collaboration with the English, Global Studies and Computer Science Departments. Project Team: Elizabeth Bowles, Art; Jared Field, Music; Eliza Hale, Drama; Elizabeth Goodenough and Linda Anderson, Global Studies; Laurin Baldwin, English; Leah Wolf, Computer Science; Dr. Anthony Butler, Middle School Director

driving through the haze emitted by the cars that surround you as you weave between the immense brick school buildings that line the street, you will come upon a line of three or so connected rectangular buildings, each bijou in terms of stature. The middle store, positioned between an office blue building and a boutique, bears a sign just above the door that reads “BA African Market & Majesty Fabrics,” as well as a sandwich sign affixed to the door displaying the store hours. The large front window of the BA African Market is covered with images of the various foods and items stocked within the store. As such, the store’s interior is sheltered from the street where cars endlessly crest the hill that it rests upon. Overall, the market’s exterior is similar to the multitude of other small businesses that populate the neighborhood; however, a 3

As you enter the BA African Market, you might think the store’s compact size isn’t able to accommodate many products. However, the layout of aisles, shelves and other appliances solves the space predicament. The counter is placed along the front wall of the store. To give the store some personality, a few small pictures and decorations adorn the wall behind the counter. Three aisles are placed in the store, parallel to the left and right walls. The aisles are each of a comfortable width for someone to walk 4
Canned Goods & Frozen Foods
Walking in the store, dry goods are the first thing to see. The interior of the store has about three aisles, all lined with a large variety of dry and canned goods. There are shelves with canned fish, meat and tomatoes and the adjacent shelves are stockpiled with beans and homemade hot sauce. Additionally, there is a collection of milk products, tea, coffee and cerelac, for long trips or to store for a long time. Long grain rice and pounded yam are pressed against the walls. Looking on the counter there are corn nuts and a jar of spices. Next to the counter are cosmetics, including skin cream, body ointment and soap. These unique brand goods cannot be found at your local supermarket so go out now and try some African goods.
Where in this store can you find a wide expanse of various meats and vegetables? The fresh and frozen food section. There is one large glass-doored refrigerator and three enormous glossy white freezers filled to the brim with a wide selection of foods. The refrigerator contains dried fish such as Tilapia and Mackerel. The freezers contain a plethora of imported foods. Some examples include cow stomachs, dry snails on a stick, pork feet, and several different types of peppers. There are also some examples of fresh produce such as yams and onions. Altogether exploring this section of the store will be an intriguing experience. 5

The Story
Looking to try something different, something fresh and guaranteed to make you want to go back? Then you better check out the Bay State Shawarma & Grill. It is a treat for your senses and especially your stomach. Bay State Shawarma is a Lebanese Shawarma and family-owned bakery that was started in the early 1980’s by the current owner’s uncle. It was envisioned as a place where all would be welcomed and where Arabic people new to the area could work and buy food to feel at home. Hamad, the current owner, took over the original bakery from his uncle and added a restaurant as well. The employees at Bay State work long hours to make all of the food fresh out of the oven for their customers. Prices are reasonable and the amazing quality is truly a treat for your taste buds. ED HYDER’S MEDITERRANEAN MARKETPLACE
AUTHORS: ANTHONY PETRONE, CATE MCDERMOTT, JULIETTE NOEL, MICHAEL TONELLI & ALANNA KEYO
Market Description Started in 1975, Ed Hyder’s Mediterranean Marketplace has had 4 different locations, all in the Pleasant Street area of Worcester, Massachusetts. Ed Hyder first started out working in a factory. After working there, he decided he wanted to work for himself, and opened a grocery store which he named after himself. The business has been open for more than 40 years. The store has always had a wide variety of visitors, building up a clientele of many different backgrounds seeking Mediterranean and Middle Eastern specialties. Over time, Ed Hyder’s has added to what they sell, to attract new crowds. As you approach the well-known brick building that houses Ed Hyder’s Mediterranean Marketplace, you will see large glass windows which wrap around the building. The building is 144 years old, but the market has been there for 22 years. Cars flow through busy Pleasant Street where Ed Hyder’s is a main attraction. On the right side of the building you will see a spacious parking lot with spots that spread out into the back of the building. The entrance is linked to the parking lot. Up a couple of steps or the ramp is a sign welcoming you to Ed Hyder’s, then an automatic door to enter the marketplace. 17

When you walk into the market, you are welcomed with multiple choices among fresh and frozen goods. All of the food is presented in many inviting ways. First on the right, where you walk in, you will see an open display case that has fruit and vegetables in baskets and crates. Beyond that case, there are deli counters that have cheese, ham, prepared dinners, lunches, and sandwiches. Further down, there are refrigerators where the shopmade food is stored. There is another open display case that carries many dairy products such as cheese, yogurt, dips and more. This is a unique market, because here you can buy many different spices in any amount you want, unlike supermarkets where you have to buy a specific amount. Ed Hyder’s sells many specialty goods that you can’t normally find in a supermarket.

Packaged Foods This Polish market, run currently by Dariusz Golemo, was founded in 1986 by his parents, both of whom came to America in the 1970’s from Poland. The business started out as a clothing store, then merged with a travel agency, that still is there today. Soon after, they detached from the travel agency and started the food store that is there now. Currently, there are several family members working in the store, as well as other employees that are not part of their family. Dariusz says his favorite part about working in the store is when customers from Poland come in to eat some of their food and it brings back so much from their early life, as if their eyes and mouths are reliving memories of their childhood. About half of the customers are Polish and the other half are a range of other nationalities. All the meat Golemo’s uses is brought in from Canada, as the way they feed their animals is much different than in America, which brings a different taste to the food.

Also, they will contain Polish prepared foods, such as canned fish, smoked trout, and European delights. The inviting organization of the items will make you crave a yogurt treat, or a bag of pierogi. This section is jam-packed with all your daily needs of dairy products, prepared and frozen foods, and Polish classics. 35
From sausages to donuts, Golemo’s has it all. You will see shelves filled with tempting foods including one of the most popular foods they make, Paczki. These yummy donut pastries are always eaten on Fat Tuesday. There are many different types of donuts you can purchase including chocolate, fruit, cheese and plain. Also, butter croissants are very popular. When biting into these soft and fluffy rolls you will be delighted. Another treat you will find in the aisle is Prazynki, a creamy puff snack with a light onion flavor. Nutymax is a crunchy hazelnut wafer bar. 2017 is Tom’s 42nd year of making sandwiches. If you speak with Mr. Gago, proprietor of Tom’s, you will find much information on the history and culture of this international deli. Tom's was originally founded by Tom Haddad in 1969, and bought by Iwona and Darek Gago in 2008. The Gagos moved the location of Tom's from Water Street to Millbury Street in 2011, where you can buy a great variety of edible cultural products. Mainly a Polish Deli, Tom’s also sells German, Hungarian, Jewish, and Irish food to customers of all cultures. On a day to day basis, the customers enjoy sandwiches made with meat, cheese, and vegetables. You can also buy many other food products, both pre-packaged and homemade. The year 2017 will be Tom's forty-second year of selling their fresh foods, meats, and sandwiches. 61

• Fresh and Frozen Foods at Tom’s•
Hanging up above are Tom’s tasty sausages. Entering Tom’s Deli, you may pick up the faint smell of pickles. If you journey to the back of the store you’ll see buckets filled with their homemade pickles. In addition, you’ll see olives and Wine Herring. Though the name may sound unusual, herring is a big delicacy over in Poland and most of Northern Europe, where many of the deli’s offerings come from. Another thing that might catch your eye are the huge sausages hanging from the metal rack up above. These are part of the many meats contained in the deli, including fish, ham, beef. You name it, they’re all there. Tom’s also sells cheeses, salads, chocolate, candy, homemade horseradish, and juices of many kinds. 62

When you step into the deli, one of the first things you may notice is a long white shelf which stands against the wall. It holds exciting varieties of foods like jellies and other spreads, canned foods, bottled foods, and other ready-to-eat foods. One item that stands out to customers are the giant wafer-like waffles. They can be found on a small black shelf you’ll see when you enter the deli. The waffles are brittle with a mild taste that easily takes on the flavor of a savory red raspberry jam, which can be spread over it. In addition, Tom’s Deli also creates delicious pastries. A few of the many pastries at Tom’s deli are the Christstollen, a special German Holiday Cake coated in sugar, and the Chruscik, a European pastry covered in confectioner’s sugar. Come and enjoy these yummy pastries and many more of the foods at this deli. 63
