My partner Nate Rossi says that Crust and Worcester are similar because Worcester is in a renaissance and people are ready for finer things; everything is cyclical, and Worcester is comin' back around like the Paris of th ’80s. mercial machines. We do things the old-school way. I’ve had people who have seen our success and want us to mass produce for supermarkets, and that is the exact business model we do not want to fall into. The reason that we have been successful is because we are doing everything ourselves. Anybody who wants to move toward commercial baking will inevitably have a backslide in quality.”

Enjoy!” - Executive Chef Sean Dacey 1 Large Butternut Squash, Halved and Seeded 2 Tablespoons Fresh Ginger, Peeled and Minced 1 Red Onion, Diced 1 Clove Garlic, Minced 2 Ounces Extra Virgin Olive Oil 2 Quarts Vegetable Stock 2 Ounces Cider Vinegar 1 Ounce Maple Syrup 1 Pint Heavy Cream 1/2 Teaspoon Paprika 1/2 Teaspoon Ground Cinnamon 1/8 Teaspoon Ground Clove Salt and Pepper
1. Preheat your oven to 400 degrees. Cut the butternut squash in half, and remove the seeds. Place squash flesh side down on a cookie sheet. Roast until tender, roughly 45 minutes. Set aside to cool. Peel when cool. 2. In a large pot, sauté the onion in the extra virgin olive oil over medium heat until tender, roughly 3-5 minutes. Do not let it burn or brown. 3. Add ginger and garlic and cook for one minute. 4. Add the squash to the onion/ginger mix. Cook for 4 minutes, mashing with a wooden spoon to break up the roasted squash. Deglaze the pan with cider vinegar. 5. Cover the squash with stock, and bring to a boil. Reduce the heat and simmer on low for 30-45 minutes, stirring every few minutes to prevent sticking. 6. Whisk in maple syrup, heavy cream, paprika, cinnamon and clove. 7. Use an immersion blender to blend the soup to a smooth consistency (if you don’t have an immersion blender, use a kitchen blender and blend in small batches). 8. Season to taste with salt and pepper. ROTISSERIE CHICKEN POTATO STEW Kummerspeck 118 Water St., Worcester 774-243-7071 Co-Executive Chef and Owner Rachel Coit serves up reimagined comfort food in the Canal District. 1 Rotisserie Chicken Picked Off the Bones and Diced to Desired Size 1 White Onion Medium Diced 3 Ribs Celery Medium Diced 3 Medium Carrots Medium Diced 4 Cloves of Garlic Minced 2 Idaho Potatoes Medium Diced 1 Bunch of Kale Picked Off Stems and Rough Chopped 4 Tablespoons Butter ¼ Cup Flour 1 Can Evaporated Milk (You can use
cream but evaporated milk gives a nice texture without high calories.) 1 Cup Dry White Cooking Wine 32 oz. Chicken Stock (Homemade is best but 1 carton of store bought will be great as well.) 1 Bay Leaf 4 Tablespoons of Poultry Herb Blend (Parsley, sage, thyme, and rosemary or Bell’s Spice Blend.) Salt To Taste Pepper (Optional) 1. Melt butter and onions, celery, and carrots for about five minutes. Season with a good-size pinch of salt to draw moisture out of the vegetables and help them sweat. Once the onions are turning slightly translucent add your garlic and sweat for another 2 minutes. 2. Sprinkle the flour evenly over the vegetables and gently stir. You want to toast the flour slightly to a light golden brown. 3. Add your white wine and stir to loosen any flour on the bottom of the pot. 4. Add your chicken stock and bay leaf and bring the liquid up to a simmer. 5. You can now add your potatoes and continue to simmer until potatoes are cooked through. Roughly 15-20 minutes depending on how big you cut the pieces. 6. Finally, add the chicken, kale, herbs, and evaporated milk. Simmer another five minutes so the chicken is warmed through and the kale is tender. 7. Remove bay leaf and serve with some crusty bread. Country loaf from BirchTree Bread Company pairs nicely. Serves four-six.

e’re making the call. Pumpkin’s autumnal reign is over. The Starbucks’ PSL turns 16 this year, making it old enough to drive off into the sunset and there are plenty of other fall flavors waiting in the wings. Here’s where you can find them: MAPLE BIRCHTREE BREAD CO. 138 Green St. #5, Worcester 774-243-6944 Avra Hoffman added a maple latte to BirchTree Bread’s drink repertoire three years ago after taking an inspiring trip to Canada, where most of the world’s maple syrup is produced. “Although maple syrup is harvested in the spring, its flavor

definitely harkens fall,” she explains. BirchTree uses locally-sourced maple syrup from Pure BS Sugar shack in Auburn. “Folks love it! It’s available hot or iced. If you’re looking to kick it up a bit, order it with some bourbon in it,” suggests Hoffman. Bruce Hopper from Pure BS couldn’t agree more. “Maple syrup is good in milk, coffee, tea, beer, whiskey, eggs and scallops,” he says. As for pumpkin spice, he is happy to set the record straight. “Maple syrup is so good that no one would ever think to have a maple toss,” he jokes, adding, “Pumpkin only gets better if it’s sweetened with maple.” Hopper urges his customers to try his maple cream, which he calls, “An eye-popping, shoe-kicking dream of deliciousness that goes on baked goods with peanut butter, combined with whipped cream, on steak and salmon, mixed with hot sauce or shamelessly by the spoonful. Nothing special, just the sweetest thing this side of heaven.” We’re sold.

Bar Manager Silas Axtell shares, “I just put a mulled cider cocktail on our menu. Served chilled, with sparkling wine, and cognac. The mulled cider syrup is warming with cinnamon, clove, allspice and the secret ingredient is a little citric acid to make it slightly tart and able to use in a cocktail without overpowering citrus juice flavor.” Kerrie Ward of Tougas knows there is nothing like autumn in New England. She wants you to come pick your own apples and indulge in Tougas’ abundance of apple cider donuts, apple crisp, apple dumplings, apple pies, and hot mulled apple cider. “It really is a sensory experience, and a lot better than just buying them at the grocery store,” she says. Take a ride on old country roads and admire the fall foliage all the way to Northborough. (Yes, if you
insist, you can pick your own pumpkins too.) The Coffee Craze Sarah Connell CARBONATED COFFEE At this point, we’ve all heard of Nitro Cold Brew – concentrated coffee charged with nitrogen for its silky mouthfeel and frothy head. Many breweries have opted to dedicate a tap to NCB for teetotaling guests and early risers. But the carbonated coffee trend is still relatively new. This unconventional means for caffeine packs a refreshing punch when paired with a bit of citrus. We predict Worcester will be sipping effervescent espressos in no time. Where can I find it in Worcester? Redemption Rock Brewing Co. (Opening Late December 2018)

BIRD-FRIENDLY COFFEE According to the Smithsonian’s National Zoo and Conservation Biology Institute’s Migratory Bird Center, “Three-quarters of the world's coffee farms destroy forest habitat to grow coffee in the sun and typically use harmful pesticides and fertilizers that poison the environment.” As the forests disappear, so do migratory songbirds.
