Dear Reader,
Tourism is evolving. It has gone from being a service-oriented industry offering a flight, a room and food, to an industry that delivers real life experiences. Travel today has become a source of adventure and fulfilment. Travellers want an experiential holiday. And they seek a real destination - a place that will provide a variety of emotive experiences and unforgettable memories to return home with. At Aphrodite Hills Resort, we are aware of this new tourism reality. A reality in which technology has made our world smaller and competition bigger, driving the tourism product to new and improved levels globally. Where the push for improving the traveller’s, experience drives loyalty in more ways than points and miles once did, especially with the increase of travellers who are more demanding in their want for experiences that are authentically unique. Where mobile and online bookings continue to grow significantly, enabling tourism professionals to design and deliver pre-trip and posttrip experiences. And where online reviews have such a large impact on bookings that the need for managing a destination’s reputation online has become critical. Cyprus is a unique island destination, with year-round sunny weather, exceptional natural beauty, 10,000 years of priceless ancient history and stunning coastlines with golden sandy beaches. But our unique weather and beautiful beaches are not enough to attract international visitors. We must provide the ultimate thematic travel experience that combines gastronomy and wine, sports, religion, environment, health and well-being, history and culture, ecotourism and agrotourism. We don’t need to create a brand-new tourism product, it’s already here. Cyprus is already a Romantic destination, a Business destination, a Gastronomic destination, a Sports destination. But by promoting it better, the quality of the tourism product here will increase exponentially. Likewise, Aphrodite Hills Resort is not only a sought-after holiday Resort. It’s an unprecedented destination. One which offers unique experiences and exceptional moments to every visitor passing through. So, we welcome you to our 4th issue of Aphrodite Hills Magazine, interesting pages full of experiences and a selection of articles inspired by everyday life here at Aphrodite Hills – your Unique Destination with a brandnew vision for 2020, to become the official Mediterranean Sports Destination.

T THE VISION
One day in February of 1992, the Cyprus civil engineer Zenonas Papaloizou was on the road from Alektora to Paphos when he spotted a field of anemones, an increasingly rare field flower that harbingers the first signs of spring. Though the area looked a bit wild for walking he felt drawn to it and without another thought he pulled his car to the verge and grabbed his camera. Excavation of ancient ruins discovered on the site
too much ‘in the middle of nowhere’ for a developer to see it that way.” But Zenon had supervised major construction projects in many formerly desolate areas in Cyprus and abroad and had developed a talent for seeing the various elements of an area’s potential—and for him, this location had it all. Never would he have guessed that eight years later he would return to those same flower-blanketed fields and viewpoint plateaux as Project Manager for one of the most ambitious golf and land development projects in the Mediterranean: Aphrodite Hills Resort.
The site of Zenonas’ favourite Golf Hole.
For the next hour amongst hundreds of olive and carob trees - some of them 200 years old - he photographed rocky fields decorated with colourful anemones and wild orchids. As he continued his explorations, he encountered myriad viewing spots that provided panoramic vistas of the sea and Aphrodite’s Rock. Though he already had a comfortable home in Nicosia, he was uniquely attracted to the pristine beauty and quietude of this landscape, which was close to the village of Kouklia and the sanctuary of the goddess Aphrodite. He could easily envision living in such an idyllic environment.
As he continued his explorations, he encountered myriad viewing spots that provided panoramic vistas of the sea and Aphrodite’s Rock WHEN IT ALL BEGUN
“There was a certain wildness about the place, in fact it was a favourite spot for hunters seeking hare and pheasant, two animals that like thick undergrowth. And I noticed more than one viper as I traipsed around the land (they’ve been eliminated now). There were even some ancient ruins made of the local stone to add a note of the picturesque and to remind us of the area’s lineage. I thought it would be a great place for a country house, a place to get away from the noise and stress of the city, but perhaps it was
NOT THE FIRST, BUT DEFINITELY THE BEST
“We weren’t the first golf course in Cyprus, but Aphrodite Hills Resort was the only serious attempt at creating a world-class golfing centre using only the best materials and professionals available from the US, the UK and other countries where golf was a pre-eminent leisure activity.” Because of his previous familiarity with and love of the area, Zenon was adamant that the character of the landscape - its wide variety of trees, outcroppings of ancient rock and bramble hills - be preserved and incorporated into the golf course design. And his team was in full agreement with him. “From day one this project had an amazing team of professionals, each one of them a star in his or her area of expertise, and it was a joy even if sometimes not easy to coordinate their efforts as we advanced through the different phases of the development. And the result is something we are all very proud of, just as we are proud of our new expansion projects that further enhance the reputation of Aphrodite Hills Resort as the premiere all-round resort in Cyprus.”

Research shows that children who ride or spend time with horses have lower levels of stress hormones in their bodies. Story by Eleni Hoplaros
The rise of stress and anxiety amongst teens has reportedly risen considerably across the globe. Statistics vary but some indicate that approximately 45% of teenagers say they feel stressed all of the time, upwards of 70% of teens say they consider anxiety and depression to be a major problem amongst their peers in the community they live and over 60% of college students leave school due to mental health issues because of stress.
14
Aphrodite Hills Resort
There are multiple programmes in place worldwide to help teenagers mitigate these increasing levels of stress, several of which include equine or equine-assisted therapy, stress reductions programmes centred on spending time and learning to work with horses. Much success has been garnered through these programmes, as various research studies would indicate.
15
RESEARCH STUDY INVOLVING TEENAGE PARTICIPANTS IN A HORSE EDUCATION PROGRAMME
A 2014 study monitored cortisol (stress hormone) levels in 131 teens who participated in a horse-education programme. Of those teens, 53 were randomly selected to take part in the programme, and the remaining 60 were waitlisted and acted as the control group. The teen participants undertook 90 minutes of weekly horse-related activities and learning. This included both mounted and unmounted sessions.
APHRODITE HILLS RIDING CLUB
It offers a variety of horse-riding experiences in the forestry land, which is adjacent to the north end of the Resort.
Saliva samples of each participant in the programme was compared to those from the control group. The teens who participated in the programme had reduced cortisol levels by the afternoon and a lower total cortisol concentration per waking hour by the end of the study, in comparison to the teens from the control group who had no contact with the horses. This would suggest that frequent contact with horses can assist in lowering stress levels for teens, benefiting overall mental health.
HOW EQUINE THERAPIES HELP
Increasing in popularity, many who practice the field talk about how this form of therapy does more than just reduce anxiety and depression - how it also lowers blood pressure, slows down breathing and increases the release of oxytocin that is said to boost feelings of connection and positivity. Furthermore, many patients go on to talk about how interaction with a horse creates a sense of calm, a space where you can forget about your problems and worries because of the focus required to perform the tasks the horse therapy programmes set. SOME OF THE BENEFITS OF HORSE RIDING FOR YOUR CHILD
• Find a horse-riding facility where your child can experience a sense of complete freedom. Regular interactions with the horses do much to develop confidence building skills and combat anxiety. • With teens today spending most of their time indoors, horse-riding offers a great outdoor alternative. It offers a workout not only for the body, but also for the mind, easing stress, improving health and providing a relaxing down time - away from electronic stimuli. • Horse-riding offers several psychological and emotional benefits as it teaches self-discipline, helps to harness higher levels of patience, focus and control, assists in reducing depression and increasing selfassurance and self-confidence.

“I love what I do. I have lost count of the courses I have designed. I enjoy working on site with the bulldozers, the machinery… don’t like to work on paper, that’s not for me. Golf courses should be designed modelling the land.”
KARMA ENCOUNTERS
A legend in the field of landscape architecture, designer Cabell B. Robinson spent the 1963 academic year at Harvard University’s Graduate School of Design, before completing his degree in landscape architecture from the University of California in 1967. It was during his time at Harvard that Cabell met Rees Jones, son of legendary golf course architect Robert Trent Jones Sr., whose career spanned nearly 70 years. The close friendship between the two led to Cabell joining the Trent Jones office in Montclair, New Jersey, for full-time employment in 1967. He spent the next 20 years there, before serving as head of the European office in Spain, from 1971 – 1987. During those 17 years, Cabell was intimately involved with the design and construction of every Trent Jones course in Europe. In 1987, Cabell Robinson broke away to open his own small design company, Cabell B. Robinson Limited, based in the southern Spanish resort town of Marbella, where he resides to this day. Some of the most impressive layouts in Europe and North Africa carry the Robinson name, and he boasts designs in countries such as France, Spain, Portugal, Morocco, Switzerland, Cyprus and Italy.
Some of the most impressive layouts in Europe and North Africa carry the Robinson name, and he boasts designs in countries such as France, Spain, Portugal, Morocco, Switzerland, Cyprus and Italy. The structural design of the course began in 1997, and much attention was given to the ecological impact the course would have on the area, as well as the preservation of the archeological sites that were subsequently discovered. Under Cabell’s watchful eye, Aphrodite Hills Golf Course has become the perfect mix of challenging bunkers, manicured fairways of lush Bermuda grass and generous tiered greens. Visually spectacular, the course expands through indigenous olive and carob trees and is built on two plateaux, separated by a dramatic ravine with outstanding views over the Mediterranean Sea. The staggering 130-metre gorge dividing trees at the 7th hole is an enticing challenge for all lovers of this beautiful game. Today, 2019, the PGA National Cyprus is one of the top golf courses in the world.

The evolution of women’s
tennis fashion
A
“Clothes aren’t going to change the world. The women who wear them will.” -Anne Klein
Story by Eleni Hoplaros
As with all fashion trends, when it comes to tennis attire, style has come a very long way over the last one hundred and fifty years.
LADYLIKE MODESTY
During the period between the 1880s to the 1920s, female tennis players were the epitome of demure when it came to what they wore. Long heavy dresses with a high neck and low hem covered any hint of flesh and all but eliminated comfort or agility. Excessive perspiration was a given being how heavy the fabric was but being the dresses were white, any sign of sweat was prudently concealed.
A PRACTICAL FASHION REVOLUTION
From 1920 to the 1940s, women’s tennis fashion went slightly risqué. Spectators from all over the world were left stunned when lady players such as Suzanne Lenglen wore a short skirt during a Wimbledon match in 1922, and Alice Marble donned shorts. During this time, it became more commonplace to see women playing the game of tennis wearing shorter, lighter skirts or shorts with polo shirts. With less clothing restrictions, female players could finally play their game significantly faster and better.
FREEDOM, LIBERTY AND POP CULTURE
The late 50s and 60s were in many ways a time of liberation and freedom, especially for women, and in the world of fashion, which extended to the tennis court. Women tennis players took to wearing even shorter skirts and feminine blouses with shorter sleeves. By the late 60s, this fashion became the norm, off and on the court.
UNISEX TENNIS WEAR
The 1970s didn’t experience much by way of fashion transformation other than women tennis players now wearing t-shirts and shorts similar in style to that worn by men.
BRAND SPONSORSHIPS AND ENDORSEMENTS
The 1980s saw women’s tennis fashion take a marketable leap. Brands eager to leverage the popularity and appeal of women tennis players around the world suddenly found an outlet to promote themselves – through the clothes those players wore. Lady’s tennis attire suddenly became all about the logo, colour and design of the brand sponsoring the individual player. And this type of player endorsement did much to drive global brand awareness and boost sales.
It became more commonplace to see women playing the game of tennis wearing shorter, lighter skirts. PLAYER DRIVEN SPORTS FASHION
From the 90s to today, sports fashion has evolved to an extent where brands are designing clothes to match the personalities of female tennis stars who have become influencers in their own right, inspiring fans across the globe to follow and dress in the brands that they do. Aphrodite Hills Tennis Academy Pro-Shop carries an extensive selection of tennis clothes and shoes from famous leading brands such as BABOLAT, HEAD, BIDI BADU, UNDER ARMOUR and Aphrodite Hills branded shirts. Friendly and knowledgeable staff are also on hand to to ensure that you enjoy the best possible shopping experience.

Cyprus has uniquely positioned itself as the premiere target for investment in the Mediterranean sphere.
Story by Matthew Stowell
WELCOME TO CYPRUS
These are exciting times in Cyprus for economic growth and development as the financial sector continues to expand and surprise. At 12.5%, Cyprus’ corporate tax rate is one of the lowest in Europe. Such an attractive tax rate as well as a comprehensive roster of double tax treaties places the island nation at the top end of preferred jurisdictions among professional tax planners. The Gross National Product of Cyprus is predicted to grow by 2.5 - 3.5% in the coming year, which is double the norm for EU countries. Such strong economic growth means an improved employment rate, which of course translates into increased household spending on services and consumer goods, in turn fuelling robust financial health for the country as a whole.
INVESTMENT PROGRAMME
Recently implemented property tax incentives have helped to instigate a growing demand from the domestic sector. A new programme for naturalisation of investors enticed many buyers from outside the EU to purchase Cyprus property. The programme, initiated in 2013 to help boost the post-Eurocrisis economy, is now called the Cyprus Investment Programme and has lately adopted stricter requirements as well as a limit on investors in order to conform with EU standards and practises.
NEW OPPORTUNITIES
The Central Bank has predicted substantial new investment in energy infrastructure to accommodate a tremendous surge in construction as well
as investment in casinos, marinas, shipping transport and commercial real estate development, particularly in the hotel sector. In the very near future, reforms to control public spending, initiatives to speed and promote private investment, to grow the investment fund sector and seriously boost the development of natural gas resources, will go a long way towards ensuring Cyprus’ continued prosperity.
Each year in Cyprus the number of tourist arrivals increases substantially Each year in Cyprus the number of tourist arrivals increases substantially, setting one impressive record after another, as the service industry upgrades itself and embraces innovative new initiatives, which exponentially enhance overall economic growth. Owing to its ideal Mediterranean climate, exceptional levels of quality of life factors, a very low crime rate and Cyprus’ strategic proximity to three continents, the real estate sector, both private and commercial, has seen tremendous growth amongst investors from every corner of the globe.

FURRY SNAKE KILLERS
Did you ever wonder how Cyprus ended up with such an abundant feline population? The legend of the Cyprus cats’ dates back to 328 A.D., when Saint Helena, Empress of the Roman Empire and mother of Emperor Constantine the Great, first visited the island. She had found it almost completely deserted and devoid of inhabitants, due to a severe and prolonged 36-year drought. Upon landing at the site of the future monastery of Saint Nicholas, she also discovered that the area was swarming with poisonous snakes. To help rejuvenate the island and banish the infestation, she imported hordes of cats from nearby Egypt and Palestine, letting the furry killers loose to devour the poisonous snakes.
Aphrodite Hills Resort proudly supports Animal Rescue Cyprus, which runs the largest animal shelter in Cyprus.
SAINT NICHOLAS OF THE CATS
Saint Helena reported the dismal state of the island to Emperor Constantine, who then took action to help revive Cyprus and encourage its people to return. It was during this revival period that the Monastery
of Saint Nicholas was constructed. According to legend, the cats quickly learned to respond to two bells: one signaling food, and one signaling the start of hunting. Monks of the monastery fed the cats small amounts of meat every morning and evening to encourage them to continue hunting the snakes but still protect them from consuming their poison. After lengthy battles, which reportedly left the cat warriors battered and maimed, the snake populations were all but eradicated. And following several years of neglect and disrepair, the Monastery was revived in 1983 by nuns, and is once again today swarming with cats which are said to be descended from those brought to the island by Saint Helena.
DID YOU KNOW?
While it was once thought that the oldest known cat companions were in ancient Egypt, archaeologists have since found the remains of a cat buried along with seashells, polished stones, and other decorative items, in a 9,500-year-old grave site in Cyprus, the oldest in the world. This new find predates early Egyptian art depicting cats by 4,000 years or more.
CAT-FRIENDLY RESORT
Aphrodite Hills Resort proudly supports Animal Rescue Cyprus, which runs the largest animal shelter in Cyprus, hosting more than 1300 rescued animals. Along with its precursor, Paphiakos & CCP Animal Welfare, these organizations are running a range of programmes aimed at promoting animal welfare. The feline population of the Resort enjoys access to their very own ‘Kittis Kat Hotels,’ which comprise covered shelters at various locations across the Resort grounds where the cats receive food and fresh water, and a place to hide from public spaces and unfavorable weather conditions. All Aphrodite Hills cats are spayed and neutered, and well-taken care of.

Trusted by millions around the globe, the iconic Blue Flag is one of the world’s most recognized voluntary eco-labels awarded to beaches that meet and maintain a series of stringent, environmental, educational, safety and accessibility criteria. Beyond simply awarding coastlines for their pristine waters and clean shores, the aim of the Blue Flag programme is to connect the public with their surroundings and encourage them to learn more about their environment. As such, Blue Flag-awarded beaches promote environmental education activities, and offer useful information to visitors about the biodiversity, ecosystems and environmental phenomena.

Paphos boasts a total of 16 beaches awarded with the Blue Flag certification, accounting for more than 20 percent of the Blue Flags in Cyprus. need climbing? Are there enough ramps for your wheelchair to get around? Are there restaurants nearby and are they easy to get to? Find out whatever you need to eliminate any unexcepted or unpleasant surprises.
M
Much of Europe has upped its game for travellers with limited mobility in recent years, which is great considering how many beautiful and culturally rich countries the region has to offer. But as with anyone planning a trip, the degree of a person’s disability also means where to go, where to stay and what to see needs careful thought and planning to fully enjoy your vacation. Which is why we’ve put together a list of 3 of the most important things to consider:
BOOK IN ADVANCE
While many European hotels offer accessible rooms, the number is usually limited so make sure to book well in advance to be sure you get the best one that’s on offer. This means it’s likely you’ll need to make your reservation as early as December for the holiday you plan on taking in the summer.
RESEARCH THE ACCESSIBILITY OF THE AREA
It’s not enough that your room fits your needs, you still need to venture out. Put together a list of questions and forward them to your hotel for feedback. Are there stairs you’ll need to tackle or hills that
All the public spaces within the hotel building are wheelchair accessible, as are the elevators. CAREFULLY PLAN YOUR TOURS AND EXCURSIONS
It’s a given that you’ll want to experience as much of the destination that you’ll be going to. Just be sure to get all the information you can on the tourist attractions you want to visit so that you know what you’re getting into. Find out about bus routes, terrain, wheelchair ramps and pavement space. Establish how far your accommodation is from the attractions you want to get to. Scour online visitors guides and travel reviews of the places you’re eager to see to establish accessibility. You want your holiday to be a brilliant experience, this means planning ahead.
VISITING WITH NO LIMITS
Aphrodite Hills Hotel by Atlantica takes the needs of all its guests very seriously and accessibility is a top priority. All the public spaces within the hotel building are wheelchair accessible, as are the *elevators. There also 6 adapted *rooms that can accommodate persons using a wheelchair which include wide doors, low switches, low shelves and sink and a walk-in shower that has been specially designed for wheelchair access. These rooms fall into the double deluxe category with either garden or pool view. All outlets in the Village square and Resort (Golf, Tennis, and Holiday Residences buildings) are suitable/ accessible for disabled use, and there are designated accessible parking spaces at the front of the hotel and around the Resort. *Specific dimensions can be found on our website.

WHY INVEST IN APHRODITE HILLS RESORT?
After many centuries of history, it is regarded as a universal truth that the wisest, most sound investment known to man has always been and will always be real estate.

AMENITIES
The five-star Resort can provide every amenity to guarantee a relaxed, high quality way of life.
all the great cities of Europe and the Middle East, and boasting the finest Golf Course in the Mediterranean, top class restaurants and numerous other tourist-friendly amenities, more than meets the criteria stated above. It exceeds it many times over.
WHO WOULD LIVE IN A HOUSE AT APHRODITE HILLS RESORT?
At a certain point in life, many of us long to quit the hustle and bustle of the city for a more tranquil, stress-less existence where we can concentrate on living each day to the fullest and indulge in our private passions, be they athletic activities such as golf, hiking, water sports or tennis or such leisure pastimes as reading, study or spiritual exercises. Aphrodite Hills Resort provides the ideal environment for such.
W
Whether it is a tract of land or a building, or both, real estate despite the ups and downs of politics and vagaries of the economic marketplace can be counted on to return or increase its value over time. The value of precious metals rises and falls - and if the world market ever abandons the gold standard (remember, it used to be the seashell standard!) then that shiny metal will be worthless. The whimsical fluctuations of the stock market can turn a millionaire into a pauper in less than an hour. Government bonds are only as good as the presiding government, which can change overnight.
HOME INVESTMENT
Real estate, however, will always possess intrinsic value because until we start colonizing the moon or some other planet, there is only so much of it available on this globe. One might be tempted to think, after viewing satellite images of the earth or flying over it in an airplane, that there is still plenty of empty real estate to be had and probably at very low prices. But if that land is not easily accessible by highway or sea route, if it is not near major cities and centres of modern civilization, if it doesn’t have qualities that will be attractive to visitors and potential residents alike, it may still qualify as less risky than other financial instruments, but it doesn’t meet the criteria that guarantees a successful investment: location.
THE LOCATION
Aphrodite Hills Resort, on the southern coast of Cyprus, halfway between two of the country’s most vital cities (Limassol and Paphos), accessible by air, road and sea, easily reachable from
Then there are those who are seeking a holiday home away from home to use during school or vacation breaks. Again, Aphrodite Hills Resort is the perfect solution. Clients purchasing a home at the Resort can also earn long- or shortterm rental income through Aphrodite Hills Holiday Residences Rental Scheme whilst the Property Management Team diligently maintains the premises. The five-star Resort can provide every amenity to guarantee a relaxed, high quality way of life. A medical centre, supermarket, pharmacy, chapel sports facilities, various shops and restaurants ensure that all your needs are met on site.
WHAT IS THE LOCAL AREA LIKE?
The city of Paphos is a vibrant cultural hub visited annually by thousands of tourists from every corner of the globe. Its 12 beaches are consistently awarded Blue Flag certification by the EU, but the town has evolved into much more than a destination for lovers of sun and sand. Through the implementation of a sustainable tourism strategy Paphos has diversified its myriad offerings and substantially eliminated the effects of seasonality. From its extensive roster of cultural and natural treasures, recognized by the UNESCO World Heritage List, to its unique biodiversity offerings that feature activities such as bird watching, rock climbing and hiking, visitors of Paphos are spoilt for choice when it comes to exploring what this remarkable city can provide.
SAFEST PLACE TO LIVE
According to recent ValuePenguin research, which analysed more than 100 nations, Cyprus (at 5th place) is one of the safest countries in the world. More impressive, amongst countries with a population of less than five million, Cyprus is the Number 1 safest place to live and visit. In addition, the Knight Frank Global Lifestyle Review has ranked Cyprus as the 5th best relocation destination out of 23 countries in the world (far ahead of London, Madrid and Monaco).

KEEP IT BRIGHT
Darkness often has a way of making us feel nervous, so find ways to keep your home bright and cheery at all hours of the day. This means opening the windows to let in sunny daylight during the day and installing energy efficient lighting both in and around the house so the lights can stay on whenever it’s dark. In the evenings, consider using strategically placed lamps to cast a soft glow across the room, for ultimate warmth and coziness.
For absolute peace of mind, entrust your property to the capable hands of Aphrodite Hills Property Management Security Team
KEEP OUT THE DARK
Keep blinds and curtains closed during nighttime hours. As well as being energy efficient and ensuring the house stays cool in the summer months and warm in the winter, closing blinds and curtains when it’s dark outside, adds an extra layer of privacy and stops nosy passers-by from peeping in.
KEEP IT LIVELY
When night falls, or you’re feeling a little bit anxious about being home alone, it’s always a good idea to crank up the volume on your TV or radio. Listening to relaxing music or an interesting podcast, or even just having a light comedy playing in the background can be a source of comforting chatter that will fill up the silence and make you feel less alone.
KEEP IT SAFE
For absolute peace of mind, entrust your property to the capable hands of Aphrodite Hills Property Management Security Team. With 24-Hour Security Service, homeowners can sleep easy knowing that their property is properly secured with top-of-the-line home security systems. Aphrodite Hills Property Management takes the safety of its residents very seriously and offers an Alarm System that connects each property to the Aphrodite Hills Security Control Room. This is monitored 24/7, and the minute an alarm is sounded, a signal is transmitted to the main office and an operator will respond within seconds. An on-site security team will then immediately make their way to the property to check for disturbances or threats.

World-renowned chef, Sherin Alexander-Mody, was born in Mumbai, India, and has lived in London since 1996. Her long and flavourful career has taken her across the world, from Paris and Brussels to Phuket and Hong Kong, where she has headed international companies in the hospitality sector, and catered to royalty, heads of state, and celebrities. Along with her husband, award-winning chef Mehernosh Mody, she has launched several unique fine dining establishments around the world, earning

accolades for their delicately spiced and balanced food, courteous service, and breathtaking ambience. Today, Sherin and her husband have settled in Cyprus, and are the head chefs of Gate to India by Atlantica, Aphrodite Hills Resort Indian restaurant offering authentic Indian flavours to guests. This year, Sherin has once again renewed the flavours of her beloved restaurant, and speaks to us about Indian cuisine, her career, and how she feels about cooking for Adele and Morgan Freeman.
THE AUTHENTIC INDIAN EXPERIENCE
Gate to India is located in the heart of Aphrodite Hills Resort, the Village Square. It is an outdoor space offering authentic Indian flavours and imaginative dishes that cater to all fans of Indian cuisine. Visitors can enjoy a variety of dishes in an atmosphere that is equal parts romantic and exotic. Head Chef, Sherin Alexander-Mody, who has prepared meals for well-known figures, has refreshed the restaurant’s menu and shares her insights with us. The Gate of India menu has been updated. What new options can we expect to see? Yes, a lot of love has been put into this new update. We will keep some of the favourites, such as the Murgh Tikka Masala (homecooked chicken tikka with onions, tomatoes, and peppers in a mild sauce), and we will add some new options too, such as Biryani, which is a rice dish with chicken or lamb, topped with quail eggs. We have added several new dishes, as well as a new tasting platter with various creations made in our tandoor oven. In India, unlike in Europe, it is customary to offer a variety of appetizers, so that guests can sample a little bit of everything. We are also utilizing new and local ingredients in all our dishes. Finally, we have added a cocktail with an Indian twist to our menu, and a selection of desserts and ice creams. What is your favourite dish on the menu? My favourite dish? All of them! (laughs) I can’t differentiate, and I don’t want to limit myself to a single dish, because all the flavours are very complex.
This year, Sherin has once again renewed the flavors of her beloved restaurant, and speaks to us about Indian cuisine. All the dishes are superb in appearance. Do you believe that the way a dish is plated plays an important role? People eat with their eyes first, so a well laid-out dish can help transport diners somewhere exotic. Why do you think Indian cuisine has had such a huge impact on so many millions of people? I think what draws people to Indian cuisine is the immense variety available to them and, of course, the powerful flavours. What was your favourite food as a child? All my mother’s cooking! (laughs) Did your mother instil in you a love for cooking? Yes, I learned to cook from my mother when I was a child. My husband is also a chef, and I come from a family where everyone loves to cook. Now, however, my daughter simply tells me “Mom, you cook, and I’ll eat.” Many chefs don’t cook at home. Does this apply to you too? Of course, I cook! I love cooking, and it’s both mine and my husband’s favourite daily routine.
Don’t you argue with your husband about who will cook first? (Laughs). We always argue, as we are both professional chefs. At home, however, I’m in charge, while he is the boss at work. What do you think of Cypriot cuisine? I like it a lot! I like ‘stifado,’ peas, moussaka, and many other dishes. There is a Greek restaurant next to ours here at the Aphrodite Hills, and we have become very friendly with the chef, so each time he sees me, he invites me to sample his new creations. They make delicious dishes and dips, such as hummus and taramosalata, which I adore. Another food I like very much is ‘koupepia’ – stuffed vine leaves, which I have also incorporated into my new creations for the Gate to India menu. You have cooked for several renowned personalities throughout your career, including celebrities, politicians and royalty. What was that experience like? Very simple, because I just made sure to do my job to the best of my ability. Can you give us some examples? I have prepared dishes for wedding parties at the Palace of Versailles in France, for Adele, for Sylvester Stallone, Morgan Freeman… I can go on naming names. But for me, what truly counts, is that I do my job right. What do you believe is the highlight of your career? I don’t know, I can’t pick one thing. Each time you learn something, you grow. Each time you discover something, each time you travel, you meet new people, you learn from other cultures, you share what you know, your passion for cooking. *the interview was published in Beautiful People Magazine/Cyprus (translated by Rachel Chrysostom)

5 types of coffee drinkers – Which one are you?
Story by Eleni Hoplaros
N
Not everyone drinks coffee the same way. It’s such a personal experience and everyone has an opinion about how this popular little aromatic bean should be drunk, from somewhat bitter to syrupy sweet. The variations are endless, and each coffee drinker
64
Aphrodite Hills Resort
wants their particular spin on this fragrant pick-me-up. After some research, we’ve discovered that there are too many types of coffee drinkers to speak of. We’ve highlighted five of them. Which one are you?
ALL ABOUT THE FROTH
This person relishes in the type of coffee that looks more like a milkshake than it does a coffee drink, and it’s all syrupy decadence topped with frothy whipped cream and some toppings for extra pizazz. If you visit Costa Coffee at the heart of the Village Square at Aphrodite Hills Resort, be sure to indulge in one of their creamy frostinos which come in a variety of delicious flavours like vanilla, strawberry cream, Belgian chocolate and chocolate brownie. It’s dessert in a glass if you ask me!
THE CONNOISSEUR
Now this type of coffee drinker wants the best that coffee has to offer – a robust, high quality coffee bean blend with just the right balance of acidity, bitterness, sweetness and a richness in flavour. It’s all about sophistication, with no syrup or milk to detract from the smoothness of the taste. Order yourself a coffee from Carob Lounge or Executive Lounge located at Aphrodite Hills Hotel by Atlantica by Atlantica, sit back, relax and lose yourself in the tranquil ambience of the dazzling blue Mediterranean Sea.
This person is someone who’s not afraid to experiment with new coffee flavour combinations.
THE ADVENTURER
This person is someone who’s not afraid to experiment with new coffee flavour combinations. It’s not so much about quality as it is about trying something new and unique, be this cappuccino, fredo, frappe, latte, mocha or macchiato – they want to try them all. Why not pop into pantopoleio at the Village Square and experiment with the Segafredo coffee menu, you’ll be spoilt for choice with an interesting selection of hot and cold coffee combinations.
OLD SCHOOL
This person knows what they want and wants what they know. They like coffee for taste and stick to the flavour they always drink. Usually a latte, Americano or cappuccino – they’ll have a favourite and order it over and over. Creatures of habit. Order your coffee preference at one of the Hotel’s bars or the Clubhouse by Atlantica and take in the beautiful green landscape of the award-winning PGA 18-hole golf course that surrounds you.
CHOCOLATE LOVER
This coffee drinker seeks out the chocolate flavour more than the caffeine hit. So, whether you’re relaxing at one of the Hotel by Atlantica Bars, or the Clubhouse, Costa Coffee or dashing through the Pantopoleio Supermarket, grab yourself a chocolate flavoured, hot or iced beverage, the possibilities are endless! Find your favourite spot at Aphrodite Hills Resort and enjoy your type of coffee.

Leontios Tselepos, member of the board of directors of the Cyprus Sports Organisation (CSO), is a renowned sports enthusiast whose passion extends into his educational and professional career. A University of Bristol LLB graduate, Leontios also holds a Master in Sports Management and Sports Law (the leading FIFA Master) and is the first Cypriot graduate member of the FIFA Master Alumni Network. Leontios has played an active role in promoting sports in Cyprus, having held varying positions including founding member and Secretary of the Cyprus Sports Management Association (K.E.D.A), founding member of the basketball academy Atlantas of Paphos in Cyprus, member of the European Association for Sport Management (EASM) and of International Association of Sports Law (IASL). Outside of the sports arena, Leontios is also an avid philanthropist – having served in various positions for Round Table Cyprus, and as one of the founding members of Movember Cyprus, a vital initiative which actively supports the battle against prostate cancer in Cyprus. We wanted to find out more about Leontios and the efforts being made in promoting Cyprus as a global sports destination. This is what he shared with us. Describe your role at the Cyprus Sports Organisation (CSO)? What activities do you undertake? I was first appointed a member of the Board of Directors in July 2016. This was renewed in January 2019 and I will continue in this position until July 2021. The Board of Directors consists of 9 members and it is the supreme body of the CSO, responsible for, amongst other, the strategic planning of the sports sector (general policies, guidelines and schemes), funding and accountability of the sports federations, funding and building of sports facilities, Sports For All

programmes, etc. In accordance with relevant legislation, the CSO is an ultimate sport authority acting as a Ministry of Sports in a way, managing an annual budget of over 30mln euro. Further to my role as a board member, I am also President of the sub-committees responsible for Sports Tourism, Parasports/Paralympics and a member of the audit, legal and communications committees. I hold the presidency of the Sports Tourism Committee since 2016 and spend a considerable amount of time and energy on matters relating to this role. What is being done to promote Cyprus as an international sports tourism destination? Upon our appointment in 2016 we set out to reestablish the joint committee with the Cyprus Tourism Organisation (now Ministry of Tourism) for the committee to act as a communication channel and exchange of information tool between the two organisations. The committee is also responsible for the coordination of common actions, initiatives and schemes in order to promote and establish Cyprus as an international sports tourism destination. During 2018, the committee completed a series of meetings with several sport federations in order to identify their priorities and needs related to the hosting of international sports events. The information collected has been evaluated, and we are now discussing the way forward. Moreover, the CSO provides funding to all sports federations to participate in international competitions and congresses abroad, which is a great opportunity to promote Cyprus as a sports tourism destination. The CSO also funds sports federations to bid and host international competitions in Cyprus. Through signed protocols with various countries (like Greece, Israel, Serbia, Jordan, etc), the CSO funds the exchange of national teams (hosting foreign teams in Cyprus and our national teams, athletes and coaches to travel abroad)
In accordance with relevant legislation, the CSO is an ultimate sport authority acting as a Ministry of Sports in a way, managing an annual budget of over 30mln euros this tourism sector in 2016 amounted to approximately 37mln (estimated average expenditure per visitor €1,365) which in 2017 increased to 48mln (estimated average expenditure per visitor €1,479). It seems that there is an increase of approximately 25-30% in revenue and visitors, and I believe that the results of a more recent survey will follow the same upward trend. Moreover, the total number of visitors for 2016 was 27,163 and 32,529 in 2017 while the target set by 2020 is to surpass 50,000 which seems feasible. With respect to the CSO, I already mentioned some of the annual actions and initiatives, both locally and abroad which help to achieve the objectives recorded in the Tourism Strategy 2017-2030. A recent initiative of the CSO is the creation of an electronic/online calendar for sport events hosted in the country. The calendar will be a first point of reference for sports events’ organisers (in order to spread the events throughout the year, across Cyprus) as well as for local and international participants and viewers. More generally, we want to support the development of a network between various stakeholders of the sport tourism and international events sectors. How is local infrastructure being improved to
69
INTERVIEW | SPORTS DESTINATION support the drive for promoting Cyprus as a popular sports destination? First, we have to refer to the Sports Facilities Electronic Map which is the complete recording and geographic placement of all sports facilities in the Republic of Cyprus in order to be accessible via the internet to interested users, locally and internationally. The application is available in the Greek, English and Russian languages. There are 424 different sports facilities registered. These include sports facilities owned by CSO, sports facilities owned by third parties, and all licensed fitness centres/gyms and golf courses. For each facility, various information is provided, such as satellite imaging, finding and displaying of sports venues on a detailed digital map, accessibility, a summary of the sports arena, etc. We keep the application updated and we also try to build in new features. We are now working on an online booking system which will enable regular users, non-regular users, travel agencies or other agencies based in Cyprus or abroad, to apply and book for use/training all CSO owned sports facilities. Generally, through the map, we plan to offer a “one-stop-shop for booking any sports facility in Cyprus.
The CSO provides funding to all sports federations to participate in international competitions and congresses abroad, which is a great opportunity to promote Cyprus as a sports tourism destination. Taking into consideration the financial situation/ restrictions, we try to improve all local infrastructure depending on whether the facility provides benefits to sports tourism. The element of sports tourism is also taken into consideration for new facilities - we evaluate the location and
70

the type of facility in order to cover some of the priorities and needs which have been recorded during meetings with the sports federations as well as the objectives of the tourism strategy. What is being done to improve access to a range of sports in Cyprus for people with special needs? Are there any national programmes in place to promote the benefits of sports and its impact on people with special needs? Personally, I am very sensitive to people with special needs and for parasports, not only as the President of the Parasports/Paralympics committee of the CSO but also as a member of Round Table Cyprus and President of the Committee managing Access City campaign. I will admit that much is required in order to make the sports facilities fully accessible, not only for spectators but also for parathletes. We try
to purchase special equipment and to renovate sports facilities in order to cover the special needs of parathletes. We are also funding sports federations in order to develop programmes and to bring people with disabilities in sports. We fund parathletes so they can participate in international competitions and be classified as per the International Paralympic Committee Classification System. Generally, in the last 3-4 years, we have seen more sports federations develop programmes for people with disabilities and every year the number of classified athletes increases. Access City is an initiative of Round Table 7 – Paphos, launched in 2015, with the vision of improving accessibility and integration of people with disabilities into the social, economic and cultural life of Paphos.
71
INTERVIEW | SPORTS DESTINATION Since 2015, we have found companions in our efforts and, amongst other things, in April 2018 we donated a wheelchair to the wheelchair basketball team of APOP, while we establish an annual cycling event using hand cycles in order to raise awareness about Access City and parasports. In September 2019, we also hosted the Greek parathlete (participated in Paralympics 2016) Antonis Tsapatakis in Paphos for a series of motivational speaking events explaining the benefits of sports to people with disabilities and by sharing his personal experiences to explain how swimming has helped him to “stand on his feet” again.
The calendar will be a first point of reference for sports events’ organisers (in order to spread the events throughout the year, across Cyprus) as well as for local and international participants and viewers. What is your involvement with Round Table Cyprus? First, I am a second generation tabler. My father was a founding member of Round Table 7 in Paphos back in the ‘80s and I joined Round Table Cyprus in 2009 as a member of Round Table 1 in Nicosia. Round Table Cyprus is a registered club/association and a member of the world organisation, Round Table International. Round Table consists of clubs of young professionals and entrepreneurs between the ages of 18 – 45 years old from all over the world, which have as their objectives the voluntary provision to society and the promotion of the brighter professional ideals. Round Table originates from
72

England, with the first club being established in Norwich in 1927. It has been described as a true social network with no need to log on! Basic values of Round Table are equality, friendship, solidarity and professionalism. The aims of Round Table apply to all clubs globally and focus on professional and social networking and cooperation, the fostering of ethics and ideals, the personal development of the members and service to the community and to charity. The Round Table slogan is “ADOPT – ADAPT – IMPROVE”, which denotes the culture of Round Table.
we joined forces with KEO Beer, and the campaign expanded to a national level and to the launch of Movember Cyprus. Six years later we are very proud to see our efforts coming to fruition, with the campaign growing every year and the message reaching even greater audiences. The Movember moustache appears everywhere from the President and the Ministers Council of the Republic of Cyprus to the National Football Team, to athletes, artists, actors, celebrities and thousands of Cypriots conveying the message across the island.
I have served in various positions including President of Round Table 1 Nicosia, Secretary of Round Table Cyprus and Secretary of Round Table 7 Paphos where I now belong.
Prostate cancer is the so-called “silent assassin” since it has no symptoms and thus early detection/prevention is the best cure. In order to prevent this type of men’s cancer, men must do the PSA (prostate-specific antigen) test (blood test) often after the age of 40. According to a survey in 2009, only 17% of men did a PSA test. In 2015 this increased to 50% and we expect that the figure now stands at more than 80%. This upward trend is very encouraging for us and a step forward in order to change the face of men’s health. During the campaign we try to raise awareness about prostate cancer and men’s mental health via tv commercials, radio spots, press and digital ads that run every November, a photoshoot editorial dedicated to Movember and other events all over Cyprus, which include shaving events, seminars, etc.
As already mentioned, I am the President of the Access City Committee and I also act as Events Coordinator and Communications Officer of the club. A decade after my involvement I still enjoy myself and I feel that I spend my time constructively - having an impact on the social and cultural life of the local community. I am also proud that we are well established locally and we hold a leading role between all service clubs and others NGOs in Paphos, with strong links to and collaboration with local authorities, local businesses and other stakeholders, for our project Access City which has been voted as the Best Project of the Southern Europe & Mediterranean Area for 2018 and for being in the top-4 clubs worldwide for 2019! Tell us a little more about the Movember Cyprus project and its impact on the battle against prostate cancer and the men’s mental health. I have been involved in the Movember campaign since 2012, in my capacity as a member of Round Table 1 Nicosia. In 2013, we started a local campaign in Nicosia engaging mainly members of the club and their friends. In 2014
Further to raising awareness we collect funds for the Movember Foundation and in the last 3 years, Cyprus is in the top-3 of the countries marked as “Rest of World” and the team Round Table 1 Nicosia – KEO Beer the top team for 3 consistent years! Taking this opportunity, on behalf of Movember Cyprus I would like to thank all mobros and mosistas supporting our campaign and of course our corporate sponsors, which for 2019 included Aphrodite Hills Resort. Because, together we can change the face of men’s health!

Story by Rachel Chrysostom
THE BAND
Minus One leapt onto the stage and into peoples’ hearts with their 2016 Eurovision Song Contest entry, ‘Alter Ego.’ Though the song couldn’t guarantee a win for the island, it was nevertheless a success for the band, cementing its status as Cyprus’s number one rock group. Minus One went on to record their first album, ‘Red Black White’ in 2018, and the band members have since been working on taking their music to the international stage. What makes this vivacious rock group stand out is the heart and soul they pour into each of their live performances. The energy and brilliant chemistry among the band members is infectious, and crowds can’t help but join in the fun. With a fresh selection of songs each time, the band keeps their performances interesting and explosive, rocking audiences until the wee hours of the morning. The band’s lineup comprises Andreas Kapatais on vocals, Harry Pari and Constantinos Amerikanos on guitar, Chris J on drums and Max O-Matic on bass.
SUMMER ROCK FESTIVAL
Every summer, Aphrodite Hills Resort rocks on to the tunes of Minus One and other beloved bands for a series of rock music evenings at the outdoor Beer Garden Pub by Atlantica. For a whole month in the summer, every Friday, guests can enjoy rocking hot tunes complemented by a wide selection of international beers and delicious takeaway food options from Zimi Trattoria or Ladi & Rigani Kebab House.
OKTOBERFEST
The traditional Bavarian festival of beer takes place each year in the heart of the Village Square at the outdoor Beer Garden Pub by Atlantica. This year, Cyprus’s favorite rock band Minus One took the stage to entertain the crowds who enjoyed a lively German atmosphere complemented by Hofbrau Beer and mouthwatering barbecue, making the weekend a smashing success.

HISTORY ROAD TRIP | THE | CYPRUS VISIONVILLAGE
EXPERIENCE THE CYPRUS COUNTRYSIDE AT
KALOPANAYIOTIS
C
VILLAGE
Story by Matthew Stowell
Cyprus is a country rich in beautiful churches and monasteries. The largest and most well-known is Kykkos Monastery in the heart of the Troodos Mountains, with the tomb and monument of Archbishop Makarios nearby. But there are many other monasteries, churches and chapels in quaint mountainside villages that are close enough to Aphrodite Hills Resort to visit on a day trip.
82

Start at Leos Car Rentals at the Village Square, find the ideal car for you and then continue planning your trip. Near the entrance to Kalopanayiotis there is a Tourist Information office where you can pick up an excellent street map of the village showing all its places of interest.
83
ROAD TRIP | CYPRUS VILLAGE
DISCOVER RELIGIOUS TOURISM IN THE HEART OF TROODOS
Being a fan of iconography, I have visited, in the past 14 years, nearly all the churches on the island and at least eight monasteries, each possessing its own beauty and charm. My hands-down favourite, however, is the small idyllically situated church at the monastery of Ayios Ioannis Lampadistis in the picture-postcard-perfect village of Kalopanayiotis. The church - a UNESCO World Heritage site - is not large (nor is the monastery) but the quality of its icons and most especially its frescoes painted directly on the walls and ceilings are extraordinary in their design composition, artistic skill, use of colour and overall effect on the viewer. And except for some slight damage inflicted by Ottoman invaders, the artwork is mostly intact, showing a plethora of dramatic scenes from the history of Orthodox Christianity. There are various rooms in the church, and the art adorning each room and nave demands at least several moments’ study and meditative appreciation. In the monastery’s courtyard, close to the entrance to the church, is a gift shop where various-size icons and other religious mementos may be purchased. Though cameras are forbidden inside the church, the 11th-century buildings of the monastery are of local stone and wood and provide ample inspiration for picture taking. There is also an icon museum a few minutes’ away by foot and several souvenir shops in various locations throughout the village where local handcrafted items and foodstuffs are featured.
The village has recently been revitalized and is one of the top agritourism destinations in Cyprus. INDULGE INTO CULTURAL TASTES
With your street map in hand, walk from the monastery parking lot across the bridge that spans the small but pretty Setrachos River into the village proper where you will discover many places to sightsee and shop for village products. One justifiably popular item is the local Soutzouko, a tubular sweet made with pure grape juice and either almonds or walnuts in the center. There is even a Soutzouko factory in the village where you can observe the process of creating this very Cypriot delicacy. Another tasty local treat is haloumi, a mozzarella-like cheese made from goat or sheep milk. You can even participate in a haloumimaking workshop (arrange through local hotel) or simply taste on site and purchase some to enjoy at home. Haloumi is best when grilled or sautéed in olive oil then doused with fresh lemon juice. As an accompaniment to fried eggs and lounza (Cyprus ham), it is a vital element in the traditional Cyprus breakfast. The Traditional
84
Aphrodite Hills Resort
Products Shop at the eastern end of the village is also well worth a look. Lunch can be enjoyed at any various venues of the local agrotourism resort, but there are also several tavernas and cafés to choose from (might be closed in the off-season) located throughout the village and clearly delineated on the map. It is also possible to put together a picnic lunch of local specialties from the shops or supermarket to be enjoyed on a bench next to the river. Do remember to bring along some extra clothing as temperatures in the mountains are usually ten degrees or more lower than along the coast. The village has recently been revitalized and is one of the top agritourism destinations in Cyprus. The traditional architecture and the local character might easily tempt you to spend the night. Make sure you are ready for any last-minute decisions. It is best to set out for Kalopanayiotis in the morning (it’s about a one-and-a-half-hour drive through beautiful landscapes), park at the monastery and spend the day leisurely exploring all the village has to offer. All in all, the village of Kalopanayiotis is the ideal spot for a day’s outing and its rich history and culture will provide a genuine Cyprus experience for anyone who visits.

EVALUATION | STAR RATING
stars Reaching for the
Hotel star ratings constitute a system of ranking quality, to help consumers evaluate a hotel’s amenities, luxury and overall hospitality. But what do these stars mean?
Story by Eleni Hoplaros

T
Travellers have never been faced with as much choice as they are today when booking a trip. The process usually involves spending a significant amount of time finding a place to stay in, and when it comes to picking a hotel, the decision is usually based on its star rating, which ranges from the modest one star to the luxurious five stars in most countries worldwide. The UAE is an exception with some hotels having received six- or seven-star ratings.
LIFESTYLE HAVEN
Modern, elegant and set in an area steeped with Cypriot culture, mythology and tradition, the Hotel is a lifestyle haven for devotees of uniqueness and comfort and the first Resort Hotel of its kind in Cyprus.
However, to truly trust the quality of the accommodation you’ll be spending your holiday at means knowing what those stars mean and just how credible they are.
Developed by Forbes Travel Guide in the 1950s, the star-rating system is today enforced by an array of evaluating bodies.
AN INTERESTING HISTORY
Developed by Forbes Travel Guide in the 1950s, the star-rating system is today enforced by an array of evaluating bodies. Each body has their own criteria on which they base their evaluation, and this differs from country to country across the globe. Being that no universal system exists, one does really need to check the integrity of each country’s evaluator and understand the standards by which their stars are assigned. In the US, Forbes and AAA are the foremost bodies for assigning stars, whereas in the UK, this responsibility lies with national tourist boards VisitBritain and VisitScotland. In Cyprus, the Cyprus Tourism Organisation (CTO) is the leading authority for rating hotels across the island.
HOW STAR-RATINGS ARE ASSIGNED
Whilst evaluating bodies differ in their approach, common to most rating systems and programs worldwide are the three primary elements of a hotel that they review - that is quality of service, amenities and key features, as follows: A one-star hotel typically offers simple rooms with a bed and side table, shared bathrooms with other guests on your floor, and a vending machine with basic refreshments. It does not usually have a 24-hour reception desk, a television, telephone, or any other hotel facility. A two-star hotel in comparison does not deliver that much more aside from a private bathroom (with shower), a closet to hang clothes, a telephone, a tv, possibly a 24-hour reception desk and the chance of a continental breakfast.
Three-star hotels usually offer a likeable balance at a budget price. This usually means slightly larger, more comfortable rooms and restaurants and bars on the premises. Four-star hotels are a significant step up with a decorative lobby and ambient interior design, bigger and more sophisticated rooms, a larger bed, a minibar, bathrobes, and a fancier television. Four-star hotels also usually have parking facilities, offer gym and SPA options, a swimming pool and more. A five-star hotel is one that offers a respite from the daily stress of life, and typically embodies sought-after elements like luxury, relaxation and pampering. The rooms are normally large with very big bathrooms in which a lot of attention has been focused on the décor and highend toiletries. Lavish spas offering luxurious treatments are usually on offer, and welcome gifts are provided. Many five-star hotels come with a range of popular amenities including health clubs, tennis courts, golf courses and children’s entertainment areas with child-care facilities.
EPITOMISING THE 5-STAR EXPERIENCE
Aphrodite Hills Hotel by Atlantica is a luxurious 5-star destination overlooking the legendary birthplace of Aphrodite, the Greek goddess of love. Many are available as swimup or private pool rooms, just footsteps away from the water. The interior design of each room combines minimalistic style with the natural elements and colours of the surrounding terrain. Large elegant bathrooms offer a range of high-quality, indulgent toiletries to enjoy. The Hotel also offers a variety of other sought-after amenities including a modern gym, an exceptional luxury spa, gorgeous swimming pools, a fun Kid’s Club with child-care options, tennis club, football club, horse-riding facilities, an 18-hole PGA National Cyprus Championship Golf Course, and a selection of exceptional and awarded restaurants and bars.

Hotel Holidays Vs Villa Holidays
H
It can be said that any holiday is a good holiday, but great accommodation can elevate a good holiday to a truly sublime one. Some travellers may prefer the luxury of room service and the range of dining options at their fingertips, while others may enjoy the home-away-from-home feel of a villa. We put our writers to the test: hotel holidays or villa holidays?
Rachel Chrysostom: Hotel Holidays
Hotel holidays are by far my favourite, and here’s why:
FOR THE COMFORT

CRASH TEST | TYPES Eleni Hoplaros: Villa Holidays For those of us who enjoy that unique sense of home away from home that a holiday villa can provide, the ideal type of villa that will offer me a memorable holiday stay are as follows:
FOR THE FEEL OF HOME
There is a feeling of seclusion that comes with staying in a villa that’s hard to beat. It’s being able to retreat into a space that feels less like a room and more like a home, particularly when I’m holidaying with my family. But while I treasure the quality time of being together, I also like the benefit of being able to retreat into my own bedroom or private terrace when I need a bit of quiet down time. The villas at Aphrodite Hills provide that perfect balance of holiday ambience with that sense of home, giving everyone the space they need, when they need it.
Some travellers may prefer the luxury of room service and the range of dining options at their fingertips, while others may enjoy the home-awayfrom-home feel of a villa. FOR THE EXCEPTIONAL AMENITIES
Whether you’re travelling with children or on a romantic escape, having your own fully equipped kitchen is great for cooking a meal for the family or for your significant other, giving you the chance to be with your loved ones at your own time, at your own pace, in your own way. Other amenities that I usually look out for are multiple bathrooms, laundry and house cleaning facilities, outdoor garden space, private pool and parking.

I want a holiday destination that offers a natural beauty of gorgeous sea and scenic mountainous terrain combined with a richness of culture and history - somewhere that my family and I can explore and discover the stories of the people and the place. And then, once I’ve had my fill of everything there is to see, I want to be able to retreat to the privacy and seclusion of my villa, where my husband, children and I can relax in any room we want, without any distractions. The beauty of the Resort itself and the views it overlooks are extraordinary, with an endless supply of beautiful spots to enjoy.
FOR THE GASTRONOMY & FUN ENTERTAINMENT
I want to have the choice of dining at different restaurants that cater to every palate. Or I might require the exquisite experience of a Personal Chef at Villa, for homemade cuisine, in the luxury, comfort and privacy of my very own holiday home. I want a selection of fun things for my children to participate in, be this sports like tennis or football, horse riding or trail hiking, or a range of other kid’s activities like those offered at a kid’s club which also provides child-care facilities, so that my husband and I can enjoy some time on our own.
PERFECT BALANCE
The villas at Aphrodite Hills provide that perfect balance of holiday ambience with that sense of home, giving everyone the space they need, when they need it.
FOR THAT EXTRA BIT OF PAMPERING
Occasionally, I want to leave the sanctuary that my villa provides and indulge in some out of this world pampering, that type of spa experience where you get to rejuvenate the body, the soul and the mind. So, when I look for a villa, I book a destination that offers an in-house luxury spa facility that will tailor treatments according to my needs. The Retreat Spa by Atlantica at Aphrodite Hills Resort is such a place, providing some of the best and most sensational range of treatments that Europe has to offer.

Trahana oldest
the world’s
comfort food
Trahana soup is one of the two most favourite Cypriot winter soups. However, Trahana is made in the summer, in large heavy pots and boiled in sheep sour milk.
A
Story by Eleni Hoplaros
A JOURNEY BACK IN TIME
This warm and creamy, somewhat sour but gloriously decadent soup is even reported to have been mentioned by a 1st century Roman cookbook author, Apicius. He describes a dish of very similar consistency called tractae, which was used to thicken a variety of other foods. Other sources purport that the origin of trahana may lie in medieval Persia, in the form of grain and dairy pellets called tarkhaneh. In Byzantium, the ancient city of Thrace, it went by the name trago or traganos, and since the 9th century, much of the Arab world has also been eating kishk, a similar wheat-based food. Many also believe trahana to be a traditional soup of Cyprus, with unique varieties of the dish called xinohondros also popular in Crete, Greece.
A HEARTY, COMFORTING HOMEMADE CLASSIC
Although a technique for using up leftover milk hundreds of years ago, and vital to one’s survival, today, trahana is a popular soup enjoyed across Greece and Cyprus. It is traditionally made from kibbled or cracked wheat, fermented goat’s or sheep’s yoghurt, salt and lemon juice (optional). Other variations include the use of bulgar, wheat flour or semolina. Trahana soup is eaten in a variety of different ways, be this with pieces of sweet tomato cooked in, a large bulb of garlic and handful of mint stirred in for bold flavour, some chicken stock and slithers of chicken, pieces of feta thrown in for extra zest, or as it is loved across most of Cyprus, with pieces of velvety halloumi and even rusk. Trahana can be made into a thick or thin soup depending on personal preference; it can be added as a savoury filling in pies and it can even be used as a stuffing in vegetables or dolmades.
A DELICIOUSLY EASY RECIPE TO MAKE
Whilst dried trahana pellets are easily found in most supermarkets, making homemade trahana is a relatively simple process that begins with fermenting yoghurt in a closed bucket for a week, at room temperature, away from the sun.

Aphrodite Hills Resort
After 7 days, the now curdled yoghurt is placed into a large pot with some salt and brought to a soft boil. Once it has started boiling, the heat is lowered, and the wheat stirred into the mix until fully combined. At this point, the lemon juice can be added. The mixture needs to be stirred continuously for approximately 20 minutes until the liquid is absorbed. Add a wooden spoon into the middle of the pot, if it stands without falling to the side, you know the mix is ready. At this point, the pot should be taken off the heat, covered with a towel and lid, and put aside until it cools, about 3-4 hours. Once cooled, the mixture can be divided and rolled by hand into long logs and then frozen in sealed freezer bags until needed.
SOUP OF THE DAY - IT MIGHT BE YOUR LUCKY DAY
When at Aphrodite Hills Restaurants by Atlantica, ask for trahana and take a culinary journey back in time. Experience the robust flavours in every mouthful of this indulgent, soothing, silky soup!

A VISIT AT THE LAND OF WINE
Recent research on ancient clay jars near the village of Erimi has proved that the rich wine history of Cyprus has been alive and ongoing for more than 6,000 years.
The Oenou Yi - Ktima Vassiliades winery is the most impressive new winery to appear in Cyprus in the past several years. Set atop a high hill overlooking wine-soaked Omodos - at last count there were seven wineries in the village the large architecturally stylish complex appears like a sleek ocean liner against the background of a usually sunny Limassol sky. Founded in 2013 by Christodoulos G. Vassiliades, a prominent Cypriot lawyer, based in Nicosia,

whose ancestors cultivated grapes here for several generations, the winery exemplifies in every way the owner’s deep passion for the local terroir and the centuries-old legacy of Cyprus winemaking.
A WALK IN THE VINEYARDS
Every winery has its origin story and the tale of Oenou Yi–Ktima Vassiliades founding is not without charm. Mr. Vassiliades, despite his
very active law practice in Nicosia, had always remained closely connected to his father’s vineyards in Omodos, visiting several times a month. But as his father advanced in years and began to slow down, Christodoulos considered taking a more active role in the day-to-day operations. One-night Mr. Vassiliades senior couldn’t sleep and decided to take a walk in his vineyards. There was no moon and the man soon became disorientated. Finally tiring from
his efforts to find his way, he rested on a large rock and fell asleep. In the morning his workers found him and were alarmed to see that if he had taken one step beyond that rock, he would have tumbled down a very high cliff. This occurrence prompted Christodoulos to take control of the family vineyards. At first he hired people to run things but the more time he spent in the fields and the more involved he became in the winemaking process, the more pleasure he found in the experience, until finally he decided to go full speed ahead and develop the small business into a major winery.
Mr. Vassiliades, despite his very active law practice in Nicosia, had always remained closely connected to his father’s vineyards in Omodos. STATE OF THE ART WINERY
Starting off with a mere ten hectares of family vineyards, Mr. Vassiliades, with the assistance of EU incentives, bought up land and built a state-of-the-art winery with the very latest production equipment. Christodoulos knew the basics of winemaking as he had helped his family in the vineyard when he was a boy, but he very wisely hired a full-time oenologist, Aikaterini-Evangelia Mylona, with degrees in Chemical Engineering from Greece and winemaking in France, as well as
an accomplished viticulturist, Alexis Aristidou (specially trained in plant protection), plus a large team of experienced craftsmen.
DISCOVER THE WINES OF CYPRUS
The results are more than impressive. The vineyard holdings have grown from 10 to more than a hundred hectares. Under cultivation are many different grape varieties: the indigenous Cypriot Maratheftiko, Xinisteri, Mavro, Yiannoudi, Morokanella, Spourtiko and Promara; The Greek Assyrtiko, Lefkada and Malaga, the international varieties Cabernet Sauvignon, Shiraz, Merlot, Chardonnay and Grenache. After only two years of production, Oenou Yi–Ktima Vassiliades is turning out 200,000 bottles of 10 different wines (plus rosewater and Zivania), most of which are featured on the wine lists of some of the best hotels and restaurants on the island. Oenou Yi-Ktima Vassiliades very affordable everyday table wines are labeled under the Playia rubric and include a dry red made from Shiraz, Cabernet Sauvignon and Merlot that pairs well with any meat or cheese dishes; a dry white from Xinisteri, Malaga and Assyrtiko that is a perfect accompaniment to fish, salads and Asian dishes; and a Provence-style dry rosé intriguingly blended from Shiraz and Maratheftiko that is lovely as an aperitif or with just about any cuisine. On the higher end there is Thalero, a medium sweet white wine from Xinisteri and Malaga; Pente Litharia, a dry Xinisteri, very expressive of the local terroir; as well as a medium sweet rosé; a Shiraz/Cabernet blend; a Reserve Chardonnay; Reserve Xinisteri and the extraordinary Geroklima, a 100% Maratheftiko released in a limited edition.
Special mention should be made of the Oenou Yi-Ktima Vassiliades version of the oldest of Europe’s wines, the iconic Cyprus Commandaria. Mr. Vassiliades’ version is lighter in colour and on the tongue but the overall effect on the palate with its long finish and pleasing aftertastes is more elegant and sophisticated than most. A glass of this Commandaria, lightly chilled, provides the perfect happy ending to a fine dinner, enjoyed either on its own or with any dessert rich in chocolate. *Oenou Yi: Tthe land of wine

PROTECTION OF
I
EMPLOYMENT RIGHTS in Transfers of Undertakings or Businesses
Enforcing the legal rights and ensuring fair and equal protection for employees.
INTRODUCTION
The “Council Directive 2001/23/EC of 12 March 2001 on the approximation of the laws of the Member States relating to the safeguarding of employees' rights in the event of transfers of undertakings”, commonly known as TUPE, was adopted almost two decades ago and its main provisions were implemented into the relevant Cypriot law with no. 104(I)/2000.
of employment or the employment relationship is terminated because of the transfer or the employees resign because the transfer involves a substantial change in working conditions to their detriment, the transferor shall be liable to compensate the employees in accordance with the provisions of the employment contract or the Termination of Employment law.
The importance of TUPE in Cyprus has grown significantly during the last few years, due to the increasing number of mergers and transfers of undertakings and businesses, mainly because of the increasing interest of foreign investors in the Cypriot market.
APPLICATION OF TUPE
TUPE’S SCOPE
In the case of a transfer of an undertaking, business or part of an undertaking or business, the transferor’s employees automatically become employees of the transferee. The employees maintain, of course, the right to refuse to become employees of the transferee, but in such a case they may not be entitled to receive any compensation if dismissed by the transferor. TUPE aims to protect employees in the event there is a change of employer by safeguarding their rights that derive from their employment relationship with the transferor.
EMPLOYERS’ OBLIGATIONS AND EMPLOYEES’ RIGHTS
Before the transfer takes place, the transferor shall inform the employees about the proposed transfer and give them reasonable time to consider whether their rights are affected. The employees also have the right of representation and consultation, however, they do not have the right to veto the decision for the transfer. Simultaneously with the transfer, the transferor's rights and obligations arising from the contract of employment or from an employment relationship existing on the date of a transfer are transferred to the transferee. Following the transfer, the transferee shall continue to observe the terms and conditions agreed with the transferor in the employment contract as well as any applicable collective agreement. The transfer of the undertaking or business does not in itself constitute ground for dismissal by the transferor or the transferee. If the contract
The transfer of an “economic entity” should be distinguished from the transfer of “ownership of a company” as in the latter case the employer company remains the same, albeit with a different owner (shareholder). It should also be distinguished from a mere transfer of assets or liabilities. For TUPE to apply three elements must exist: (i) an economic entity, (ii) the transfer of that economic entity and (iii) the economic entity retaining its identity following the transfer. In identifying whether there has been a transfer of an economic entity which retains its identity after the transfer, the basic test is whether the economic entity remains in existence with the same basic features. This may be apparent from the fact that its operations are actually being continued, or have been taken over, by the transferee carrying on with the same or similar economic activities (see European Court of Justice Judgment in C-24/85 – Spijkers). The following factors are to be looked at to determine whether the going concern test has been met, including: (1) whether the business’ tangible assets (such as buildings and movable property) are transferred, (2) the value of the transferor's intangible assets at the time of the transfer, (3) whether goodwill has been transferred, (4) whether the majority of the employees are taken over, (5) whether the customers are transferred, (6) the degree of similarity between the activities carried on before and after the transfer, (7) the period, if any, for which the activities carried on before and after the transfer are suspended or disrupted, (8) the use of the employees by the transferee. The list is not conclusive. It is important for prospective sellers and purchasers of undertakings or businesses to consider the above before entering into the relevant agreement, as otherwise they may be found liable for failing to safeguard the employees’ rights, giving rise to claims for compensation.

CYPRUS-RUSSIA
connection
Cyprus has historically been a preferred destination for Russian nationals to relocate or use as a second base. Currently, there are more than 100,000 residents of Russian origin living in Cyprus, a number that has grown at a rapid rate. We look at what makes our island such as attractive haven for the Russian community.
Story by Rachel Chrysostom
STRONG CULTURAL BONDS
There is much to be said about the role of Cyprus’s sunny climate and warm hospitality in attracting both visitors and residents from Russia to the island. The almost-year-round sunshine offers them a balmy respite from their home country’s chilly winter temperatures, and the cheerful disposition and friendliness of Cypriots makes them feel right at home. Even more important, however, are the strong cultural bonds of religion and family which tie together these two communities.
104
Aphrodite Hills Resort
Cypriots are staunch followers of the Greek Orthodox religion, which essentially follows the same doctrines, Holy Traditions and understandings of the Scripture as the Russian Orthodox Church, thus creating much overlap between the two. As such, several Russian churches have been built across the island in order to accommodate the Russian-speaking community. That, coupled with a shared reverence over the importance of family ties, has made Russians feel right at home in a country which shares many of their same values.
SERVICES AND AMENITIES THAT FEEL LIKE HOME
Over the years, as the Russian community in Cyprus began to expand in size, several Russian-oriented services and amenities were also established across the island. From Russian-speaking

Today, a diverse range of Russian-speaking media are also available. Russian radio station Radio Logolf offers listeners the latest in Cypriot and International news and upcoming events, and broadcasts programs of interest relating to everything from tax laws and consumer protection to health issues and legal affairs. Russian-language newspaper, Vestnik Kipra, is published twice per month and available at local Russian shops island-wide, while a quarterly business magazine is delivered to Russian-speaking CEOs and directors across Cyprus.
vicinity to Europe, Africa and Asia makes the country a strategic location and gateway for investment into and outside the EU. Since the establishment of the Cyprus Investment Program, comprising part of the efforts and policies of the Cypriot government to attract foreign investment to Cyprus, non-Cypriot high net worth individuals and investors, as well as their families, can obtain Cypriot citizenship through naturalization. Thus, by investing in the Cyprus economy, Russian nationals and their families can ensure Cypriot citizenship – and, by extension, EU citizenship, for life.
A NEW LIFE AT APHRODITE HILLS RESORT
Whether relocating or using the island as their second base, many Russian nationals opt for locations that are away from the hustle and bustle of city life and offer a more tranquil and peaceful existence. Aphrodite Hills Resort is ideal for families wishing for a more laidback way of life among the serenity of the Resort grounds, or even for families seeking a holiday home to use during school breaks and holidays. The Resort provides all amenities for a relaxed, high quality of living, including a fully stocked supermarket and pharmacy, a fully equipped medical centre, a chapel, a plethora of restaurants, and leisure and sports activities. The Aphrodite Hills Holiday Residences can also be used to earn long- or short-term rental income, with the assistance of the Aphrodite Hills Property Management team, who look after the premises on the owners’ behalf.
BUSINESS INCENTIVES
Cyprus itself offers several business advantages that are attractive to Russian nationals and beyond, making it the fifth best relocation destination out of 23 countries in the world, ahead of London, Madrid and Monaco. The island is a diverse business hub, internationally renowned for its investment opportunities across sectors, open-market economy, favourable tax and legal infrastructure, and abundantly skilled human talent.
