Stademos Hotels that our new and returning guests will once again be able to enjoy their island holiday in an environment that is comfortable, stress-free and, most importantly, safe. In happier news, we are proud to say that 2020 was also a year of milestones for our company, which has continued its upward trajectory, setting new standards for the island’s hotels and delivering exceptional holiday experiences to our guests. We are proud to have added a new property to our collection, the five-star AMARA to the Stademos family. A masterpiece designed by Rockwell Group for the most discerning guests and inspired by Cyprus’ distinctive heritage, the AMARA is a contemporary visual expression of cultural influences and architectural innovation. The hotel boasts a delectable culinary offering, headed by renowned celebrity chefs, including NOBU Matsuhisa, Giorgio LOCATELLI, and George PAPAIOANNOU. 2021 also marks the 30th year of operation of the Mediterranean Beach Hotel, longestablished as one of the most popular 4-star hotels in Cyprus. We unveiled a new facelift and refurbishment, and also celebrated the opening of the Mediterranean Residences, which include 14 sea-view apartments. The residents of these apartments also have access to all facilities of the hotel. The Elysium in Paphos is now in its 19th year, and completing another round of renovations to a number of its key areas, including a complete make-over of its main kitchen, which will reinforce the property’s unparalleled service offering.

I am honored to have completed my first year as General Manager, and despite the difficult year we have all had to contend with, I look forward to unveiling to our esteemed guests all that our hotel has in store for 2021. Our most exciting project that was debuted this year is the Mediterranean Residences, which includes 14 luxury rental apartments that reflect the beautiful aesthetic of the Mediterranean coastline. Design experts have taken the Elysium Hotel under their wing yet again and they will make sure that it remains the luxury leader in Paphos. The refurbishment of 2020 was incorporated throughout all areas of the hotel. The kitchen undertook major renovations as all kitchen equipment was replaced with ROSINOX. News The magic of Christmas came alive through lit-up hallways, festive programs and culinary delights. Pieces of Art in the Mediterranean ‘Elybear’ at the Elysium!

Our Angels Kids Club at the Elysium loves to spread love and laughter – hence Elybear, the mascot! Elybear is a cuddly bear who loves to give hugs, spread positive words and she’s crazy about dancing. She’s also very photogenic so make sure you take a photo with her when you spot her wandering her big belly around the hotel! If she’s dressed up, don’t get frightened, it means she had a creative morning and it was probably themed!

Mediterranean Hotel Chef Awards

Mediterranean Beach Hotel was proud to participate in the GASTRONOMIA – HO.RE. CA exhibition of 2019, held under the auspices of the Minister of Tourism. The ‘Cyprus Chefs Association’ had organized this 3-day event as a culinary festival for the whole island, inviting professional Chefs, pastry Chefs and students to to take part in in various competitions with the aim of upgrading their existing skills. Under the supervision of the Mediterranean hotel’s Sous Chef, Aristos Antoniou, the hotel was honoured with two prestigious Chef awards! We want to congratulate our colleagues on their great successes, their positivity, and their grand desire for creation! ‘Chef of the Year’ award Christos Tsolerides awarded the Silver medal ‘Edible Cold Finger Food’ award Vasilis Karteroliotis awarded the Bronze medal

Stademos hotels have become a nest for Klavdios’ artwork, displaying over 70 pieces from the painter’s work since 2014. An artist always inspired and fascinated by the concept of anthropocentrism, Klavdios proudly placed his new artwork at the Mediterranean Beach Hotel in 2020. For him, a hotel is a foundation for his creative work as it represents the perfect notion of a ‘union’; a space where strangers, lovers and families from all over the globe leave their quarrels behind and come to share a common experience during their stay.

Paphos Paphos Aphrodite Festival

The event of the year for opera lovers across the island, the Paphos Aphrodite Festival takes place in the coastal city every September. It hosts international opera performances for local audiences and visitors on an open-air stage beneath the stars, against the majestic backdrop of the Paphos Medieval Castle. First introduced in 1999, it has since included such performances as Verdi’s ‘La Traviata’ and ‘Aida,’ Bizet’s ‘Carmen,’ and Puccini’s ‘Turandot’ and has become one of the most popular events in Cyprus. International Pharos Chamber Music Festival

Acknowledged across the world as Cyprus’ most important annual classical music event, the International Pharos Chamber Music Festival is also recognised as one of Europe's preeminent music festivals. Dionysia Festival

In August of each year, the village of Stroumbi in Paphos hosts a festival in honour of Dionysos, the Greek god of wine and revelry, in celebration of the island’s many fine wines. Arkadia Festival

Every August, the picturesque village of Kallepeia in Paphos comes alive for the annual Arkadia Festival. This event celebrates the beauty of the area and is a great day for the entire family. Visitors join locals to experience authentic Cypriot hospitality, including live music, folk dancing and the delicious food for which the region is famous.

Logicom Cyprus Marathon

The Logicom Cyprus Marathon takes place every March, and is the oldest Marathon in the history of Cyprus. Professional and amateur runners from across the world visit Cyprus to participate in this spectacular running event, which includes a Full Marathon, Half Marathon, 10K Road Race and 5K Fun Run. Russian-Cypriot Festival

For the past 12 years, the Russian Embassy in Cyprus, the Limassol Municipality and the Russian newspaper Vestnik Kipra combine forces to organize the biggest event in the EU dedicated to friendship with Russia. The RussianCypriot Festival, which takes place every June, aims to celebrate the close relationships between the two cultures, and includes exhibitions from more than 70 companies, as well as performances by Cypriot and Russian dancers, singers and musicians. Lemesia Festival

Lemesia is one of the island’s biggest annual international sporting events, which takes place every October in Limassol. Though it is focused on professional athleticism, it also aims to promote sports participation to Limassol locals. The 10-day festival brings athletes from around the world to compete in a number of disciplines, such as boxing, karate, triathlon, marathon, shooting, rhythmic gymnastics, and cycling. Limassol Carnival

An explosion of fun and colour, the Limassol Carnival, once described as ‘the coolest Carnival outside of Rio,’ is certainly a sight to behold. It starts 10 days before Lent, when musicians and dancers fill Limassol’s streets and squares, and parties for crazily-attired individuals are hosted across town, and culminates in the big Sunday Parade, a day before the start of Lent. Cyprus Contemporary Dance Platform

The Ministry of Education and Culture, along with the Rialto Theater, established this annual event in 2001 to support, develop and present new projects and creators of contemporary dance in Cyprus, as well as promote them at various festivals abroad. European Dance Festival

Limassol Wine Festival

This annual 11-day festival is held at the end of August and start of September at the Limassol Municipal Gardens, attracting more than 100,000 visitors each year.

The four major wineries in Cyprus as well as a number of small independent producers are all present at the Wine Festival, offering visitors a taste of their wares in unlimited amounts. Lefkara:

Traditions Steeped in History The village of Lefkara is world-renowned for its traditional lace embroidery and filigree silver, painstakingly crafted by the handful of embroiderers left in the village. Demosthenis Rouvis, owner of Rouvis Lace & Silver, much like his father and grandfather before him, is working hard to keep these traditions alive.

ocated in the Larnaca region, the mountainous village of Lefkara is one of the island’s most picturesque villages, with narrow, winding streets and traditional, terracotta-roofed houses. What makes Lefkara special, however, is its long history of lace embroidery. Part of UNESCO’s Representative List of Intangible Cultural Heritage, Lefkara lace, or ‘Lefkaritika’ dates back to at least the 14th century. In fact, legend has it that Leonadro da Vinci himself visited the village in 1481 and bought a lace altar cloth, which he donated to a Milan cathedral. Influenced by the embroidery of Venetian courtiers and ancient Greek and Byzantine geometric patterns, Lefkara lace is made by hand in designs combining four basic elements: the hemstitch, cut work, satin stitch fillings and needlepoint edgings. Once a combined art and social practice that was the primary occupation of women in the village while sitting together in the narrow streets, this unique mastery is slowly beginning to fade as the newer generations fail to share the same interests their mothers and grandmothers did. For many years, however, lace-making was at the center of daily life for the women of Lefkara, and a proud symbol of their identity. Rouvis Lace & Silver is one of the few shops in the village that eschews the mass-produced, machine-made souvenirs of other stores and instead, insists on authentic, handmade

products. We spoke to Demosthenis Rouvis about the legacy of his shop, the art of embroidery, and the decline of embroiderers island-wide.

How did you become involved in the art of embroidery?

I come from a long line of embroidery designers. My grandfather was one of the first residents of Lefkara who traveled around Europe, selling pieces of Lefkara lace. My father, Michalis Rouvis, who runs the shop alongside me today, is an embroidery designer. In 1986, he designed and delivered a lace tablecloth to the Duomo Cathedral in Milan, which is still used to this day. My father creates the designs, and we work with embroiderers all around Cyprus. Unfortunately, it is a dying art, one that we are trying very hard to preserve. Fashions change, and embroidery is very time-consuming work that no one has time for anymore. A tablecloth, for instance, can take a minimum of 6 months to make. So our aim is to continue to produce and preserve authentic Lefkara lace for as long as we can.

Lefkara lace is made by hand in designs combining four basic elements: the hemstitch, cut work, satin stitch fillings and needlepoint edgings. What can visitors expect when they come to your shop?

We are the only shop in Cyprus that is under the auspices of the EU. All our designs are handmade, there is nothing machine-made in our shop, and customers appreciate this. We have quite a large following from abroad, with many holiday groups traveling to Lefkara just to visit our shop. After all, good quality Lefkara lace is a lifetime investment; it is an heirloom that will last for years, and be passed down from generation to generation. Authentic Lefkara lace is embroidered on 100 percent Belgian linen using 3 colors of thread: white, beige, and brown. We also sell hand-made filigree silver jewelry, which is also a famous Lefkara craft.

What is being done to keep this tradition alive?

Alas, it is indeed a dying tradition. There are

very few ladies who embroider anymore. We work with about 25 embroiderers across the island. In Lefkara there are maybe 60-70 left, but not all of them do it commercially. Most just embroider in their free time, as a hobby. One promising development that is currently in the works is the fact that Lefkara lace recently became the first Cypriot product to become certified by the Cyprus Organization for Standardization. The specifics are still being worked out, but this means that the work that is being put into the Lefkara lace will be recognized and promoted to visitors. Her splendor permeates many aspects of life on the island, and most recently, it was the inspiration behind a brand new cocktail menu at the Elysium.

Talent Frequent Elysium guest Timothy King is a Consultant Biometrist in London with a secret talent that has been delighting and captivating all the hotel staff for years.

imothy King, his wife Sharon, and his three children have been loyal guests at the Elysium since the hotel’s first year of operation, and have visited more than 13 times over the years. In fact, considering that his eldest child was a mere two years old, his second just a baby, and his third not yet born when they first visited, it could be said that his family grew up along with the Elysium, sharing their special family moments with the staff, most of whom have also been there right from the start, and with whom they share a special bond. Beyond the exceptional service of the hotel and the high quality of its restaurants, both of which Mr. King extols, it is this family atmosphere that has kept the King family coming back time and time again. With a challenging career in Medicine and Human Engineering, Mr. King had to find a way to relax and decompress, away from his busy clinic. And so, he developed a passion for caricaturing, which he has used to delight many of his dear friends at the Elysium. “My first cartoon was of Cedric from the Mediterraneo restaurant,” says Mr. King, “because he would always pick out a lobster for me, and then I drew my wife as a prawn, because she and Cedric would always make sure to pick out the freshest prawns for our dinner!” Word of Mr. King’s charming drawings quickly earned him a large fan base across the hotel, and he gradually drew droll caricatures of all staff members, including General Manager Mr. Christos Papamiltiadous, who resembled King Leonidas the Lion in Disney’s ‘Bedknobs and Broomsticks.’ “That’s the trick with caricaturing,” explains Mr. King. “You have to see the person as an animal first – look for their mannerisms or how they hold themselves when sitting, or walking. Then you talk to people who know that person, and find out if they have some sort of a nickname. Finally, you add in their job specifics – serving wine or food, for example, and voila! You have your caricature!”

Currently owning several restaurants around the globe, it wasn’t until his London voyage at ‘Zafferano’ that Giorgio earned his international reputation and his first Michelin star. Locatelli’s Michelin rated and modern cuisine expands with ‘Locanda Locatelli’ in London’s prestigious area of Mayfair and his newest ‘Ristorante Locatelli’ in Limassol, where the dishes underscore his great love for Italy and conviviality. Following his three published books, ‘Made in Italy’, ‘Made in Sicily’ and ‘Made at Home’, Locatelli humbly opened his restaurant at the AMARA hotel in Limassol and has been serving traditional Italian dishes with an emphasis on originality and fresh, local produce, adding that creative touch to every diner’s plate whilst surrounded by the crystal blue Mediterranean sea. When I came here for the first time it was just an empty, tall building with nothing inside and it was about 5 o’clock in the afternoon during winter, and I remember watching the sun go down and thinking ‘Yes, I like this place, this could be something fantastic'." “The generosity of the people here, especially in restaurants, is something you find nowhere else. When I think of the restaurants in London and the restaurants here, I am in awe; I don’t believe it. The hospitality here is so warm, from the greeting to the moment you ask for the bill - the warmth and approach is so generous that the comparison with Southern Italy is inevitable. Cynthia Ates and her team, Rebeca Draghiciu and Elza Popova speak a whopping six languages among them: English, Russian, Greek, French, Italian, Romanian, and Dutch. This multilingualism is a great asset when assisting guests with any requests or requirements, as it makes them feel welcome and comfortable to be able to communicate in their native tongue. The Guest Relations Team is integral to the smooth running of the hotel, as they ensure that every guest’s need is met, and they are left with nothing but pleasant memories of their stay at the Elysium. The brainchild of oenologist Lefteris Mohianakis and designer Kristina Apostolou, ’Anama is an exclusive collection of wines that follow the island’s tradition of Commandaria, and reflect the uniqueness of the historical wine culture of Cyprus.

The collection of wines included in the ‘Anama vintages are a combination of Cyprus’s indigenous Mavro and Xinisteri grapes, grown on a vineyard that is pruned, harvested, and cultivated mainly by hand.

C

yprus is known for plenty of things: its sunshine, its rich history, its delicious halloumi, and also, its Commandaria wine, the oldest named wine in the world. A dessert wine with a distinctive, full-bodied flavor, it is believed to have been around for 5,000 years, though it was not until the 13th century that it received its name. The crusading Knights of the Order of Saint John named it after their protectorate, the fertile, high-altitude area south-west of the island where the wine was produced, and which was, at the time, known as ‘La Grande Commanderie.’

Taking inspiration from the past

There are a handful of winemakers keeping the Commandaria tradition alive today, and one such winemaker is Lefteris Mohianakis, who has vineyards in the high hills near the village of Zoopigi, one of the fourteen historical Commandaria villages. Along with his partner Kristina, Lefteris has created a signature project called the ‘Anama Concept, which is a result of their study of Cyprus’s tradition and terroir, with a modern concept of quality and design. The collection of wines included in the ‘Anama vintages are a combination of Cyprus’s indigenous Mavro and Xinisteri grapes, grown on a vineyard that is pruned, harvested, and cultivated mainly by hand. This minimal use of machinery and overall nature-driven approach are what make the ‘Anama vintages special, each revealing the unique characteristics of the year they were produced. “My mentality is that we are walking on the base of tradition, of things that are passed on from generation to generation – the tales, the emotions – but the best thing we can do is to give the vine the opportunity to choose for itself what kind of product it wants to create,” says Lefteris. “Those vines have been there for 150 years. I am just trying to give the vines the opportunity to express themselves through my wine.”

Throughout his career, Lefteris has worked in wineries around the world, and in his view, Cyprus is unique in its ability to grow sweet wine. “I truly believe that terroir is one of the most important things towards producing high quality wine. This is why nobody in the world can produce a Cabernet Sauvignon like Bordeaux, for example. And this is why I strongly believe that Cyprus is one of the rarest terroirs that can produce such high quality sweet wines. It is the sun and the soil. It is unique.”

A modern approach

While the winemaking itself is a decidedly traditional endeavor, Lefteris and Kristina follow a more contemporary approach when it comes to their packaging and setup of their wine cellar. The artisanal packaging of each Vintage is handcrafted to tastefully ‘dress’ the wine for as long as the owner ages it. The ‘Anama Cellar itself is a modern construction, situated in the midst of a dense pine forest in Lythrodontas, just a brief 30 minute drive from Nicosia or Larnaca. Visitors can tour the production line and sample a free tasting of rare wines and spirits.

Why did you choose Matsuhisa?

W

orld - renowned chef Nobuyuki Matsuhisa comes together with the AMARA and elevates the standards of Cyprus’ culinary world as he launches the new Matsuhisa Limassol. Designed by David Rockwell, the soft lighting beautifully blends with its elegant atmosphere and creates an intimate scene, reflecting Chef Nobu’s noble roots. Set alongside Limassol’s azure coastline, the overall design is as subtle and artful as the cuisine itself. The lively menu includes signature, legendary dishes like the black cod in miso, the Salmon karashi in miso and Nobu’s signature sushi and sashimi, dishes that can be found in other European Matsuhisa restaurants including Mykonos, Paris and St. Moritz. “My trip into Matsuhisa’s world started in 2014 as a restaurant manager at Matsuhisa Mykonos, continuing for the winter season in Matsuhisa St. Moritz. Belonging to the Nobu family is a huge privilege for me and attaining such a position is an honour. Matsuhisa is a unique culinary destination for those that want to taste Japanese cuisine with a South American influence deriving from Peru. People like to call this ‘fusion cuisine’, we call it ‘the Nobu style of cooking.’ Previously having held managerial positions at other world acclaimed hotels, it was not until I entered Matsuhisa that I realized the difference in the service standards and demands. In a family such as ours, the opportunities to grow and develop are never-ending.”

Why is it that Matsuhisa holds such a high, honourable reputation?

“I strongly believe that happy people are the key to a successful business. As Nobu San often says, food is made from his heart. No matter which restaurant you visit globally, it’s like entering his own house as a guest. The service standards along with the signature dishes are so exceptional but most importantly, cooked from the heart. The localization aspect is also extremely significant in its success as we always try to incorporate diverse products in our cuisine, like local ingredients and fish bought from the local market. Nobu San is always trying to find the healthiest of ingredients to use. For example, he found the monk fruit extract with zero calories and since then, he replaced all sugar with this.” Matsuhisa invests on the ability to connect with the guest, or to put it differently, to invest in the diners’ emotional intelligence. This makes the restaurant enduring and has guests returning all over the world not merely for the food, but for the emotions that they felt during their dining experience.

n the 18th, 19th and 20th of October 2019, a lavish and spectacular three-day celebration marked the grand opening of the AMARA, an event that included festivities, breathtaking gastronomic experiences and extravagant performances. Guests became acquainted with the hotel’s panoramic, azure sea views and philosophy behind ‘Owning the horizon’, following a soft welcome party on the garden premises on Friday 18th. The extensive guest list, including well-known personalities, media and VIPs from both Cyprus and abroad, were invited on the following day as the sun was setting to enjoy the distinct style and ethereal aesthetics that characterize the AMARA. restaurant and then on a grand tour of the hotel where they experienced the elegant design that is at the heart of the AMARA’s vison for minimal, luxury accommodation; boasting 207 rooms and suites with 180-degree Mediterranean Sea views. From the lobby to the bar, from the Michelin star restaurants to its cascading pools to the opulent spa, the tour demonstrated the hotel’s outstanding facilities, services and elevated standards of hospitality.

and entertaining program. The ceremony was followed with the ribbon-cutting by former President George Vassiliou, who was joined by current President Nicos Anastasiades. The evening’s agenda was then completed with the press conference by Managing Director of Stademos Hotels PLC, Demos Demosthenous, General Manager Xavier Jovilet and all three distinguished Chefs. On the 20th, all guests had the unique opportunity to sample some of the most unique flavours created exclusively for the opening party from AMARA’s 3 renowned Chefs, Chef Nobuyaki Matsuhisa, Chef Giorgio Locatelli and Chef George Papaioannou, unveiling the hotel’s plans of changing the gastronomic landscape of Limassol. H

ard work is always rewarded,” says Anastasios Papakostas, and it’s a maxim that he lives by and also conveys to his Restaurants & Banqueting Team. And with twenty years of experience in the hospitality industry under his belt, he is sure to know a thing or two about hard work. A typical day starts very early in the morning. I greet my morning team and make sure everyone is OK and address any concerns. Then I go out to the dining area for breakfast and greet our guests, a gesture I also repeat during lunch. This is probably the most important – and pleasant – part of my job: the face-to-face contact with the guests. I always make sure to welcome them with a smile, and get to know them so that they feel at home with us. Throughout the day, I’m always on the go, bouncing around the hotel, meeting people, say hello to our guests. In fact, I would say this is my favorite part of my job: how social it is. I get to meet people from different backgrounds and cultures, and I learn new things from them every day. You could definitely say I am a people's person, and I enjoy getting to know everyone’s quirks, what makes them tick and what makes them happy, and delivering that to them. The hospitality industry is not an easy one, but I am a firm believer in working hard and being committed, and that this will bring the biggest rewards. For us, it’s a loyal guest who keeps coming back, year after year.

This particular treatment combines a number of therapies, starting with an exfoliating full body salt glow peel followed by an Aquum hydro-bath, and finished off with a unique wave full body massage using aromatic oils and hot stones, and a nourishing, algae face mask. There is no shortage of bars and clubs in Limassol, but if you really want to experience the beating heart of the city, head to the always-buzzing Saripolou Square and join crews of bona fide Limassolians on their night out. Crammed with bars to suit all tastes, you can bar hop and sample delicious cocktails while people-watching, and end the night with a crepe or a slice of pizza from any one of the late-night snack joints that welcome hungry party-goers.

Make a cultural connection

There are a number of museums and cultural centers in Limassol that famously attract hordes of tourists, but why not discover some of the city’s lesser-known, quieter corners that offer up a good dose of local culture. The meandering streets of the historical center of Limassol are where many local artists have set up shop, showcasing their wares to passers-by. From art galleries to photography studios, ceramics works to pottery artists, you are sure to discover a unique gem to take home with you.

Watch the Sunset

One of the perks of living in a seaside town is the ability to enjoy a spectacular sunset from a variety of vantage points. One of the best spots to watch the sun come down is the Curium archaeological site, where the elevated location offers an aweinspiring view of the sun sinking into the sea beyond, coloring the centuries-old ruins in vibrant hues of orange and gold. For an experience that’s a little further afield, head out to Lady’s Mile Beach, on the Akrotiri peninsula, where the rich vegetation and sounds of wildlife form the perfect backdrop for the deep, red and orange sky.

Eat Like a Local

There are endless culinary options in Limassol serving up delicious gourmet meals. Sometimes, however, nothing can beat the traditional corner-shop kebab. And luckily, there is one in every neighborhood. & Span Following a rather unconventional career path in the hospitality industry, Stavros Papageorgiou explains how he became Executive Housekeeper, and the importance of cleanliness in any hotel.

S

tavros Papageorgiou is a Hotel Management Graduate from the Les Roches International School of Hotel Management, with a wealth of experience in several five star hotels around the world. Most recently, he was appointed Executive Housekeeper at the Mediterranean Beach Hotel, a career that many may see as unusual for his gender. My interest in housekeeping was piqued by a great professor I had during my studies, who had worked as an Executive Housekeeper for many years himself. He always told us that rooms contribute to more than 75 percent of hotel profits, and stressed the importance of the housekeeping department to the hotel’s operations. From all the tales he would tell us of his many years of experience, I begun to realize that this was a department that was never going to be boring! At the time, everyone in my year wanted to be a Food & Beverage Manager or a Reception Manager, but I didn’t hesitate to become involved in housekeeping. After all, in this department you have the opportunity to interact daily with

guests, as well as colleagues from all departments, and you learn a lot from these interactions. I would say this is my favorite part of my job – the close contact I have with people. Typically, my day includes a lot of walking around, briefings and checking on rooms, on-the-job training for various staff members and generally streamlining the operation so we can offer the best possible cleaning services to our guests. As it can all sometimes get overwhelming, I always remember my mantra: One step at a time! Everything gets done when you tackle it a little bit at a time.

arina Vernicos is an award-winning photographer, a successful entrepreneur and an avid world traveler. With her creative experience exceeding 20 years, she has been exhibited in distinguished galleries and museums all around the world in Greece, Paris, Monaco, Italy, London, New York, Qatar, Korea and Cyprus. Born on the Greek Cycladic island of Sifnos, blue and white have been the prevailing colours in her life. ‘Nowhere in the world can you find such raw beauty," she proclaims. Marina Vernicos never fails to express her love and gratitude towards Greece and the element of Greek landscape and topography is exceptionally eminent in all her photographs. Capturing raw beauty in a larger scale, the distinguished photographer frequently visits Cyprus and has collaborated with Stademos Hotels for years now. “For me, it’s very important to feel at home and this is how I feel at Stademos Hotels. The staff will meet your needs before you need them.” Nothing says “Greece” louder and clearer than the crisp images she captures. One can almost feel the saltwater and wind just by gazing into them. The fascination with the diverse scenery of Greece was something that naturally emerged throughout the photographer’s childhood, where crystal clear waters met islands, mountains met coves and coves met beaches. The endless coastline filled her with inspiration and emotions as she sailed around the Greek islands all her life, each year visiting new places either with family or alone.

“My main intention when I pick up a camera is making sure I capture the landscape in a way that I consider unique. I want people to see through my eyes. To see a different point of view. My main goal is to transcend my passion of exploring the world and getting people to travel more, either in their country or abroad.” When you’re visiting one of the Stademos Hotels, make sure to catch Marina Vernicos’ astonishing photography pieces, images that can make the observer feel a part of the picture, a part of the place that is so vividly captured. The photographer’s work extends beyond the ordinary. Her creative occupation, photography, combined with her humanitarian characteristics, resulted in the creation of her non-profit organization and the popular ‘Lucky Bag’. An uncontested social awareness and a great philanthropic spirit is what led Marina to create CREAID; an organization which combines creativity and artistic projects with the sole goal of helping children and the community. “CREAID aims to assist the local community and children in need. It uses the artistic inspiration of its supporters to provide assistance to the Greek society by organizing charity exhibitions and auctions annually.” Nevertheless, her innovation does not stop there. The photographer introduced a constructive way to raise money through creations that last forever, such as silk scarfs, tote bags, pouches, cases and ‘goodie’ Lucky Bags all under the collection of ‘Marina Vernicos’, making photography a wearable concept while helping to raise funds for her non-profit organization of CREAID. (hence the name, CRE-AID!) As an active humanitarian who has managed to merge photography,

travel and fashion, Marina Vernicos published to four books: 235 (2011), Antarctica (2004), Through the Lens of Time (2004) and My Acropolis (2012). Further to that, her collections of clothing, accessories and jewelry have made groundbreaking contributions to society, having collaborated with famous brands such as Havaianas, Victoria Kyriakides, Orlebar Brown and Vintage Havana where part of the proceeds from sales were donated to “We dive, We clean”, a group of volunteer divers who clean the seabed of Greek waters. It’s definitely safe to say that blue is the photographer’s favourite colour! Her perspective is that nothing makes a man happier than looking at the sea - having travelled to 133 countries around the globe, her passion with the Greek scenery remains intact. “We are very lucky and privileged to be born in Greece and call ourselves Greeks.” A statement that has defined and shaped Marina Vernicos’ photographs, with simplicity being her central aesthetic in both her photographs and her everyday life.

Farewell After 25 years, Marios Chrysostomou is bidding farewell to the people he now calls family at the Mediterranean Beach Hotel, and testing the waters of retirement.

M

arios Chrysostomou has been working at the Mediterranean Beach Hotel since 1994, as Head Waiter and in charge of the main restaurants of the Hotel for 27 years. Now, he is embarking on a new phase in his life and dipping his toes into retirement, saying goodbye to colleagues and guests who feel like family to him. Being Head Waiter is a strenuous job, one that comes with a great deal of responsibility. My duties ranged from supervising the wait staff and assigning them to tables, to training junior staff and interacting with guests to ensure they have a good experience with us. Though it was all hard work, I would always feel a sense of satisfaction at the end of the day, knowing that I had given it my all. My favorite part of my job was interacting with people, meeting new guests, learning all about them, and greeting repeat guests who were always happy to see me. That’s when you know you’ve done a good job; when guests recognize you and seek you out to speak to you. And this is what I will miss the most. I grew to know so many guests over the years, it will be hard to say goodbye. But, the time has come to take a little break. I’m looking forward to just taking it easy, enjoying my time with my family. Of course, I don’t see myself staying idle for too long. I will get restless and then who knows? Maybe one day you’ll see me back here again!

Still Going

Strong When it comes to going to work, Minas Stavrou didn’t let retirement slow him down. With 22 years of service and counting under his belt, he continues to be an integral part of the Mediterranean Beach Hotel team.

M

inas Stavrou, or Mr. Minas as everyone affectionately calls him, is 67 years old. By all intents and purposes, he should be retired, at home, and relaxing. But if you mention that to him, he will merely shake his head adamantly and insist that he’s still got plenty of good years left to keep doing what he loves: working at the Mediterranean Beach Hotel among people that he considers family by now.

I have been at this hotel for 22 years, working as a cleaner and in the kitchen, and I can’t imagine working anywhere else. I’ve had other offers over the years but I always turned them down. This is where I belong. And when I finally retired, I found myself at home, in the village of Mosfiloti, with absolutely nothing to do. And so I came back. After all, the team needs me – I’m the one who knows where everything is, how to fix things that need to be fixed, who to call. You could say I pretty much do it all. Even after I retired, people would call me up and ask me how to do things so it just made sense for me to come back. I’m here three days a week and I love it. I’m surrounded by people who are like my family, and each time a new person comes along, I pass on my knowledge to them. I like working, using my hands, solving problems, interacting with people, saying hello to our guests. What is there to do at home? Just sit? That’s not for me. I will keep on doing this for as long as I can. I’m 67, but I am a very young 67, so there’s fight left in me yet!

A journey...

Sotiris’ palate, being of the highest caliber, is derived from his younger years, when his mother used to cook at home. Falling in love with the food & beverage scene from very early on in his life, Sotiris was carefully educated by his mother on the tips and secrets of their traditional cuisine, inspiring his vigorous enthusiasm for Mediterranean gastronomy and wine culture.

otiris’ experience with oenology, that is, the study of wine, commenced in 2006 and is still an ongoing, exciting process. Since 2017, he has been accredited with Hospitality diplomas, WSET (Wines and Spirits Education Trust) Qualification Level 2 and with the Advanced Sommelier certification, whilst currently being on the path towards becoming Master Sommelier by the ‘Court of Master Sommeliers’, one of the most talked about certification organizations in America. A title so prestigious purely because of its rarity. One of the most challenging, yet rewarding, aspects of Sotiris’ job is finding new wines to pair with each dish. His journey as Head Sommelier

Learning how to smell and taste wine, to distinguish the flavours and detect the idiosyncrasies, is not an easy task to undertake. He reminisces of the many hours of sleep lost, the sums spent on extensive tastings and the ‘out-of-this-world’ tough exams he had to undergo to continue reviving his passion. ‘The possibility of failure is never easy,' he says with a smile and not with a sigh, as his fervor for oenology and knowledge seems to be more alive today than ever before. The diners’ trust in the sommelier is a trust one does not give blindly; it is a trust one gives to a guide when delving into the unknown. A man with a ‘magic wand’ if you may, that lays open the canvas for the whole dining experience ahead. A grandeur of Greek Architecture American architect, Shawn Sullivan, brought the AMARA hotel to life through Mediterranean inspirations, scaling traditional proportions to create a contemporary, luxury resort.

hawn Sullivan is a Partner at Rockwell Group, a multi-hyphenate architecture and design studio based in New York City with satellite offices in Los Angeles and Madrid. Specializing in a wide array of work from luxury hospitality, cultural to educational, product, and set design, Rockwell Group has established a global footprint and continues to debut projects across the globe, from New York, Miami and Las Vegas to Toronto, Barcelona, Madrid, and Tokyo. Sullivan is also responsible for renowned projects such as the The New York EDITION, the world's first Nobu Hotel in Las Vegas, Belvedere Hotel in Mykonos, OMNIA Dayclubs and Nightclubs globally, and Wayan restaurant in New York City. Crafting a unique and individual narrative for each project is fundamental to his firm's design approach.

Situated in the ancient area of Amathus, AMARA resembles the history of the beautiful island of Cyprus, leveraging locally sourced materials such as local Cypriot limestone. Natural sculptural forms made of white stone and marble define the hotel, and elements of wood furnishings, fittings of rope, ceramics, and limestone reflect AMARA’s intricate heritage. From the public spaces like the lobby, to the rooms, the restaurants, and the broad steps that lead to the beach, the hotel’s design blends a modern aesthetic with monolithic forms, revealing a grandeur of Classical Greek architecture; age-old olive trees, open courtyard-like exteriors, landmark infinity pools and rich palm trees. Using solar and wind power, Sullivan embraces a sustainable design approach that protects the history of the island and combines a narrative with an artful function.

Narrating the experience

Rockwell Group designed open public spaces that enhance the AMARA's connection to the outdoor environment. Upon entry, guests are greeted by unobstructed views of the ocean. The central lounge and lobby are inspired by the concept of an 'iliakos', a center courtyard that defined the residential architecture of traditional Cypriot houses. Sullivan framed this 'iliakos' with wood beam ceilings and floor-toceiling windows that flood the space with light. The lounge then leads to a sun-kissed outdoor terrace. The fine dining room’s palette is warm, with notes of walnut, blue marble wall pilasters and light fixtures made of thin marble petals. The allday dining area features woven room dividers that extend outdoors, as well as lanterns and a parquet floor.

The hotel encompasses three magnificent, gourmet restaurants that make AMARA the signature dining spot of the island. AMARA’s location is celebrated through the ‘Armyra’ by Papaioannou restaurant located only a step away from the azure, clear waters. Adding a clean feel, the seafood restaurant is filled with elements of Cycladic Greek architecture and features an open bar and fresh fish display. The hotel’s sophisticated atmosphere is expressed through the impressive ‘NOBU Matsuhisa,' where elements have been carefully chosen to reflect chef Nobu’s roots, combining Japanese and Peruvian cuisine, encompassing a design as artful and as sensitive as the cuisine itself.

The Michelin-starred Chef Giorgio Locatelli placed his own signature Italian restaurant ‘Ristorante Locatelli’ on the second level of the hotel, encompassing traditional wood burning stoves and an exterior dining area with panoramic sea views where guests can enjoy delectable Italian dishes that take their senses all the way to coastal Italy. The hotel’s 207 rooms and suites placed along 11 floors all feature spectacular 180-degree views of the Mediterranean Sea, white walls, sculptural limestone bathtubs and floor-to-ceiling windows that welcome an abundance of natural light. Rockwell used soft tones to resemble the beach’s golden sand, with touches of teal and blue colours that are expressive of the Mediterranean, designed to offer a sense of tranquility for all guests staying at the hotel. Last but not least, the hotel’s ballroom is as magnificent as expected. Embracing an abstractive sense of Greek design, the room features a spiral, sculptural staircase that descends from the lobby. Glass windows provide access to its lush gardens, extending and adding dimension to the function space. The architect accentuated the craftmanship of the island through a custom-made rug with patchwork patterns and woven seat linings that beautifully wrap the ballroom. The linear, horizontal outlines of the hotel are rooted in the hotel’s name, the ancient Greek word ‘Amarantos’, meaning that something is eternal, just like the hotel’s endless view of the horizon. Inspired to blend and blur the lines between indoor and outdoor experiences, the Rockwell Group along with SB Architects and Wilson Associates Interiors brought forward mesmerizing colours and textures that align with the cultural heritage of Cyprus.

Pastry Chef Chariklia Prokopiou hones her baking skills alongside Andrew Gravett of The Langham Hotel in London, and brings some sweet new tips and tricks back to the Elysium.

T

he Elysium proudly invests in its people through training and education programs, in order to ensure that all staff members remain abreast of the trends of the hospitality industry, and continue to offer guests world-class service. In the Summer of 2019, Pastry Chef Chariklia Prokopiou had the opportunity to attend a training session with the renowned Andrew Gravett, Executive Pastry Chef of London’s five star hotel, The Langham. The Langham, an imposing, Victorian castle-esque building is considered to be the first ‘grand hotel,’ in Europe – and the birthplace of English afternoon tea. With marble floors and high ceilings, some of the best dining establishments of the city, and 150 years of stellar service, it was certainly the right place for Chariklia to pick up some new skills to bring back to the five-star Elysium in Paphos. Working side-by-side with Gravett’s team of 16 pastry chefs over a weeklong period, Chariklia participated in the preparation of room service pastries, afternoon tea, plated a la carte desserts, and a myriad of other delectable delights. “It was my first experience working in another five star hotel,” says Chariklia of her time spent in London, “and it really broadened my horizons and fueled my ideas. I learned how to add savory ingredients, such as saffron, to plated desserts, and how to create themed events around your dessert and tea offerings.”

For Chariklia, it was also an opportunity to discover a new cultural experience and work under a different management style. “There was an openness to ideas and creativity in ingredients that I had never seen before, as well a chance to work with new equipment, all of which I am excited to bring to the new pastry kitchens at the Elysium! The most fun part of this trip for me was the opportunity to see and sample so many different kinds of desserts and pastries, not just at The Langham, but all around London, including the launch of Valrhona Chocolate’s new flavor range. It was delicious – to say the least!”

Klaudios The artist – citizen of the world - who rebels against the idea of repetition and confinement.

By Yiota Louca Beautifully lyrical and expressive, his work presents the elements of identity and fragmented human figures, a concept of looking through the paradoxes of human relationships. His work has been displayed in Stademos Hotels for years now, and the painter humbly and proudly describes these as anthropocentric pieces – ‘hosted in places where man is the center of the space.’ His displayed work in the hotel, therefore, mirrors the theme of relationships and intimacy between people of different groups around the world that find each other within the same space. Citizens of the world that come together in a most hospitable and idyllic environment that are the Stademos Hotels.

His work has been displayed in Stademos Hotels for years now, and the painter humbly and proudly describes these as anthropocentric pieces.

K

laudios, with over 35 years of creative career in Germany, America, Athens and France, lives and works in Limassol, Cyprus. The art of painting took over him from the age of 13 when Klaudios discovered his great passion for creation and expression.

He encompasses an artistic fantasy that directs stories which he then lays beautifully on his canvas. All of Klaudio's works are made of silk canvas and wood. ‘My central philosophy is, and always has been, human relationships. For me, man is an eternal, endless source of inspiration,' the painter states while emphasizing how a painter’s work is always expressed as seen through his own eyes and perspective.
