This is the only project in the global practice when hotel is operating under the State Museum license. Executive Chef presents signature cuisine based on Russian Imperial recipes St. Petersburg Imperial Porcelain Manufactory which used to be an official supplier to the Romanoff dynasty, supply the Hotel with a selection of table setting which adds a huge impact on the feel of the table The Hotel doormen’s uniform is the exact replica of the Russian Imperial family butlers.
The idea behind the Hotel’s interior design was to create a special atmosphere of Imperial magnificence. It was beautifully employed by the designers who carefully developed pieces of furniture and interior decoration.
Every piece of the Hotel’s interior design is either a replica or a reference to the Winter Palace interiors. The concept of the collaboration between the Hotel and Museum is to expand the guests’ museum experience to the real living practice - a unique opportunity to continue their art journey and spend a real time in the imperial environment while they are at the hotel. This is a unique collaboration between the world-famous museum brand and a luxury hotel. The Hotel is perfectly well located in the city historical centre – Dostoevsky district - which is well described in Dostoevsky novels back in the 19 century. Vladimirsky Cathedral, Museum of Dostoevsky and Nevsky prospect (the main and the most famous street with luxury shops and stores) are in walking distance from the hotel. How did your career start? Tell us a bit about your personal journey and name 5 professional highlights up to this point in your career? My pre-hospitality career was far from a luxury segment, though it was about serving peoples needs. I dealt with the city utilities and managed the technical system as a whole. My journey to the hospitality industry was however not a coincidence but a combination of circumstances. My ambition to make a Great Russian project and bring it to the highest possible level – was both a challenge and an inspiration. How do you feel about hosting the World Luxury Spa & Restaurant Awards Gala Ceremony in St. Petersburg, Russia? Please name 5 sites or experiences you will recommend to foreign event attendees, visiting for the first time. We are privileged to host the Gala Ceremony in St. Petersburg. Our city is one of the most desirable destinations in the world and it is a real jewel in the Russian crown of attractions and landmarks. We’ll be happy to welcome the nominees at our hotel and showcase the famous Russian hospitality to each and everyone. It’s obvious that visiting the Hermitage museum is a must number one. Russian ballet takes number two. Luxury royal palaces in the suburbs of St. Petersburg including Peterhof with its absolutely spectacular and gorgeous fountains are definitely worth visiting, especially in the summer time. St. Petersburg will exceed the most demanding expectation of guests and tourists. I can’t wait to welcome the attendees of the Gala event to show them around my lovely St. Petersburg. What makes the Official Hermitage Museum Hotel unique from other hotels in Russia? The concept of collaboration between the Hotel and the State Hermitage Museum is unique. We are the first hotel in the world who have introduced the idea and implemented it perfectly well. Furthermore, we are the only luxury hotel in Russia that is managed and owned by a local Russian company. We are proud to say that this project is highly recognised and rewarded by the global hospitality community: three World Luxury Hotel Awards are a testament to the exceptional service and hospitality.

The main challenge is about human nature. We deal with so many people and their needs, wishes and demands. We do our best to meet all their expectations and exceed them. Working for people is a challenge on the one hand, but it’s a privilege and a great reward on the other. Can you share any future developments or goals that the Official Hermitage Museum hotel family has planned for the future? Our principal plan includes the wider expansion of the branded hotel concept. In your opinion, what are the essential characteristics that a great MD must possess? I believe that leadership, commitment and a welcoming attitude are the initial and essential characteristics that help a great MD build a profitable and yet enjoyable business. Please name a recent travel experience that you have enjoyed as well as other hotel and travel trends that you find interesting? My recent travel which I enjoyed a lot was at the Royal Hotel Sanremo, Italy. The most magnificent feeling I experienced was that for every single minute of my stay, I felt like I was in Italy. Each and every item, sound, touch and view was designed specifically to make their guests feel like they were in Sanremo, Italy. I never felt like this anywhere else in the world, and this is the experience I want to repeat. This is the place I want to return to. This is exactly what I travel for. And this is what we do here at the Official State Hermitage hotel in St. Petersburg: Our guests share their confession with us that they truly feel they are in St. Petersburg. Interior decoration, communication style, taste and sounds, surroundings and location – everything speaks in a very St. Petersburg style and works to create a very special atmosphere. We believe that our guests come to St. Petersburg and while they are here – they ARE in St. Petersburg. 19

Where did you start your career and how did you progress to Food & Beverage Manager?
How do you motivate your staff and keep them inspired?
I began working in the hospitality industry in 2012 at a resort hotel in Turkey. Upon my return to Russia in 2014, I was invited to join the Food & Beverage team at the recently opened Official Hermitage Museum Hotel. In 2016 I was appointed as a head waiter at Michelangelo, the Hotel’s Italian restaurant, and one year later I was promoted to the position of F&B Supervisor. I believe that my career in hospitality business is in the process of constant development and that there is no limit to its trajectory.
F&B service is a form of art that inspires. We aim to provide opportunities for our staff to develop further, including amongst others: training, master-classes and tastings, quests and professional shows. All of these avenues assist our staff to grow professionally.
What is/are your favourite cuisine(s) to enjoy with family and friends? I love tasty food that is also simple. It therefore should come as no surprise that I am a big fan of Italian and Georgian cuisine, as well as home cooked meals. How do you feel about catering for the World Luxury Spa & Restaurant Awards Gala Ceremony and your team hosting the leaders of the related industries? We are extremely excited to host the Gala Ceremony for the World Luxury Spa & Restaurant Awards. It is going to be a true test of the F&B’s service abilities. Furthermore, we are especially delighted to meet our colleagues from around the world and share not only best practices and ideas, but our collective experiences as well.
Your hotel has a selection of dining options and a spectacular bar: what makes each venue experience special? Our chief restaurant, Catherine the Great offers fine dining in the Imperial Interior. It is particularly popular amongst our guests who love its elegant style and makes them feel as if they are in the Royal residence. Another of our restaurants, Michelangelo, offers a comfortable home-like atmosphere. Terrace on the 8th floor is a unique space providing a breathtaking view over the famous St. Petersburg roofs, whilst the Lobby bar boasts a great selection of rare books and is designed as a library that offers privacy. Where did you start your career and how did you progress to Food & Beverage Manager? My career started in 2011 when I worked as a modest waiter at Hyatt Hotel in Moscow. In 2014 I joined the F&B team at the Official Hermitage Museum Hotel. I believe my leadership and commitment led to my advancement to the F&B supervising position I currently occupy. What is/are your favourite cuisine(s) to enjoy with family and friends? My favorite cuisine is Georgian (Russian Caucuses). The delicious and unique Georgian cuisine is famous in every corner of the world now and I believe that their passion for sauces, fresh veggies, herbs and spices make Georgian meals especially tasty. This is exactly what I love. So, when I take my family or friends out, we go to a Georgian restaurant. How do you feel about catering for the World Luxury Spa & Restaurant Awards Gala Ceremony and your team hosting the leaders of the related industries? I cannot agree more with the sentiments expressed by my colleague. It’s a privilege to welcome the world’s top professionals from around the globe to our Hotel. It is going to be a unique opportunity for us to share best practices with each other, as well as for us to provide our guests the opportunity to experience and taste Russian hospitality.

Where did you start your career and how did you progress to your position as Executive Chef? My professional career began at Viking River Cruises, one of the largest cruising companies in Russia. I worked there as a sous chef with an international team of chefs from Canada, Austria and Germany. Later on I was enhancing my skills and expertise working at restaurants with a focus on Russian traditional meals. Thereafter I became an Executive Chef, my specialty being a modern translation of the traditional Russian cuisine. I also continued working and collaborating with international chefs, namely French, to advance my practical skills. My best friend, Nikolay Khvalynsky invited me to join him at the recently opened Official Hermitage Museum Hotel in St. Petersburg. This was a stepping stone for my further development in contemporary cooking art, and a few years later I was appointed an Executive Chef at this luxury Hotel.

Since my background lay in catering, I am able to cook anything. When I am with my family I’d rather cook pan-Asian, French or Italian meals. If it is a picnic with my friends, I will likely cook Russian Caucuses traditional dishes. When at home, I normally cook something from the Italian menu. Both Russian Caucuses and Italian cuisine are easy to cook and eat at home, if you like. What is your beverage of choice to relax at leisure? I believe that every drink requires a specific environment and occasion. For example: Ale goes down perfectly at a barbecue with friends; A home party accompanied by Italian snacks pairs great with Chianti. How to you feel about catering for the World Luxury Spa & Restaurant Awards Gala Ceremony and your team hosting the leaders for the related industries? I am honored and thrilled to participate in the Gala Ceremony. We can’t wait to welcome the guests and serve the best available Russian meals. I can assure you that we will do our best to impress the audience as well.
Please tell us more about your inspiration for the menu for this international event? I am willing to cook the best samples of the Russian Imperial cuisine. Our Catherine the Great restaurant offers a fine dining experience, for which we re-construct and re-consider the Russian Imperial cuisine. It’s sort of our interpretation of Imperial and Contemporary Russian cuisine. How do you motivate your staff and keep them inspired? Cooking is a very enjoyable and creative process. My staff and I are one team. My staff appreciates if I take their new ideas and reward their creative approach when preparing a special menu or new season entries. I ensure that they I always provide them with an environment in which they can feel happy and that boosts their moral. It’s always aspirational giving them no limits when it comes to their everyday work. Please name the top 5 restaurants in the world that you would like to visit and experience? I would like to visit Alinea restaurant (Grant Achatz) famous for its creative serve of dishes, mix of products, tastes and techniques.

How did your career start? Tell us a bit about your personal journey and name 5 professional highlights up to this point in your life? My professional journey started when I was only 16. My first job was at a large-scale agriculture company near St. Petersburg. During my 12 years working for the farm I had taken different job positions - from Personal Assistant, HR Specialist, Expeditor and many others through to the Commercial Director position. This was an extraordinary journey which helped me to see a wider picture from inside – how the business worked as a whole. Step-by-step I significantly grew mentally, emotionally and financially. I learned how to effectively adapt to changing circumstances and environments. Simultaneously I studied Economics at the local university. In 2007 together with a Finnish businesses, I organised a big festival “Eat & Joy 2007” in St. Petersburg. It was a fantastic opportunity to get to know the hospitality and restaurant industry from the inside. This completely changed my professional route, and I have been working in the spa industry ever since, going on more than 15 years now. What sets your spa apart from other luxury spas? What makes it special? Our SPA is designed to deliver a customized approach and therefore comfortably accommodates up to 10 people at a time. Bespoke design featuring Russian Matryoshka dolls, a harmonious atmosphere of relaxation and a selection of personalized treatments attract sophisticated and demanding guests. How do you feel about hosting the World Luxury Spa & Restaurant Awards Gala Ceremony? And does winning an award for service excellence change guests perception in your opinion? We are excited about hosting the World Luxury Spa & Restaurant Awards. All the guests and participants will be overwhelmed with the beauty and elegance, hospitality and friendly atmosphere of St. Petersburg. We shall be happy to welcome the nominees at our hotel and showcase the famous Russian hospitality. I truly believe that winning an award for service excellence attracts the attention of global travelers. It does change the guests perception since the expectations and demands could be exaggerated. And this definitely helps the winners to grow further in order to exceed the guests’ expectations and keep up service excellence. What do travellers typically demand from a luxury spa? How do you ensure that you are able to meet these expectations? Our guests appreciate a personal approach, private accommodation and a selection of luxury treatments. We are here to provide all these and beyond.

Our latest introduction is a Full Day Luxury Spa. Our experts developed signature treatment programs, including Axe Stone therapy. What are the main challenges that you and your team are facing and how are you tackling them? The main challenge for us is to fit the guests’ requests with the Spa schedule. As a rule we extend the Spa working hours to supply all the guests wishing to enjoy our Spa facilities. What are the best ways to motivate and build spa therapists & staff members? How do you reward and motivate your team? We practice pecuniary and non-pecuniary benefits including access to career development programs for our staff. 33
Please name a recent travel experience that you have enjoyed as well as other spa trends that you find interesting. My recent travel experience was at Bali, where I stayed at Viceroy Bali. The service at the hotel and spa was extraordinary. I enjoyed every item of their spa signature treatment menu. Your spa has a vast amount of treatments as well as facilities. What treatment do you personally enjoy at your spa? Thank you! I do enjoy a lot of treatments at our spa, but my favorites are: Lipo draining set of treatments for 2 hours. It includes massage and detox wrapping. Another must treatment for me is the DETOX LUXURY SPA day which affords me a full day of devotion to self-pampering care. Within only a few hours of special treatments at our Spa I feel as if I have had a complete vacation. Please reveal your personal health and beauty tips that you have developed and learned throughout the years? Something that women can implement in their daily routine? • Smile • A glass of water with honey and lemon to start a new day • Hay diet • Fitness (squash) • Spending time in nature • Meeting friends

Anastasia is a professional master of ceremonies and a TV presenter in St. Petersburg. Her professional portfolio includes conducting ceremonies and events for local and international audience. Her excellent sense of humor, charm and charisma makes her a friendly host of many events and functions which she has been running for over 10 years. Anastasia’s background is in History of World cultures, her nature is communications. Anastasia is an actress and a screenwriter. She has been starring at World Cup 2018 and Sochi Olympics 2014. She is perfect when it comes to improvisation and audience engagement. 36
Timofey has been successfully doing events for over 14 years. He designs, runs and conducts events of different formats and forms. Timofey is a TV presenter in demand, and he has been dealing with international audience. Timofey’s background is in music and creativity. Thanks to his mother - an opera singer – he spent his early years in theatre and learnt to play guitar. Timofey used to be an MTV presenter and developed his signature style of performing. 37
