LADY ARPELS FÉERIE ROUGE TIMEPIECE Fairies have always been a source of fascination for Van Cleef & Arpels and are the main representations of femininity to be found among the Maison’s creations. Six years aer launching the Fairy Poetic Complication™ timepiece, Van Cleef & Arpels celebrates once again the poetry of fairies with the Lady Arpels Féerie Rouge timepiece. It is a new, elegant interpretation of the Féerie story. The ruby red color of the dial invites us into a new world of enchantment. A fairy indicates the passing hours with her magic wand and the minutes with her fluering wings, perpetuating the tradition of legends and fairies dear to the Maison. The art of “guillochage” is one of the traditional cras of watchmaking. Dating from the 16th century, it consists in engraving a dial with a paern of intersecting lines to provide vitality and depth. The art of engraving consists in creating a given form from a block of material and giving it life. It all starts with a gold plate, on which the crasman traces the outline of the motif. The threedimensional work may then begin: cuing and polishing the metal, emphasizing the lines of a drawing or reproducing a texture.

This cra - which is carried out by hand - calls for traditional tools which are usually produced by the engraver himself, according to his needs. The quality of an engraver is measured not only by his technical prowess, but also by his ability to bring his material to life and instill his creations with all the poetry of the story he wishes to tell. The Lady Arpels Féerie Rouge features a swiss mechanical movement based on a JaegerLeCoultre 846 movement with a retrograde module developed exclusively for Van Cleef & Arpels. On displays known as “retrograde”, the hands and the wings trace an arc before returning instantly to their initial position in order to begin another journey. LUXURY FOODS THE HISTORY OF FOIE GRAS Literally translated from French, foie gras means "fat liver," but its origins date back far before French cooking made it a delicacy. The ancient Egyptians hunted and then domesticated geese, and discovered that waterfowl developed large, fay livers aer eating large amounts in preparation for migration. To replicate this naturally occurring large liver, the Egyptians, over 4000 years ago, developed the technique now known as gavage to produce a faier bird. Colorful relief paintings found on the tombs of aristocratic Egyptians depict the hand-feeding of geese, which served as an important source of nutrition around the Nile region. The practice of gavage spread throughout the Mediterranean, and was adopted by the Greeks and then the Romans, the laer of whom made foie gras into a delicacy in its own right. As Rome expanded territorially, its gastronomic influence also expanded, turning foie gras into a food enjoyed by gourmands, who faened their ducks explicitly for the purposes of its production. Aer the fall of Rome, and during the medieval period, it was the Jewish population who kept the tradition of foie gras alive. Goose meat served as an excellent source of nutrition and the animal also provided cooking fat that conformed to Jewish law. Wherever Jews moved across Europe during the Middle Ages, they brought with them the tradition of goose faening. During the late sixteenth-century Renaissance, classical texts and cookbooks were revisited, and interest in foie gras was once again piqued. In France, Louis XIV, a gourmand, enjoyed haute cuisine, but his tastes began to trickle down to the aspirations of the French middle class. Aer the French Revolution, with centuries of food admiration so deeply etched into their culture, the bourgeois became the new consumers of cuisine, and they began to frequent a new establishment known as the restaurant. Chefs who had lost their aristocratic

patrons cooked instead for Parisian middle class society. Foie gras became popularized in the United States in the late nineteenth century as Americans brought a love of the food back with them from travels in Europe. It was not until the laer part of the twentieth century, however, that American farmers began to produce foie gras here in the U.S. The majority of foie gras consumed by Americans now comes from small North American farms. Demand for foie gras has grown, prompting chefs across the country to add the item to their menus. And though it has enjoyed a long history, foie gras is still produced using the traditional methods passed down by generations – by hand, and with care and aention that small, artisan farmers give to their ducks. PUTTING THE FUN INTO FINE DINING, NEW YORK-STYLE If the recipe for an outstanding restaurant is creating the perfect balance between great food and impeccable service, then Eleven Madison Park co-owners Daniel Humm and Will Guidara have hit the jackpot. The pair believe in running the restaurant from both sides of the wall – the kitchen and the dining room – and the combination of chef Humm’s talent with Guidara’s front-ofhouse charisma makes for an unforgeable experience. Despite dazzlingly white tablecloths and a grand, high-ceiling dining room, there is not a hint of stuffiness here. Dishes are playful and oen interactive – the ‘Name That Milk’ dessert comes as an ornate wooden box containing four bars of specially commissioned Mast Brothers chocolate, some pencils and a card with four animal

drawings. Diners must taste each bar to determine which belongs to which animal: cow’s milk, sheep’s, goat’s or buffalo’s. Humm’s tasting menu focuses on New York’s rich agricultural bounty, but dishes are frequently adapted and tailored specifically for guests, who are each painstakingly researched by Guidara’s team to create the perfect bespoke experience. The duo met a decade ago, brought together by legendary restaurateur Danny Meyer, from whom they bought Eleven Madison Park in 2011. Case The bezel, caseband and case back of the RM 0702 are made from solid blocks of Pink Sapphire. Sapphire is known as a particularly scratchresistant material with a hardness of 1800 Vickers. Created from crystals of aluminum oxide (Al2O3), its transparency is a result of the purity of composition. Creating a case of this quality took over 40 days of machining, including 430 hours spent pre-forming the case components and 350 hours polishing the caseband/ bezel/case back ensemble. Gems rotor with variable geometry Heavy external outside edge and heavy edge ring in 5N red gold - Ceramic ball bearing This rotor with variable geometry enables winding to be adjusted to the owner’s activity level. Adjusting the two weights, which can be slid sideways into the correct position and fixed in place by spline screws, modifies the seing. Inertia of the movement is optimal when the two weights are closer to each other, and the barrel rewinds more quickly. If the weights are positioned at either end of the rotor, the inertia is considerably reduced, resulting in the barrel winding more slowly. Free sprung balance with variable inertia This type of balance wheel represents the ultimate in innovation. It guarantees greater reliability when subjected to shocks and also during movement assembly and disassembly, hence beer chronometric results over time.
