DENMARK A WELCOMING COUNTRY Many of Denmark’s guests have one “experience” they all agree is a true treasure: The people they meet; the Danes. Their easy-going, yet efficient, open-minded, yet respectful manner has made the Danes themselves an attraction. The Danes tend to travel a lot themselves so they know the importance of a warm welcome. Don‘t be afraid to ask for directions – you’ll probably end up having a nice chat with the locals. Denmark welcomes you to its shores, in its historic towns, cosy villages and picturesque landscapes: Explore the blue waters and the green hills, enjoy the regal splendour of castles, the pretty hollyhocks, and get to know these friendly people. From any port along the Danish coastline, you’re always within easy access to any sight or experience you feel like exploring – inland included. Denmark is a safe, tiny country with a great history, and a country that offers true variety: Be amazed by world-class art or striking, unique natural phenomenons, browse the latest trends in elegant shops, experience the famous Nordic gastronomic kitchen and explore Denmark’s modern take on architecture, arts and design.
CLASSIC DANISH DESIGN Danish Design is legendary: U.S. President John F. Kennedy was famously photographed sitting in the iconic chair ”The Chair” - by Danish designer Hans J. Wegner. When President Obama visited Copenhagen, he asked for that very same chair. Other Design legends include Arne Jacobsen, Kaare Klint and of course world famous architect Jørn Utzon, who designed the Sydney Opera House. Today, contemporary Danish Design is sparkling and cutting edge: Architect Bjarke Ingels (BIG) has won a string of prestigious awards with his rounded, modern architecture and Danish designers of furniture, fashion and jewellery are forever winning awards and international fame. Find unique design items in flagship stores, see the award winning buildings, design museums and much more throughout Denmark. Classic and groundbreaking, great beauty, excellent materials: All exquisitely done – and it’s everywhere you look. P. 4 Showing the way
DID YOU KNOW? Fun facts about Denmark: • Queen Margrethe II is lovingly called “Daisy” by her husband, family, and friends. She is named after her grandmother, British Princess Margaret, later Swedish Queen. The French name Marguerite means Daisy. • Hollywood has its own Danish flavours: Stars Viggo Mortensen and Connie Nielsen are Danish – and so is Scarlett Johansson’s father. • Danish gastronomy is thriving, with 15 Michelin starred restaurants: noma ★★ Restaurant Geranium ★★ Den Røde Cottage ★ Formel B ★ Grønbech & Churchill ★ Kadeau ★ Kiin Kiin ★ Kokkeriet ★ Restaurant AOC ★ Restaurant Era Ora ★ Søllerød Kro ★ Marchal ★ Clou ★ Studio ★ Relæ ★ • Football (Soccer) is Denmark’s national sport. Denmark boasts an impressive roster of world famous players, among these are legendary Michael Laudrup (former player for F.C. Barcelona and Real Madrid) and Peter Schmeichel (former Manchester United). • Denmark is a pioneering country when it comes to ecology, organic food and environmental issues. Denmark is clean, fresh and green – and there are plenty of opportunities to explore this: Take a stroll through a green town centre, enjoy the green areas, one of the many parks, taste the local and fresh produce or bathe in the clean water – yes, the water is even clean by the city waterfront. • Denmark has always been first movers on large scale environmental projects, e.g. The Danish windmill energy giant, VESTAS. On a smaller scale you’ll find Danes making everyday choices, starting everyday initiatives: e.g. public organic, urban gardens, rooftop gardens,, and thousands of Danes are bicycling to work everyday. Denmark has plenty of green areas in the cities, clean water in the tap, and along the entire 7314 km coastline. Denmark is green refreshingly green.

ROENNE BORNHOLM VIKINGS, CRUSADERS, GLASS-BLOWERS UNIQUE NATURE & COSY ATMOSPHERE
MUST SEES
For over 1.000 years, this idyllic and picturesque island has been in the crosshairs of Baltic history. Bornholm has been a home port for the Vikings, a temptation for pirates, and a gathering station for Christian crusaders. Today, the island enjoys its reputation as probably the most beautiful spot in Denmark, which has helped it become a haven for glassblowers and ceramic artists. But peaceful as it may be, the dramatic and colourful history of the Baltic is always present on this small island, which is brimming with stunning ruins, artefacts and buildings. In a short day you can visit the crusaders’ huge medieval castle perched on a rock high above the sea; see unique round churches that doubled as defensive fortifications against Baltic pirates; admire stunning rock carvings from the stone age; and ponder the significance of the many eerily beautiful bauta stones. Add to that charming small fishing villages that have been here for more than a millennium. Together these amazing places form a rich tapestry of the region’s history and serve as a perfect introduction to the sights that await on your Baltic cruise. On Bornholm you also have the possibility to experience a duel of world class gastronomy when international Michelin chefs compete in the competition “Sun above Gudhjem” in June. Meet star chefs at inspiration seep out to the spectators and food lovers.
Medieval Castle Hammershus is a sight to behold: A huge, dramatically situated castle ruin that was used by Christian crusaders in the 13th century. Round Churches Rumoured to be built by the Knight Templars, these unique and beautiful churches doubled as strong fortifications against pirates. Picturesque villages Perched on the rocks above the Baltic Sea, the historic and picturesque artists’ villages of Gudhjem and Svaneke are perfect for strolling and shopping. Gourmet Bornholm More than a few of the treasured ingredients in the New Nordic kitchen hail from Bornholm. Savour herring from the historic smoke houses, and sample not just artisanal food, but also homemade liquorice and caramels for connoisseurs. Arts & Crafts The light of the Baltic sea inspire many artists and craftsmen. Trace Bornholm’s beauty in the art and craft at e.g. Groenbechs Gaard, Hasle.

CLAUS MEYER A GASTRONOMIC ENTREPRENEUR Claus Meyer is a gastronomic entrepreneur, who perhaps is most famous for his role as the originator of Noma and the Nordic cuisine. Claus Meyer is the kind of man who willingly welcomes a new challenge and today he is the man and initiator of 13 companies and an equal amount of projects. Text: WorldPerfect
THE WELCOMING EMBRACE OF FRANCE Claus Meyer grew up on the island of Lolland. His childhood was marked by his parents unhappy marriage, a marriage which later ended in a divorce. Throughout his teen years, love and appreciation were not easy to come by at home and the meals were not worth writing about. But as it would turn out food would end up becoming his faithful companion and destiny. At the age of 19 he went to France as an au pair. Here he ended up in the house of a French pastry-couple in Gascony, Guy Sverzut and his wife, who welcomed him with open arms, warm croissants and the love of cooking. "The stay at Guy and Elizabeth provided me with the sensation that the food culture of a society is also a reflection of the state of the society in general. It also made me believe that you can utilize food to improve the world”, he says.
BRINGING GOOD TASTE BACK HOME With this in the back of his head, he returns home from France determined to pass on his newfound love and passion for food and flavor to the Danes. Meyer is a person, who likes to do something for the benefit of others, something he has practiced since his return 30 years ago, and almost all Danes know the phenomenon Claus Meyer. He has done everything from television programming, cookbooks, restaurants, projects with inmates and lately a project in Bolivia, including a restaurant, cooking school and a bakery by the name of Gustu in order to breathe new life into Bolivian cuisine, while at the same time educating socially disadvantaged youths, so they could have a possible future working in a kitchen. "I've already got far more back in Bolivia, than I have given. I'm really feeling an urge to help a whole lot more", he says. It is undeniable that Claus Meyer is a hard man to beat, when it comes to the gastronomical wonderland. He is currently working on plans for a new Nordic food court in none other than New York's P. 16 Showing the way
Vanderbilt Hall. A 1400 square meter location in none other than The Grand Central Station, which in the future will smell of good taste, quality and proper ingredients. "The scents and flavors have to be new to the Americans. The raw materials must come from local North American suppliers, and the whole idea behind the Nordic Cuisine is that it should be able to take root in the land of opportunities", he says.
THE NORDIC MANIFESTO The Nordic Cuisine Manifesto, which Claus Meyer wrote in collaboration with Jan Kragh Jacobsen, speaks in favor of good taste and health, the act of cooking with raw materials that are fresh and in season, and to promote a sustainable production. Hundreds of restaurants in Denmark alone have adapted the ideology and it is now quite common for young chefs to be socially conscious. Today, there are chefs all over the world, who look up to the adventurous Nordic Cuisine as a source of inspiration. "If it can be done in Scandinavia, it is very likely that a similar change can be made in other regions for the benefit and well being of all, so I’m optimistic. I’m convinced that in the coming years, a generation of young people will grow up helping each other with creating a more equal world, a generation to whom it feels natural that good health, sustainability and taste go hand in hand", he says.
A TASTE OF THE NORDIC CUISINE If you want to experience Meyers universe when visiting Copenhagen, you won’t have to look far. With food houses, bakeries and restaurants scattered across the city, you can quickly get a taste of it all, along with a view into the mindset of the Nordic Cuisine. Meyer also recommends visiting places such as Kødbyen (Meatpacking District), Aamand, La Glace, Informal and others, all of which will provide you with an experience of the Nordic taste.
