No, it’s not your imagination: Everything bagel flavors have been popping up everywhere. That particular mix of onion, poppy seeds, and sesame seeds is hard to resist, especially when tossed into a cozy breakfast bake topped with gooey cheddar and crispy bacon.
Cooking spray 2 large shallots, thinly sliced 6 oz baby spinach 6 large eggs 1¼ cups low-fat milk 1 tsp dry mustard ½ tsp salt ½ tsp black pepper 8 everything bagel thins, cut into 1-inch pieces 3 oz low-fat sharp white cheddar or
Colby cheese, shredded 4 slices center-cut bacon, cooked and coarsely crumbled 1 tbsp everything bagel seasoning, for garnish (optional)
1. Coat a large nonstick skillet with cooking spray and heat over medium. Add the shallots and cook until softened, about 3 minutes, stirring occasionally. Gradually add the spinach and cook until wilted, 2 to 3 minutes, stirring often. Remove the pan from heat.
2. Coat a 2-quart baking dish with cooking spray. In a large bowl, whisk the eggs, milk, mustard, salt, and black pepper. Arrange the bagel pieces in the prepared baking dish. Top with the spinach mixture, tucking some of the spinach under the bagel pieces. Sprinkle with the cheese, then the bacon. Pour the egg mixture over the top. Cover with foil and refrigerate for 8 to 12 hours.
3. Preheat the oven to 350°F. Bake the strata, covered with foil, for 30 minutes. Uncover and continue to bake until the strata is set and lightly browned, 20 to 25 minutes. Garnish with the everything bagel seasoning (if using). Cut into 6 pieces.
