PRESIDENTS MESSAGE So with the Olympics over is it back to business as usual? Not a chance! We at the BCRFA have a number of things on our plate to tackle, the least of which is continuing our discussions with the Provincial Government to find ways to minimize the effect of HST on our sector. While it is apparent that the government will not be backing down from the HST they are demonstrating a willingness to work with our industry. Naturally our first preference would be no HST on restaurant meals, but barring this we will continue to work with this government to achieve the best resolution possible for all of industry. And finally with summer just around the corner, and visions of patios, new wine lists, and perhaps some pre-season renovations, we have dedicated this issue of the BC Restaurant News to our suppliers. Within these pages we have assembled a resource guide of those suppliers key to your success. I urge you to support these suppliers of industry in recognition of their support of you and your business. The need to ensure a strong trade organization is more important than ever and I thank those thousand of restaurants and suppliers for recognizing that.

10 BEST HIRING PRACTICES 1. How you word your ad and where you post it is important. A little research about where the kind of people you want to hire look for job postings will pay off. 2. Write down the questions you will ask in interviews in advance. Ask each applicant the same questions. Ask questions designed to draw out information about knowledge and skills. Avoid asking personal questions. 3. Ask applicants to show you their skills –have an applicant for cook prepare you a simple dish. Have an applicant for server wait on a table consisting of your friends or other staff and watch how they handle various requests. 4. Always check references 5. Always ask the reference “if you had the opportunity to rehire this person, would

you?” If the answer is no, maybe you shouldn’t hire them either. Sometimes past employers believe they can’t give truthful references, but this question usually gets a truthful answer 6. Spend time on orientation and training. If you don’t show new employees how you expect tasks to be done and the standard to meet, you can’t complaint when the tasks aren’t done and the standards not met. 7. Monitor new employees closely, especially for the first 3 months. If an employee works for more than three months, you’ll have to give notice or pay compensation if you decide they won’t do.

Great recipies make for winning menu’s. Winning menu’s with a nice atmosphere makes an excellent restaurant. To make this happen, restaurants need to use lots of water, heat and light, which can create costly energy bills each month. Energy efficiency can substantially reduce any restaurant’s energy costs and improve the bottom line as well as provide a comfortable working and dining environment for staff and customers. To create an energy-efficient restaurant, we have concocted a delicious energy-efficient recipe - here are top 5 ingredients and simple instructions to follow along with: Top 5 Energy Efficient Ingredients: 1. Compact fluorescent lamps (CFLs) 2. Efficient pre-rinse spray valves (PRSVs) 3. Energy saver T8 fluorescent tubes 4. Lighting occupancy sensors 5. LED exit signs Instructions: 1. Replace incandescent light bulbs with CFLs in areas where lights are left on for long periods such as the bathroom - CFLs use up to 75 per cent less energy and can last up to 10 years. 2. Install an efficient pre-rinse spray valve and you can save even more on your water heating! Use these valves to rinse your dishes

just as fast as you could with your old, regular spray valves, but you’ll use up to 80 per cent less hot water. Because less water used means less water to heat, a typical restaurant can save anywhere from $400 to $800 in energy costs a year, while larger restaurants can save as much as $1,300. 3. Replace old T12 fluorescent tubes with energy saver T8 fluorescent tubes. T8 tubes are 50 per cent more energy efficient than older models and work well in common spaces such as the kitchen or front foyer. 4. Install lighting occupancy sensors in your bathroom and kitchen closets to ensure the lights go on only when someone is in there, so you stop wasting energy. 5. Replace your incandescent exit sign with an LED exit sign. LED signs use only 10 per cent of the energy old-fashioned incandescent signs do and last anywhere from 10 to 25 years - which means you will save about $12 per sign, per year. You should be aware of the common causes of injuries in restaurants such as: • slips, trips and falls on slippery floors • Cuts from knives and meat slicers • Burns and scalds from stoves, grills and hot liquids • sprains and strains from lifting, pushing and pulling boxes, crates, and other containers Develop a safety plan. Tell your employees what you will do to ensure their safety and tell them what you expect from them to do their part. Make sure your staff has access to a first aid kit. 2. Inspect your workplace Regularly check all equipment and tools to

ensure they are working properly. Also check storage and loadings areas, inside an outside of your restaurant, for possible hazards. Develop and review work procedures. 3. Train your staff Take the time to train your staff. Tell them and show them how you want them to do each task. Providing written instructions and procedures is often a good way to allow your workers to check for themselves if they are unsure or have forgotten what your have told them. Then supervise them to ensure they are doing things properly. 4. Talk regularly to your staff Meet regularly with your staff and include discussions on health and safety issues. Encourage their ideas and thoughts on improving safety along with productivity issues. Make sure to record meeting dates and topics discussed, and follow-up on any concerns raised. 5. Investigate accidents Look into the causes of accidents, even if no one was injured. See if there are ways to

You had catered a large party on the weekend, over 200 people. Everything went well. Your extra supplies were delivered on time. All your staff showed up. The food was great- some of the guests even asked you about catering future events. All in all- a very successful event! Suddenly the phone rings. It’s the health department. Dozens of people are turning up at the local hospital emergency room with stomach cramps, vomiting and diarrhea. And the one thing they all have in common- they were all at the party that you had catered. This could be the beginning of your worst nightmare.

By checking that those critical steps are being done right, the main causes of food poisoning are prevented before they have a chance to happen. This is the basis of your Food Safety Plan. We’re fortunate in BC in that we’ve had the FOODSAFE program for almost 25 years. Over 680,000 people in BC alone have taken FOODSAFE courses since 1986. FOODSAFE Level 1 teaches the basics of food safety in a food service environment- what can cause food to be contaminated and then how to prevent it from happening. FOODSAFE Level 2 is aimed at food service owners, managers and chefs and focuses on managing for food safety, sanitation plans and food safety plans. Unfortunately, this type of scenario happens all too often. We know that every food has the potential to become contaminated- some foods more likely than others. And what we have learned from past foodborne illness outbreaks is that the majority of them are caused by people—that is, one or more people in the food preparation chain did not do their job properly. If a critical step in the food’s preparation is not done correctly, the likelihood that someone will get sick is very high. So how can you prevent this kind of “scenario” from happening to you? The first and most important step is knowledge. Making sure that you and your staff know what can cause food to be contaminated. A good first step is knowing the “Top Ten” list of food handling practices that have caused outbreaks. One of the essentials steps of running a profitable kitchen is having a good purchasing program in place. There are many aspects to smart purchasing, which is why most chains have a department devoted to unearthing the best opportunities that is out there. However, not everyone has the benefit of an entire department, so for the single unit operators , here are the top 10 techniques that will yield the best and quickest results: 1. Forecast what you need. Use your past sales reports and your intuition about upcoming events to know what you will need to buy. Then you can use this knowledge as bargaining power with the sellers. 2. Bulk buy your commodities. Purchase a six or twelve month supply of your high usage products when the market is low – then set up storage and draw from your stockpile to ride out tough seasons.

3. Have your vendors compete. The vendors all want your business so have more than one of them bidding to get it. If they know they need to earn your business, they will work hard for you and get you better pricing. 4. Track your historic purchases. Comparing your purchases year on year can give you invaluable information on where your opportunities lie. 5. Stay true to your word. By signing an agreement to use a vendor’s product, you are usually not legally bound to do so, but by not following your word you make a bad name for yourself and the good deals will likely stop showing up. 6. Buy locally. Do your part for the environment, and the local economy. Local products are usually cheaper as they do not need to travel thousands of miles to get to you and your customers will appreciate it! 7. Buy in season. Another good step environmentally. Produce is not only cheaper in

season, but it is also better quality. By keeping seasonal, your menus fit the “feel” of the weather… berries in the summer, squash in the winter. 8. Keep up on the news. Sometimes there are events that affect your products – i.e. bad weather in Florida, earthquake in Chile. By keeping up on these, you can make changes to your purchases to stay with available products. 9. Set up rebates. If you commit to a vendor’s products ask them to put a rebate program in place so you are paid for how much of the product you use. They can track what you have ordered and can give you quarterly cheques based on that. 10. Quality first. Find the level of quality that is right for your business first, and then work on the best price for that level. Installing a purchasing program will really help your bottom line; it also shows the vendors that you know what you’re doing, and allows you to stay competitive in the market, all the while putting the best food available in front of your guests.

DELIVERING THE CUSTOMER EXPERIENCE By Shauna Grinke Organizational Development Consultant Zoteck Foodservice Advice It is commonly said that “customer service” will make or break your business. But, what exactly is ‘customer service’ in the restaurant business? Which elements of ‘customer service’ are critical, and which are ‘nice-to-dos? ‘Customer service’ in the restaurant business is truly the overall customer experience. There is no ‘stand alone’ product. Customers come to restaurants for an overall experience, and there are a myriad of decisions and actions that affect that overall experience. There are few businesses that require so many people, so many details to be handled by people, and the willingness of these people to apply discretionary effort to deliver an end-to-end customer experience. Literally hundreds of decisions and actions affect the customer experience! In the spirit of using the ever-popular 80:20 rule, here is the Top 10 Customer Experience To-do List.

1. Make the customer’s time with you an experience – fully understand that each customer is not only your paycheque, but also your best advertising. Each customer needs to have an experience which will be memorable such that they recommend your restaurant to their friends, colleagues and family. 2. Hire for and develop a service attitude in your people. Make ‘the customer experience’ an agenda item at every staff meeting. Create an atmosphere of excellence. Celebrate and reward those that deliver an outstanding customer experience. Keep your people informed of products, promotions, changes so that they can best serve your customers. 3. Never let an untrained employee have customer contact. Never. Your people represent you, your restaurant, your brand. Working with customers is the most important thing they do.

4. Listen to your customers – Use every system of ‘listening’ you can! Eavesdrop! Survey! Continually ask your customers, yourself, your people, your network, how you can improve the customer experience to add value. 5. Listen especially hard to complaints. Complaints are truly a gift to you to improve your business. Enjoy them, and learn fast. Learn how to apologize. 6. Empower your employees to do the right thing – it is the discretionary effort of each of your people that contribute to a memorable customer experience. If your people feel that they will be chastised for making a decision that benefits the customer, they will stop making decisions. 7. Research customer service. Learn from other businesses that deliver a great service experience. Be curious when you’re out in your community ‘as a customer’. Ask, ‘how can I use the knowledge of how I feel as a customer to deliver a better customer experience in my business?’ 8. Be systems-focused. Don’t leave service to chance. Continuously look for improvements in your systems that will improve the customer experience. 9. Make every decision with the customer in mind. Menu, decor, hiring, processes. How will the decision affect the customer? 10. Continually do the unexpected. Throw in something extra. Maybe this is a warm “Hello, how is your day going?, a free coffee, a smile and reflection on a shared memory, or a compliment. Take the time to analyze your customer’s experience. Invest in continuous improvement. If customer service truly does ‘make or break your business’, this could be the most important analysis and investment you make!
