VANILLA SPONGE CAKE From 13-year-old baker, Ashleigh Adams
• INGREDIENTS • 430g self raising flour
400g caster sugar
1 tsp salt
3 large eggs
2 tsp baking powder
2 egg whites
3/4 tsp baking soda
1 tsp vanilla extract
345g unsalted butter
360ml butter milk

1. Mix the flour, salt, baking powder and baking soda in bowl and set aside. 2. In a separate bowl beat the butter and sugar together 3. mix the eggs and vanilla extract until just combined. 4. Then fold your dry ingredients into your wet ingredients. 5. Pour your buttermilk into the mixture and beat until well combined. 6. Place your mixture evenly into whatever tins you are using 7. Bake at 180 degrees/ gas 4 for 30 to 45 minutes or until a skewer comes out clean.
