VANILLA SPONGE CAKE

• INGREDIENTS •

430g self raising fl our 1 tsp salt 2 tsp baking powder 3/4 tsp baking soda 345g unsalted butter 400g caster sugar 3 large eggs 2 egg whites 1 tsp vanilla extract 360ml butter milk

• METHOD •

1. Mix the fl our, salt, baking powder and baking soda in bowl and set aside. 2. In a separate bowl beat the butter and sugar together 3. mix the eggs and vanilla extract until just combined. 4. Then fold your dry ingredients into your wet ingredients. 5. Pour your buttermilk into the mixture and beat until well combined. 6. Place your mixture evenly into whatever tins you are using 7. Bake at 180 degrees/ gas 4 for 30 to 45 minutes or until a skewer comes out clean.
