But First,

Tzurit Or started Tatte in 2007, baking 20 hours a day in her home kitchen and selling her delicious creations to Boston farmers’ markets. After only one summer, Tatte expanded to its first brick-and-mortar bakery in Brookline, MA. Tatte’s cookies, cakes, tarts, and pastries owe their unique look and exceptional flavor to carefully sourced raw ingredients, Tzurit’s culinary artistry, and a passionate team of people who love testing, tasting, and talking about baked goods. Tzurit and her staff have a singular vision to enrich people’s lives with their exceptional baking, crafting bold combinations of flavors and textures that are at once vibrant and comforting, daring and familiar. Extreme attention to detail is evident in each Tatte offering. If it’s not one-of-a-kind and delicious, it’s not Tatte.

Caffè Nero When Gerry Ford founded Caffè Nero in 1997, he wanted it to be authentically Italian, providing premium espresso, fresh high quality food and to serve as the neighborhood gathering spot. Making great coffee takes some doing. So, Caffè Nero's built their own Roastery and created a unique award-winning coffee blend, and, importantly, they also set up espresso training school – the place where all our baristas learn how to make coffee well. This has led to the Caffè Nero family owned and operated business opening more than 650 coffee houses across Europe.

No more, no less. From origin to cup, every stage of coffee crafting is as vital as the one before it. Only the freshest coffee produces the flavor we work so hard to capture, so we only grind exactly what we need for each cup – one cup at a time. The rate of pour – the speed at which the coffee flows into the cup – has to be consistent and smooth.

Our coffee houses are an unusual combination of European furniture pieces merged with local neighborhood charm.

George Howell George Howell Coffee was founded in 2004 by veteran coffee pioneer George Howell. George’s life in coffee began in 1974 with his first café, The Coffee Connection in Cambridge’s Harvard Square. Top-quality coffees are only harvested once a year, thus storage of raw green coffee is essential to maintaining the freshest tasting coffee all year long. To maximize freshness, green coffee is stored GrainPro bags to reduce or frozen to halt the raw beans’ natural aging process at their peak of maturity, preserving their natural sweetness.

George Howell Coffee We understand that behind every cup of coffee there is a farm with growers who share the same drive and dedication for their craft as we do. We are proud to work directly with these farms that share our interest in social responsibility and environmental sustainability. In an ongoing effort to genuinely recognize and demonstrate our respect for the care and costs incurred to produce outstanding quality, George Howell Coffee pays these farms top prices for green coffees, far exceeding Fair Trade pricing.

All our coffee is craft-roasted daily in small batches to guarantee freshness and enable us to maintain strict quality control throughout the entire roasting process. Once our quality control group has approved a batch, it is packaged immediately in airtight, one-way valve bags to preserve freshness. Our aim is to provide our customers with an excellent cup of coffee from seed to cup.

Mission Statement

Quality coffee farmers are our partners.

We form relationships with farmers we trust and deeply respect for their consistent dedication to excellence. We benefit from their hard work, attention to detail, and virtuosity – and pay accordingly, independent of the commodity market. As roasters and brewers, we are interpreters of the symphony composed by farmers interacting with nature. We strive to deliver, without overpowering, all the translucent layers of flavor inherent in great coffees.

Our customers come first. We want our customers to take part in the adventure as we explore the rainbow of coffee flavors. We treat our coffees with precision and care, from export to storage to roasting to cup. We are ambassadors for the farmers of fine quality coffees – dedicated to knowledge and its dissemination, accurate execution, caring communication, detailed service and the highest levels of excellence.

After selling The Coffee Connection to Starbucks, George was free to resume his coffee education in new ways. He continued to travel to coffee-producing countries (Colombia, India, Sumatra, Brazil, Nicaragua, Guatemala, Mexico, Peru), offering his services as a coffee quality consultant. Beginning in 1997, he worked for the United Nations and the International Coffee Organization (ICO), creating models of economic sustainability for coffee farmers. This project led to his conceiving and co-founding the Cup of Excellence in 1999, a program designed to help break the commodity/price cycle in the specialtycoffee industry.

The story of Pavement Coffeehouse is the transformation of a single bagel bakery and three scrappy but well-loved coffeehouses into a collection of six coffee-forward, quality-driven cafes in Boston.

Pavement Coffeehouse In 2010 Larry built Pavement Coffeehouse, Boston's premier coffee-forward, quality driven cafe, at 1096 Boylston Street. The company then spent five years consolidating this cafe, Bagel Rising, and Espresso Royale into one brand--Pavement Coffeehouse. Today, Pavement is a collection of six unique coffeehouses featuring Boston’s best homemade bagels, awardwinning coffee service, warm atmosphere, and welcoming staff.

37

Pavement's self-baked bagels from its Allston kitchen

Bagel Growing up outside of Chicago should have led Larry Margulies down the path of deep-dish pizza or Chicago-style hot dogs, but when he sunk his gums into a frozen bagel as a teething infant, his destiny was sealed. After graduating from Boston University in 1997, Margulies was hired by a small bagel shop as store manager. In 1999, when Bagel Rising went up for sale, Larry, at the age of twenty-three, knew what he had to do. After many nights crunching the numbers, and one small business loan later, he was finally the owner of his beloved Allston bagel bakery. Years later,

and looking to expand, he introduced himself to the owners of Espresso Royale Caffe, a franchise-turnedindependent cafe with three Boston locations. In 2004, Bagel Rising began wholesaling bagels to Espresso Royale.
