A Snapshot IT ALL BEGAN WITH A TRUE PASSION... Ever since late 2010, the founders of Sababay Winery had been partnering with local Balinese farmers to introduce international viticulture standards, thereby improving the qualities of grapes for winemaking, as well as increasing family income for struggling local farmers. Our Sababay winery is located in Gianyar, within close proximity of the vineyards and utilizes the most enhanced winemaking techniques and organic processes to transform Bali’s traditional grapes into naturally delicious and well-balanced red, rose and white wines. Sababay quality wines are produced in a tropical climate near the equator, allowing the grapes to grow all year round, compared to an annual harvest in the world's more temperate climates. Thus, “Old World” wines from Europe and “New World” wines from the Americas, Australia and South Africa, are now making room for the “New Latitude” wines, like Sababay Wines, from Indonesia. Our winery meticulously selects its fruits from the best vineyards in the renowned grape farming area of Gerogak-Seririt-Banjar on the north coast of Bali. Dry sunny weather, rich latero-volcanic soil and an abundance of fresh water cascading down from the volcanoes are more than ideal conditions for harvesting grapes in Bali and also a fruitful alternative to farmers north of the island. We have also established a research station high on the slopes of Mount Agung to test grapes growing in the New Latitude at such a high altitude. Our vision is to be a leading premium beverage producer in Asia with sustainable business models economically, socially and environmentally whereas our mission is to elaborate local products of international standards that are accessible for all to enjoy and to give back to the land as well as the local communities. KHAIMA: AN AIR OF MOROCCO Strangely to me, Khaima is the kind of name that will always ring a bell. It simply translates to “Tent” in Moroccan. Best of Bali has covered almost everything from French, Italian all the way to Oriental and Indonesian. We have however, yet to have an air of Morocco. Khaima provided the perfect opportunity for it. Situated in Jalan Oberoi, right in the heart of Seminyak, the restaurant itself has been around for almost 11 years. The past year however, Khaima has seen changes to it’s menu, and architecture, bringing a whole new world into the scene. Prior to its recent changes, Khaima caters purely Moroccan cuisines. With the overwhelming urban and vintage hype enveloping Seminyak, owner Driss Tabakkalt knows how important it is to keep up and follow suit with the rest of Khaima’s competitors. And revamped they were. For a year now, this restaurant has boasted a new menu that includes Asian, Indonesian, Western and yet still staying true to it’s Moroccan roots. The concept is to have each and everyone passing by to have their own opinion of the chic eatery. An intriguing structure that wows it’s beholders. Frankly, it would rather be absurd for one to not be drawn to Khaima. Upon walking in, you get the idea that the place is spacious, yet bustling with high-end diners. The second notion that comes into my mind, is that almost everything in Khaima is open. It’s Kitchen is open and let’s not forget it’s highly distinctive structure which is actually, contrary to popular beliefs, made of wood; Kayu Glam to be specific. The structure has been

designed such that diners are able to see the onlookers walking down the busy street but the not the other way around. Rows of bookshelves stood tall by the side of the dining room, complimenting the sophisticated mood established in Khaima. Books reminiscent of Ancient Indonesia fill the vintage shelves. It’s full Moroccan concept prior to this, is understandably depleted to a large extent, but you can still feel an air of orient meeting a modern, urban approach. All in all, I was heavily counting on Khaima not being one of those “Style Over Substance” restaurant. Thankfully the food was anything but a letdown. We had the Chicken Pastilla for starters. I had no idea the dish was going to have several flavours meshed into one. I couldn’t quite discern the sweetness of the icing at first, as I dug straight into the meat. The soft and pulpy taste of the meat is a complement to the perfectly baked pastry. By the time the icing finally came around, I was overall pleased to say the least. It was a nice twist to what is an already stunning delivery. Then came the main course, a hefty Mixed Mechoui Couscous. For those of you unfamiliar with this North African dish, Couscous is a Semolina, usually served with meat and vegetables. The portion speaks for itself, making sure that diners are utterly satisfied. As mentioned before your Couscous is served alongside some downright tantalizing skewers of chicken, lamb, keft and merguez. The skewers of meat, gave a nice addition to the couscous and the vegetables are an important part of
the whole meal, as it gives the significant moist needed in the within the couscous. For dessert, again we had pastilla, but this time, solely sweet. The icing on top hit all the right notes again, utilizing almond as one of it’s core ingredients. As I scour through Khaima’s menu, I couldn’t help but notice all the North-African food I’ve always wanted to try. There are things like Gazelle horns, an almond paste-filled pastry, the Albondigas and the Mini Pita Pockets. If you are less into Moroccan and more into something closer to the island, there are a huge and I mean massive collection of Asian and Indonesian cuisines reflected in the menu. The Salmon Terriyaki and Chicken Betutu are only several of the aforementioned items. Excellent food, strategic location, sizzling atmosphere and to top it all off, they all come at stunningly affordable prices. When passing through Oberoi, it’s a sin not to notice this chic creation. Every Friday and Saturday night, Khaima entertains you it’s guests with highly impressive belly dancers, making your Arabic experience complete. This restaurant will momentarily take you away from Bali, but at the same time, still feel right at home, in the island. Khaima is open for both lunch and dinner from 11 am up to 1 am.
