CUCA: A NEW CULINARY GEM IN JIMBARAN, BALI Bali (15 October 2013) – Officially open since August 10, Cuca is a casual dining destination serving tapas, cocktails and desserts. Set in the beautiful expanse of a coconut grove, the restaurant is helmed by Chef Kevin Cherkas, who has an enviable career developed in some of the world’s best restaurants, and his wife Virginia Entizne, with a successful track record at managing and enriching customer’s experience. Cuca offers three distinctive spaces: an interactive and exciting food bar where wooden chairs run along one impressive 8-meter-long teak counter. Slightly elevated, guests directly face the open kitchen, as if they were front-row spectators attending a performance; a relaxed and intimate dining room, ideal for guests to enjoy the company of each other in a comfortable and airconditioned environment, and a chilled out cocktail bar & garden lounge, gently touched by the ocean breeze and surrounded by the undisturbed beauty of nature. Kevin’s cooking philosophy consists on serving western cooking made exclusively from the best and freshest local ingredients. He handpicks the tastiest products Indonesia offers and brings them to a new level by applying techniques acquired through his outstanding career at, among others, Michelin three-star Arzak Restaurant in San Sebastian, Michelin three-star El Bulli in Roses and Michelin two-star La Broche in Madrid. He also left his mark in New York City during his 2 year tenure with Daniel Boulud at the highly regarded Michelin three-star Daniel.

Among the signature dishes at Cuca are the “Chilled Watermelon Salad”, an outrageously flavorful concoction of watermelon, calamansi, radish, fresh seaweed, sesame and cilantro. From the cocktail menu stands out “Pink Lime”, a frozen combination of fresh lime juice, honey and gin topped with soda meringue. Truly special from the desserts category is “Cocoa 8”, a warm dark mousse made from exceptional local chocolate with mint ice-cream and chocolate cake croutons. Menu prices are very accessible by Bali standards with all items served in sharing portions and starting from IDR 30.000 (US$ 3). As part of the restaurant focus on taste, Cuca has developed two additional offerings: Cuca Sessions take participants through a journey of discovery aiming at understanding flavors and taste. These unique “tasting” classes go far beyond any traditional cooking lesson, revealing a completely new creative approach to cooking. Cuca Salt, on the other hand, is a seasoning mixture meticulously handcrafted to capture the soul of traditional Balinese flavors. Hailing from Melbourne, Australia Richard began his cooking career in 1986, after completing his apprenticeship at the Sheraton Mirage Gold Coast Resort, he returned to Melbourne and worked for a number of well-known restaurants in the mid 90’s including the internationally critically acclaimed restaurant Stephanie’s in Hawthorn, Hats in Toorak & Yolan’s of Armadale. In 2002 Richard accepted a position as Chef de Cuisine at Aria Restaurant and Bar in Beijing at the China World Hotel, a flagship property for Shangri-La Hotels and Resorts, where he received many awards and International acclaim for his fresh, modern approach to food. Richard moved to the Ritz-Carlton Bali Resort and Spa in 2005 as Chef de Cuisine to open Dava Restaurant and Martini Bar. In January 2008, Richard moved back to Bali to join the Conrad Bali Resort & Spa as Chef de Cuisine for Spice Restaurant & created the concept & menus for the opening of Rin restaurant for the new luxurious Conrad Suites in late 2008. In 2010 Richard joined the Intercontinental Fiji Golf Resort & Spa as Executive Chef and helped develop the restaurants and lead the culinary team to multiple medals at the Fiji Salon Culinaire in 2010, 2011 and 2012. In late 2012 Bali chose Richard for the third time to join the highly awarded W Retreat & Spa Bali as Director of Cuisine where he has refined the cuisine with an eclectic influence of Japanese, Western and Asian techniques and flavours. Most recently Fire Restaurant was a finalist award winner as “Best Hotel Breakfast” in the Hotel awards 2013 for AsiaRooms.com.

POD Chocolate Sphere Having worked on & off in Bali for 10 years, I have always used imported couverture chocolate for my dessert creations, so when I moved back to Bali last year to join W Bali, I was so happy to meet fellow Australian, Toby Garritt who was busy setting up his chocolate kitchen & café called Pod, located at the Bali Elephant Camp in the village of Carang Sari. Toby is very passionate about producing high quality artisan style couverture chocolate using the locally sourced cocoa beans that was being grown around the area. So one sunny day while visiting Toby at Pod, I came up with the idea of using Pod chocolate to create the Chocolate Sphere, Toby set about making the perfectly shaped & tempered shell with hand brushed red streaks & I worked on developing decadently delicious array of flavours & textures that are hidden inside the sphere. At the table our service talent pours hot chocolate sauce over the shell, causing it to melt and implode exposing its contents, this is 1 of my most popular signature dessert at W.

Chef James Ephraim is a native of England where he started as a sous-chef with the highly praised Grosvenor Hotel. This famous venue, introduced Chef Ephraim to exclusive events with regular appearances at the Estate of the Duke of Westminster. Leaving his native England for extraordinary experiences in the South Pacific and Australasia, Chef Ephraim was part of the opening team of Bracu Restaurant in New Zealand as chef de cuisine, and extended his stay down-under thereafter at Lizard Island Barrier of Reef Resort. During culinary discovery holidays, Chef Ephraim completed a stage at Mugaritz in Spain. Embracing the philosophy of Chef Chris Salans in the use of Bali’s freshest ingredients, Chef Ephraim has been a key asset in creating the Mozaic modern Balinese Cuisine which has been presented at the famed Ubud Mozaic Restaurant Gastronomique in the last few years.

Mozaic beach chocolate kaffir lime, with lembang pineapple, andaliman pepper and chocolate crumble While visiting a friend’s house I noticed he had a huge kaffir lime tree in the garden full of fruits, I asked him if I could take a kilo back to the restaurant and start playing with recipes. This was the first time I’d seen them while living in Bali, it turned out there are lots growing on the island but there not commonly used in Indonesian cuisine. After living in Thailand I was keen to create a dish with Kaffir limes. I wanted to recreate a kaffir lime out of chocolate, this took me a long time to figure out exactly how to make my own mould (almost 2 months of trial and error) then I came across a silicone product which I could use to make a perfect mould. Basically we mixed the silicone liquid with a setting agent and then covered the kaffir lime in it, rested it overnight then the next day cut it in half take the lime out and the mould was ready to use. You need lots of patience to make the chocolate mould shell. In the restaurant the dessert takes around 6 hours to make from start to finish. For the lembang pineapple we cook it for 4 hours sous vide at 80 degrees. Inside the chocolate crumble I add a sumatranese lemon pepper and we garnish the dish with local “kemangi” (a lemon basil). Inside the shell we set a chocolate kaffir lime mouse in half of it then just before serving we pipe in a kefir lime sorbet so that when the guest cracks it open they have a frozen gelato and soft chocolate mousse.

House Smoked Tasmanian Salmon Creme Fraiche, Snake Fruit, Tangerine Dressing I wanted to take a classic smoked salmon dish, but dress it entirely with local produce/spice/fruits as I could with out taking the spot light off the salmon it self. Firstly we gently cure the Tasmanian salmon fillet in local vanilla bean, sugar and salt for 24 hours. Then we add the smoke using a smoking gun and apple scented wood chips. The salmon fillet is then thinly sliced and plated before being lapped with a dressing of tangy but balanced tangerine from bedugul, shaved ‘salak’ Bali (snakefruit) is a crisp fruity finish that leaves people wondering what type of fruit it is they are eating. A crème fraiche whipped with local spices and horseradish adds a smooth creamy touch and organic Balinese red rice that is cooked and dried provides another popping and crunching in the mouth texture.

What is the meaning behind the name Teatro? Teatro is the Italian word for theatre. The restaurant and the kitchen are clearly visible from the street, so anyone passing by can easily see what goes on behind the scenes. The chefs are the actors and the kitchen is our stage. Welcome to the show!

What kind of chef would you like to be perceived as in the eyes of the public? I want to be perceived as a creative and talented Indonesian chef equaling any Michelin star chefs out there. I’m super passionate about food and hope this passion encourages, motivates, and inspires young Indonesian chefs to lead the culinary scene in Indonesia.

At this point in your career, is there an ingredient that you haven’t had the opportunity to work with yet but would like to? Durian! It is the king of fruit after all.

Where do you draw inspiration from when creating dishes at Teatro? From nature, my childhood memories, and of course, my mom’s home-cooked meals, nothing can beat that!

You’ve been a chef in several different countries, is there any country or cuisine in particular that most influences the way you approach food? French cuisine, Indonesian. Japanese, Thai…to name a few.

What are your dreams and ambitions? My greatest dream is to be the first restaurant in Indonesia to be awarded a Michelin star.

What does the future hold for Teatro? The future is bright for Teatro. As I mentioned earlier, our plan is to be known as the first Michelin star restaurant in Indonesia and home to future iconic Indonesian Chefs.

After a long day in the kitchen, what’s your comfort food? Chicken porridge always hits the spot after a long day at ‘the office’. It’s the ultimate comfort food and never disappoints.

In this relentless search for the best spas, one spa in particular sets itself apart from the pack - DaLa Spa at Alaya Resort Ubud. Continuing its award-winning presence in Bali’s wellness sector, DaLa Spa Ubud was recently nominated in the prestigious AsiaSpa Awards 2013, which is the benchmark for quality and innovation for spas in the region. Zohra is well known for her use of rich textiles, vintage-inspired furnishings and mood-enhancing lighting and it is this attention to detail that gives DaLa Spa its unique aesthetic edge. The Baroque vintage-inspired boudoir style of employing sumptuous drapery, fabrics, and crystal chandeliers combined with old school Indonesian furnishings such as antique batik stamps, gold-framed ikat, and heirloom Indonesian tapestries is nothing short of genius. The main floor is a spacious Balinese style open pavilion with an elevated roof that bathes the entire space in natural light and allows for optimal air circulation. Available for yoga, cooking classes and organic spa dining, I’m told that it can also be reserved for private functions, which sends me into daydream mode imaging the possibilities. There’s an open kitchen at one end where interactive spa classes are conducted and body products are prepared using fresh botanicals prior to each treatment. A reflexology lounge off to one side provides an additional pampering area cooled by Ubud’s famous rice field breezes.

THE DaLa ROYAL TREATMENT The journey to relaxation begins upon entering the elegant lobby of the pavilion where you’ll be greeted by friendly staff and escorted to a lavish yet comfortable seating area. A cup of herb infused ice tea and a chilled cloth compress pre-soaked in essential oils offer immediate relief from the tropical humidity. Clearly the spa is respectful and sensitive to the specific needs of individual guests as all spa goers are given a form to fill out posing questions regarding the type of music you enjoy, information about any allergies, or health issues you may have, as well as the kind of massage pressure you are comfortable with. You’ll immediately feels at ease knowing you’re in highly knowledgeable, qualified hands! The sensory journey begins with a spa class where I’m taught the fine art of jamu-making. Jamu is a in predominantly consisting of natural components, such as parts of plants, roots, leaves, bark, and fruit. My teacher explains the myriad of health benefits of this turmeric-based concoction such as aiding in digestion, regulating menstruation, as well as its skin enhancing properties. This spa class includes a 30-minute session of blissful foot reflexology and when it’s finished the jamu is served up in a posh antique silver pot and contrary to what you’d expected of a natural medicine, it’s absolutely delicious. I’m pleasantly surprised when presented with a leaf-covered tube containing the jamu recipe as well as recipes for all of the treatments they offer so you can take the spa experience home with you! The Manis Klepon treatment, one of Dala Spa Ubud’s signature treatments, is a playful tribute to a traditional Indonesian rice flour cake. The scrubs and masks are inspired by the heavenly little treats

that are always sprinkled with grated coconut and filled with juicy melted palm sugar. The treatment begins in the tuberose room but I manage to sneak a peak at each of the 6 opulent treatment spaces each named after a flower and am floored by the level of luxury and serenity that abounds. Each room has a large bathtub for lavish bathing rituals as well as a separate rain shower most of which look out onto an amazing view of the river and trees.

There were moments when it felt as though my therapist had three hands. When the massage is over, I’m invited back to the pavilion to enjoy the gorgeous kelepon cakes, which have influenced this one of a kind spa package.

To begin this treatment, my feet are gently bathed and soaked. My therapist extracts the ingredients for the foot soak from a traditional offerings basket and taking time to explain the benefits of each. She twists lemongrass stalks and squeezes fresh limes to release the fragrance in front of me before dropping them into the bath. Its this attention to detail that makes DaLa Spa so unique.

If you are still feeling a little peckish, grab a bite to eat at the spa’s Terrace café. It caters to the culinary needs of health conscious guests with a wholesome menu of organic cuisine. As twilight falls this space becomes an intimate setting for romantic dining with flickering candles and soft music. It’s an ideal date night venue. It’s light, fresh, organic, clean eating that is both delicious and healthy and the perfect meal to end an amazing day.

In keeping with the Manis Klepon theme, a grated coconut and palm sugar body scrub begins the cleansing and exfoliating process. The age-old technique of applying a fragrant pandanus and suji leaf clay body mask directly to the skin is used to refresh, invigorate, and draw out impurities. It’s easy to get a little bored waiting on masks to dry but not at DaLa Spa. While your mask is setting and working it’s magic, you’ll enjoy a face and head massage incorporating reflexology techniques. A soak in a stone bath tub, filled with exotic flowers and a harmonious blend of essential oils will send you into a level of relaxation you’ve never experienced. And there’s more! After being escorted to the massage table, the therapist initiates the massage using a Balinese prayer bell and rings the bell along the chakras line

A chance to chat with the Spa manager as I’m dining reveals that DaLa Spa is preparing to collaborate with the iconic French skin care brand, THÉMAÉ Paris to bring the health and beauty benefits of tea to the island of Bali. This is a first for Indonesia’s evolving spa industry where there is a growing trend to blend local wellness traditions with internationally renowned products. They’ll be the only spa in Indonesia licensed to carry this prestigious, high-end brand and you can find the products for sale in the gift shop.
