Holiday Recipes:

Xpress Staff Edition Looking for something fun to do during Christmas

break? The Xpress Staff has shared their favorite holiday recipes for you to impress your family and friends with! From the kitchen of: McKenzie Potter, Backpage Assistant Editor Recipe Name: Special K Bars (makes 2 dozen) Ingredients: 2 cups white sugar 2 cups corn syrup 2 cups peanut butter 8 cups Special K cereal Topping: 2 packages butterscotch chips 2 packages semi-sweet chocolate chips

1. Combine sugars and corn syrup, mix well, and microwave for 2 minutes 2. Stir mixture, and microwave again

Cut these recipes out to add them to your own recipe box!

for 2 minutes 3. Add peanut butter, stir until smooth, and stir in cereal 5. Form into whatever size pieces you prefer, and set aside. 6. Combine chocolate and butterscotch chips, microwave for 2 minutes or melt on stove top and stir until smooth. 7. Spread topping over cereal pieces

From the kitchen of: Anna Busse, Editor-In-Chief Recipe Name: Rolo Pretzel Turtles (makes 3 dozen) Ingredients: round pretzels 1 package Rolos 1 package pecans (or M&Ms)

1. Preheat oven to 350 2. Place pretzels on a baking sheet covered in tin foil 3. Put 1 upside-down Rolo on each pretzel 4. Bake for 4 minutes 5. Carefully remove from the oven and press 1 pecan or M&M onto each softened Rolo 6. Let cool, then chill for 10-20 minutes

From the kitchen of: Cassie Busch, Editor-In-Chief Recipe Name: Chocolate Spritz Cookies (makes 5-6 dozen) Ingredients: 1 cup butter 1 cup sugar 1 egg

1. Mix ingredients 2. Put in cookie press 3. Press cookies onto pan, and add sprinkles on top 4. Bake at 350 F for 10-15 minutes

2 tsp. vanilla 5 tbsp. cocoa 1 tsp. baking powder dash of salt 2 cups flower

From the kitchen of: Colette Miller, Student Life Assistant Editor Recipe Name: Oatmeal Cranberry White Chocolate Chunk Cookies (makes 2 1/2 dozen) Ingredients:

1. Using electric mixer, beat butter and sugar together

2/3 cup softened butter

until light and fluffy

2/3 cup brown sugar

2. Add eggs and mix well

2 large eggs

3. Combine oats, flour, baking

1 1/2 cups old fashioned oats soda, and salt in a separate

From the kitchen of: Nicole Draker, Backpage Editor Recipe Name: Peanut Butter Blossoms (makes 3 dozen) Ingredients: 1 egg 1 3/4 cups flour 1 tsp. baking soda 1/2 tsp. salt 1/2 cup white sugar 1/2 cup brown sugar 1/2 cup shortening 1/2 cup peanut butter 2 tbsp. milk 1 tsp. vanilla

1. Combine all ingredients and mix well

1 1/2 cups flour

mixing bowl, and then combine

1 tsp. baking soda

with the butter mixture

1/2 tsp. salt

4. Stir in Craisins, and white chocolate chips

6 oz. package Craisins

5. Drop rounded teaspoons of dough onto cookie

1 cup white chocolate chips

sheets and bake for at 375 for 10-12 minutes

dash of nutmeg and vanilla

2. Roll dough into 1 inch balls 3. Roll each dough in white sugar (separate from ingredients) 4. Place cookies on cookie sheet 5. Bake at 375 F until golden brown around the edges 6. Let cookies cool for a minute or two and press chocolate candies into center of cookies

2 packages chocolate ‘kiss’ candies
