As Armand struggles to deliver the letter (Theo has since died; his widow’s whereabouts unclear), he is treated to the introspections and recollections (some fond, some envious and some disdainful) of the townspeople who lived with Van Gogh during the remarkable painter’s unremarkable life. This is the world’s first fully painted feature film. And inspired by the painter, its 65,000 frames are individual oil paintings on canvas, which took a team of 125 painters to create. Now, that is a feat worth watching. “I, Daniel Blake” (R) — Dave Johns stars as Daniel Blake, an aging widower in Newcastle. After suffering a heart attack at work, he is declared unfit for working by his cardiologist and simultaneously fit to work by the welfare system, which promptly denies him benefits. As he muddles through a 21st century system set up for the computer literate, he makes

friends with single mom Katie (Hayley Squires), who also is struggling with welfare-system issues. The film is a scathing treatise on checkbox bureaucracy and the miscarriage of justice in the welfare system, but it’s well-done and has its surprises.

Tasty contest The Willowbrook Lions Club held its annual Homemade Sausage Contest Saturday. The contest attracted 11 entries which were judged by the quartet of Allan Polegi, Mark Benko, Corey Larsen and Clint Sheppard on three criteria; appearance, texture and taste. Top spot went to an entry by Vince Somogyi. Second went to Curtis Dubiel and third to the Kamienecky family. All three winners are from Willowbrook. The sausage entries, along with a number of varieties from area businesses were then part of a sausage and perogy supper.

Teaching safety seat technicians By Calvin Daniels Staff Writer When it comes to infant safety having a properly installed child’s car seat is very important. There are often car seat clinics for parents to make sure their seats are properly installed, but who teaches the inspectors? As it turns out there are workshops hosted by SGI, and the Saskatchewan Prevention Institute (SPI), to teach technicians. One of those workshops was held in Yorkton last week at the Fire Hall. “We’re teaching new car seat technicians,” explained Travis Holeha Child Traffic Safety Program Coordinator with the SPI. Holeha said once technicians complete a course like the one held in Yorkton “they can go to their own communities and do clinics.” Holeha said the course provides technicians with how to check car seats for possible issues, and how to ascertain if the seat has been properly installed in

CHICKEN POT PIE Loaded with whitemeat chicken and lots of hearty root vegetables, this healthy pot pie makes the perfect family meal. •1/4 teaspoon dried thyme •Salt •Pepper •1-1/2 pounds chicken breasts •Olive oil cooking spray •1 large onion •1 can lower-sodium chicken broth (1-3/4 cups) •2 cloves garlic •5 medium parsnips •3 medium carrots •3 stalks celery •6 sheets frozen phyllo •2 tablespoons cornstarch •1/2 cup water •2 cups frozen peas •1/4 cup finely chopped fresh flat-leaf parsley Preheat oven to 425 degrees F. Sprinkle thyme and 1/4 teaspoon each salt and freshly ground black pepper evenly over chicken. Lightly coat 12-inch skillet with olive oil spray and heat on medium-high. Add chicken in single layer and cook 3 minutes or until lightly browned, turning pieces over once halfway through cooking; transfer to plate. To same skillet, add onion and 1/4 cup chicken broth. Cook 5 minutes or until browned, stirring and scraping up browned bits. Add garlic and cook 1 minute, stirring. Stir in parsnips, carrots and celery, then add remaining

Center phyllo on top, tucking in edges if necessary; then cut 5 slits in phyllo. Bake 15 minutes or until phyllo is golden brown. Garnish with parsley to serve. TIP: To prevent pastry from drying out, work with 1 sheet at a time, keeping the others covered. Cold and flu season has arrived with record numbers of sick children and adults. There are antiviral medications available for the flu, but to be effective they must be taken within two days of the onset of symptoms. Antiviral medications don’t cure the flu, but may make the symptoms less severe. Your health-care provider can help you decide whether you should take antiviral medications. If in spite of all your efforts you become ill, take good care of yourself. Get plenty of rest, drink lots of fluids and pay attention to your symptoms. The

common cold, the flu and pneumonia can have similar symptoms. Mistaking one for the other can mean serious complications. Don’t gamble with your health. Contact your health-care provider immediately! Of course, a flu shot is the best way to keep from getting some strains the flu, or to at least lessen its intensity if you do catch it. If can’t get a flu shot, a pneumonia shot can protect you against this potentially serious flu complication. It’s a one-time shot for anyone age 65 or older. Chicken soup has been found to be more effective than other hot liquids to increase the movement of nasal mucus. It also improves the function of cilia, tiny hairlike projections in the nose that prevent contagions from entering the body. Eating chicken soup also inhibits the movement of a common white blood cell called neutrophils that defends against infection. By inhibiting the migration of these infection-fighting cells throughout body, chicken soup essentially helps focus the cells to reduce upper-respiratory cold symptoms. This recipe for Chicken Noodle Soup with Lemon and Ginger will help you through this frigid flu and cold season! Be well!

CHICKEN NOODLE SOUP WITH LEMON AND GINGER •1 lemon •1/4 cup chopped fresh cilantro or flat-leaf parsley or basil leaves •1 teaspoon finely grated fresh ginger •2 serrano chiles, stemmed, halved and seeded •6 cups homemade or canned low-salt chicken broth •4 ounces fresh Chinese egg noodles (look in the produce section of your supermarket) or 4 ounces dried vermicelli noodles •1 medium carrot, cut into small coins •1 to 2 tablespoons fish sauce •1 boneless, skinless chicken breast half, cut into 1/4-inch-thick slices (this is easier if the chicken is partially frozen) Finely grate 1 teaspoon of zest from the lemon and put in a small bowl. Add the cilantro, parsley or basil leaves and the ginger, and mix together. Cut the zested lemon in half and squeeze it into a small bowl to get 3 tablespoons of juice. Thinly slice two of the chile halves crosswise.

In a large saucepan, bring the broth to a boil over medium-high heat. Add the lemon juice, noodles, carrots, fish sauce and the 2 remaining chile halves to the boiling stock. Reduce heat, cover and simmer the soup until the noodles are almost cooked, about 3 minutes. Remove the chile halves. Stir in the chicken and chile slices and return to a boil. Remove the pan from the heat, making sure the chicken slices are just cooked through. Taste and add a touch more fish sauce, if you like. Divide the soup evenly among four serving bowls. Scones make an ideal companion to a morning cup of coffee or tea. Simple and delicious, this recipe for “Maple Pecan Scones” from Linda Collister’s “Quick Breads” (Ryland, Peters & Small) is ideal for scone lovers who want something quick to make in the morning. MAPLE PECAN SCONES Serves 6 •2 cups unbleached all-

purpose flour •4 teaspoons baking powder

Preheat the oven to 425 Sift the flour, baking

powder and salt into a large bowl. Add the butter and rub it in with the tips of your fingers until the mixture resembles fine crumbs. Mix in the pecans. In a separate bowl, beat the egg with maple syrup and 1 tablespoon of the milk. Stir into the flour mixture with a roundbladed knife to make a soft, coarse-looking dough. If the dough is dry and crumbly and won’t stick

together, stir in more milk 1 tablespoon at a time. If the dough is very wet and sticky, work in another tablespoon of flour. Tip out the dough onto a work surface lightly dusted with flour and gently work it with your hands for a few seconds so it looks smoother. Put the dough ball onto the prepared baking sheet. Dip your fingers in flour and pat out the dough to a round about 1-1⁄4 inches

thick and 7 inches across. Using a knife, cut the round into 6 wedges, but do not separate the dough before baking. Bake for 18 to 20 minutes until light golden brown. Transfer to a wire rack and leave until the wedges are cool enough to separate. Serve warm the same day. The cooled scones can be wrapped tightly and frozen for up to 1 month.

Take your love of tea to new heights Tea is a versatile beverage that can be served at any time of day and has long been touted for its medicinal properties. On a cold day, a hot cup of tea can be just what people need to warm up, while few things are more refreshing than a glass of iced tea on a hot afternoon. While tea lovers are familiar with its versatility, even the most ardent tea enthusiast might not think it can be used to make ice cream. But that’s precisely the case in the following recipe for “Chai

Ice Cream” from Robert Wemischner and Diana Rosen’s “Cooking with Tea” (Periplus). Not overly sweet, this ice cream works great when stuffed into a sweet-ripe peach or plum.

CHAI ICE CREAM Serves 6 •2 cups heavy cream •1 cup whole milk •4 slices fresh ginger root •1 tablespoon whole allspice berries •1 tablespoon whole cloves •12 whole green cardamom pods •3 whole cinnamon sticks, each about 3 inches long •1/2 cup granulated white sugar •1/4 cup honey •3 tablespoons Chinese

black tea, such as Keemun •4 egg yolks •1 large bowl of rice •Pinch of salt •1 teaspoon real vanilla extract In a large, heavy saucepan, bring the cream and milk to a boil with the spices, sugar and honey. Add the tea and reduce mixture to a simmer. Remove from heat and infuse the tea for about 5 minutes. Sieve out solids and return liquid to saucepan. In a small bowl, whisk the egg yolks and temper

them by combining with a cup of the cream mixture. Add the whisked egg yolks to the saucepan and whisk together over medium heat until slightly thickened. The mixture should coat the back of a spoon Using an instant-read thermometer, monitor the temperature of the mixture so it does not exceed 190 F. Do not overcook or the mixture will curdle. Pour through a finemeshed sieve into a bowl placed over a larger bowl of ice. Stir the mixture until cool and then place

in refrigerator or freezer to chill further, about 15 minutes. Add salt and vanilla to blend.

Freeze using an oldfashioned ice cream maker filled with ice and salt, or freeze in a cranktype ice cream machine using a canister that has been frozen as per the manufacturer’s directions.

Methods for treating arthritic knees Osteoarthritis of the joints can affect people of all ages, but is one of the leading causes of disability in the aged population in the United States. A study published in the Caspian Journal of Internal Medicine found incidence of knee OA is rising by increasing average age of the general population. Age, weight, trauma, and repetitive movements are common risk factors for the condition. According to Dr. Scott Paris of Central Jersey Spine and Wellness, more than 27 million people in the country suffer from knee arthritis. An estimated 37 percent of Canadians aged 20 or older who had

been diagnosed with arthritis reported osteoarthritis, with 29 percent occurring in the knees, states Statistics Canada. Knee arthritis occurs when there is a degeneration of articular cartilage that covers and protects the patella (knee cap) at the knee joint, offers the online resource ArthritisHealth. Since this cartilage has no nerve endings, some people can experience arthritis but feel no pain. However, pain may occur when doing specific activities that cause impact between bones, like jumping, walking up stairs or certain sports. Over time, knee arthritis may become worse,

and pain can be accompanied by stiffness and loss of mobility. This may be accompanied by knee locking or buckling. Those who suffer from knee OA may seek treatment. In 2014, the Osteoarthritis Research Society International, a nonprofit organization dedicated to promoting osteoarthritis research and treatment, updated its recommendations for the treatment of osteoarthritis targeted to different patient characteristics. The main categories of treatment include nondrug treatments, medication, injections, and surgery. • Non-drug treatments:

Examples of non-drug treatments include exercise, stretching and rangeof-movement strategies. Weight loss can alleviate excess strain placed on the hips and knees and reduce pain. Braces, sleeves and orthotics may help reduce pain and joint stiffness when directed properly through a specialist. • Medications: Many medications are geared around reducing inflammation and pain and include over-the-counter pain relievers and NSAIDs, such as acetaminophen, ibuprofen and naproxen sodium. Topical NSAIDs may be tried, and these can reduce the risk of gastrointestinal side

effects from oral medications. OARSI also found that the antidepressant duloxetine may help with chronic knee pain. • Injections: The Arthritis Foundation says that some doctors can inject corticosteroid compounds directly into affected joints. Use of hyaluronic acid injections can supplement the natural substance that gives joint fluid its lubrication and viscosity. These injections may help relieve pain and improve mobility. • Surgery: In cases when the aforementioned treatments are unsuccessful, doctors may suggest surgery. The Arthritis Foundation says joint

This year, in the championship, his benching of QB Jalen Hurts at the half in favor of Tua Tagovalia, the hard-throwing freshman hot-shot out of Hawaii, will go down in history as one of the greatest coaching decisions of all-time. But is he the greatest?

Saban doesn’t think so.

The word “greatest of all time” gets bandied about a lot these days, and rarely is it true (see: Tiger Woods, LeBron James). However, in certain cases, it is either emphatically true (Tom Brady) or definitely worth discussing. Nick Saban, Alabama’s dynastic coach, is well-

worth discussing. The discussion doesn’t stray outside of the state of Alabama. For before Saban won his five championships (six overall), there was Paul “Bear” Bryant and his six championships at Alabama. Bryant has a stadium, museum, drive and a hall named after him in Tuscaloosa, and Saban’s got a statue of himself out front. But can the two really be compared? Bear Bryant was a trailblazer. He, in part, probably did more than anyone to advance the game

“I think Coach Bryant is probably the best coach of all time because of the longevity of his tenure as a coach and the way he changed,” Saban said after the title game. “I mean, he won championships running the wishbone. He won them with Joe Namath dropping back throwing when people never, ever did it. I just think that, for his time, he impacted the game and had more success than anybody ever could.” Popular rumor has Saban returning to the NFL to coach the New York Giants, but the smart money says he will stay at Alabama and manufacture even more championships.
