DEAR DR. ROACH: What effect, if any, does alcohol consumption have on swelling in the legs, ankles and feet? I drink only when I go out for dinner or have guests, typically a cocktail and a glass of wine; no swelling in those instances. However, I noticed that after a few days on vacation, when I drank more than two glasses of wine every night,

So, is there a connection? — B.A. ANSWER: The physiology of alcohol is complex, with potentially adverse effects on the heart, the liver and on secretion of anti-diuretic hormone. All of these can affect swelling. However, it is entirely possible, and probably more likely, that it is a combination of travel and increased sodium intake that is responsible for your most recent swelling. Even in healthy young volunteers, alcohol immediately reduces the ability of the heart to squeeze out

blood. Usually the heart returns to normal after the alcohol is metabolized, but in some people, the heart dilates over time, resulting in heart failure (swelling in the feet has many causes, but heart failure is one of the biggest concerns). In the liver, longstanding alcohol use affects the liver’s ability to synthesize proteins. Reduced levels of the blood protein albumin also might cause leg swelling. Both heart and liver effects are very mild except in people who already have disease of these organs. The role of vasopressin, also called anti-diuretic hormone, is complex. Initial inhibition of ADH leads to an increase in

urine production, then an increased level of the hormone, which can lead to water and salt retention and swelling. Even though there are at least three ways alcohol can lead to or worsen edema, it is likely that it’s simply swelling from sitting and standing too much, which commonly occurs in travel, combined with a greater sodium intake from eating out at restaurants. Sodium content at many restaurants is much higher than if you prepare your own food. DEAR DR. ROACH: I’ve been dealing with a problem for a very long time. I’d like to have someone tell me how to stop my eyes from tearing and my nose

One of the body’s protections against cold weather is to increase fluid flow to the eyes and nose, as the cold, dry air evaporates their protective moisture. Almost everybody has had the experience of a runny nose after being out in the

cold, especially when first coming into a warm room. In some people, the normal response is so strong that it becomes very annoying. It’s a type of nonallergic vasomotor rhinitis. I have had frequent success in prescribing nasal antihistamines, such as azelastine, or an anticholinergic drug like ipratropium, if the treatments you have tried haven’t worked. January Active Living Month in city By Calvin Daniels Staff Writer Yorkton Council unanimously proclaimed January as Active Living Month in the city. “The City of Yorkton’s 2020 Strategic Plan identifies building a healthy community, encouraging healthy lifestyles, and personal wellness as some of the community’s goals. One of the ways Community Development, Parks and Recreation department works to achieve these goals is providing low-cost or no cost social, recreational, and educational opportunities for all community members to participate,” explained Taylor Morrison, Recreation Services Manager, with the City at the regular meeting of Council Monday.

The promotions involved with designating January as Active Living Month in the City of Yorkton will help create awareness of the benefits of, and provide opportunities for, people to become more physically active. They hope that this promotion will: • Increase physical activity levels of Yorkton citizens. • Educate citizens and businesses about the importance of being physically active and making positive healthy lifestyle choices. • Increase use of city facilities. • Encourage families to be physically active together. • Expose citizens to different ways to become physically active.

The following schedule of activities and opportunities are being promoted as part of Active Living Month: • Free walking at the Gloria Hayden Community Centre and Gallagher Centre Nexera Flexihall for the month of January. • Sports demonstrations and clinics for squash, racquetball, pickleball, and indoor tennis. • 2-for-1 admission for squash and racquetball at the Gloria Hayden Community Centre. • 2-for-1 Drop In Sports including tennis, soccer, volleyball, basketball, badminton, and pickleball at both the Gallagher Centre and the Gloria Hayden Community Centre. • Drop In Curling Friday nights, hosted by the Yorkton Curling Club.

Lights at all outdoor rinks are on until 10:30 p.m. nightly. • Cross country ski trails and skate skiing at the Deer Park Golf Course. These trails are kept groomed by the Yorkton Cross Country Ski Club, and the club also offers a junior programming, and has a complete rental shop for those who do not have their own equipment. • The City also clears over 8 kilometres of pathways throughout the City.

Government House hosts wall of honour The Saskatchewan Wall of Honour will be on display at Government House in Regina from December 10, 2018 to January 6, 2019. The Wall of Honour

depicts the stories and pays tribute to 15 Saskatchewan soldiers awarded the Victoria Cross, the Commonwealth’s highest award for valour in war

time. It was first unveiled during this year’s Day of Remembrance ceremonies at the Saskatchewan Legislative building, as part of the commemoration

of the 100th anniversary of the Armistice marking the end of the First World War. “As one of Saskatchewan’s most historic sights and top tourist destinations, Government House is the ideal place to host this inspiring display of genuine Saskatchewan heroes,” Provincial Military Liaison Greg Lawrence said. “I encourage young and old to come view the display and to learn about the deeds of these brave Saskatchewan citizens that helped preserve our freedom and democracy.” Creation of

Every year, my sisters and I start planning our family holiday gatherings a few weeks ahead of time. In our immediate family of 25 adults and children, we have folks who can happily eat anything, diabetics, gluten-intolerant, no-sodium, vegetarians and vegans. We also have dinner guests who have chosen to eliminate large categories of food for a number of reasons, including health, religious rules, human rights, animal rights and concern about the environment. Planning meals for so many people with so many different nutritional and dietary requirements can be a challenge. If possible, prepare dishes that everyone can eat as a main course or as a side dish or dessert, and simply adjust the ingredients as needed for those with special dietary needs. I’ve provided some tips, techniques and recipes suitable for those with dietary needs that everyone at your celebrations will enjoy! NO-SALT SPICE MIX No- or Low-Salt Diet: This recipe can be used for all savory dishes and provides an abundance of flavorful spices to compensate for the lack of salt. Using this all-purpose spice mix is a healthier

way to cook for your guests. For those who want to add salt, simply place a saltshaker on the table. •1 cup (8-ounce jar) onion powder •1 cup (8-ounce jar) garlic powder •3 tablespoons poultry seasoning •3 tablespoons ground black pepper •1 tablespoon paprika •1/8 teaspoon ground cloves •1/8 teaspoon sugar or stevia Combine all ingredients in a small jar with a shaker top and use to season all savory dishes. Makes about 2-3/4 cups. ROOT VEGGIE AU GRATIN Serve up this vegan, vegetarian and glutenfree au gratin as a main dish or side. The blend of cashews, nutritional yeast (which is healthy and tastes like cheese) and the broth from the cooked vegetables mimic the butter and cheese flavors in traditional au gratin dishes. Serves 8. •1 medium butternut squash, peeled, seeds dis-

Place the cooked vegetables, onion and kale into a large bowl. Season with 1 tablespoon of olive oil, 2 tablespoons of the spice mix and the lemon zest. Toss to combine. Heat oven to 350 F. Lightly oil an 8-by-8-inch baking dish with 1/2 tablespoon olive oil. Layer the root vegetables in the dish as desired until the vegetables are almost to the top of the dish. Set dish aside while you make the sauce. Strain the water from the cashews and place the cashews in a blender along with 2 cups of reserved cooking water from the vegetables, remaining 1/2 tablespoon olive oil, 1/2 tablespoon no-salt seasoning, the rice flour and the nutritional yeast. Blend until ingredients are combined and no more cashew pieces remain. Pour the cashew mixture over the layered root

HOLIDAY ICEBOX COOKIES I would like to share this Traditional Christmas recipe. These cookies were made every year for Christmas by my mom and she has already made them for this Christmas! As long as I can remember they were always made for Christmas and my mom will be 100 years old this January 2019!

Place each of the above ingredients one at a time into a quart jar, creating layers. If the jar is not quite full crumple up some waxed paper to secure ingredients from moving around. Enclose the following instructions on a piece of paper.

•1 cup shortening •1/2 cup brown sugar •1/2 cup white sugar •1 egg •2 tbsps. orange juice •1 tbsp. grated orange rind •2-3/4 cups flour •1/4 tsp. salt •1/4 tsp. baking soda •1/2 cup pecans (broken)

“Combine contents of this jar with” •1 tsp. vanilla •2/3 cup oil •3 eggs “Bake in a 9”x9” greased pan for 30 minutes in a 350°F oven.” Use a two part lid system, place the lid on the jar. Cut out a piece of material in a circle, enough to extend about 1” beyond the ring of the jar. Place this centered on top of the lid. Secure the ring over the material to seal the jar. Dissolve baking soda in the hot water and add to the creamed mixture. Sift together the salt and flour and add half to the batter, mix well. Add the walnuts and mincemeat, mix well. MY FAVOURITE CHRISTMAS SUGAR COOKIES I always make these sugar cookies at Christmas time. I give a tinful to friends and family. They can be made plain or iced with white icing and decorated. Recipe can be cut in half or doubled. Makes 2 to 3 dozen. Preheat oven to 350°F. •1 cup icing sugar •1 cup white sugar •1 cup butter, softened (no substitutions) •1 cup vegetable oil •2 tsps. vanilla extract •2 large eggs •1 tsp. salt •1 tsp. baking soda •1 tsp. cream of tartar •5 cups of all-purpose flour To Decorate: White icing recipe, candied cherries whole or sliced, coloured sugar, chocolate kiss. In large bowl mix softened butter with sugar first then add oil and vanilla. Beat until creamed and fluffy, then add eggs one at a time. Sift the dry ingredients together and add to the butter mixture and mix well together. Form the dough into balls and place on ungreased cookie sheet. Press down with glass dipped in white sugar or sprinkle coloured sugar on top of cookies before baking them. Bake cookies unti ledges are golden brown about 20 minutes. Don’t over bake the cookies. Allow to cool on rack completely before icing them. WHITE ICING RECIPE Makes 2 cups •1/3 cup butter, softened (no substitutions) •1 tsp. vanilla extract •4 cups icing sugar •1/2 cup milk or cream In a medium bowl mix butter with vanilla, add 1 cup of icing sugar first and gradually add milk or cream then add remain-

ing 3 cups icing sugar until all blended together. Make ahead while cookies are cooling on rack so it will be ready to decorate the cookies. Take each cookie and spread as much icing on the cookie that you want. Decorate with coloured sugar, candies, chocolate kiss, candied green and red cherries with a slice put in the center. STUFFED CHERRY TOMATOES •24 cherry tomatoes •1/2 pound bacon •1/2 cup green onions (chopped) •1 cup salad dressing •1/2 cup chopped tomatoes

MINIATURE CANDY CANES •1/4 cup margarine or butter •1 pkg. (250g) about 40 regular marshmallows or 5 cups miniature marshmallows •1/2 tsp. vanilla •6 cups Holiday Rice Krispies cereal •Prepared white icing •red licorice

SPINACH PUMPERNICKEL DIP •1 loaf of pumpernickel bread

In a large microwave safe bowl, heat margarine and marshmallows at high for 3 minutes, stirring after 2 minutes. Stir in vanilla. Stir in Holiday Rice Krispies cereal until well coated. While still warm, shape mixture into 12 candy cane shapes using buttered hands. Place on surface sprayed with cooking spray, or wax paper and allow to cool. Decorate candy canes with string licorice wrapped around it, secured by icing. Best if served same day. Makes 12 candy canes. Stove Top Method: Melt margarine in large saucepan over low heat. APPLE STRUDLE SLICE •1 cup margarine (soft) •2 cups sugar •1 tsp. vanilla •1 tsp. almond extract •4 eggs (beat in one at a time) •2-1/2 cups flour Spread 2/3 of this mixture on a cookie sheet. Spread one can of apple pie filing over this batter. Sprinkle top with cinnamon. Spread remaining batter over the pie filling. Bake for 30-40 minutes at 350°F. Ice while warm. Icing: •3/4 to 1 cup icing sugar •1 tsp. margarine •1-1/2 to 2 tbsps. milk (or warm water) •1 tsp. almond extract Drizzle over the warm cake. Try cherry or blueberry pie filing instead of apple.. Bring to a full rolling boil, stirring constantly. Keep the heat lowmedium. Continue boiling for 5 minutes and stir constantly. Remove from heat. Stir in chips until melted. Add the orange juice, stirring until marshmallows melt. Remove from heat. Combine with remaining ingredients, mixing well. Press firmly in 9x5x3 inch loaf pan lined with wax paper. TACO DIP •16 oz. of softened cream cheese •16 oz. container of sour cream •2 tbsps. of taco seasoning •1 cup shredded cheddar cheese •iceberg lettuce (diced & shredded) •1 tomato diced In a large mixing bowl, combine cream cheese, sour cream and taco seasoning with a hand mixer until the dip is combined and creamy. If there are small clumps, then the cream cheese is not soft enough. Just let it sit longer so the cream cheese can soften again and mix again. Once it is mixed, pour into serving platter. CHRISTMAS MORNING SKILLET (An easy, filling, one pan breakfast or supper, for a busy night)

•1-1/2 cups all-purpose flour •1 tsp. cream of tartar •1/2 tsp. baking soda •1/2 cup unsalted butter (Becel margarine works well too) •1 cup white sugar •2 eggs •2 tsps. orange or lemon juice •1/2 cup dried cranberries

•2 cups frozen, shredded hash brown potatoes •1 cup fully cooked ham, diced •1/2 cup onion, chopped •2 tbsps. canola oil •6 eggs •salt & pepper to taste •1 cup cheddar cheese, shredded with minced fresh chives for garnish

In a bowl, whisk together flour, cream of tartar and baking soda. Set aside. In a mixer bowl fitted with a paddle attachment, cream butter, sugar, eggs, zest and juice until fluffy, for 3 minutes. Using a wooden spoon, gradually stir in flour mixture until incorporated. Fold in dried cranberries. Chill for 15 minutes. Using a #40 disher or scoop or a tablespoon, scoop dough and place on baking sheets about 2 inches apart. Bake until light brown, 10-12 minutes. HOMEMADE CHOCOLATE COVERED CHERRIES If you love to buy a box of chocolate covered cherries you will love these even more now, you can make them at home and they taste a lot better. I always make a tinful for the Holiday Season! Fondant: •2 tbsps. butter, softened ( no substitute) •2 tbsps. corn syrup •dash of salt

•1 cup icing sugar •20 maraschino cherries with stems on or not, drained and dried •5 squares semi-sweet chocolate Combine butter, corn syrup, salt, blend in sugar until smooth, chill until fondant is firm to handle. Take a dried cherry and wrap 1 tsp. or 1-1/2 tsp. of fondant around the cherry completely roll in your hands until smooth. Chill until firm and plate. Melt chocolate slowly over low heat stirring constantly not to burn. Take off heat. Dip chilled cherries into chocolate and cover completely and place on waxed paper. Chill until chocolate is firm. Store in fridge until you want to serve them or give as a gift but allow the cherries to stand at room temperature for 2 hours before serving so the fondant can soften. *Cherries can be soaked in Brandy or Sherry for 24 hours before using, but allow to dry well before wrapping with fondant. Keep a batch of fondant in your fridge over the Holiday season to make more when needed. Holiday Recipes CHICKEN FAJITAS •1 medium onion •1 green pepper •1 red pepper •1/2 lb. mushrooms •2 boneless chicken breasts •1 large pkg. flour tortillas •2 cups shredded cheddar cheese •taco sauce or salsa •sour cream Thinly slice onion, peppers and mushrooms. In a large frying pan saute onion and chicken strips that are sliced in thin strips in 2 tbsps. olive oil. Add peppers and mushrooms. Saute until soft. Put tortillas on cookie sheet. Sprinkle with cheese. Heat under broiler until cheese melts. top with chicken vegetable mixture. Add salsa and sour cream if desired. Roll up and eat. Enjoy! Marcella Shewchuk Rama, SK.

INSTANT WHIPPED SHORTBREAD •1-3/4 cups instant blending flour •1/2 cup sifted icing sugar •1 cup butter Cream butter thoroughly in a small mixing bowl. Sift flour and icing sugar, add gradually to the butter using low speed on electric mixer, then beat on medium for a few seconds. Roll into small balls and place on ungreased baking sheets. HEARTY BEAN SOUP •2 tbsps. butter •2 tbsps. onion, finely chopped •1 carrot, finely chopped •1 potato, finely chopped •1 cup water •14 oz. Heinz DeepBrowned Beans •12 oz. evaporated milk •1 cup cooked ham, finely chopped •1 tsp. salt •1/4 tsp. black pepper •1/8 tsp. marjoram •parsley flakes (optional) Melt butter and saute onions. Add carrot, potato and water. Cover and simmer 10 minutes. Stir in milk, ham and seasonings and stir to combine well. Add beans. Cook over medium heat, stirring occasionally, until hot. Sprinkle with parsley flakes and serve. Serves 6 to 8. Note: The milk has a tendency to curdle if added directly to the hot soup. To remedy this temper the milk by either heating the milk slightly in the microwave or adding a little of the hot broth back into the milk before incorporating it into the rest of the soup. Thereafter heat only until hot. Do not boil as it will cause the milk to curdle as well. I prefer to have the carrot and potato more on the chunky side rather than finely chopped. Stir together brown sugar, nuts, flour, soda and salt; stir in eggs and vanilla. Carefully pour over butter in pan; do not stir. Bake at 350°F for 20 to 25 minutes. Sift powdered sugar over top. Place waxed paper under wire rack; immediately invert pan onto rack. Cool. Dust again with powdered sugar. Cut into bars. Write Noel on each bar with green decorator icing. Make 24 bars. Sylvia Humeniuk Yorkton, SK. PUFF SHELLS WITH HAM PATE •1 cup cold water •1/2 cup butter •4 eggs room temperature •1/2 tsp. salt •1 cup flour Bring water, butter and salt to a boil. Remove from heat and stir in flour. Return to heat and cook 1 minute. Cool 5 minutes. Add 1 egg at a time, stirring well. Let stand until cool. Place teaspoons of dough on greased cookie sheet. Bake at 400°F for 30 minutes. Prick top with toothpick, leave in turned off oven for 10 minutes. •8 oz. cream cheese •1/2 cup salad dressing •2 tins flakes of ham •1 tbsp. parsley •1 tbsp. minced onions •1/4 tsp. dry mustard •1/4 tsp. tabasco sauce Put cream cheese and salad dressing in food processor. Preheat oven to 350°F. Beat butter or margarine and sugar together until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a seperate mixing bowl. Add to butter mixture in several additions, mixing well. Stir in dried cranberries and white chocolate chunks or chips. Drop on ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. CHRISTMAS SALAD •1/2 cup pecan halves •1 - 120g pkg. mixed spring greens •1/2 cup dried sweetened cranberries •1/2 cup red onion, thinly sliced •1/4 cup canola oil •2 tbsps. soy sauce •2-1/2 tbsps. balsamic vinegar •2 tbsps. brown sugar •1 tsp. ginger •1/2 tsp. dried red pepper flakes •1/2 cup blue cheese or goat cheese crumbled Lightly brown pecans in skillet for 2-3 minutes. Cool. Place greens, cranberries and onions in salad bowl. Shake together until well blended: oil, soy sauce, vinegar, sugar, ginger and pepper flakes. Pour dressing over lettuce mixture; toss gently, yet thrououghly to cool evenly. Top with pecans and cheese. Serve immediately. Ann Antoniuk Sturgis, SK.

BAKED HAM IN A BLANKET •2 cups flour •1/2 cup brown sugar •1 tbsp. cloves or less •1 tbsp. cinnamon •1 tbsp. dry mustard •1/2 tsp. black pepper •cider or water •5-6lbs. boneless ham Make a spice dough by combining the flour, sugar and seasonings in a large mixing bowl. Add enough cider or water to make a stiff dough. Roll until it is 1/4 inch thick and form a 10x12 inch rectangle. Place the ham, fat side up, in a foil lined open roasting pan. Cover top and sides of the ham with a blanket of dough. Bake at 350°F for 3 hours. Cover with foil tent if crust becomes too brown. Remove ham and slice. Serve warm or cooled. The pastry blanket maybe too spicy for some and can be removed after baking. All spices can be cut back. While the ham is cooking, the house fills with a wonderful aroma. That smell always meant celebrations at home. The spice blanket flavours the ham and keeps it moist. Marcella Shewchuk Rama, SK.

IRISH STEW Here is a quick stew using lamb which makes an economical meal. •1-1/2 lb. boneless stewing lamb •2 tbsps. fat •1-1/2 cups sliced onion •1 clove garlic, crushed •2/3 cup flour •salt and pepper to taste •1/2 tsp. thyme •3-1/2 cups water •2 tsps. worcestershire sauce •6 carrots, cut in 2 cm pieces •8 medium potatoes, quartered Trim excess fat from meat and cut in 4 cm pieces. Brown meat in fat and remove from pan. Add onion and garlic and saute until onion is transparent. Return meat to pan. Sprinkle with flour and brown again lightly. Add seasonings and water. Bring to a boil. Reduce heat, cover and simmer until meat is almost tender - about 45-60 minutes. Add vegetables and cook until meat and vegetables are tender - about 30 minutes more. CORN CHOWDER SOUP (Can double or triple recipe) •1 cup potatoes (cubed) •1/4 cup carrots (diced) •1/4 cup chopped onion •1 cup water •celery or celery seed •salt •pepper Simmer 15-30 minutes until tender. Add 2 tbsps. flour and 1 cup milk to vegetables to thicken. Add 1 can of cream corn. Can add Parmesan and heat. I usually put in slow cooker till ready to serve. Dianne Eckersley Rocanville, SK. JUMBO RAISIN COOKIES •2 cups raisins •1 cup water Boil 5 minutes and set aside to cool. In large bowl add and cream together: •1/2 cup shortening •1/2 cup margarine •1-2/3 cup sugar Add 2 eggs, 1 tsp. vanilla to creamed mixture and blend together, add cooled raisins and liquid. PEACHES AND CREAM •1 - 3 oz. peach jelly powder •1 cup boiling water •1 cup peach juice •1/4 tsp. almond flavouring •1 cup whipping cream •1 - 14 oz. can sliced peaches Dissolve jelly powder in boiling water. Add juice and flavouring. Stir. Measure out one cup jelly and chill till syrupy to thick. Leave remainder of jelly at room temperature. Whip cream until stiff. Fold into thickened jelly. Pour into mold. Chill. Put remainder of jelly in fridge to chill until syrupy. Fold peaches into thickened clear jelly. Spoon over first layer. Chill until firm. Unmold and place on serving plate. Mix well and cool slightly and add the coloured marshmallows and coconut and mix to incorporate and press into a parchment lined 9”x9” pan. Cool until firm and cut into squares. Press into a greased 13x9” pan. Bake at 350°F for 12-15 minutes or lightly browned. In a mixing bowl, combine brown sugar and eggs, mix well. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in almonds and cherries. Spread over crust. Bake at 350°F for 30-25 minutes or until bars pull away from sides of pan. Cool. RICE AND SPAGHETTI PILAF •1/4 cup margarine or butter •1 cup medium grain rice •2 ounces spaghetti, broken into 3/4 inch pieces •3 tbsps. finely chopped onion •2-3/4 cups water •2 tbsps. instant chicken bouillon granules •1/2 tsp. dried rosemary or thyme, crushed snipped parsley (optional)

rice, spaghetti, and onion; cook and stir mixture for 8 to 10 minutes or till spaghetti is golden brown. Add water, bouillon and rosemary or thyme. MANDARIN ORANGE SALAD AND CELERY SEED DRESSING •Lettuce and romaine mixed •1 can orange segments (drained) •dried cranberries •red onion (sliced) •almonds Dressing: (can half the recipe) •1 cup sugar •2 tsps. dry mustard •salt •2/3 cup vinegar •1 cup oil •1 tsp. celery seed Mix all but oil in blender. Slowly add oil. Add to salad. This dressing keeps well in fridge. Dianne Eckersley Rocanville, SK. SIMPLE VANILLA PUDDING •1/2 cup sugar •1/4 cup cornstarch •2 egg yolks •2 cups milk •1 tsp. vanilla •2 tbsps. unsalted butter, diced In a saucepan off the heat, whisk together the sugar and cornstarch Whisk in the egg yolks, 1/4 cup of the milk and when smooth add the remaining milk and the vanilla. Bring to a boil over medium heat, whisking constantly and scraping the bottom and sides of the pan until the mixture thickens. Remove from heat. Pass through a sieve to remove any lumps if needed. Pour pudding into a bowl, cover with plastic wrap directly on the surface of the pudding. Let cool. Refrigerate until set and chilled. Stir gently until softened. Makes 4 servings. SNOWBALLS •1/2 cup butter •1 can (14 oz.) sweetened condensed milk •3 tbsps. baking cocoa •1 tsp. vanilla extract •2 cups graham wafer crumbs •1-1/2 cups coconut •32 to 36 large marshmallows •2 cups additional coconut Line a baking sheet with waxed paper. In a saucepan, combine butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove, stir in wafer crumbs and 1-1/2 cups coconut. Cool. Using moistened hands, wrap 1 tablespoon of mixture around each marshmallow (dip hands in water to prevent sticking). Roll in coconut; place on baking sheet. Cover and freeze until firm. Store in airtight container in refrigerator or freezer. May be frozen up to 2 months. Yield: approx. 3 dozen. Merry Christmas and many special memories in the New Year! Gradually add flour mixture to butter mixture until blended. Stir in baking chips, peanut butter cups and pretzels. Drop dough by tablespoonfuls two inches apart. CINNAMON ROLL FRENCH TOAST ROLL UP •10 slices of bread •3 tsps. butter, melted •3 tbsps. brown sugar •3 eggs •1 tsp. milk •1/2 tsp. cinnamon •1/2 tsp. vanilla Roll each slice of bread flat. Cut off crusts. In a bowl combine melted butter, brown sugar and 2 tsps. cinnamon. Spread onto each slice of bread and roll up. In a bowl combine eggs, milk, 1/2 tsp. cinnamon and vanilla. TURKEY VEGETABLE CASSEROLE (Great way to use leftover turkey and vegetables) •4 cups cooked vegetables (carrots/green beans/broccoli/cauliflower)

•2 cups cooked turkey, cubed •1 can cream of mushroom soup •1/2 cup milk •1 - 250g pkg. cream cheese •1/2 tsp. dill weed •salt and pepper to taste •1 pkg. turkey stove top stuffing Put vegetables and turkey into a greased casserole dish. Mix soup, milk, cream cheese, dill, salt and pepper. Pour over vegetables and turkey. Stir to blend. Prepare stuffing according to package instructions, and spoon over turkey mixture. DOUBLE CHOCOLATE RUM BALLS •2 squares of semisweet chocolate •1/4 cup corn syrup •1/4 cup icing sugar •1/3 cup dark rum •2 cups chocolate wafer crumbs •1 cup finely chopped walnuts or pecans or hazelnuts ( processed in food processor) Melt chocolate squares over low heat stirring constantly to not burn the chocolate until it is all melted. Take off heat and add corn syrup, rum and chocolate wafers and nuts of choice. Mix well altogether. Chill until firm to handle, at least 2 hours. Shape into 1 inch balls. Roll in icing sugar. Store in an airtight container in fridge for at least a week to mature. I always like to make a double batch because they will go fast. Great gifts or take to a party! Elizabeth Kunitz Ituna, SK.

Combine: •1-1/2 cups graham crumbs •1/3 cup softened margarine •1/2 cup sugar Press into 9x13 pan. Bake 8 minutes at 350°F. Cool. Whip 2 cups whipping cream and 2 tsps. lemon juice. Spread on crumb base. Topping: •1 can cherry pie filling Spread the cherry pie filling on top of cream cheese layer. (Top with crumbs if using). Chill until set.
