ANSWER: Nonsteroidal anti-inflammatory drugs such as aspirin, ibuprofen and naproxen are among the most commonly taken classes of drugs in the world, with 17 million
Americans alone taking them daily. Although these drugs are generally safe, any medication has the potential for side effects. Typically, the higher the dose and the more frequently it is taken, the increased risk of side effects. So, a once-a-week dose would be expected to have a low side effect risk. Adverse effects from this class are among the most frequently seen in clinical medicine. Although they can affect multiple systems, let me briefly go over the side effects of NSAIDs on the GI tract, kidneys and heart. NSAIDs can affect the kidneys, causing both acute and chronic kidney failure, but only in a few percent of people. Periodic blood and urine examination is appropriate for people who are on long-term NSAIDs.
The risk of heart disease among people who use NSAIDs regularly is increased, but in people without known heart disease, the risk is small — about one bad event, such as heart attack, stroke or episode of heart failure, per thousand people taking the medication for a year. I would advise you that the risk of any of these side effects is unlikely in someone taking the drug only once a week, but people who take these drugs every day should know about the potential harms. DEAR DR. ROACH: When I was 64, a cyst was found in my bladder. When the cyst was removed, it was found to be cancerous. My urologist wants me to
continue to have an annual cystoscopy, which I do. I’m now 76 and in good health. Do you feel the annual cystoscopy is still necessary? — C.K. ANSWER: Now that more people have had successful treatment of cancer, we are starting to learn about the risks they face in subsequent years. The risk of another cancer is generally higher, but it’s the exact form of cancer that determines how much risk there is, and consequently, how aggressive follow-up must be. In the case of bladder cancer, I have read some studies that the risk is quite small after five years. However, the American Urologic Association has clear guidelines: Because of the increased risk for recurrence, it recommends annual cystoscopy indefinitely. Cystoscopy is
a pretty safe procedure, so I think your urologist’s recommendation is reasonable. Yorkton gains palliative care rooms By Sean Mott Staff Writer East central Saskatchewan patients and families facing the difficult journey of end-of-life care now have dedicated rooms for their specific needs. The Health Foundation, with support from a series of donors, unveiled two new palliative care rooms at the Yorkton Regional Hospital on Sept. 20. “[These rooms] came about because there’s a need,” said Ross Fisher, Executive Director with the Health Foundation of east central Saskatchewan. “The community strongly said it’s worthwhile.” Palliative service is typically associated with end-of-life care. It’s designed to provide comfort and support for patients
with life-shortening illnesses. It focuses on reducing the stress and pain from such illnesses while boosting the quality of life for both the patients and their families. The Yorkton hospital offered palliative care in the past, but it lacked dedicated space for such services. Two rooms in the hospital’s west section were closed and renovated to provide palliative care. The new rooms include a small kitchen area, a bathroom, and a mechanism to move immobile patients. The renovations cost $100,000. Fisher thanked the over 500 people who donated money and time to bring the project to life. “People supported [the project] from all over,” he said. “It makes me feel good about the community we live in. “People care.”

Wet weather stalls harvest progress A wet and cool week stalled most harvest operations in the province. Sixty-two per cent of the crop is now in the bin, according to Saskatchewan Agriculture’s Weekly Crop Report. The five-year (20132017) average is 53 per cent for this time of year. Twenty-six per cent of the crop is now swathed or ready to straight-cut. Rain fell over the majority of the province, with the largest amounts being reported in the central and northern regions. Many areas in these regions recorded more than 30 mm of rain. Snow was reported in the northwest region.
Harvest is most advanced in the southwest region, where 86 per cent of the crop is now combined. The southeast region has 84 per cent combined, the westcentral 57 per cent and the east-central region 55 per cent. The northeast region has 29 per cent combined while the northwest region has 17 per cent combined. Ninety-six per cent of lentils, 95 per cent of field peas, 78 per cent of durum, 50 per cent of spring wheat, 44 per cent of canola and 25 per cent of flax has now been combined. Across the province, topsoil moisture
conditions have improved. Cropland topsoil moisture is rated as four per cent surplus, 40 per cent adequate, 37 per cent short and 19 per cent very short. Hay land and pasture topsoil moisture is rated as 31 per cent adequate, 38 per cent short and 31 per cent very short. Limited rainfall throughout many regions of the province has pasture conditions rated as 14 per cent in good condition, 23 per cent in fair condition, 36 per cent in poor condition and 27 per cent in very poor condition. The majority of crop damage was due
to lodging and rain causing quality loss. SaskPower says there were two reported cases of farm machinery contacting electrical equipment over the last week, bringing the total in September to eight. Free childhood immunizations are available for infants and school-age children in Saskatchewan to protect them against highly contagious and potentially serious diseases like measles, mumps, whooping cough and chicken pox. “It’s important to have your children vaccinated on time and on schedule to ensure full protection, especially in schools or other settings where they are most exposed,” Chief Medical Health Officer Dr. Saqib Shahab said. “Recent measles outbreaks in Europe and other countries are also a reminder that infectious diseases can spread quickly, through travel and coming into contact with
unimmunized or underimmunized individuals.” Routine vaccinations are free of charge and easily available in Saskatchewan at public health clinics (for preschool children) and through school-based programs (for school age students). Pain identification and management in pets Based on physiological and neurological studies, it has been shown that animals feel pain in very much the same way we do. It is safe to assume if something causes discomfort in you, it will also cause discomfort in your pet. Untreated pain has many damaging system-wide repercussions. Pain identification in animals is difficult. They cannot easily tell us where it hurts. There are many misconceptions regarding pain in animals. For example, a pet that is not moaning or crying out is not necessarily pain free. Most animals are not vocal about their pain, so subtle behaviour and physical changes must be noted. From a
survival point of view, it was to an animal’s advantage to suffer quietly and not draw the attention of predators to themselves when still wild. There are certain indications or signs that one can look for. An individual pet’s temperament may make these much more or less evident. Some pets, like some people, appear to be quite stoic, with apparent higher thresholds for pain tolerance. Hospitals use pain score systems to classify degree of pain, which helps provide objective assessments. Certain signs may suggest pain: • Vocalization (crying out, whimpering, howling, growling, hissing);
• Retreating from the family (to hide and be left alone); • Appearing uncomfortable, which may manifest in pacing, restlessness, and repeatedly shifting into different positions [arched back, forelegs held out from chest wall, or sitting in a prayer position (posture of relief), poor sleep]; • Looking “anxious” (may be evident in the eyes and facial expression); • Heavy panting; • Snapping/biting/ scratching if handled, while others may simply grunt; • Reluctance to move, as if frozen; • Decreased or lack of appetite;

Joanne Neilson, who raises Charolais cattle with husband Mike, near Willowbrook, said taking some specific time to look at the sector makes good sense. “It is a good idea to investigate the who, what, where, when, and why of agriculture during a specific time,” she said. “It puts focus on the local agricultural economy. It gives producers one chance to reflect the message that they are presenting to the public.” Kaitlyn McMurphy, who raises Hereford cattle west of the city, with husband Mark, said the month raises awareness of an important industry in the region, province, and country. “I think that it is important to recognize the agriculture industry in Saskatchewan because it has played a vital role in the formation of the province of Saskatchewan as well as our current economy,” she said. “According to the Government of Saskatchewan’s 2016 Census, agriculture contributed to $ 12.5 million in exports which contributed to approximately 28 per cent of Saskatchewan’s GDP, (Gross Domestic Product). Currently in Canada, one-in-eight people are employed by the agriculture and agri-food industry.” Jennifer Lindgren, who along with husband Jordan, were named Saskatchewan’s Outstanding Young Farmers for 2018, also saw the recognition as important based on the significance of the sector. “Ag month in Saskatchewan needs to be recognized and celebrated because it is one of the largest industries in the province,” said the Norquay area producer. “Agriculture directly and indirectly affects everyone in the province whether it be food, Continued on Page A11

IMPORTANT Continued from Page A10 transportation, oil and gas, insurance, and employment.” Linda Banga, a Clydesdale producer in the Canora area said the month is an opportunity to tell the stories of farming. “It is important to mark Agriculture Month in Saskatchewan because it gives farmers and ranchers a chance to tell their stories,” she said. “Their stories are not just about raising their livestock and growing their crops, but their stories are one of raising their kids to be hard working people who persevere through the ups and downs of life. By sharing these stories people around Saskatchewan get an insight into life on the farm.” The month is an opportunity for producers to tell their stories, but Neilson said that is not as easily achieved as one might expect. “Everybody says we should be more vocal, but often I find that when people voice their misconceptions, it almost becomes an argument when I try to convince them otherwise, because they already are convinced of their (mis)knowledge,” she said. “Even within different agricultural communities there is a lack of understanding – as between grain producers and cattle producers, organic or conventional. “However, I think that it is important to continue to use various media to get our healthy food message out.” Lindgren said producers need to be ready to

People want to know where their food comes from and know that it is safe. By talking with a farmer, and getting that information first-hand, it is the best way to understand that farmers are using safe practices to produce safe products.” McMurphy said farmers have a good record they are most willing to share. “Most farmers that I know are extremely proud of their operations and enjoy the opportunity to speak to consumers,” she said. “In Canada, 97 per cent of farms are family owned and operated producing only the highest quality of food that they would feed their own children.” Banga said farmers must share their stories for the good of the sector. “Farmers must be more vocal when it comes to agriculture. Consumers are bombarded with misinformation and propaganda when it comes to farming, and it is up to producers to set the story straight,” she said. “Farmers need to reconnect with people who
consume food because it is important for consumers to know that farmers care about the food they produce and as a consumer themselves they want to produce good quality food.” So, what is one message these farmers would give a family which has no direct ties to farming? “Go visit a farm family,” said Banga. “You will see that they are hardworking people just like you, who are trying to produce good food for your family and theirs. Farmers care about their communities, they love the land and they most certainly love their animals.” McMurphy said she would want them to know that consumers matter to producers. “As a rancher if I could pass on one message to urban families it would be that I care about their health and safety just as I care for my own family,” she said. “I am proud of the beef I produce prioritizing animal welfare and managing the land to conserve the environment sustainably.” “That we are working to produce safe products to feed our family, their family and the world,” echoed Lindgren.

Young rancher gains mentor insights
By Calvin Daniels Staff Writer Kaitlyn McMurphy recently completed the Cattlemen’s Young Leaders (CYL) Mentorship Program. The program, provided through the Canadian Cattleman’s Association provides industry-specific training and interestspecific mentorship to assist the Beef industry into the future. “It hooks young producers up with established producers,” McMurphy told Yorkton This Week. “Young producers between the ages of 18 and 35 have the opportunity to engage with industry leaders and participate in many events and meetings, pertaining to the cattle industry both at home and on a global scale,” further detailed the program’s website. The focus of the program was a great fit for McMurphy who was raised on a mixed grain and commercial cow/calf operation near Jedburgh, SK. Her love for cattle developed early as she enjoyed checking cows with her grandpa and watching the calves in the pastures. Joining the local 4-H club at the age of six, she was a member of for 12 years. At the age of 15 she began to build her own purebred Hereford herd and joined the junior association. She has completed a Bachelor of Science in Agriculture degree from the University of Saskatchewan majoring in Animal Science. Her undergrad thesis was
entitled, “Minimizing the Stress of Weaning on Beef Calves”. McMurphy said it was an extensive process to be accepted into the national program, starting with her being one of 75 to submit a written application. From those applicants 24 were chosen to attend the Canadian Beef Industry Conference where they took part in round table discussions which lead to the final 16 participants being selected to move on. The finalists came from across Canada, with nine being women. “Then we were paired up with a mentor,” said McMurphy, adding they found mentors with expertise in areas the participants had noted through the application process they were most interested in. In her case priorities included learning more about intergenerational transfer of a farm, and how to best balance a career and running a cattle operation. “One was balancing a successful career in industry and cattle,” she said, adding she has definite plans on both sides of the equation. McMurphy is an inspector with the Canadian Food Inspection Agency, and together with her husband Mark, they are ranching alongside her parents Allan and Juanita Polegi who operate Sorefoot Creek Farms (Herefords). In her case the mentor was Jill Harvie. Harvie ranches with her husband Cole and
his family near Olds, AB., under the name Harvie Ranching and is a partner in her parent’s operation called OVHF. She has a strong passion for the purebred industry. McMurphy said Harvie being involved in the purebred Hereford business, and having a job off farm was a great match in terms of what she sees in her future. Currently, McMurphy and her husband currently own three-quarters of land, and help her parents in the overall management of 135 cows. “They’re starting to step away a little more each year,” she said, adding in five or six years they plan to be the sole operators. Her parents’ operation, started by grandfather Emil, was originally a mixed-farm, but has since been converted to just a cattle operation. Keeping the focus on farm sector As the calendar turns to October it is time again in Saskatchewan to mark Agriculture Month. At times I am conflicted on the value of the arbitrary marking of days, weeks and months. Today there are so many, including the likes of International Broccoli Day that they all become something so oft repeated the impact of all is minimized. That in no way is suggesting the agriculture industry is not an important one, in particular to the local region, and the province given both were basically born out of the industry as immi-
grant farmers settled the Canadian Prairies. The idea of Agriculture Month is to celebrate agriculture and share stories about food and farming. It is proclaimed annually in Saskatchewan, to in-part provide an opportunity for those who grow food, and those who eat it, to connect. That is a good idea to be sure, especially as an ever-growing segment of our population is wellremoved from farming. It used to be a phenomenon of the big city where residents had almost zero contact with a working farm. Today however you can walk into a classroom in a small city such

McMurphy said often the best information she learned was not about how Harvie found success, but how she responded to adversity. “It was how she failed and learned from that,” said
McMurphy. While the two did meet, most of the mentorship relied on the telephone. “There were lots and lots of phone calls,” said McMurphy. Overall, McMurphy said the program was all she had expected, although she said more time would have been great as it was always an issue working in time for the program. “I think it surpassed expectations,” she said, in particular building her confidence to meet people and talk about the industry. And Harvie will always be just a telephone call away. “Jill will be a lifelong mentorship,” she said.

We might argue that because food is essential to existence our understanding of the industry built up to produce process and deliver it should be higher than other sectors. That would certainly seem a reasonable suggestion. It certainly seems better understanding of the source of our food would lead to discussion of issues such as crop protection product usage and genetically modified crops from

a more informed position than is the case today, where emotion and rhetoric seem all too prevalent. But, does declaring a specified time help accomplished that? That is a question where the answer would be very difficult to quantify. What it does do is help focus attention on the industry and hopefully has those involved in it making an extra effort to tell their story. Whether those disconnected from the sector pay attention is another question, but at least the effort to start an informed dialogue is there.

Canola group honours Yorkton man By Calvin Daniels Staff Writer A near 30-year stint as executive director of the Saskatchewan Seed Growers Association has earned Yorkton’s Dave Akister an honourary life membership with the Canadian Seed Growers Association. Akister’s company, (Brock & Associates) was hired by the Saskatchewan board of directors in 1991 to conduct an evaluation of the association’s administration, operate the organization for a short term and find a new executive director. Akister said he had put together a list of potential candidates, but instead the Association “made a pitch to me.” Akister accepted the position, and has been involved in the seed grower sector ever since. In an interview with Yorkton This Week, Akister said the life membership at the national level was unexpected. “It was a surprise, not at all expected,” he said, then added with a smile, “but I guess if you live long enough.” Akister was awarded an honourary life membership in the Saskatchewan Seed Growers Association in 2013, but with a number of years passing he said he was not thinking of the national recognition. “Both of them, (awards) were very surprising,” he said. Looking back to 1991, Akister said the provincial organization was looking for skills not necessarily related to seed growing. “What they identified as being needed was administrative expertise,” he said, adding those were skills he developed initially as a member of the media. Akister launched a 14-year career with the media right out of high school serving with Thompson Newspapers across Western Canada as a photographer, reporter, reporter, investigative journalist, sports editor,
city editor, wire editor, managing editor and assistant publisher. He capped his career in journalism as managing editor of the Yorkton Enterprise. After retiring from The Enterprise Akister joined Brock & Associates, at the time a fledgling advertising agency in 1984, as an Account Executive, rising through the ranks of operations manager and general manager before becoming a partner in 1986. He bought out his remaining partner in 1990 and re-configured the company into the communications and management consulting business. It was through his consulting business he became involved with the seed growers. “It was just one client of many,” he said, adding the relationship grew over time. “… It just kind of kept blossoming.” Through the years Akister said the position with the Seed Growers evolved to cover a rather wide range of things. During his time, Akister was in on the formation and design of Crop Production Week, built prototypes of the Canadian Seed Institute Quality Assurance manuals, and helped design CSI’s original Board of Directors structure, noted his bio. “He revamped the former Stock Seed Committee into the current Seed Industry Advisory Committee, a think tank group of industry stakeholders that meets annually to discuss some of the toughest issues facing the industry; and redesigned the Interprovincial Seed Industry meeting into a broad stakeholder forum. “He negotiated the current Saskatchewan Seed Guide Contract which had become a significant source of revenue for the Saskatchewan Seed Growers Association; developed the current E&P strategy for SSGA; oversaw two Saskatchewan Seed Industry Economic Impact Studies which have been used to outline the seed industry to banks,

he believes is consumer fear based on not understanding the science. For example, Akister said people are essentially genetically modified being coming from their parents. In that respect he said GM “goes back to the fundamental of improving Canadian agriculture. It’s one more tool in the toolbox.” It will be such technology that will one day “allow wheat to grow in the desert again,” he said. Akister said in general farmers produce more than enough food to feed the world, the issue of people going hungry one of transportation to get food where it’s required in an affordable fashion. But, like the near threedecades in the sector, change comes, but comes slowly, he added. The evolution of the sector will be part of what Akister misses, but he noted it will mainly be the people. “I made a lot of friends over the years,” he said.

He helped develop technical resource manuals; has worked with U.S. authors and publishers on a book of quotes; and will be mentioned in an upcoming thesis by a University of Saskatchewan graduate student on the elements of good governance.” All the activities boil down to a simple premise going back to the beginning of the sector in 1904, suggested Akister. “The seed industry is about improving Canadian agriculture,” he said. “That is what it was there for.” While the organization has evolved beyond the single focus, it remains a key aspect of what seed growers do, “seed being the foundation for all of it,” he said. PAMI offers info on storing wet grain Given the recent and widespread rain, snow, and cool temperatures experienced across the grain belt, Prairie Agricultural Machinery Institute (PAMI) is reminding producers of a number of recommendations to help them minimize the risk of spoilage of wet grain stored in bins. “We know producers are very concerned about the moisture content of their crops going into the bin,” said Dr. Joy Agnew, project manager of Agricultural Research Services at PAMI. “This has been an area of much research at PAMI and although some of our multi-year projects are still ongoing, the data we have already collected on the use of heat in grain drying can be used by producers to minimize losses in wet years like this.” Adding supplemental heat to natural air drying involves two basic steps, she said. The first is to use the heat to draw moisture out of the grain and into the air that is in the pockets between kernels, and then use moderate airflow rates to move that moist air out of the bin.
“A lot of our research has centered on wheat and canola but the physics apply across the board to any crop,” said Agnew. “For every 10° C you can increase the temperature of the air going into the bin, you cut the relative humidity in half. That means you can turn a cold, miserable, drizzly day into perfect drying weather.” The following are some basic recommendations for improving results and reducing risk when storing wet grain. 1. The air moving through the bin needs to be at least 10-15° C for optimal drying potential and should not exceed 20-30° C to avoid high grain temperatures that can initiate spoilage. 2. Use a fan with an airflow rate of at least 0.75 cubic feet per minute (CFM) per bushel. Anything lower could result in heating of the grain, which can initiate spoilage. And, the higher the temperature increase of the air going into the bin, the more CFMs are required. With supplemental heating, hotter air is not necessarily better as you need to match your target temperature
with your fan capacity. If you don’t know your fan capacity (CFM per bushel), go to pami.ca/ storage to learn how to measure or estimate your airflow. 3. Ensure there is adequate ventilation at the top of the bin to allow moist air to escape. That means one square foot of ventilation space per 1,000 CFM. Some bin and fan manufacturers are producing fans specifically designed to move air out of the tops of bins. 4. Rotate the bin contents frequently (every few days) by removing at least one-third from the bottom and auguring it back in the top. 5. Monitor the conditions in the bin. Ideally, the moisture content should be monitored but, at a minimum, monitor the temperature in the bin. When using supplemental heat, the drying rate is considerably faster than with no heat, so keep a close eye on grain conditions to prevent over-drying. 6. The size of the heater should be based on the desired temperature increase (which
depends on the ambient temperature and the target temperature) and the airflow rate from the fan, keeping in mind the minimum air flow rate of 0.75 CFM per bushel. 7. Consider investing in thermostatic controls for heaters. The more consistent the air temperature going into the bin, the more effective the drying will be. 8. Heat transfer efficiency is important. Properly designed systems that are appropriate for the bins and fans are best, and setting up the system properly is key to efficiency and effectiveness. 9. The target temperatures mentioned above are valid for the fall season but when the outside temperature drops below about -5° C, the temperature of air going into the bin should be reduced to prevent damp grain from freezing to the sides of the steel bin. 10. When the grain is almost dry, turn off the heat and cool the grain to below 15° C. Cooling the grain will result in some addi-

tional moisture removal (ranging from approximately 0.5% to 2%). Agnew cautioned producers to use care hooking up heating and electrical systems to grain bins as they pose potential safety risks. She also noted that the main difference among the heating options (propane, natural gas, indirect hydronic, etc.) is operating cost and ease of use. Direct fired heating systems do add moisture to the air entering the bin, but the amount of water added is negligible compared to the water being removed from the bin. PAMI’s on-going research on this topic will better define the minimum airflow rates for use with supplemental heating, the drying rates with different target temperatures, and the energy efficiency and operating costs of different supplemental heating systems. Interim results will be available in 2019 and the study wraps up in 2020. This research is funded by SaskWheat and SaskCanola. More information on crop storage can be found at pami.ca/ storage
Research studying influence of fire The Nature Conservancy of Canada (NCC) and the University of Saskatchewan (U of S), are partnering to research management strategies which influence where cattle and bison graze. The NCC and U of S, with significant contributions from Meewasin Valley Authority, has conducted the first in a series of prescribed burns for a research project taking place at the Old Man on His Back Prairie and Heritage Conservation Area (OMB). The prescribed burns are part of a five-year research project to better understand how to influence where cattle and bison graze at OMB, and how fire, as a natural disturbance, changes the plant community. Spring and fall burns are tentatively planned for the area over the next three years. As part of the research, NCC and the U of S worked with local livestock producers, using GPS collars to track cat-
tle and bison movements. The Meewasin Valley Authority, with a history of using prescribed burns for similar conservation goals, provided equipment and expert personnel to support the project. The Frontier Fire Department was also on hand participating in the burn. “This research project with the U of S provides an excellent opportunity for NCC to work in partnership with multiple partners to implement the safe and effective use of prescribed fire in Saskatchewan. Prescribed fire, like grazing, is a tool for managing the disturbance-driven ecosystems of Saskatchewan,” said Matthew Braun, Manager of Conservation Science and Planning, Nature Conservancy of Canada, Saskatchewan Region The small burn patches will help U of S researchers learn if the grass that grows back following a fire attracts animals to under-used parts of a pasture. Fire makes
a quick reduction in the height of vegetation, and it changes the growing conditions for the plants. The regrowth of plants after a fire attracts grazing animals, which benefit from the higher protein content of the grass. Unlike wildfires that generally happen when the weather is hot and dry and are made worse by wind, a prescribed burn is a fire set intentionally, under very strict weather and moisture conditions, to achieve specific results. There are many variables that influence whether or not a prescribed burn can occur, including humidity, temperature and wind speed. Prescribed burns will only be conducted when every one of the very specific conditions are met. These prescribed burns create a mix of varied vegetation heights that result in a variety of habitats for grassland species while maintaining forage for grazing cattle and bison. Fire may also be used
to reduce some of the invasive plants growing at OMB. This work is all part of ensuring that OMB continues to be a healthy home for the birds and animals that live there, as well as a working ranch that provides quality forage for ranchers partnering with NCC. “This project was
designed to encourage collaboration between agencies interested in addressing complex environmental issues. The following recipe for “Chicken Wings with Bacon Barbecue Sauce” from John Holl’s “The American Craft Beer Cookbook” (Storey) is simple and sure to please foodies and their fellow football fans this season. Chicken Wings with Bacon Barbecue Sauce Makes 12 wings and plenty of leftover sauce •1 cup roughly chopped applewood-smoked bacon •12 large chicken wings •2 tablespoons extravirgin olive oil •1⁄4 cup diced yellow onion •cup dark brown sugar •1 cup robust porter •1 tablespoon unsalted butter

Put the bacon in a heavy skillet and cook it in the oven until crispy. Transfer the bacon to a paper towellined plate, reserving the fat in the skillet. Reduce the oven temperate to 350 F and move the skillet to the stovetop. Toss the chicken wings in the olive oil, arrange them on a baking sheet and bake for 1 hour, or until crisp and cooked through. Add the onion to the bacon fat in the skillet and cook over medium-high heat, stirring occasionally, until golden brown, 5 to 7 minutes. Be careful handling the skillet; it will still be hot from the oven. Add the brown sugar to the skillet and cook over medium heat, stir-
ring occasionally, until it dissolves. Add the beer, scraping the bottom of the skillet with a spatula to loosen any brown bits. Stir in the butter and simmer until the liquid is reduced by half, stirring occasionally. After the beer has reduced, add the broth to the skillet and reduce until the jam is thick, stirring occasionally and being careful not to burn it, 10 to 20 minutes. Add the Worcestershire, chipotle, oregano, thyme, and garlic powder to the skillet and stir to fully incorporate. Transfer the sauce and bacon to a blender, let cool for 8 to 10 minutes, and then purée until smooth. Remove the chicken wings from the oven, place them in a large bowl, and pour in enough sauce to liberally coat the chicken. Serve immediately. Note: This recipe yields a bit of extra sauce. Leftover sauce is great on burgers, with other grilled meats, or as a dip for bread. Or simply make a double batch of wings!

the essence. Cooking with a microwave need not be limited to frozen dinners. Take, for example, this recipe for “Italian Pork Chops” from “Incredibly Easy Italian” (Publications International, Ltd.). Easily prepared in less than 30 minutes, this meal combines homecooking with a shortcut that can make it easy to serve a delicious, hot meal on weeknights when parents or busy professionals simply don’t have much time to spend in the kitchen. Italian Pork Chops Serves 4 •2 cups uncooked longgrain white rice •4 large pork chops •1 teaspoon basil, crushed •1 26-ounce can Del Monte® Spaghetti Sauce with Mushrooms or Chunky Italian Herb Spaghetti Sauce •1 green bell pepper, cut into thin strips •Salt for seasoning (if desired) •Black pepper for seasoning (if desired) Cook rice according to package directions. Preheat broiler. Sprinkle meat with basil; season with salt and black pepper, if desired. Place meat on broiler pan. Broil 4 inches from heat, about 6 minutes on each side, or until no longer pink in center. Combine sauce and green pepper in microwavable dish. Cover with plastic wrap; slit to vent. Microwave on high for 5 to 6 minutes, or until green pepper is tendercrisp and sauce is heated through. Add meat; cover with sauce. Microwave for 1 minute. Serve over hot rice.
