SaskPower to buy more renewable electricity SaskPower has signed a new term sheet with Manitoba Hydro that lays the groundwork for purchasing an additional 215 megawatts (MW) of reliable renewable electricity available for Saskatchewan customers. “This clean, hydroelectric power represents a significant step forward when it comes to reaching our goal of reducing greenhouse gas emissions by 40

per cent by 2030. It’s also reliable baseload electricity, which we’ll need as we add more intermittent generation options like wind and solar,” said Mike Marsh, President and CEO of SaskPower. “Manitoba Hydro has been a valued neighbour and business partner over the years and this is a demonstration of that relationship. We look forward to seeing this through and continu-

ing our work together.” The term sheet lays out the framework for a power purchase agreement where SaskPower will buy 190 MW of capacity from Manitoba Hydro, with an option to purchase an additional 25 MW. A final legal contract for the sale is expected to be concluded by mid2019 and in effect by 2022. The purchase agreement would last up to 30 years,

allowing SaskPower to acquire hydro generation at a competitive cost when compared with other generation options. The exact financial terms of the agreement are confidential. “We’re extremely pleased to be able to announce that we’ve agreed to a term sheet for this significant new longterm sale to SaskPower,” said Kelvin Shepherd,

Strongest job growth in Saskatchewan in four years Statistics Canada reported today that in October Saskatchewan’s year-over-year employment increased by 9,400 jobs. This is the largest gain in jobs for the province since October 2014. Full-time employment increased by 5,700 jobs and part-time employment increased by 3,700 jobs compared to a year ago. To select a pumpkin, look for one with 1 to 2 inches of stem left. If the stem is cut down too far, the pumpkin will decay quickly or may be decaying at the time of purchase. Don’t have time to process a fresh pumpkin? There are several delicious varieties of organic canned puree available. You can add pumpkin puree to everything from stirring it into hot breakfast cereals, smoothies and sauces to savory dishes and desserts. Either fresh or organic canned puree works beautifully in my recipe for Cheesy Ravioli With Pumpkin Sauce. CHEESY RAVIOLI WITH PUMPKIN SAUCE •1 tablespoon plus 1-1/2 teaspoons salt (for pasta water and seasoning) •2 pounds cheese ravioli •2 tablespoons olive oil, plus 1 teaspoon olive oil •1 yellow onion, chopped •4 garlic cloves, peeled and minced •2 tablespoons Italian seasoning •1 teaspoon freshly ground black pepper •1/4 teaspoon red pep-

per flakes •1-1/2 cups fresh puree or 1 (15-ounce) can organic pumpkin puree •1 quart vegetable or chicken broth •1 teaspoon ground cinnamon or ground nutmeg •1 cup plain, Italian flavored or whole wheat Panko bread crumbs •1/2 cup Parmesan or Monterey Jack cheese, shredded •7 basil leaves, torn (optional) •7 sage leaves, fried in olive oil until crisp (optional) Heat oven to 400 F. Place a large pot of salted water over high heat to boil. When water is boiling, add 1 tablespoon of the salt and drop in the ravioli. Cook according to package directions. Drain cooked ravioli and return it to the pot. Meanwhile, add the 2 tablespoons of the olive oil to a microwave-safe bowl with the onions and garlic. Cook on high for 2 to 3 minutes until the onions soften. Add the onion mixture to the ravioli. Season with 1 teaspoon of the salt, 1 teaspoon of the Italian seasoning, black pepper

and red pepper flakes. In a medium bowl, mix the pumpkin and broth, the remaining 1/2 teaspoon of salt, the remaining Italian seasoning and the cinnamon or nutmeg together to make a sauce. Toss 1/2 of the pumpkin sauce with the pasta until it is well-coated. Transfer ravioli to a casserole dish. Spoon the remaining pumpkin sauce on top of the pasta. Sprinkle with the panko breadcrumbs and the remaining teaspoon of olive oil. Cover with cheese. Bake until cheese is melted, about 8 to 10 minutes. To ensure easy access to the eyewash station within 10 seconds, it must be located on the same level as the hazard with no steps, stairs or obstructions. This recipe for “Spiced Yogurt Muffins,” courtesy of the National Dairy Council, Dannon and McCormick, can be made in advance and then enjoyed while peeking into Christmas stockings or watching holiday parades on television. This big-batch recipe is ideal for feeding a houseful of

Add spices to dry muffin mix in a large bowl. Add yogurt and water mixture to the muffin mixture. Mix until just blended. Don’t overmix. Using a scoop, portion into greased or lined muffin pans. Bake at 350 F for 24 minutes, or 17 to 20 minutes in a convection oven, until the tops are golden brown.

A simple, tasty holiday treat to enjoy Baking is a holiday tradition in many families. Gingerbread cookies may be the first baked goods that come to mind when people envision the holiday season, but celebrants need not limit themselves when preparing special treats for their families. Macaroons are one beloved baked good that busy holiday hosts may believe are too time-consuming to prepare. However, the following recipe for “Coconut Macaroons with Dried Cherries” from Laurey Masterton’s “The Fresh Honey Cookbook” (Storey) is easy to whip up and makes for a tasty holiday treat.

Coconut Macaroons with Dried Cherries Makes 25 to 30 small cookies •1 cup unsweetened flaked coconut •1 cup sweetened flaked coconut •8 egg whites •Salt •1⁄4 cup dried cherries •2 tablespoons butter •1 tablespoon honey, preferably orange blossom honey Preheat the oven to 350 F. Combine the unsweetened and sweetened coconut on a baking sheet. Lightly toast in the oven for 5 to 10 minutes. Keep

close watch so the mixture does not burn, though you do want a nice toasted golden brown color. Remove from the oven and set aside to cool. Reduce the oven temperature to 325 F. (If using a convection oven, leave at 350 F.) Whip the egg whites with a pinch of salt in a medium bowl until the whites stiffen into firm peaks. Fold the toasted coconut into the egg white mixture. Line a baking sheet with parchment paper. Drop tablespoon-size rounds, perhaps using a small ice cream scoop, of the coconut mixture onto the baking sheet. Press one or two dried cherries into the

top of each macaroon. Melt the butter and honey together in a microwave on high for 20 seconds. Drizzle the mixture over the top of each macaroon. Sprinkle with a tiny pinch of salt. Bake the macaroons for 20 to 25 minutes, until lightly browned (watch carefully to avoid burning), or for 8 to 10 minutes if using a convection oven. The macaroons should be dry to the touch. You may need to bake them longer if it is a humid day. If you live in a dry area, these will keep well for a week. Chef’s note: If you want to be really fancy, melt some chocolate and dip each one halfway into it.

When is clumsiness a cause for concern Who hasn’t tripped over his own feet or knocked over a water glass on a table? No one is immune to the occasional clumsiness, but some people may grow concerned that their bouts of clumsiness are becoming more frequent. For healthy people, bumping into a wall when misjudging a corner or dropping silverware on the

In 2007, Professor Charles Swanik and a research team at the University of Delaware studied athletes to discover why some seem to be more injury prone than others. have “slowed processing speed,” which referred to how their brains understand new information and respond to it. be an early symptom of Parkinson’s disease or Alzheimer’s. Parkinson’s affects the central nervous system and can impair motor skills. Alzheimer’s slowly damages and kills brain cells and may cause issues with coordination. This may be the case with other dementias as well. Clumsiness may sometimes result from a lack of sleep or overconsumption of alcohol. Arthritis also can lead to clumsi-

Psychologists may suggest cognitive behavioral therapy or propose performing tasks with more mindfulness to reduce clumsiness. Potential complications of diabetes A diabetes diagnosis is life-changing. Living with diabetes requires altering one’s lifestyle. Those lifestyle changes are typically focused on diet and exercise, but some people develop complications related to diabetes that require additional changes. The American Diabetes Association® says that diabetes increases a person’s risk for serious health problems. However, the ADA notes that with the correct treatment and lifestyle changes, it’s possible to prevent or delay the onset of such complications. As a result, it’s important that people diagnosed with diabetes learn about the potential complications of their disease and how to recognize them. Skin complications The ADA says skin problems are sometimes the first indicators that a person has diabetes. Most of these problems can be prevented or easily treated if caught early. The list of skin complications that can affect people with diabetes is extensive and includes bacterial infections such as styes, boils, infections around the nails, and car-

buncles, which are deep infections of the skin and the tissue underneath it. Localized itching caused by a yeast infection, dry skin or poor circulation is another example of a skin condition that is often caused by diabetes.
