Chicken pie is one of the first dishes I successfully made as a newlywed. It has become one of my favorite comfort-food recipes. Savory pies date back to the Medieval era. Originally, the sole purpose of the double crust was to protect the ingredients from the metallic flavor of the pot. The crust wasn’t designed to be eaten and was discarded after the filling was cooked. This single-crust chicken pie recipe is a savory combination of modern convenience products and

not a priest. All of them under surveillance by the bellhop, ordered by the “management.” The twists and turns are as delightful as the art direction and soundtrack. “Night School” (R) — Teddy Walker (Kevin Hart) is a successful grill salesman and a lucky groom to be, with a successful and beautiful fiance. After an accident puts him out of work and prospects, he’s forced to confront the truth: He never finished high school. To find a job that’ll keep his lifestyle, he must secretly go to night school to prep for his GED — along with a cascade of other comedic misfits — led by high-school teacher with a heart of gold Carrie, played by Tiffany Haddish (a comedian, although you wouldn’t know it in this

CHEDDAR CHEESE CHICKEN PIE •1 (2 to 2-1/2 pounds) cooked chicken, meat cut into chunks, skin and bones removed and discarded •1 stick butter, divided •1 medium onion, diced •3 stalks celery, diced •2 cloves garlic, diced •1 (16-ounce) bag frozen soup or stew vegetables •2 teaspoons poultry seasoning, divided •1-1/2 teaspoons salt, divided •1 teaspoon pepper, divided •1/4 teaspoon cayenne pepper •1/4 teaspoon sugar •4 tablespoons all-purpose flour •1 cup cream, evaporated milk or buttermilk

Heat oven to 350 F. Lightly grease a 2-quart casserole dish. Melt 4 tablespoons of the butter in a large skillet over medium heat. Stir in onion, celery and garlic. Cook until tender, about 5 minutes. Stir in chicken and frozen vegetables, 1 teaspoon of the poultry seasoning and salt, 1/2 teaspoon of the pepper, the cayenne pepper and sugar. Cook, stirring occasionally for 2 to 3 minutes. Remove the chicken mixture from the skillet and place it in the prepared casserole dish.

Set aside. To make the sauce, melt 4 tablespoons of the butter in the skillet over medium heat. Whisk flour and remaining teaspoon of poultry seasoning into the butter; turn heat to low and cook, stirring occasionally, until light brown and thick, about 3 minutes. Turn heat to high and slowly whisk in the cream, evaporated milk or buttermilk. Whisk in the chicken broth. Continue whisking until mixture thickens, about 3 to 5 minutes. Stir in the remaining salt and pepper, and the nutmeg. Pour the cream sauce over the chicken mixture, stirring to coat the mixture evenly. Sprinkle the chicken mixture with the cheese. Top the filling with the prepared pie

crust, pressing the crust down around the edges of the dish to seal the crust over the filling. Cut three, 1-inch slits in the center of the crust to allow steam to escape. History preserved to scale

By Calvin Daniels Staff Writer A once grand farmhouse sits long-abandoned in a field just east of Theodore. The history of the forlorn structure is known to only a few today, how it once housed one of the most influential families in the earliest years of the area. The old building’s fate is all but assured, a continued decline into rot and disrepair until one day it is bulldozed and burned. And then the story of Richard Seeman and the early history of the district would be without a last visual chapter. “The (Manitoba and North Western Railway) railway’s desperate need of cash allowed Seeman to buy title to 80,000 acres (125 sections) of railway land for $80,000. The proceeds from this land enabled the railway to continue operations for several years, and Seeman acquired some of the best land along the M&NWR line between Winnipeg and Yorkton. Over the ensuing decade and a half, Seeman was able to recoup his investment by selling his land at prices that were usually several times higher than the original purchase price. “Under the terms of the sales agreement, (Richard) Seeman was given his choice of land on either side of the line between Gladstone and a point some 25 miles west of Yorkton. One important expectation was that the M&NWR would fulfill a promise it made several years earlier: that it would extend the line 45 miles of Yorkton to Sheho Lake. In 1894, Richard Seeman intimated to the agent who managed his property at Theodore that he had arranged with the railway company for the line to be extended. However,

it does not appear that the railway promised to complete the line by any specific date and was, therefore, not in any hurry to keep its promise. As a result of the railway’s inaction, regular and frequent attempts were made by the settlers during the 1890s to influence the company to keep its promise, but to no avail.” — Neil Gregory, Saskatchewan History magazine The seed for what would become Theodore were sewn. But, what then of that history if the old house was gone as a reminder? Well, thanks to Bruce Frederickson the history has been preserved in miniature, in 1/12 scale to be more accurate. Working from exacting measurements taken onsite of what remains of the house, and then using computer programs and archival photographs to extrapolate the missing details, like a once fine veranda long lost, Frederickson undertook the scale recreation. “I think it always intrigued me,” he said, adding visually it left him wondering how a home of such scale and detail was “built in that day and age.” Frederickson said most long-time residents of Theodore and area are aware of the house, if not its history, and as something of a landmark even in its disrepair he recognizes its significance. “When that house is gone there will be no way to recreate it,” he said. That means history being lost. “They were quite influential people in their day,” he said, adding the scale of the Seeman operation meant they supported many in the area. “They employed a lot of people. They had a whole

An historic photo of the Seeman house. separate house where workers stayed. “The year 1892, not only marked the beginning of Seeman ranch, headquartered just a few miles from what would, 10 years later, become the site of the Village of Theodore, but it also marked the beginning of a significant change in the existing community. One of the first changes that occurred was a change in the community’s name. “Prior to Seeman’s arrival, the area had been known as Little Denmark or New Denmark, because of the number of Scandinavian settlers living there at the time. According to Seeman’s granddaughter Beryl, Seeman named the farm “Theodora” after his sister. With the establishment of a post office on Seeman’s farm in 1893, the new name soon became popular among the local population and appeared in the Regina and Winnipeg newspapers. “One of the most important facilities in the life of any community in the 1890s was the local post office. In

February 1893, the Theodore correspondent to the Regina Leader complained that the people had been asking for a post office to serve the 50 or 60 persons living there for six months, about the same time Seeman began establishing his farm there. When the post office was finally opened at Theodore in December 1893, it was located on the Seeman farm and Richard Seeman was named postmaster. One possible reason for locating the post office on Seeman’s property could have been the fact that a general store, mentioned in the post office application, already existed there.” — Neil Gregory, Saskatchewan History magazine Frederickson said the Seeman story is very much the story of the earliest days on Theodore, and by recreating the family home in miniature he is hoping to preserve a bit of their story. The undertaking has proven to be a massive one. Frederickson esti-

mates he has invested 600 hours into the house, starting with hours at a computer creating blueprint quality plans. Initially, he had considered a smaller scale but realized working on details would be nearly impossible, so he settled on 1/12, where an inch in his model represented a

foot on the original house. Even at the larger scale he likened much of the construction work to being like television’s MacGyver as he was always looking at how to create realistic aspects in miniature. The shingles are actual cedar ones, but it took three bundles to do the scale home because Frederickson could use only the thinnest edge of a shingle without it distorting the look. The fine details around the upstairs windows were created using popsicle sticks. The floored walkway under the veranda, which Frederickson said was destroyed 50 years ago, proved a real brain-racking conundrum. It’s design was even tricky, working from only a few of old photographs, and using high school geometry Frederickson created the scale for the covered area around the house which would have been a key element to keep the lower level of the house cool in summer. Cook the pasta according to package directions. Reserve 1/2 cup of the cooking liquid, drain the pasta and return it to the pot. Meanwhile, in a food processor, pulse the almonds, garlic and lemon zest until finely chopped. Add the spinach, oil, pecorino and 1/8 teaspoon each salt and pepper. Puree until smooth, scraping down the sides of the bowl as necessary. Toss the pasta with the sauce, adding some of the reserved cooking water if the pasta seems dry. Serves 6. He has been VERY active his whole life, playing football, baseball, basketball and soccer all through high school. He had no symptoms. Also, it is likely that your grandson’s doctor has more expertise than I in managing this condition, and certainly has more knowledge about his heart, so I would take the recommendation for AICD very seriously. It is strongly recommended he avoid competitive endurance sports and weightlifting. DEAR DR. ROACH: I’m 40 and was diagnosed with sarcoidosis recently. It was found in my left eye when my eye doctor noticed inflammation. I also was having vertigo and face pain. It wasn’t until I had a PET scan and they biopsied a lymph node that I got the diagnosis. Where can I learn more about this disease and see if there are better and more current treatments? — J.O. ANSWER: Sarcoidosis is a multisystem disease with an unknown cause. It most often affects younger people and women of

African descent. The most commonly affected organs are the eyes and lungs, and lymph nodes are commonly enlarged. The severity can range from quite mild to life-threatening. The diagnosis is confirmed by biopsy. Initial treatment usually consists of steroids, and methotrexate is often used. However, mouth sores and hair loss are both common complications. To find an expert with special expertise in treating sarcoidosis, I would start with your closest teaching hospital. Even

though you haven’t told me about any lung disease, pulmonologists tend to have expertise in treatment of sarcoid, even when it affects organs other than the lungs. Most large hospitals have websites where you can search for doctors with expertise in a certain disease. The NRR has a range of 0 to 33 with the higher amounts indicating a higher level of noise reduction. The higher the NRR listed the greater potential for noise reduction. NRR ratings are measured using the decibel and functions as a guide to how well a particular piece of hearing protection or equipment may work in real life situations. The way that the noise reduction rating is applied is by taking the NRR listed on the hearing protection and calculating as follows. If the NRR was 30, you would then subtract 7 from the listed rating and then divide that number by 2. (30-7=23 2=11.5 decibels).

If your workplace environment had a noise exposure level of 90 decibels, then the selected hearing protection would reduce that noise level about 11.5 decibels to 78.5 decibels. What kids can do in the face of bullying Many adults may recall being bullied or witnessing bullying when they were in school. Despite that, it’s important that adults, including parents and educators, not see bullying as an inevitable part of growing up. The effects of bullying can be severe, affecting those involved — including the bullied, the bullies and those who merely witness bullying — long after their school days have ended. According to the U.S. Department of Health and Human Services, bullying has been linked to various negative outcomes, mental health issues, substance abuse and suicide. When taking steps to combat bullying, parents and educators should not overlook the benefits of enlisting children in their efforts. Kids can be great allies in the fight against bullying, and the following are some ways adults can work with youngsters who want to stop bullying. Teaching kids to respect others StopBullying.gov, the DHHS’ website devoted to stopping bullying once and for all, notes the importance of teaching kids to treat everyone, including other children, with

The DHHS also recommends advising children to do something else if they feel an urge to say or do something mean. Walk away from a situation to watch television, play a video game or engage in another activity rather than saying or doing something hurtful.

What witnesses to bullying can do Bullying can have a negative impact on children who witness bullying, even if they aren’t the victims. Adults can encourage children to speak to trusted adults and to report instances of bullying. In addition, children should be encouraged to be kind to children who are being bullied, inviting them to sit with them on the bus or in the lunch room and engaging them in conversations about topics that interest them. Bullying affects children whether they’re being bullied, doing the bullying or witnessing it. But bullying can be overcome if adults and children work together and keep lines of communication open at all times.

JANIE: These resolutions are pretty fantastic. I’m glad you’re both looking for ways to keep your pets from being lonely. Australian shepherds are, like most herding dogs, notoriously energetic and can get into all sorts of mischief if they get bored. I hope you’ll spend a lot of that time working with Ash on basic behavior training. And once he responds to that, consider doing some agility training with him — a great way to burn off more of that energy. Janine, cats may seem aloof quite often, but they

are actually very social animals. Still, finding a companion for your cat may take some time. A trial visit of a few days can determine whether a second cat is a good fit for your senior cat. If they don’t get along well from the start — that probably won’t improve over time. Meanwhile, spend more time with him so that he has your companionship. Three ways oatmeal can benefit your body Oatmeal is one of many options people have when sitting down to breakfast each morning. Though brand name cereals or staples like bacon and eggs might be the most popular choices at the breakfast table, few foods pack as nutritious a punch as oatmeal. Instant oatmeal might be found in the pantries of many households. But it’s important to note that packets of instant oatmeal are often loaded with sodium and sugar, which can compromise

the nutritional benefits of the oats. In fact, WebMD says some instant oatmeal packets contain as much as eight teaspoons of sugar per serving. Store-bought plain rolled oats, or steelcut oats, are typically nutritious and low in both sugar and sodium. Oatmeal can provide a great start to your day and pay other dividends as well, though it’s important that consumers read package labels so they are getting the nutritional benefits of whole grain oats without the added sugar

and sodium. The following are three of the many ways a morning bowl of oatmeal can benefit your body. 1. Oatmeal can help lower “bad” cholesterol. According to the Mayo Clinic, oatmeal contains soluble fiber, which can reduce the absorption of cholesterol into the bloodstream. And it doesn’t even take much soluble fiber to reap such benefits. Five to 10 grams of soluble fiber per day has been shown to decrease low-density lipoprotein cholesterol, which is commonly referred to

as “LDL” or “bad” cholesterol. A single serving of Whole Grain Rolled Oats provides 1.6 grams of soluble fiber, helping people get a healthy head start on lowering their LDL throughout the day.

Calorie-conscious individuals may wonder if eating at night or after a certain time can derail their diets and fitness regimens. The jury is still out on whether eating at night can pack on the pounds or not, with various health recommendations contradicting one another. However, if one does choose to snack at night, there may be a smart way to do so.

The U.S. Department of Agriculture’s Weight Control Information Network says that a calorie is a calorie no matter when it is consumed. That means it doesn’t matter if calories are consumed in the morning, afternoon or evening. It is how many are consumed and the amount of physical activity individuals perform that will affect their weights.

Conversely, the Academy of Nutrition and Dietetics says they’re not sure if a calorie is a calorie no matter when it is consumed. Their research and data from the University of Pennsylvania School of Medicine’s Center for Weight and Eating Disorders indicates that when food is consumed late at night the body is more likely to store those

calories as fat and gain weight rather than burn it off as energy. Certain animal studies show that food is processed differently depending on the time of day it was consumed. But what is a person to do when hunger pangs hit at night and one fears that their rumbling stomach may interrupt their sleep? According to the nutrition and fitness experts at

2. Oatmeal is loaded with vitamins and minerals. The online medical resource Healthline® notes that oats contain a well-balanced nutrient composition that can help people get well on their way to consuming their recommended daily intake

of various vitamins, minerals and antioxidants. For example, half a cup of oats contains 41 percent of the RDI of phosphorous and 20 percent of the RDI of iron. That same serving contains 51 grams of carbohydrates and 13 grams of protein.

Oatmeal, so long as it isn’t instant oatmeal, is one of the rare foods that’s both filling and low in calories. That makes it an ideal

choice for those who want a filling breakfast that won’t affect their waistlines. Oatmeal is filling because of its fiber content. Unlike other carbohydrates, fiber does not break down into sugar once it’s consumed. When fiber is consumed, it absorbs water and takes up space in the stomach, leading to feelings of fullness that can prevent overeating. The nutritional benefits of oatmeal make it a must-have item for anyone who wants to start their day off in a healthy way.

MyFitnessPal, powered by Under Armour, stick to a snack that is between 100 and 200 calories. Choose a food that is high in protein, fiber or healthy fats, which will be more likely to keep a person satiated throughout the night. Apples and peanut butter, string cheese and fruit, or whole grain crackers and Greek yogurt can be healthy, satisfying night-

time snacks. Avoid sugary, calorie-dense foods, which may be hard to digest and can compromise sleep quality. More studies may be necessary to determine the relationship between body weight and snacking at night. In the meantime, nighttime snackers should choose healthy foods when reaching for a late night bite to eat.
