When the weather outside is frightful, a bowl of soup is SO delightful. Soup is an inexpensive and deliciously simple meal that offers plenty of health benefits. Try these wonderful soups and keep warm this winter! NEW ENGLAND CLAM CHOWDER •1 tablespoon plus 1 teaspoon olive oil •4 slices (2 ounces) Canadian bacon, diced •1 large onion (2 cups), chopped •6 stalks celery (2 cups), diced •1 teaspoon Kosher salt •1 teaspoon ground black pepper •1 tablespoon (3 large cloves) garlic, finely chopped •2 teaspoons chopped fresh thyme or 1 teaspoon dried thyme or poultry seasoning •2 (1 pound containers) frozen clams, packed in their own juice, thawed, juice reserved •1-1/4 pounds russet potatoes, cut into 1/2-inch dice •1 bay leaf •2 cups cold (1 percent) milk or 1 (12-ounce) can low-fat evaporated milk, chilled •2 tablespoons heavy cream •3 tablespoons all-purpose flour •Hot sauce for serving (optional) Heat 1 teaspoon oil in a large soup pot over medium-high heat. Add Canadian bacon and cook, stirring frequently, until crisp, 3 to 4 minutes. Transfer bacon to a plate. Add the remaining 1 tablespoon oil, onion, celery, 3/4 teaspoon salt and 1/2 teaspoon pepper to the pot and cook over medium heat, stirring occasionally, until vegetables have softened, about 6 minutes. Add the garlic and thyme or poultry seasoning, and the remaining salt and pepper, and cook, stirring, for 1 minute more. Add 1-1/2 cups water, the reserved clam juice (about 1-1/2 cups), the potatoes and bay leaf, and bring

to a boil. Partially cover the pot and simmer, stirring occasionally, until the potatoes are tender, about 15 minutes. Whisk the milk, cream and flour in a bowl until the flour is dissolved. Slowly add the mixture to the pot, stirring constantly. While stirring, bring the soup to a simmer (do not boil). Reduce heat to medium-low and cook, stirring occasionally, until thickened, about 8-minutes. Add the clams and simmer 2 minutes more. Discard the bay leaf. Add salt and pepper to taste, as desired. Stir in the bacon. Serve with the hot sauce. LIGHTER BROCCOLI CHEESE SOUP Leftover soup should be reheated in the microwave on the defrost setting rather than the stovetop, where the cheese will “break” or separate from the broth. •1 bunch broccoli •1 small onion, finely chopped •1 medium red-skinned potato, diced •1/4 cup all-purpose flour •3 cups low-sodium chicken or vegetable broth •1/4 teaspoon freshly grated nutmeg •1 cup grated extrasharp Cheddar •1 teaspoon Worcestershire sauce •1 (12-ounce) can fatfree evaporated milk •Kosher salt and freshly ground black pepper •2 green onions, roots discarded, white and green parts thinly sliced Separate broccoli stems and the florets. Trim

and discard the bottom of the stems and peel the tough outer layers. Finely chop the stems and coarsely chop the florets, and set aside separately. Mist a large pot with nonstick cooking spray and heat over medium heat. Add the broccoli stems, onion and potato, and cook, stirring, until softened, 7 to 10 minutes. Add the flour and cook, stirring, until lightly toasted, about 2 minutes. Stir in the broth and bring to a boil. Reduce heat to a simmer and continue to cook, stirring occasionally, until thickened and vegetables are tender, 12 to 15 minutes. Meanwhile, combine reserved florets and 1/2 cup water in a small saucepan. Bring to a boil, cover and continue to steam until the florets are bright green and crisp-tender, about 5 minutes. Add the entire contents of the pot with the florets to the soup along with the nutmeg. Stir to combine and remove from the heat. Stir in the Cheddar, Worcestershire and milk. Preeceville dog races in Mushers Rendezvous By Cory Carlick Staff Writer Mushers are tough. The brave men and women that come from across Canada and the United States to compete in the Preeceville 10 dog race certainly have no shortage of toughness, both mentally and physically. They’ll need it. The race is 30 miles -- over 48

kilometres — and racers typically finish in under two hours with blisteringly cold weather. How cold? Well, to give you an idea, the weather felt like it was pushing the minus forties, especially factoring in the windchill. Weather was rough on the Saturday, leading to the cancellation of some races, but on Sunday the 10 dog race was on for

noon sharp. A lot goes into training for a race like this. “We start with shorter runs and then build up endurance,” said Ray Cook. “We feed the dogs a mix of beef and grain so they get all the nutrition they need.” If you’ve watched movies like Iron Will, you’ll notice most of the dogs

featured are Alaskan and Siberian Huskies. Occassionally the breeds themselves are mixed with Alaskan malamutes. “It’s true it used to be a bit more like that,” said Kevin Cook, a veteran dog racer and organizer of the event with his wife, Sandy. “By the 1970s or so, we found that there was a speed hit of fifteen to twenty percent with breeding in malamute or purebred husky,” he said. “You’ll notice now we breed more greyhound in them. More speed. It’s really its own breed now that’s been developed, but typically you’re looking at a husky mixed with greyhound now. The dogs still have the endurance, but they also have the speed needed for a two hour race.” Gone, too, are the traditional wooden sleds. They are now made of exceptionally strong but lightweight carbon fibre, the same material used in the

frames of Olympic racing bikes. This allows for a much lighter load, which substantially increases speed while reducing resistance. Fundamentally, though, it’s the same traditional dog race. There are two main race types: six dog and ten

dog. Carl Knudsen took first place in the 10 Dog Classic, while Danny Beaulieu and Rob Turner took 2nd and 3rd place respectively. For the 6 Dog Race, Knudsen took first place yet again, Aaron Campbell in second with Loretta Dykun finishing third.

Burgers: Put bell pepper, cilantro, ginger, garlic, curry paste, lime zest and sugar in a food processor and pulse until blended. Add fish and pulse until just blended. Shape level 1/4-cupfuls fish mixture into twelve 3-inch patties. (At this point, the fish burgers may be loosely covered and refrigerated for up to 4 hours.) Heat oil in large nonstick skillet over mediumhigh heat. Add half the fish burgers and cook about 1 minute on each side, until just cooked through. Drain on paper towels. Cook remaining fish burgers. Rod Taylor of CHP campaigns in Yorkton By Cory Carlick Staff Writer Rod Taylor, of the grassroots-level political party CHP (Christian Heritage Party), visited seniors at the Yorkton Crossing Monday in the hopes of gaining their vote. Taylor, who bills his party as the only “Christian-based” party, aims to eliminate Canada’s abortion laws. These protect a

woman’s right to choose what happens with their own bodies. If the current laws were repealed --- which the CHP claims is necessary --- women who become pregnant, even in involuntary cases such as victims of rape/sexual assault, would no longer have the right to terminate a pregnancy. “We believe in prolife,” Taylor said. CHP’s platform also plans to repeal same-sex

marriages. “We believe in recognizing traditional marriage as between a man and a woman.” LGBTQ rights would be impacted. Same-sex marriages would no longer be considered legal. The party, which nominated its first candidates in 1988, admits it has challenges. What did they feel was their biggest challenge?

Improve wireless service in Abernethy Recently, SaskTel announced the launch of LTE cellular services in Abernethy with the deployment of a small cell site. The new cell site is part of Phase 2 of the Government of Saskatchewan’s multiphase initiative to provide rural communities with enhanced access to reliable cellular and high speed internet services. “SaskTel continues to find innovative solutions to deliver its services in rural

Darcy Dyrland was one of 1,200 in attendance at the first-ever Field of STARS event held at the 2018 Ag in Motion. While no chocolate devotee is liable to scoff at a box of delicious chocolates, lovers who want to hit a homerun with their sweets-loving sweetheart can try their hand at crafting their own confectionary concoc-

Gifts may include sparkling jewels or personalized prose, but a homemade dessert from the kitchen can win over some hearts as well. Even though chocolate may be expected on Valentine’s Day, tiramisu can be a welcome and delicious alternative. Tiramisu is an Italian layered dessert, and the name translates to “pick me up” or “cheer me up.” It is made from spongy cookies soaked in coffee and liqueur, nestled among dollops of rich mascarpone cheese. Requiring no baking at all, it is an easy treat to offer a sweetheart. Enjoy this recipe for “Tiramisu” courtesy of the American Dairy Association.

Tiramisu Yield: 9 servings •6 egg yolks •1 cup sugar •1-1⁄4 cup mascarpone cheese •1-3⁄4 cup heavy whipping cream •2 - 12 oz packages Savoradi Lady Fingers •1⁄2 cup cold espresso or strong coffee •1⁄4 cup coffee flavored liqueur (optional) •1 tablespoon cocoa for dusting Combine egg yolks and sugar in the top of a double boiler, over boiling water.

Reduce heat to low and cook for about 10 minutes, stirring constantly. This is your sabayon. Remove from the heat and whip yolks until thick and lemon colored. Add mascarpone to whipped yolks, and beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold the whipped cream in the mascarponesabayon mixture and set aside. Mix the cold espresso with the coffee liquor, and dip the lady fingers into the mixture just long enough to get them wet; do not soak them! Arrange the lady fingers in the bottom of a 8 inch square baking dish (or 6x9). Spoon half the mascarpone cream filling over the lady fingers. Repeat the process with another layer. Refrigerate 4 hours or overnight. Dust with cocoa before serving.

Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then

set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes — this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving. To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top. Serve immediately, cut into very thin slices.

DEAR DR. ROACH: I am 71 years old, stand 6 feet, 5 inches tall and weigh 325 pounds. The “average” person is half my size, yet when I get medication for various ailments (e.g., gout, pain, flu shots, etc.) I get the standard dose. I assume I have more physical mass as well as a larger blood supply, which leads me to the conclusion that I am receiving a smaller concentration of medicine than the typical patient. Am I correct? — M.K. ANSWER: All medicines have concentrations at which they work optimally. Too low a dose and they aren’t effective, and too high a dose increases risk of toxicity. Some drugs have a very small range that’s both effective and nontoxic, and these are referred to as having a “narrow toxic to therapeutic ratio.” Others have a very large range where they are effective and nontoxic, such as most over-the-counter pain medicines and flu shots. Penicillin has a very wide toxic to therapeutic ratio, but I use that example precisely because some people will have an allergic reaction. There is no drug — prescribed, overthe-counter or supplement — that is either perfectly safe while being effective, or perfectly effective while General Employment

being safe, for every person. The concentration of the drug in the appropriate area of the body (sometimes blood, sometimes the affected organ, sometimes urine) may depend on the dose as well as your characteristics. Despite being much larger than average, your blood volume is probably only a little above the average, since the increased bone mass, muscle mass and, in most people your size, fat mass are disproportionate to the blood. Some medicines go to the blood, others to “lean body mass” and still others preferentially to fat. So while you are correct that you are getting a smaller concentration of medicine, that’s still OK most of the time. For medications that need to be dosed precisely, those with a narrow toxic to therapeutic ratio (such as some antibiotics, heart medication and chemotherapy), the dosing is based on height, weight, age and sometimes kidney and liver function. DEAR DR. ROACH: I am 80 years old, in good health with no cancer in the family. Up to now, I have always had regular Pap smears and mammograms. Now I am aware that there are different thoughts as to whether those tests are needed at my age. What is your advice? — J.G. ANSWER: For Pap smears, there is very good evidence that women who have never had any problems with their Pap smears by age 65 are very unlikely to ever develop any, and I agree with the recommendation by the U.S. Preventive Services Task Force to stop them at age 65. Mammograms are more controversial, but my personal practice is to continue to recommend them for most women until about age 75. I stop recommending mammograms to women when they have an underlying medical condition that makes it unlikely that they will receive benefit from continued screening. Deciding when that is takes some experience and a lot of discussion with the patient and sometimes her family. There is no absolute age cutoff for mammograms, and getting a mammogram on a healthy 80-year-old might make sense. Getting a mammogram on a woman with incurable lung cancer, for example, does not. Valentine’s Day is just around the corner, and while thoughts naturally turn to heart-shaped candies and cards, it’s an ideal time to nudge one another to take a closer look at how we care for our hearts.
