Grilled Corn on the Cob with Chimichurri Butter

Serves 4
4 corn on the cob
1 tbsp. olive oil
salt & pepper to taste
Chimichurri butter:
4 tbsp. plant based butter, at room temperature
2 tbsp. chimichurri sauce
What you need to do
Preheat the grill to medium.
Place the butter and chimichurri sauce into a small bowl. Stir to combine, and set aside.
Rub the corn with olive oil, then season with salt and pepper to taste. Place the corn under the hot grill for 10-12 minutes, turning regularly to prevent the corn from burning, and ensuring it cooks evenly.
Serve the corn topped with the chimichurri butter.
