Slow Cooker Lentil Soup

Serves 8

1 lb. (450g) lentils, dried

1 large onion, diced

4 carrots, chopped

4 celery stalks, chopped

2 garlic cloves, minced

2 sprigs thyme

4 tbsp. tomato paste

1 tsp. ground cumin

1 bay leaf

2.8 pints (1L 600ml) vegetable

stock

6 fl oz. (180ml) can full-fat

coconut milk

1 tsp. salt

black pepper, to taste

What you need to do

Place all ingredients into a slow cooker, stirring to combine.

Place the lid on the slow cooker and set to cook on HIGH for 4-6 hours.

Before serving, remove the bay leaf and sprigs of thyme and blitz with a hand blender until creamy.
