OR MANY PEOPLE in Naples, the idea of a home that provides a winter escape has drawn them south from frigid climates. With a little more time on their hands due to retirement, and after years of financial planning to make their Naples dreams come true, they set out to find the right retreat. In an incredibly hot real estate market, people can quickly realize that finding the perfect second home might be a bit of a challenge. Prices, location, age, and style rarely come together at the right time. That’s where a remodel becomes the best option. It can help eliminate the age and style conundrum and narrow down the requirements a potential buyer needs to consider. Knowing that the ability to change an aging home in a great location exists can open up a whole new world of real estate possibilities. That’s exactly what happened with this three-story townhouse close to Old Naples. Good location, good bones, and a decent overall layout led the new owners to purchase the home knowing they could trust ARCS Construction to make the needed updates. Like most remodels, some of the extensive work will remain unseen. New air conditioning and heating were installed and dehumidifiers were added to protect the home from the moisture of the nearby Gulf of Mexico. Wallpaper was removed from almost every room which was one of the most dated aspects of the home. Control4 lighting was added allowing the owners to program their own personalized settings and now motion-activated lights automatically turn off and on in all the closets to conserve energy. “This remodel was about updating the home. There were overall design issues we needed to

fix but for the most part we were able to make those changes without extensive demolition or layout changes. For example, the kitchen wasn’t well-planned, there was wasted space in many of the rooms, the dated wallpaper was everywhere, and the finishes were all outdated,” says Project Manager Steve Hartz. “This home is a great example of how a few crucial changes to main rooms and then judicial updates to the rest of the home can completely transform a space.” In the kitchen, the original double islands where removed and replaced with a single, more functional one. The two islands made the kitchen feel cramped and good design will never make a home feel smaller. Now, the large island is topped with a beautiful Super White Extra Marble counter and a gas range. The new white shaker cabinets are modern and clean, providing the perfect base for the gold metal pulls. The original bank of tall windows above the sink illuminates the space. “The new owners liked the existing french doors so we refinished them to update the look and add a little more visual interest,” says Hartz. Just off the kitchen is the dining room and family room. This downstairs living area provides the right amount of room without feeling unmanageable as a winter retreat. Beams were added to create a more finished look and add a beautiful design element to the main living space. Through the French doors beyond the dining room, the newly refreshed landscaping creates a more polished indoor/outdoor experience. The beautiful bar with custom Walker Zanger tiles now replaces the original odd staircase design. “The
BAR BEFORE stairs had two really large bottom steps that extended across almost the whole wall. There was a tiny space for a bar but no shelving and really not enough room to make a functional drink space,” Hartz explains. By reducing the size of those two steps to match the rest of the staircase, the bar is now a stunning focal point and a functional space for entertaining. The floating glass shelves keep the view of the tile unobstructed and the cabinets below are stained to match the french doors.

The upstairs provides the new owners with the master suite, home office space, laundry room, guest room, and a flex space on the top floor. The laundry room is now light and airy thanks to the fun blue cabinets and the beautiful white subway tile accent wall. The stacking washer and dryer meant there was room for counter space, an important aspect of any well-planned laundry room. Throughout, the floors were replaced with a natural wide plank wood. This color is becoming increasingly popular in the Naples market. It’s modern enough to be used in a transitional design and works well with the coastal feel many homes have. Here, they accent the nicely-sized master bedroom. This room looks twice as big repainted in crisp white from floor to ceiling. The master bath was once a wallpapered and dated space. “There was plenty of room for a tub but one was never put in leaving this gap in the room,” says Hartz. Now, the tub brings a sense of completion and keeps the room proportionate. New lighting and counters give the original cabinetry, painted for a new lease on life, a touch of glamour.

So, as I continue on my imagination journey, I focus on simply enjoying the adventure of painting. WHAT INFLUENCES YOUR ART? As a Florida native, I enjoy capturing the local

beauty found throughout the state. Our unique ecosystems, colors, and wildlife are a constant source of inspiration to me. My love for beauty in colors, design, and especially nature, continues to inspire me as I explore creative ways to paint while incorporating light and textures. When united with the goals of clients, I can provide beautiful art which brings them joy, and that is the reason for the gallery.
HOW DOES ART ENHANCE A HOME? The artwork on your walls should be a reflection of your life, loves, and passions. You will love it and, in turn, it will lend character to your home and give others a glimpse of who you are. Art tells a story about the people living in the home so it is always a treat as an artist to be a part of crafting that story for people. WHAT ROLE SHOULD PERSONAL TASTE HAVE IN SELECTING ART FOR YOUR HOME? I so frequently hear, “I don’t know much about art but I know what I like.” You are most definitely the expert when it comes to selecting artwork for your home. Choosing artwork has to do with what speaks to you personally.
WHAT DOES THE COMMISSION PROCESS LOOK LIKE? Some clients have a clear idea, and even bring photos, while others have colors which they want to emphasize to complement their living space. We also have a large selection of styles in the gallery; we try to make it approachable for a broad client base. Once a client articulates the details they would like
to include, I am then able to create a piece that fits their vision. YOUR GALLERY HAS BEEN VOTED AS THE BEST NAPLES GALLERY AGAIN, TO WHAT DO YOU CONTRIBUTE THIS ACHIEVEMENT? I have a fabulous group of friends who assist at my gallery and we are fortunate to work with art lovers who enjoy collecting my artwork. tiles will look like anything but tiles…unless they look exactly like tiles! Confused by that prediction? With the advancements in inkjet technology, you needn’t be. Digital printing of ceramic and porcelain tiles allows these floor and wall workhorses to take on any color, any finish, any pattern your decorating heart desires. Beauty and functionality combine in a form impervious to water, making bathroom and backsplash applications practically limitless. Underfoot, the endurance of high quality flooring tiles make them a popular choice for high traffic areas. As you explore the tile trends for 2019, keep in mind that matte finishes are easier to maintain than gloss. Also, remember to check the PEI rating of the tile you are considering which indicates the hardness and durability of the tile, ensuring that you use the right types of tile in the right locations. For example, wall tile should not be used on floors. And although you can use floor tile on walls, you should consult with a professional regarding the weight of the tile combined with the weight of the adhesive and grout which might be too much for your walls to handle. With those cautions in mind, let’s look at five of the top tile trends for 2019.
WOOD-LOOK REIGNS Wood-look tile is returning as the #1 trend in tile for the second year in a row. With thinner grout lines and a forgiving, dirt-hiding grain line, wood-

look porcelain tiles are easy to clean. Whites, light grays and cool tones are the most popular shades at the moment. Because porcelain tiles start with a white base, it’s easier to get a true gray or white-washed look than you would get with real hardwood.
SEE YOUR TRUE COLORS As a solid hue, or as part of a pattern, colored tiles enliven your rooms. Thanks to the aforementioned inkjet digital printing, large slabs of porcelain can be printed in any Pantone® color. The company revolutionized the printing industry with its Pantone® Matching System (PMS) in 1963. The system organizes color standards through a proprietary numbering system and chip format. The color language supports all color conscious industries across multiple materials. Your tile could be perfectly matched to your paint, or to a color featured in your drapery material or wall coverings. The blues of 2018 remain popular, but green takes the lead in 2019. Try pairing green tones with natural elements like stone and wood (think sinks, benches, countertops) to create mindful balance and positive energy. Or step into the future with “Neo Mint,” a pastel shade of green that Londonbased trend forecaster WGSN predicts will influence fashion and interiors into 2020.
EMERGING PATTERNS Following the renewed focus on artisanship and craftsmanship, magnificent tile patterns will emerge in 2019. Bold geometrics, inspired by the Art Deco movement, and intricate bohemian patterns dominated the showroom floor recently at the annual CERSAIE International Exhibition of Ceramic Tile and Bathroom Furnishings in Bologna, Italy. Printed patterns can be applied to porcelain slabs as large as 5.25-by-10feet, combining the creative effect of wallpaper with the technical benefits of ceramic. Printed tiles are not the only way to introduce pattern to your project in 2019. Using tiles to create patterns in the age-old mosaic method adds another dimension to floor and wall spaces, especially if those tiles are multi-dimensional, an effect obtained by applying layers of finish. The classic herringbone pattern is a timeless trend, appearing in 200-year-old homes as well as brand-new ones. But don’t confuse it with a chevron pattern, which was popular a few years ago. Both are zigzags, but in a chevron pattern the pieces meet in a “V,” whereas in a herringbone pattern the pieces are staggered and actually resemble a broken zigzag. It is a subtle, but important, design difference. Versatile hexagon-shaped tiles, from the diminutive “penny tiles” trimming a bathroom wainscot to larger hexagon tiles found on floors or climbing the walls, can give an older home an updated look or be installed in a new home to create a vintage feel.

A perusal of Pinterest or Houzz will turn up a plethora of black and white tile projects. From modern farmhouse kitchens to retro bathrooms harboring honeycomb floors, black and white tile combos fit almost any décor. Used in a geometric pattern, the two-color tableau can be mesmerizing. Expect to see plenty of checkerboard floors, that staple of kitchens past. Another application of the classic combination is a dramatic interpretation—solid black tile floors contrasting sharply with white tile walls. Clearly, tile has moved away from boring beige! But before you cover your bathroom walls with magenta hexagons or create an intricate, colorful, Moroccan mosaic on your country kitchen backsplash, give consideration to resale value. Most real estate agents will tell you that bathrooms and kitchens can sell houses. Likewise, a poorly tiled bathroom or kitchen could negatively affect the salability of your home. Consulting with a tile professional or allowing them to complete your project can save you from a costly mistake.

DANI IVES | FIBER ARTIST
W
HEN YOU THINK OF wool felting, you probably envision fuzzy woodland creatures or little teddy bears made from craft store kits. While these projects are cute, Dani Ives has elevated felting from a craft store project to a true work of art. Her colorful, intricate, and life-like pieces capture the beauty of nature as she paints with wool on a canvas of felt, linen, velvet, or burlap. Like many artist entrepreneurs, her business

started as a hobby. “I was working at as a children’s educator at a zoo and a coworker mentioned felted animal figurines. It caught my attention and sounded like something I would really enjoy so I ordered some supplies and taught myself to felt. I then discovered a more artistic way to use the medium and began experimenting with ways to refine the art and create ‘paintings’ with the wool instead of figurines. This new way of working with fiber has allowed me as an artist to break felting away from the craft world,” says
Ives. While Ives had no formal artistic training, she has always gravitated toward art. From sewing to pottery, she was attracted to things that were more tactile and hands-on. “I did dabble in sketching a little and I’ve always loved art, but I think my science background has helped me most. Through science, and my work with animals, I was really able to hone my observation skills which is so important to have as an artist.” In 2015, after spending her time at craft fairs testing out her theory that this could be a vi-
able creative business, Ives made the transition from her job at the zoo to a full time fiber artist. “Pet portraits really changed the game for me and quickly made it possible for me to sustain my own business,” she explains. COLOR TRENDS FOR 2019 Color in home décor comes and goes, as it does in fashion, albeit a little slower. Because the financial investment in a room full of furniture is substantially more than that of a closet full of clothes, the buying cycle is usually longer than one or two seasons. Which is why you’ll find larger pieces wisely covered in neutrals, while accent pieces tend to be more “on trend.”
NIFTY SHADES OF GRAY Gray is still the main neutral for 2019. Introduced in 2016, gray began replacing beige as a mainstay. A great spatial neutralizer, gray can minimize the impact of a too-high ceiling or make a long room look more proportionate when used on a far wall. The undertones found in gray make it appear warmer or cooler. A pearly gray is a great background for all silver toned metals, but pairs just as well with gold accents. Today’s design actually prefers a mix of metals for more interest.
GOING GREEN Green is a growing favorite among designers for 2019, for a variety of reasons. It’s pleasant and easy on the eyes, pairing well with many colors,

including gray. There was a lot of green shown during my recent visit to the Fall market in High Point, North Carolina. High Point Market is the largest furnishings industry trade show in the world. Open only to the trades, every six months more than 75,000 design professionals visit the 11.5 million-square-foot showspace housed in 180 buildings where more than 2,000 exhibitors feature the latest design trends. Beyond its vibrant hues, green speaks to sustainability, even influencing how some pieces are manufactured. Bamboos and grasses are a good example. Fast growing and sustainably forested, these materials are being used in interesting ways—in tabletops for instance. Green blurs the line between indoors and outdoors, which is how most of Southwest Florida lives, making green a great color choice for Naples—many people come here because they love our outside-in lifestyle.
A CLASSIC COMBO Blue is huge, and for good reason. There is no other combo more classic than blue and white. Think ginger jars, or a blue blazer with white shirt and jeans…you can’t be without blue anymore. From sea glass to cobalt
to indigo, designers love blue because it can be paired with so much. It’s gender neutral. It’s location non-specific; you can use blue by a tropical beach, on a rocky New England shoreline, or in the midst of mountains.
AT FIRST, BLUSH Pink is fun! A good example is Lily Pulitzer with her bright, cheerful prints. In home décor, pink has become grayed out to a pale blush which pairs well—not surprisingly—with gray. Blush also blends perfectly with neutral creams. Accent pieces are showing up in velvets, with more curves, giving everything a softer silhouette.
EVERYTHING’S THERE IN BLACK AND WHITE These steady players are being paired with strong colors like purple, red, and the crowning touch of gold. With their background in royalty, those accent colors provide drama and promote luxury, two qualities people are once again seeking out.
IT’S A PATTERN WITH YOU Patterns have always had a place in fabric design. In the past they have been neutral, with a little metallic or a little animal print. Nowadays patterns come in strong, bold florals, stripes and geometrics. Nor do you have to pick just one pattern, they are mixed together, sometimes on the same piece of furniture! In many cases older patterns are emerging, but they are being recolored to fit today’s design schemes.

ONGRATULATIONS! YOU’RE MOVING! You’re getting a brand new start in a brand new place. That may be a different city or state. It could mean a new job, a new lifestyle, or a new family. So why are you stressed out? Because moving is stressful. In addition to the physical exertion of sorting, packing, and lifting, there are emotional stressors with every move, even if the reasons for your move are all positive ones. Don’t discount the effort involved in deciding what to pack, when to pack, and even how to pack. Exhausted already? HIRE A PROFESSIONAL MOVING COMPANY
It’s not surprising that this is our first tip! The emphasis is on the word professional. There is a world of difference between an experienced, licensed, and insured professional mover who will give your possessions the white glove treatment, and some guy with a van trying to make a little extra money on the weekend. That being said, there is still a lot of preparation to be done before the day our movers show up.
LET THE PROS PACK FOR YOU
You may think you’re saving time (and money) by packing your personal items in advance. But it is always best to have the pros pack them, for the simple reason that movers can’t insure

anything that the client packs. When the moving company does the packing, they insure your belongings for their full replacement value. At Hilton Movers, we also offer museumquality crating of artwork and have specialty boxes for your electronics and other valuables.
PHOTOGRAPH EVERYTHING
Although it is unlikely that your furniture and belongings will fit into your new home exactly as they do in your current residence, it is often comforting to have some things remain the same. For instance, the arrangement of your china cabinet or a bookcase. Being able to replicate the placement of curios or your favorite home décor items can provide a sense of familiarity and stability. Taking a picture of it will not only help you recreate the vignette but will serve as a photographic inventory. In fact, we suggest that you make a photographic inventory of everything to be packed and moved. Take photos of the back of your electronics, while they are still connected, to assist you in setting them up again.

MAKE A CLEAN SWEEP
Prepare a cleanup kit with household tools and supplies, including old rags for wiping the grimy, hidden surfaces you could never get to when all your stuff was in the way. Make sure this kit is readily available when you arrive at your new home. Ask that it be put in last so it is one of the first items off the truck when you arrive making it easier to do a clean sweep of your new home before we load in your furniture and belongings. Or take those supplies with you in your car if you are driving to your new home.
PERSONALIZE PRIORITIES
As you are directing our movers on packing your clothes, linens and personal toiletries, consider your first few days in your new home. In addition to the cleaning box we mentioned above, a household tool box with hammer, screwdrivers, pliers, and a rechargeable drill will come in handy if you need to make any minor repairs. So might a few light bulbs, and a flashlight with fresh batteries. Set aside a few days’ worth of clothing, along with your basic hygiene items, and carry them with you. Clean bed linens, towels and toilet paper will help you set up your bedroom quickly—and we recommend that be the first room you set up. A good night’s sleep in the comfort of your own bed will be a welcome respite after a long day of moving.
A WORD ABOUT STORAGE…
You may need to arrange for storage of some or all of your belongings while you are in transit, or for a period of time as you settle in to your new home. In Florida, air conditioned storage is a must. Don’t be fooled by facilities that claim to be “climate controlled” when they simply open a few windows and turn on a fan in a futile effort to keep the temperature constant. outdoor space that reminds people they are part of a larger, natural ecosystem. We spend our lives inside, separated from the fresh air, sunshine, and creatures great and small. Your yard, garden, or lanai should be a place that connects you to nature, giving you a place to enjoy the outdoors as much as you enjoy the indoors. A wonderful way to create a relaxing, nature-focused yard is through butterfly gardens. Filled with color, layers, and texture, these gardens elevate your home’s exterior and give these beneficial insects a home and food source. Here are some of the ways I love to create these special gardens here in Southwest Florida.
PERFECT PLANTS The plants you choose are the most important element of the garden. They give the butterflies

a place to land, a food supply, and a safe home for their eggs. The foliage also gives your yard texture and visual interest. Butterflies are attracted to color, especially red, hot pink, and orange since these flowers tend to have the most nectar. Plants like Penta, Jatropha, Firebush, Lantana, Dune Sunflower, Red Firespike, Coral Honeysuckle, and Morning Glories are great options which provide nectar for grown butterflies and encourages them to lay eggs. These plants also provide the palette that makes your yard a true retreat. Beyond blooming options, I love to layer different shades of green and interesting textures into a butterfly garden. Blooming plants are seasonal so there will be times when the colorful flowers aren’t prominent. When that happens, using differing greens or plants with colorful leaves is a way to keep your butterfly garden (and yard) visually interesting all year long. Blooming
Caterpillars exclusively eat milkweed leaves. Adults feed on butterfly weed, milkweeds, thistles, and ironweed.
WHITE PEACOCK Caterpillars favor lemon bacopa and lippia while adults like composite flowers such as Spanish needles, goldenrods and asters.
GULF FRITILLARY The caterpillars dine on poisonous passion flower vines. Plant lantana, liatris, and scarlet sage to attract adults.

HEALTHY AND HAPPY BUTTERFLIES
Please don’t spray your yard with pesticides! As you take the time to work with someone to plan the garden, make sure you also have a plan to naturally control pest problems that may pop up. Butterflies are just beautiful bugs and like all bugs, spraying your plants won’t encourage them to use your lovely garden as their home. If you are worried about caterpillars eating your plants, I suggest giving them their favorite food options throughout your garden so they aren’t tempted to eat other foliage. Caterpillars love milkweed so planting a little “buffet” area will help ensure they will stay away from your roses and impatiens. Pests usually occur when there is an overabundance of one plant, a monoculture, in your yard. Combining a variety of plants keeps the ecosystem healthy.

THE ART OF DESIGN
I love to center all my gardens around a path. Whether walking the dog or taking out your trash, you should have a clear path through your yard or garden that’s pleasing to the eye and surrounded by nature. Adding curves or wrapping the path around a corner creates a sense of wonder as you never know what kind of beautiful bird, colorful butterfly, or fuzzy garden creature you will see as you make the turn. Grass, stone, gravel, or pavers are all great materials I use when creating this important foundation. Once I know where the path will lead, I look at the structure of the garden. Scale, texture, and color are all important aspects when creating any landscape design. You can also create a butterfly garden with pots and containers. This is a great option for people with patios or small yards or those who rent. Butterflies have been seen at heights of 1,000+ feet so even condo owners can get in on the winged action. Again, colorful nectar producing plants for the adults and plenty of caterpillar food are the keys for creating a robust container garden that will attract these magical creatures.

While Naples is its own unique area and people will still continue to favor coastal accents and colors, here are the latest trends that can be added into your home. Play with color and texture to come up with the unique home that suits your personality and tastes.
sustainable design
As we learn more and more about the impact fashion and design has on the environment, there is a push to create décor that is made in a sustainable way from renewable resources. Natural fibers, wood, stone, and recycled items are all being used to create sustainable design that is both beautiful and functional. One way to incorporate this trend is to create a base out of natural materials, then layer in pops of color and shine. A dining table with a live-edge wood top, accent tables with stone bases, or sisal and jute rugs are wonderful options that are both stylish and use sustainable products. Another way to be more green is to purchase items with a long-term vision. When you buy, select anchor items, like your couch, in a neutral color and style and make sure you buy a quality piece that will last. With advancements in high-performance fabrics and the quality frames many furniture brands provide, you

People are moving away from the cooler grey that has been so popular over the last several years and are favoring warmer shades instead. These tones enhance the natural elements that will be popular throughout this year and beyond. Tending to be a more familiar color for people migrating south, they are a more welcoming version of the versatile color grey.
black is back
Bold and beautiful, using dark colors like black and navy adds a chic accent to any space. Contrary to popular opinion, dark colors can actually make a space feel larger. The color diffuses the light and draws the eye across the room which elongates the space. Where you can run into trouble is if you use a dark color on every wall. That will close in the space so use these dark colors as an accent. Even ceilings look good sporting a midnight blue.

I love the “Crayola box” tones we are seeing in the design world for 2019. While there is still an interest in jewel tones, these colors are more vibrant and contemporary. One of my favorites this year, and one that works so well in Naples, is true yellow. It complements natural elements and looks good in a room with a warmer grey base. It also pairs well with the coastal blues that are prevalent in Naples so it’s a great way to add something new to your existing design scheme.

Lastly, 2019 will be the year people really embrace outdoor furniture that has the appearance of indoor pieces. Moving away from woven backs and metal frames, people are looking for outdoor furniture with slipcovers and cushions. These items look like you’ve pulled them out from your inside rooms creating the seamless indoor/outdoor living experience people desire in Naples. In a fun twist, you can even bring your outside seating in if you need more spots for guests or if you simply want a more durable couch or chair for kids and pets.

WHAT DOES THE WELL-DRESSED NAPLES MAN NEED IS HIS CLOSET?
First, a fun colored blazer in an ultra-lightweight fabric is a staple I always recommend. Naples is a casual and relaxed area so the versatility a blazer in a great color like royal blue makes it the perfect item for the Naples man. Lightweight is key—choose a wool, silk and linen blend. Next, I suggest a cocktail party sport coat with a pattern, like plaid or check. This should also be lightweight so I suggest going with a silk, cashmere and linen blend. Of course, a man needs an array of suits that allow him to feel confident out on a nice date, in a boardroom, or at a charity event. A classic slate blue Glen Plaid suit is the most versatile suit a man can own and a must have for a curated closet. From there, comfortable cotton pants in Supima Italian cotton is something all men need in their wardrobe. Choose a clean, flat front tapered style. These pants pair well with a jacket so they are easy to dress up. A sharp, wool and silk dinner jacket in a dark grey or royal blue is also a staple garment. Naples has a well-defined social season so this is something most men will wear often.

I always recommend great sport shirts. Our Italian cotton shirts can be worn with everything from shorts to suits and are a foundation to a great wardrobe. These shirts come in a beautiful array of styles, patterns and colors. To top it all off, shoes. Fashion sneakers are huge right now so I suggest at least one pair. They can be worn with shorts, jeans, or cotton pants and a blazer. For more formal events we offer beautiful, handmade shoes. I love marine blue and cognac as they pair well with a wide range of colors. WHAT TRENDS WILL WE SEE IN 2019?
Naples is, of course, a unique market with its own fashion sensibilities and needs. I think one trend that will translate well in this market is the move towards a softer jacket construction. Unlined or partially unlined is definitely a trend for 2019 and due to our climate is something that works really well here as it’s more lightweight and breathable. These jackets look great when worn with a killer shoe and belt combination. As for items coming back into vogue, the single pleat dress pant is making a comeback. Make sure you choose a style with a trim line to keep it modern. You don’t want to look like you stepped out of the 80s or 90s. Double-breasted jackets are back as well and are a great way to freshen up your wardrobe.

fresh start The new year is a time to eat a little lighter and fresher after the indulgence of the holidays. Here are three great recipes that are quick and delicious for a quick weeknight meal or outdoor gathering.
pesto pasta salad 1 16-ounce package bowtie pasta
1/3 cup pine nuts (1/4 cup sunflower
1 pint grape tomatoes halved
seeds if you have a nut allergy)
For the Pesto:
1/2 teaspoon salt
4 cups fresh basil
3/4 cup olive oil
2-3 cloves garlic
3/4 cup Parmesan cheese
Combine basil, oil, pine nuts, and garlic in a blender. Blend until paste forms, stopping often to push down basil. Add the cheese and salt; blend until smooth. Transfer to a small bowl. Bring the pasta to boil in large stockpot and cook according to package instructions. Remove from heat and pour through a strainer when cooked. Pour into a large mixing bowl. Add grape tomatoes, pesto and combine. Serve warm or at room temperature over a bed of greens. Yields four servings.

mint lemonade 4 cups water 3 tablespoons granulated sugar 3-4 lemons 6 mint sprigs Pour filtered water in a large jar or pitcher. Add sugar and freshly squeezed juice from the lemons. Start with two lemons and then taste. Add more lemon juice if desired. Stir until the sugar has dissolved. Add the mint sprigs and lemon slices (from 1 lemon). Cover pitcher with a lid or plastic wrap and place in the refrigerator for at least two hours to allow the mint to infuse with the lemonade. Garnish and enjoy! Yields four servings.
tomato & basil bruschetta 1½ quarts cherry tomatoes
6-8 fresh basil leaves, thinly sliced
2 cloves garlic minced, 1 garlic clove whole
3/4 teaspoon sea salt, more or less to taste
¼ plus 1 tablespoon extra virgin olive oil
½ teaspoon ground black pepper, more or less to taste
1 8-ounce container fresh ricotta cheese 1 teaspoon balsamic vinegar
1 French baguette or similar Italian bread
Preheat oven to 450°F (230°C). Quarter tomatoes, and toss them with garlic, olive oil, vinegar, basil, salt and pepper. Mix in the minced garlic, 1 tbsp. extra virgin olive oil, and the balsamic vinegar. Note, tomatoes love salt; you may need to add more than you expect. Slice baguette. Brush one side of each slice with olive oil and place olive oil-side down on a baking sheet or roasting pan. Place the pan in the preheated oven on the top rack and toast bread for 5 to 6 minutes until lightly browned around the edges.
Remove and cut a clove of garlic in half and rub over the warm, toasted side of the bread and then spread a light layer of ricotta cheese over the toast. Arrange the toasted bread on a platter, olive oil side facing up. You can either serve the toast plain with a bowl of the tomato bruschetta mixture on the side for as a self serve option, or use a spoon to top each toasted bread slice with some of the tomato mixture. If you top each slice individually, do so right before serving. Yields 6-10 appetizer portions.
