Who else loves nothing more than losing a few hours in an antique shop? I don’t profess to know a great deal about antiques, but as my friends often tell me, I’m like a magpie when it comes to antique jewellery. I’m particularly fond of the Art Deco period and have yet to find that perfect emerald & diamond target ring! Whether it be jewellery, kitchenalia, china or furniture, we think we’ve got it covered in our Antiques Guide, listing many of the local antiques shops found across the three counties. Following the hugely disruptive patterns of flooding over past winters, of which the Teifi and Towy are not exempt, agencies have been given measures to deal with the resulting environmental and economic effects. Properly installed and filtered rainwater harvesting can provide around 50 per cent of a family’s whole water needs – not just their garden needs – without any effect on hygiene or comfort. ... Truffle Making Workshop
Fresh from the Cardigan River and Food Festival, Mandy Wilcox of Deli Delights hosts another of her incredible ‘hands on’ workshops. ….reviewed by Sam Jones Having been in the food business for over a decade – full of passion for what she does, it’s a natural step for her to share her passion and her knowledge in a series of carefully thought out workshops. Having recently reviewed her Patisserie workshop, we went along to learn more, this time to master making Truffles. Arriving ahead of time at the Guildhall kitchen, I have the opportunity of a quick cup of tea and to meet the other attendees. Today there are three of us and we eagerly grab our aprons and browse over the ingredients that sit before us…chocolate, lots of white, dark, and milk chocolate! Mandy, was well organised and several steps ahead of us, having prepared a well thought out programme for the afternoon ahead. Utensils, scales, chocolate, did I mention the chocolate…and recipe cards were already set out on our arrival, which gave Mandy the time to explain in detail what we were going to create. I’m the first to admit, I’m not the best cook! My dinner guests are always very polite at my attempts, but cooking, and more so, the enjoyment of cooking, doesn’t come easily to me. I’m a lazy cook,

always looking for shortcuts and get flustered, often leaving a trail of destruction and mess behind. So I was looking forward to learning how to add the ‘wow factor’ to my dinners with some impressive “handmade truffles” Reassuringly calm and confident, Mandy explained the variety of truffles we planned to make. White Chocolate & Coconut, Raspberry & Peanut Butter, Irish Whisky Caramel & Sea Salt and a Basic Chocolate Ganache and we got to work. After a quick demonstration on how to make a remarkably and equally impressive “after eight dinner chocolate”, we got to grips with the White Chocolate and Coconut Truffles, which were fuss free to make and the perfect start for me! By combining the ingredients of cream, sugar, rich white chocolate & coconut, we were left with a wonderful gloopy, deliciously sweet smelling mixture, cooled in the fridge to become more workable, before being rolled into, I laugh now…petit four sized, or in my case mouthful sized, balls! These were then dipped into more chocolate before being rolled into coconut and refrigerated once again. With much concentration and laughter, halfway through the workshop, I’m probably already proving to be the messier attendee

of the group, but with Mandy sharing some of the secrets used by many famous chocolatiers, I’m beginning to realise that actually, it’s easier than I imagined to create that instant ‘wow’ factor I craved, with the guidance and knowhow which Mandy was generously providing. Moving onto the Raspberry and Peanut Butter Truffles, again with some tips and tricks on how to make what appear to be very intricate truffles, with ease. Mandy
Tried & Tested of ingredients, too much and the chocolate will not set…and which utensils to use to get the most out of the chocolate. On to decorate the truffles. Again Mandy pushed the boundaries by introducing us to new taste combinations I would never have imagined. Video Player 00:0000:38 This is where we all get really messy, dipping each individual truffle in yet more chocolate before sprinkling with the topping of choice. Gloves were most definitely needed for this, with sadly no finger licking allowed! With some great tips on how to decorate and present the truffles, with edible glitter, mini foil cup case holders, presentation bags and ribbons, we were left with a generous amount of delicious hand crafted truffles and the confidence to recreate these little mouthfuls of joy time and again. At £35.00 a session, the 3 hour workshop offered great value for money. With Mandy’s down to earth confident and reassuring approach, this hands on workshop is suitable for all, even the lazy, flustered cook such as myself! leads the way and continues to gives us the encouragement we need to be master of our own creations. All executing a slightly different technique, but with all of us getting equally messy with the piping bags and runny chocolate, we soon have a tray of filled truffles. A quick clean up and we move onto the Irish Whisky Caramel and Sea Salt Truffles, with Mandy showing us how to mix and temper the chocolate to the correct temperature, how to add the correct amount

NSTALLED in our room at Hammet House, I was delighted to find that I could throw open the beautiful sash window to soak up the view of the wonderfully sculpted grounds that our room afforded. Window fetish satisfied I made the most of the peace as I waited for my husband to arrive and looked forward to our dinner. There’s a new chef in the kitchen, and Hammet House already has a reputation for showcasing the best of local food from an area with a rich natural larder, so our visit carried with it a certain amount of anticipation. Taking in the complimentary tray in the bedroom offering fresh ground coffee (cafetiere included), a range of Teapigs tea, and individually wrapped flapjack, I knew we were in for a gourmet treat. Originally a gentleman’s

residence, Hammet House enjoys a prime position on the banks of the River Teifi in North Pembrokeshire. A beautifully proportioned Georgian structure, the ivy-covered façade welcomes you in. In the fine tradition of a gentleman’s residence, showcasing the latest fashions, the public areas at Hammet House are furnished with modern furniture and artwork, stunning light fittings and decorated in contemporary colours. It’s a great setting for the food and drink that are a huge part of a stay at Hammet House. Dinner time and we settled in the leather sofas of the drawing room to peruse the extensive drinks menu. It’s hard to resist a cocktail, so I chose a Rosy Lady featuring Brecon gin and rose lemonade (crisp and delicious) while my husband opted for Moho beer from Cardigan-based Mantle Brewery. Hot and flavourful canapes whetted our appetites for the food to come. Featuring plenty of locally sourced meat, fish and seafood, and vegetables from Troedyrhiw organic farm, it was hard to choose from the dishes on offer. In the end, tandoori crab and scorched stone bass were the winning starters (although I was

keen to try the pork with puddings and also the smoked salmon). For mains, I chose the duck breast with fennel, apple, feta and mint vinegar while my husband selected Welsh beef. We chose a bottle of Malbec from the exciting, mostly organic wine list. Escorted to our table, we enjoyed an onion panna cotta amuse bouche, before our starters arrived. I relished my perfectly cooked portion of bass accompanied with a fresh, beautiful and vibrant salad of Tomatina tomatoes, cucumber, almonds and edible flowers. My husband’s crab dish was equally pretty and delivered on flavour, subtle tandoori spicing lifting rather than hiding the sweet Cardigan bay crab. Our main courses were full of deep flavours, each element of the dishes we had chosen distinct, yet working together to deliver something more than the sum of their parts. With room for dessert, I chose just the most fantastic lemon curd platter – a kind of deconstructed lemon meringue pie. Sharp, lemony curd, individual meringue piped on the plate, toffee’d crumbs, visually stunning. As with the main course, each element stood out on its

own yet came together to make each mouthful a delicious lemony delight. My husband chose the well-balanced cheese board: Welsh cheeses and accompaniments of
chutney, plus tasting notes. After a nightcap in the Library bar, we retired to bed. Our room was the epitome of comfort. Tastefully decorated with a focus on comfort – a generous sofa, fabulously comfortable bed, luxurious Egyptian cotton linen, well appointed ensuite bathroom and of course, those windows you can actually open! – it felt like a haven within a haven and we slept well. Breakfast. Homemade (and really amazing) granola, poached fruit and creamy yoghurts and pastries sets the Hammet House breakfast selection well above usual hotel fare. The hot menu offers a good selection of dishes featuring top quality, tasty ingredients. I was delighted with my richly yellow scrambled eggs (always the sign of happy chickens) and smoked salmon, while my husband enjoyed a tasty Welsh breakfast. Sadly, we were unable to linger and enjoy the hospitality and welcome from the staff, the 7 acres surrounding Hammet House, or to walk along the river for longer. However, knowing that the restaurant and bar are open for non-residents – not just for dinner but for lunches, afternoon tea, and those scrumptious cocktails, we’re likely to be back! Commonly referred to as the ‘six pack’, the rectus abdominis muscles are paired muscles running from your pubic bone to sternum. They are activated during bowl movements and coughing, used in childbirth and curl the body such as during crunches. What’s actually more important than obtaining those chiseled abs is to have good core stability. What is your core? Your ‘core’ is made of four pairs of abdominal muscles (including rectus abdominis), back muscles, gluteus muscles and hip flexors. Together these muscles protect your spine and other joints by stabilising the body and transferring forces to the center, rather than the initial source of power. This allows for more efficient and functional movement and helps to prevent serious injuries. How do you improve your core stability? When working their ‘core’, people can focus too much on abdominal strength/endurance, neglecting the gluts and lower back. They often also neglect the three other components to core stability – flexibility, motor control, and function[1]. The best exercises are static exercises, such as the plank and v-sit, which require your core to be still, and dynamic exercises that require your core to be stable in order to perform them effectively, such as the deadlift and press-ups. Exercises such as sit-ups and back extensions certainly have their place to build strength/
endurance and encourage muscle balance, but they should provide additionally to other core exercises as part of a core program, rather than being the main focus. Also often forgotten is the importance of flexibility exercises. Yoga, Pilates and Tai Chi provide both flexibility and core endurance. What are the benefits? Day to day, improving your core stability can help to relieve and prevent muscular back and hip pain, reduce excessive joint movement (reducing chance of injuries), improve lifting ability and maintain a good posture. ….reviewed by Sally Sellwood Everyone should enjoy woodfired pizza, Fforest Pizza Tipi-style, at least once in their lifetime… The Fforest Piza Tipi is something of a landmark destination in Cardigan, and really, it deserves to be on everyone’s ‘bucket list’ – a stunning, semi-open air location on the banks for the River Teifi, a straightforward menu of delicious wood-fired pizza, handmade on site, a wealth of local ingredients, local ales, a roaring firepit and a totally relaxed vibe – it’s the stuff holiday dreams are made of. For locals, too, the Pizza Tipi offers an alternative place to eat to the more conventional eateries in the town, a place to sit and enjoy the river with a drink and a pizza and an opportunity to take some time out to really appreciate this lovely town we live in. We visited the Pizza Tipi on a sunny (if a little windy) Sunday evening. Plenty of tables as we’d arrived relatively early (they quickly filled up), and while we enjoyed a drink from the tafarn (a good range of Mantle ales and soft drinks as well

as wines available), we perused the menu. It had been a busy weekend with the Cardigan River & Food Festival taking place the previous day, and a couple of the specials had already sold out, but we didn’t have difficulty choosing from the rest of the menu. What makes the Pizza Tipi stand out for me – even beyond the location, the atmosphere and the delicious pizza (more about those later!), it’s the straightforward menu. So many pizza places feel the need to offer increasingly bizarre combinations of toppings, thin crust, thick crust, stuffed crust (yuck). At the Fforest Pizza Tipi, there’s a standard menu that caters for pretty much everyone, with 7 pizzas, plus a changing specials board. Specials when we visited included Perl Wen (cheese) Fforest tomatoes, pine nuts and rocket leaves, and an intriguing sounding meatballs, pickled onions and chilli. Sadly, the salt beef and horseradish pizza had sold out – it was making my mouth water just reading the menu listing! There’s a high preponderance of chorizo, that delicious spicy Spanish sausage, in

preference to pepperoni, which gets my vote. Unconventional, perhaps, but totally hits the spot for me. And if we’re honest, reflective of the true origins of pizza – a means of making bread more flavourful by adding local ingredients, a practice that wasn’t just Italian. Spoiled for choice, in the end we chose a Maritime (no cheese, capers, olives, anchovies and onions), a Garden Veg (peppers, onions, tomatoes, mushrooms and olives) and 3 Summertimes (chorizo, peppers, onions and olives). No guessing which one I chose, and the staff very obligingly added extra capers to one of the Summertime pizzas at the request

of my daughter. We also chose sides of ‘cloud bread’ served with olive oil and balsamic vinegar to dip into. The cloud bread – focaccia – is deliciously oily, which is how it should be, the olive oil and balsamic a deliciously greedy addition. The pizzas, cooked to order, were hot, fresh and perfect. Served on wooden boards, cutlery is available, but far better to break off slices and eat with your fingers in the best traditions of street food. Crisp, thin bases are substantial enough to hold the toppings, and the rich tomato ‘saws’ (sauce) the perfect foil for the chosen combinations. My son was surprised, and then delighted to have ‘proper fish’ on his Maritime –
rather than the salty anchovy fillets he’s experienced before, the Fforest pizza comes adorned with the whole fish. The chorizo is spicy enough to give the required kick but not overpoweringly so, the veg toppings were generous and fresh. As I said, perfect, and with the lingering hint of woodsmoke, more than a little special. With room for pudding, we enjoyed generous slices of homemade pecan pie and brownie, sitting by the firepit as the sun slowly disappeared from Cardigan Bay for another day. In its riverside courtyard location, there is plenty of al fresco seating at the Pizza Tipi, but lots of tables undercover for when the weather
is less kind. Order your food at the counter (and watch pizzas being made!), then listen for your name to be called. It’s very relaxed but does get busy, so bring a pack of cards, a book, or your witty conversation, and sit back as your handmade pizza is created. As well as fantastic food in a stunning location, the Fforest Pizza Tipi hosts a beer festival, and live music throughout the summer, so check to see what’s on. Love me tender Cut back stems of tender species – Cannas, Dahlias, Begonias, and lift the tubers before the first frosts threaten. Once you have brushed off the soil, the tubers can be stored in dry compost or sand in a cool, frost free place ready for replanting in Spring. In some areas, simply applying a thick mulch will avoid the need for lifting – but only for those in milder climates. Divide and conquer Spend some time moving plants around, dividing perennials and generally clearing out your borders. the borders. Love your lawn Rake out any thatch and moss from your lawn, and improve drainage and aeration to worn areas using a garden fork to make holes every 10 cm or so. It’s a good time to feed your lawn or to lay new turf in areas that really need it.
Keep on top of the leaves Collect fallen leaves in a cage of wire mesh (or use bin liners with holes punched into the sides) and allow them to rot down into leaf mould. Net your pond before the leaves start to fall in causing problems. Be evergreen Autumn is a good time to plant evergreens to fill gaps in your borders and add year round interest and structure to your beds.
