My garden is in full bloom, the long light evenings are now filled with the smell of family BBQ’s and I can finally dig out my shorts and enjoy the warmth of the sand between my toes on the local beaches. Bees...
GUIDE
They come in many varieties, are fantastic pollinators and producers of deliciously sweet honey, but they can also come with a nasty sting in their tail. Here we discuss how to deal with a sting
W
e’re all familiar with that buzz during the summer months and just occasionally we may take a sting. Wasp and bees can often be mistaken for one another and are both capable of giving a nasty sting, but generally will leave us alone if we don’t bother them. They are hugely important as pollinators and should be left alone. So as a general rule, if you do come across a bee, don’t flail your arms around and chase them away, simply stand still and allow them to move on. Whilst honey bees can attack when provoked, wasps are naturally more aggressive predators and whilst honey bees can sting only once then die, a single wasp is capable of stinging multiple times. Honey bees are hairy, while wasps usually have smooth and shiny skin and are brightly coloured, with black and yellow patterns.

It’s that time of year with Wimbledon just around the corner, to celebrate the Queen of summer fruits, packed with goodness and delicious in flavour the strawberry really is the fruit of the season. KEEP WRINKLES AT BAY!

Ok, as a middle aged woman, I’m starting with the important point. Strawberries combat the wrinkles! They are rich in Vitamin C, helping the production of collagen, which in turn helps to improve skin’s elasticity and resilience. Speaking as a woman who knows, we lose collagen as we age, so eating strawberries packed with vitamin C may just help us stay healthier and younger looking for longer…I live in hope!

There can also be problems providing evidence of income, especially if you have only recently started trading and haven’t accounts going back for two years or three years.

Fine Dining comes to Cardigan There has been much chatter locally about the new restaurant, 1176, we went along to see what all the fuss was about were far from disappointed WRITTEN BY SAM JONES | PHOTOS BY SAM JONES
W
E are all aware that over recent years Cardigan Castle has seen many changes, the ugly metal supports have been removed from the castle walls, with the castle being restored to it’s former glory, with the grounds once again beautifully manicured and now hosting a variety of popular outdoor events. Visitors can even now stay in luxury holiday accommodation situated within the castle grounds. But lets not forget the beautifully positioned restaurant, 1176, overlooking the river Teifi, named after the year that Lord Rhys hosted Wales’ first Eisteddfod. It’s contemporary slate and floor-to-ceiling glass design and panoramic views that perfectly capture the setting sun over the River Teifi, now offer exceptional evening meals. We’d finally booked a table and were very much looking forward to seeing what 1176 had to offer. Initially 1176 was only open during the day, to visitors and locals alike, but in recent months it has opened it’s doors on Friday & Saturday evenings. The restaurant also offers a sun terrace to enjoy some alfresco dining, however, when we visited in early April, Cardigan had not yet been blessed with the summer sun, so instead we were seated behind the panoramic glass windows overlooking the High Street and the river. Don’t be disappointed if these tables are occupied on your visit as the view from the tables on the far side of the restaurant are just as delightful, overlooking the castle’s grounds. Soaking up the heat of the setting sun, we studied our menu that local well-known Chef Tom Holden had created. An excellent selection of dishes over 4 courses to

cover a variety of tastes for just £27.50. Tom Holden, is the mastermind behind Holden’s Catering and took over the restaurant in early 2018. He is passionate about providing the best and I’m delighted he has launched his new fine dining experience here in Cardigan Castle. Having grown up on an organic farm in Lampeter, he clearly has the excellent skill of creating inspirational menus with locally sourced ingredients, many from within the castle kitchen garden. I’m always of the opinion that a good, but small selection of dishes, expertly prepared with time and consideration, is a far better than a vast menu of many dishes which often lead to a chaotic kitchen, rushed presentation and sadly, poor results. Not tonight. The food proved to be not only mouthwateringly good, but also exquisitely presented and beautifully garnished with delicate edible flowers. I went for the Prawn Tempura with Chilli Jam to start, with my partner opting for the Duck & Black Pudding Bon Bon. The prawns were firm and meaty, covered in a light crisp batter with the chilli jam giving it just the punch it needed to excite the dish further, finished with a delicate hint of lime. The Duck Bon Bon, dark moist and very flavoursome, served with a thick puddle of black pudding sauce, was the perfect companion to the rich flavours of the meat. To follow we were served with a refreshing prosseco sorbet, cleansing the pallet. “This is good, really good” whispers my companion across the table and I have to agree. Onto the main event and my partner, being the meat lover, was thrilled to see beef on the menu, not steak, which is

his regular meal of choice but a 5 Week Aged Fillet of Beef, Dauphinoise Potatoes, Mushroom Duxelle and Port Jus. Again beautifully presented, I sat and watched his face light up as his knife melted through the tender chunks of meat that lay before him. Not one to be easily satisfied, I could tell by his silence that in his eyes, this was a show-stopper! Whilst I left him to devour his man meal, I opted for the lighter, Fillet of Sea Bass, Caper Butter & Leeks. Well seasoned and simply delicious, with the firm fish offering the taste of the sea, served with Caper butter and Leeks, the perfect pairing. We opted for the artisan cheeses to finish. However for those who have a sweet tooth, perhaps you’d enjoy the Dark Chocolate and Orange Mouse, or the sharpness of the Lemon Meringue. A selection of 4 local cheeses, 3 soft and one hard with what looked like hand cut crackers and fig chutney were presented on a wooden board. Feeling posh, we also ordered a glass of port each to finish off our delightful meal. If I had one criticism to make, it would be that, I would have liked some fruit with the cheeseboard, perhaps some sliced apple, grapes or celery, but that’s just my personal preference and me being picky, as overall it was hard to fault the meal itself in any way! The service was organised, attentive & discreet, with Chef Tom Holden even making an appearance in the restaurant to chat with some diners. The restaurant is open on Friday and Saturday evenings and on the night we visited was full, so I’d recommend booking. Time for a BBQ Wine Richie Hammond gives his recommendations on wines to compliment your Al Fresco dining

t’s that time of year when we drag the BBQ from the shed light it up (safely) and burn some food for our family and friends. So what should we have to drink with our cremated sausages and salad? Well popping down the supermarket for a few lagers and ciders or prosecco will do the trick normally, keeping them ice cold in the fridge will wash away any burgers in a bun nicely, but if you want to choose a good wine to compliment your meat try these. Top of my recommendations for a good all-round BBQ wine is the delicious southern Italian red wine Baccanera Negroamaro Primitive. This is a modern styled red which blends a little Primitivo with Negroamaro, giving a sweeter fruit feel. The small degree of the ‘ripasso’ method further boosts the richness of the taste giving a very smooth, supercharged fruit for drinking on its own, or will be perfect with your BBQs meat dishes. N D John wines currently sell this on-line for £7.99 so a few bottles won’t break the bank Next on our list is a little higher in price (around £15) but you’ll know why when you taste it, its Italian again the wonderful Amarone della Valpolicella Montresor. it’s a Dark ruby-red coloured wine with dried fruit cherry, chocolate and cedar aromas and flavours; dry, full bodied, with balanced acidity, ripe tannins and good length. This will be an excellent wine serve with steaks and meats that have been sympathetically cooked not burned to a crisp. My last suggestions is Invilla Cuvee Rose. It’s fruity on the palate with notes of red fruits, cherries and citrus, accompanied by mint and thyme. It’s fresh, elegant with fruity finish and a persistent floral note. This slightly sparkling Italian is perfect as an aperitif or with summer salads - just as enjoyable on its own! You should be able to get this lovely wine for around £7 a bottle So enjoy your wines this season. The three above are just a suggestion but remember, If you’re serving burgers, steak, or ribs, only the big red wines will do. Bordeaux, California Cabernet, and Barolo are perfect matches, but if the spice turns the dish hot, zero in on Zinfandel or a similarly spicy Australian Shiraz or Argentine Malbec. Spider Crab Linguine
f you’re lucky enough to live near the coast – which is highly likely in Pembrokeshire and Ceredigion – then you might be able to lay your hands on (or go snorkelling for) some Spider Crab from the end of May through the summer. Len and Mandy Walters often have them at St Dogmaels Local Producers market Tuesday 9 -1pm at The Coach House, St Dogmaels. INGREDIENTS Serves 2 8 cooked spider crab claws, crab meat picked out 2 cloves garlic chopped finely 8 cherry tomatoes chopped finely handful parsley chopped finely 200g linguine (or spaghetti) Juice of a lemon to taste Salt and pepper Olive oil METHOD Pop pasta onto cook in lots of salted boiling water. In a large frying pan soften the garlic in olive oil on a low heat for two minutes, add and soften the tomatoes for 2 mins – turn off heat. When the pasta is cooked, until al dente, drain and coat in olive oil. Turn heat on under the garlic and tomatoes, add the crab meat and then add pasta, using some tongs mix well, add parsley and salt and pepper, squeeze a lemon over it and serve in two big bowls with a fresh green salad.

ho doesn’t enjoy a good BBQ with family and friends? What we don’t enjoy is having our eyebrows singed by being a bit too enthusiastic trying to light it. Like everything having a BBQ is about recognizing the risks and removing them or keeping them as low as we can. I’m not going to try and teach you to suck eggs, I’m going to give you a few tips on how to have a great day and a safe one. 1. Inspect your BBQ – has it been sitting in the shed all winter? Get it out in plenty of time and check it for corrosion (you don’t want hot coals dropping through the base onto your flip flops). Once your’re happy it’s sound give it a wash. A build up of last year’s fats and grease can give you an excellent case of food poisoning so clean it up. Avoid using a wire brush as the bristles can break off and become cooked into the food and if digested can cause internal injury. 2. Choose your location – If it’s in the garden try not to be close to possible fuel sources. Stay away from hedges, decking or underneath the eves of the house. Never use on a balcony and you must be very careful from around Easter onwards in areas like forestry and common land as the risk of starting a wildfire is very high. If you’re on the beach look around and make sure your far enough away from the cliff with it’s vegetation which again can easily catch fire. 3. What are you wearing? – If its a hot day you may have a floaty top or loose shirt that can come into contact with the fire without you realizing. If you’re

the cook wear grill gloves to avoid burning your fingers or use long utensils. 4. The food – First wash those hands. Keep the cooked meats away from the raw don’t cross contaminate. Don’t use a plate or utensils that previously held raw meat, poultry, or seafood for anything else unless you wash them first in hot, soapy water. Have a clean platter and utensils ready at grill-side for serving or you’ll be on the loo for a few days. Cook the food thoroughly, partial precooking in the microwave oven or on the stove is a good way to reduce grilling time. It may be burnt on the outside but raw on the inside so check before you serve to your 8 year old niece. 5. Lighting the BBQ – Follow manufacturer’s instructions if using a gas BBQ and keep children and pets a safe distance away (at all times). These are the most important two rules when lighting a BBQ a) never use flammable liquids to start a BBQ and b) NEVER NEVER NEVER USE FLAMABLE LIQUIDS TO START A BBQ!!!!!! If you want a safe BBQ please use kindling or the white blocks to start your coals going but never petrol or anything remotely similar 6. Alcohol and fire doesn’t mix – Whoever is in charge of the grill make sure they aren’t draining the bar. Number seven – When its over and you’re all relaxing make sure the fire is cooling and out before you leave it you don’t want to be getting up that night to see your shed on fire. If you stick to these guidelines you should have a safe BBQ so have a lovely time enjoy the weather and stay safe until next time. Richie Hammond
