GET THE DRINKS IN! “Tis the season to be merry’, and that means selecting the right beverages to see you through the celebrations. Richie Hammond chooses his top tipples for your Christmas meals richie hammond
If you’re planning on cooking the traditional Turkey dinner at home, as I am this year, which wines should you consider? Deciding what to drink pre- and post-turkey can be critical to a successful meal. One thing I find with turkey is it can be a bit dry so the last thing you want to drink is a heavy tannin red (your mouth will be dry enough) so you could start with a refreshing aperitif like an Italian sparkling Chardonnay Ferghettina Milledi Brut at around the £25 price range is a lovely choice but others can work just as well. Next for the bird try a lovely white Burgundy Saint Veran (£15) or if you prefer red a fruity Beaujolais Villages (£9). For dessert how about a delicious South African half bottle of Rustenberg Straw Wine (£10) then finish the afternoon with either a Vidal White Label Series Rosé (£6) or a Grahams Port ( £10). If cranberry sauce is on the menu then

definitely give bone-dry reds a wide berth as the collision can be more uncomfortable than warring in-laws. How about a wonderful pink Champagne for Christmas evening? This vibrant champagne will ease you into Christmas evening like a velvet glove picking you up and gently placing you in your favorite chair warm and relaxed. DRIVING IN ICY CONDITIONS Slow down, steer gently and avoid sudden sharp braking or acceleration Leave a bigger gap between you and the car in front If you skid, do not brake harshly, If you travel across black ice and the steering feels light, don’t brake, just ease off the accelerator
ENSURE YOUR VEHICLE IS PREPARED Antifreeze – check coolant level regularly and, if required, top-up with antifreeze. Battery – the most common cause of winter breakdowns. A battery more than five years old may struggle in the cold. Fuel – keep at least a quarter of a tank in case of unexpected delay. Lights – check and clean all lights regularly. Carry spare bulbs. Tyres – need at least 3mm of tread for winter motoring. Check pressures at least every fortnight. Windscreen – reduce dazzle from the low sun by keeping the screen clean inside and out. Screen wash – use a 50% mix of a good quality screen wash to reduce the chance of freezing in frosty weather. Locks and door seals – stop doors freezing shut with a thin coat of polish or Vaseline on door rubber seals. A squirt of water dispersant (WD-40) in locks will help stop them freezing.

7 TIPS FOR KEEPING ACTIVE THIS WINTER Leanne Bird discusses the benefits of staying active over the winter months. @Bird_Sol_
So, nights are drawing in, frost is biting and rain dampening our spirits – an excellent excuse not to be active and stay at home hibernating till spring, right? But…, if you think about it, the summer wasn’t great, autumn was wet and windy… so if you wait until the days are nice and nights are long and warm… you’re going to be active in about 7 out of 365 days! Therefore, I’ve put together 7 tips to kick yourself in the butt, stop making excuses and find a way that works for you to get on that journey to become the best you that you can be!
5. GO TO A FITNESS CLASS

There is nothing else for it – you’re just going to have to accept the weather is unpredictable and often cold and wet, so taking that out of the equation can help with your motivation to get active.
2. WORK OUT FROM HOME Ok, so you really can’t drum up the motivation to step your toe outside? Make space and get your fitness DVDs out. Make sure they’re the right level for you, especially if you haven’t been active for a while, a lot of the intense workouts may not be suitable for your joints or your heart/blood pressure.
3. JOIN A CLUB This can really help you to stay motivated. Running, football, kayaking, surfing, netball, you name it there will hopefully be a club for you.
4. GO BRIGHT Just because it’s dark doesn’t mean you can’t get outdoors – get your bright gear on and head out (where it’s safe) doing some fast walking or running. Sign up to a local 5k Santa Dash to give you a target and download the couch to 5k app.
Drag a friend or go on your own – there are lots of options, day or night, high or low intensity, yoga to kickboxing. Give it a go and try to commit by buying block sessions to give yourself more motivation to keep attending.
6. WEAR LAYERS AND KEEP HYDRATED Although it may be cold, you’ll soon warm up. Having several light layers will enable you to stay at the right temperature and put layers on when you stop. Even though it’s cold, stay hydrated – get that water down you! There is nothing like going on a nice winter walk and ending with a steaming hot mug of tea (or a cool pint if you prefer)! Grab a few mates, plan your route and get out there and breathe that fresh cool air. You’ll also find books with pre-designed routes for you for example the Best Pub Walks series. What are you waiting for? Get out there! PREPARING FOR WINTER Whether we enjoy another beautiful Indian Summer or not, there are plenty of jobs to be getting on with in the garden as Autumn heads in to Winter
WINTER CLEANING Winter is a great time to clean your garden equipment. Utensils, pots and seed trays can all benefit from a good wash, using a mild detergent if necessary. Make sure your tools are properly dry before you put them away to avoid rust. Protect wooden handles with linseed oil, and sharpen your shears and secateurs. Get your lawnmower serviced now. BUILDING MAINTENANCE Check your sheds and greenhouses for rot or other damage; replace greenhouse panes that might be susceptible to high winds and nail down loose roofing

Check other garden structures such as your gates and fences to make sure they are in good order before the really bad weather arrives.
TENDER LAWN CARE TLC for your lawn that’s been walked, run, and BBQ’d on all summer. Try and avoid walking on the grass, although feel free to attack any large weeds and moss. Rake up fallen leaves regularly. COSSET YOUR NON-HARDY PLANTS All those delicate dahlias and geraniums need to be lifted and stored or potted up for winter. Move bigger plants in pots nearer
the house where it will be warmer. Protect those you can’t move – tree ferns, banana plants, gunnera, from the colder weather wrapped up in hessian or insulated with straw.
THE VEG PATCH Get rid of any canes and netting that can’t be re-used next year, and dig over any soil that isn’t currently being used for winter veg. Cover parsnips, carrots and other root veg with leaves or straw so that the soil doesn’t freeze and you can keep harvesting through the winter. THE BORDERS As with other areas in the garden, your borders and tubs need a good clear out. Prune summer flowering shrubs, dead head Autumn flowering plants, cut back herbaceous plants and get rid of summer bedding and weeds. If everything is looking a bit sorry for itself, plant winter bedding for splashes of colour on the greyest days. PLANT SPRING BULBS Speaks for itself – tulips, daffodils, snowdrops, crocuses, whatever you like. Equally spectacular in pots or planted in drifts through the garden, planting bulbs as Winter draws in gives you something to look forward to.

AS the days get shorter, the temperature drops and all life seems to seep from the garden, you might want to do nothing more than curl up in front of the fire and dream of spring. But getting your garden in shape will do you the world of good! This is the time of year your welly boots were made for! Grab your woolly socks, some gloves and get out in to the garden. It’s also a time to reflect and reshape, make changes you may have been contemplating. And, if nothing else, it will make that fireside cup of tea and slice of cake all the more delicious!

YOU WILL NEED... For the Pastry 200g Flour 100g Unsalted Butter (at room temperature) 60g Caster Sugar 1 Egg beaten METHOD... Rub the butter into the flour, add the sugar and mix together, add in the beaten egg and bring together into a dough, chill in the fridge for 30 min. Line your greased tart loose bottom tin with pastry and blind bake for 15min to take the wetness out the pastry. YOU WILL NEED... For the Pears in Syrup 4 Pears (pealed) 1 Cinnamon stick 1 Vanilla pod split 250g Caster Sugar METHOD... Put 300ml of water, sugar, cinnamon & vanilla into a saucespan and bring to the boil, then simmer for 20 minutes. Leave to cool and then slice. YOU WILL NEED... For the Frangipagne 100g Ground Almonds 100g Unsalted Butter at room temperature 100g Caster Sugar 1 Egg beaten Flour to combine a little 2tbsp Rum (optional)

METHOD... Beat the butter & sugar until light in colour and fluffy, add the ground almonds until combined, gradually add in the beated egg, mix well and add flour to a nice consistency (not to wet or dry). Add the frangipagne mixture into the base of the partbake pastry case and top with sliced pears. Bake for 30 - 40 minutes at 170°c until golden brown and the mixture has set. YOU WILL NEED... For the Tart Glaze Heat a couple of tbsp of Apricot Jam, push through a sieve to get a smooth consistency and brush over the top of the tart to glaze.

ALL YOU NEED TO KNOW ABOUT FIRE EXTINGUISHERS Welcome to our new column from Rescue 365, the commercial training arm of Mid and West Wales Fire and Rescue service. Rescue 365 specialise in advising businesses and organizations on the Fire Safety requirements and training that they legally must provide to ensure all persons within their premises remain safe should a fire occur. richie.hammond@rescue365.co.uk
Hello. In this issue we are going to continue looking at Fire extinguishers, which type to use on what type of fire? To recap, last time we explored Water and Foam, so this time we’ll look at Carbon Dioxide (CO2), Dry Powder and Fire Blankets and give you the confidence to use the correct extinguisher when needed. It’s important to remind ourselves that, we don’t use a Fire extinguisher unless it’s essential. Fire extinguishers have the capacity to extinguish fires which are no bigger than a small bin so trying to use them on anything bigger is not advisable and possibly dangerous. They are there to aid your escape, not for you to try and put a fire out or, especially, to rescue someone. If you discover a fire in a building you should raise the alarm, exit the building and call the Fire Service on 999. If your exit is hampered by fire then an extinguisher can be used to help you and others exit. So, lets look at Dry Powder, C02 and Fire Blankets. CARBON DIOXIDE FIRE EXTINGUISHERS All extinguishers are red in colour and have a coloured panel on the body to identify the type. CO2 has a black panel with the words CO2 on it. It can be used safely on Electrical Fires flammable liquids and gasses. It works by displacing oxygen, or taking away the oxygen element of the fire triangle. The carbon dioxide is also very cold as it comes out of the extinguisher, so it cools the fuel as well. CO2s may be ineffective at extinguishing Class A fires because they may not be able to displace enough oxygen to successfully put the fire out. Class A materials may

also smolder and re-ignite. To operate remove the pin depress the handle. Stand around 1 meter from the fire and discharge in a sweeping motion at the base of the fire. Try not to touch the horn as it may be very cold and possibly hurt your hand. DRY POWDER FIRE EXTINGUISHERS These have a blue coloured panel on the body and are used on Class D fire or Combustible Metals. The Dry Powder is very effective as they extinguish the fire by separating the fuel from the oxygen element or by removing the heat element of the fire triangle. FIRE BLANKETS They should be located in the vicinity of the fire hazard, but in a safe position and safe access in the event of fire. Simply pull the tab to remove the blanket from its holder. Hold, not exposing your hands and fingers, lay blanket over the cooking pan and turn off the heat. DO NOT be tempted to check if the fire is out or carry the pan outside as this could reignite the fire. Raise the alarm, exit the building and call 999. Remember extinguishers may be used to reduce the risk of a small fire escalating into a large fire, to aid escape or may be used to protect life. But always ADHERE TO YOUR ORGANISATION POLICY Next time we’ll look at ignition sources and how to lower their risk.
