This month we caught up with our friends at Inside Japan Tours sharing our excitement that after over two long years, Japan has fi nally begun reopening its borders to tourists. Opening rules:

Whilst the reopening is a great step forward, there are still some restrictions in place for tourism in Japan. Organised group tours are currently only operating with self-guided, tailor-made travel expected to return by the end of summer. Visitors to Japan need to register with an approved tour provider prior to travel and they currently require a visitor visa to enter Japan (which we expect to be removed imminently as per pre-covid regulations.) Tracklements’ Caramelised Onion Marmalade Burger

Ingredients:

· Veggie or beef patties · Brioche buns · Tracklements Caramelised Onion Marmalade · Sliced cheddar cheese · Sliced red onion · Sliced beef tomatoes · Sliced gherkins · Lettuce (Ingredients can be adjusted according to party size)

Method:

1. Add your patty of choice to the barbecue or grill. 2. Around 3 minutes before it has fi nished cooking, add a slice of cheddar cheese on top so it becomes melted and gooey. 3. Cut the brioche bun in half and add to the barbecue for 1-2 minutes until lightly toasted. 4. Once cooked, add the patty with melted cheese to the brioche bun and spoon on a rather healthy portion of Tracklements Caramelised Onion Marmalade. 5. Add in sliced red onions, gherkins, sliced tomatoes and lettuce. 6. Best served at a summer barbecue with a side of potato wedges.
