inotage may be the grape most famously associated with the Cape Winelands, but when made poorly it’s infamous for burnt aromas, bitter tannins and an unpleasant banana aroma. But that doesn’t have to be the case, with a handful of local cellars turning out superb Pinotage. Three local wine experts throw their hat in the ring to punt wines changing the reputation of Pinotage.

“This is without a doubt a Pinotage to change the mind of all the misguided souls who think they don’t like this fascinating variety. It comes from very high-lying vineyards in Stellenbosch, very close to the cool sea breezes of False Bay. Soft and supple with a wonderful steely core, generous fruit and excellent length, it’s got lovely acidity and freshness and is a fabulous wine with a rich terrine or pâté, or perhaps a roast duck. “‘Crazy’ Koen Roos is a Belgian sommelier who planted vines on a very rocky outcrop of Elgin and produces uniquely elegant and pure wines. Producers that produce Pinotage in the same way as Cabernet Sauvignon often extract the harsh characters, but we often forget that Pinotage is the offspring of Pinot Noir and perhaps it should be handled more delicately. The new wave of Pinotage producers reflects a red-berry-fruited, fragrant and elegant style that pivots on purity and freshness. f you haven’t yet discovered poke, it’s essentially fusion bowl food – where sushi meets salad. “Poke started in Hawaii and has become a global trend taking on so many different influences wherever it’s gone,” says Max Botha, who fell in love with the freshness and variety of poke on a trip to Singapore. “Capetonians already eat very much in this way – they like to eat clean, light, ready to be on the go.” You have to look hard to find Max’s new eatery, Hokey Poke – its unassuming frontage at the Adderley Street end of Church Street is central but tucked away from the foodie hot spots. “I wanted a fun, conceptual space. This part of town is where I grew up and it resonated with me, it’s still got that real urban feel. Poke was originally a street food – in Hawaii you find it in corner stores, surf shacks, downtown, wherever, so I wanted that essence.” Hokey Poke may be slightly off the beaten track, but it’s not off the foodie radar, and on First Thursdays it’s especially busy with its upbeat music. It’s the perfect casual but vibey space for a satisfying and healthy lunch. You can choose from six set bowls on a base of sticky rice or salad leaves, or build your own bowl from the varied list of proteins, veggies, pickles, sauces and garnishes.
Having tasted three of the bowls, I was fascinated by the breadth of flavours you can fit into one bowl of simple ingredients. The Original is the most traditional, with sashimi-grade tuna, shredded kombu (kelp) and macadamia nuts tied together by the house sauce of soy, sesame, lime, garam masala, cayenne and home-made furikake seasoning. The crispy salmon crackling in the No. 5 added texture to the mix of salmon, avo, edamame beans and pickled beetroot, complemented by the tartness of a ponzu and pomegranate dressing. More tropical in feel, the No. 3 had a light and lively element with pineapple and pickled ginger. All the pickles and sauces are made in-house and the ingredients are top quality. It’s a way of eating that deliciously accommodates any diet from vegan or raw, to Banting, the only temptation being that Max is just introducing some delicious Hawaiianinspired desserts to the menu.

Delicious new breakfast menu!
Come as you are PRIMI has launched a new breakfast menu where old traditions ring in fresh new flavours
T
here’s something about eating out for breakfast, whether it’s a breakfast meeting or catching up with friends at the weekend. It’s a treat without being extravagant, a time when you want something sustaining, comforting and not too fussy, nutritious enough to get you through the day. PRIMI’s newly launched breakfast menu fits the bill perfectly, and while PRIMI still has its selection of timeless breakfast classics, it has come up with some sparkling new dishes that put the zing back into comfort food and leave you feeling well fed, healthy and happy.
Tradition
Chef Natale Schotti has been at the helm of PRIMI’s recipe development for the last year, with her food background embracing the whole of the Mediterranean and the Middle East. You taste these influences in the fresh herbs, citrus highlights and gentle spices that enliven each dish, and she’s passionate about using ancient traditions such as fermenting foods to add flavour and nutritional value. “The doughs we use for our breads and pizza are fermented and aged for at least 48 hours,” says Natale, “so you get a much better eating experience, a lot lighter.” These include a light crusty sourdough ciabatta and a dense, delicious rye. Another fermentation innovation is a creamy yoghurt relish: natural yoghurt that is fermented for a few days with capers, herbs and luscious olives to become thick, fresh and tangy. It works perfectly to balance the richness of the luxurious new Salmon Fraîche Frittata: an open-style omelette baked with cream and fresh salmon in a simple enamel dish in the pizza oven. Topped with generous ribbons of smoked Franschhoek salmon trout and a chopped Persian salad vibrant with herbs and fresh crunchy vegetables, the whole dish is power packed with nutrients, so indulgence and healthy eating go hand in hand.

As well as researching old food traditions, Natale is very firm about cooking without any preservatives and making everything from scratch in-house. She’s introduced two age-old condiments into the PRIMI kitchens. The first is a simple green salt: natural rock salt ground with celery and slowdried herbs – it’s bursting with flavour and is used judiciously in every dish. Another favourite element from the Levant is toum. “Toum is ancient – it’s fresh garlic ground down with lemon juice, salt and oil,” says Natale. “It’s something that is amazingly flavourful, and I love using quirky old traditional things and giving them a new coating.” Gremolata, that delicious fresh and zesty Mediterranean condiment, is another lively addition, especially addictive in the Sautéed Mushrooms breakfast dish, where the mushrooms soak up all that herby, lemony goodness. They come to the table piled on top of creamy avocado salsa lavishly spread on rye toast and topped with a perfectly poached egg – light but sustaining and very moreish.
Locally sourced ingredients
There are only three ingredients that PRIMI imports from Italy: the tinned tomatoes – for that true Italian flavour, the bronze-cut pasta, and the fine 00 flour. All the rest is sourced locally and Natale buys from an accomplished local cheese maker. “We use a lot of fresh cheeses,” she says, “in particular the aged mozzarella for our pizza, also the fresh fior di latte mozzarella, and a wonderful salted ricotta – slightly aged, creamy and rich, it’s a gorgeous cheese.” This ricotta is the secret ingredient in the hearty new “breakfast pasta” dish, Rigatoni Forza. A quirky reinvention of a traditional Italian baked pasta, it’s the perfect winter warmer: robust flavours of bacon and chorizo in a tomato sauce, a slight kick of chilli, added depth from
the ricotta, and two eggs tucked into the dish, then baked in the pizza oven. With a light dusting of lemon zest and pecorino to lift all that heartiness, it’s a dish to keep you warm throughout the day, even when there’s snow on the mountains.
The breakfast menu
There’s plenty more on the revamped breakfast menu, which reads temptingly in several chapters, from the indulgent Eggs Benedict in four variations, the Frittatas, Breakfast Bowls and classic straightforward bacon and egg combos like the PRIMI Power. Look out on the drinks section too for the new warmly spiced Masala Chai tea and latte. Don’t expect to manage more than one dish at a sitting (unless you’ve run a mini marathon before breakfast), they are generous and filling; but if you can’t decide between several of the mouthwatering descriptions, why not order several dishes for the table and share. It’s not tapas, but there’s no reason why the sharing approach can’t work for breakfast too. Above all, Natale’s focus is on unpretentious, easy eating that just happens to be healthy, and that appeals to all the senses. “I don’t want to be preachy about health benefits and so on,” she says. “I just want to include things that are healthy and tasty that work with the dish – amazing life-giving elements with flavours that speak for themselves.”

T
he Corner Store is a collaboration between three cutting-edge streetwear brands, Young and Lazy, 2BOP and Sol-Sol. Luke Doman, retail and brand manager, tells us more. Q: How did your business start? A: Before there was Corner Store, there was Smith and Abrahams, a menswear store and outfitters that acted as the main retailer for Young and Lazy, 2BOP and Sol-Sol menswear. Unfortunately, Smith and Abrahams shut its doors in 2015 leaving the three local brands in need of a flagship retailer. Because the people behind the brands were well acquainted and already working in close proximity – Young and Lazy and 2BOP already shared the studio space above the store – we decided to collaborate on a new store and space. Q: Why did you choose Woodstock for your business? A: Woodstock and its surrounds holds a special place in the history of clothing manufacturing in Cape Town, and is still home to a number of fabric stores, CMTs (cut, make and trim) and various clothing-related businesses. This was important to the founders of 2BOP and Smith and Abrahams in initially setting up their space and workshop. Stimulating the
regrowth of the local manufacturing industry has always been a part of their mission.
online and we've managed to build quite an engaged following, so people are walking in for a reason. As far as general foot traffic goes, in the two years we've been here, I'd say it’s more than doubled, and tourists are everywhere during the season.
Q: How did you find your premises? A: We took over the Smith and Abrahams premises when it closed. Q: Why are the premises ideally suited to your business? A: We have two floors: a storefront with an upstairs area that extends above some of the other spaces alongside us. It’s really quite big with parts being rented out to our friends, design agency Chocolate Sauce. We have office space, and a production workshop right at the back. Since we can manufacture on site, the brands can take ideas from conception to retail without leaving the building. Renting out the extra space allows us to be surrounded by people with skill sets that aid in our process, as we aid theirs – we hope!
Q: Do you have any expansion plans? A: No plans at present. Q: Do you operate online as well? A: We do. You can shop online at cornerstorecapetown. myshopify.com. Q: What’s your most popular item? A: It’s hard to say because we're always putting new stuff out there, but probably the short sleeve tees – they're accessible, have the most variety and are the easiest to wear.
Q: Who are your neighbours? A: Flat Mountain, a really nice coffee shop; Stevenson and Goodman; Southern Guild; and Blank. We’re kind of surrounded by some really cool galleries. Q: What are the shop rental/sales prices like in this area? A: Prices are pretty reasonable, especially considering what’s currently going on in the CBD. Q: How many people go through your store each day? A: I feel we're pretty unique in that we have a really high conversion rate when it comes to people walking in and actually buying stuff. We focus a lot of energy on communicating

Blok announces latest project
B
lok, a Cape Town urban property developer, recently announced its latest product – Blok Raw, FORTY ON L . The project is aimed at introducing a new range of urban homes in a new price band and new locations within Cape Town's growing urban centre. The Blok Raw concept was borne out of the rapid escalation of property prices since Blok's inception in September 2014, coupled with a response to the need for more dynamic property offerings within the ever-expanding city. Blok will be launching the new development, which will be located on a vacant plot of land on Lion Street
in the Bo Kaap. This project has been selected to pilot its 80/20 model, which aims to respond to the needs of today's market for more diversified urban housing in well-located areas. The model is built upon extensive local and international research and looks to adapt the current model to allow developers to deliver a more diverse product to the market in urban centres. This will be done through the inclusion of urban apartments that serve the currently uncatered-for middle-income market. Major cities, including New York, Toronto, Denver and Bogota, have adopted mixed-income housing models by implementing certain incentives, policies and legislation to ensure that more diverse income ranges can access new residential developments.
“We wanted to introduce a product to the market that pushes the boundaries of the current narrow understanding of urban property offerings, particularly new residential developments,” says Jacques van Embden, MD, Blok. “We are excited to be launching a first for Blok that responds to needs that are current and very real in today's market – the lack of urban housing for a more diverse set of income ranges in well-located areas. We need a more diversified product range within our cities that will encourage more people to participate in the urban opportunity that is so critical to its success. The objective is for more people to live in our urban centres.”
Bryanston’s growing sectional title sector driving the suburb’s market
F
or years, Bryanston, in northern Johannesburg, has been a quiet area of smallholdings and expansive homes on large plots. However, rampant densification in recent years has radically transformed the landscape and pushed the sectional title sector to 43% of residential property in the suburb. Carol Bensimon, sectional title area specialist, Lew Geffen Sotheby’s International Realty, says Bryanston has changed significantly from what it was a decade ago, with smallholdings entirely gone.
“Many of the larger, rambling plots have also been subdivided into smaller stands that have subsequently been developed into cluster complexes and apartments. This development trend has clearly changed Bryanston’s buyer and residential demographics and there is now huge demand for sectional title properties that are young investors’ gateway homes into this exclusive market,” he says. Lew Geffen, chairman, Lew Geffen Sotheby’s International Realty, says, “An analysis of Lightstone data for the 12 months ending 30 April this year reveals that the sectional title sector

“I loved running to the promenade using the back route past The Grand, being able to go the mall when it wasn’t so busy, visiting the Saturday markets, eating out at different places and not having to drive home,” says Ziyanda Manzana, who lived here for a year and says she has withdrawal symptoms now that she’s moved away.
Water lovers can explore the canals around the marina on stand-up paddle boards or get out into the bay from one of the nearby beaches. The new Silo District has got everyone talking. The ambitious project converting the old grain silos and associated harbour buildings to a mix of award-winning residential, office and retail areas is now nearing completion. The star attraction of the project is the Zeitz Museum of Contemporary Art Africa due to open in September this year. “I'm loving the additions to the V&A as they create a visible connection between the city and the precinct. Now we have law firms, financial services, more hotels and they're inching into the Foreshore,” says resident Nwabisa Mayema. “Suddenly, we’re now part of the city and the city is part of us; we're not just a destination anymore.” Hans-Ueli and Zainab originally lived in an apartment at the marina but were so impressed by the new Silo residential developments that they’re moving across. “It’ll be less resort style but more urban, which is exactly what we were looking for. We’ll have spectacular views of the sea and the different harbours, the high-rise buildings of Cape Town and Table Mountain behind. We can even see the seals frolicking below.”
