e chat to three exceptional chefs whose food always inspires: Kerry Kilpin of Bistro 1682 at Steenberg, Christi Semczyszyn of Tjing Tjing – just re-opened after a complete revamp – and Liezl Odendaal, partner and pastry chef at Janse & Co.
Q: What inspired you to a career as a chef? A: I always loved food from a young age. I used to bake and sell my cakes to the farm workers at payday on the farm. Straight after school, I went to study at Silwood kitchens and really fell in love with cooking. In my second year, I was fortunate enough to work at La Colombe and met Franck Dangereux. I worked with Franck for 12 years and he has been an important mentor in my career. Q: What qualities have contributed to your success? A: A positive and a never-give-up attitude. Attention to detail and consistency is what I strive for, and happy staff make happy food, which in turn makes happy guests.
Christi Semczyszyn, Tjing Tjing Q: What inspired you to a career as a chef? A: The women in my family are all phenomenal cooks and I grew up watching and helping them make family meals. My granny bought me a Jamie Oliver cookbook when I was 13 and I worked my way through the whole book and made every single recipe. After studying special-effects makeup and realising I hated the film industry, I gave cheffing a go and loved it.

Q: What are you most excited about in the kitchen at the moment? A: I’m loving that people are into Japanese food now! I’ve always been obsessed with it and I’m thrilled to show people that it is more than just average sushi. Japanese food is all about three or four great quality ingredients prepared with meticulous attention and not over-dressed.

ou stay at the Belmond Mount Nelson hotel to experience impeccable service, a sense of history and true quality – and a visit to their intimate Lord Nelson Restaurant is no different. The hotel’s Planet restaurant now plays host to events and functions, so their restaurant offering has shifted gears and moved to the cosy Lord Nelson room, originally the hotel’s writing room, and then a bar. Think ultra-traditional decor with mahogany oak panelling and the original fireplace, as you sit by a roaring fire and listen to the talented Henry Dike playing the piano in the background. The menu focuses on classic dishes, reinventing them and packing them with flavour. If you’re feeling flash then choose the caviar, but if not, consider the Beef Wellington for two on the menu this winter. Pasture-reared beef fillet from Spier, with braised short rib and a mushroom duxelle, is wrapped in prosciutto and deliciously encased in light puff pastry. We chose to have three courses from the chef’s choice menu, starting with the most wonderful roasted cauliflower salad with buffalo milk yoghurt, toasted cashews and sunflower seeds.
Next up was pan-fried trout with spekboom salsa verde for me, while my partner chose the roast seabass – both types of fish were sourced from fish farms, and both were so good that I may even have wiped up the leftover sauce with my finger. The chefs strive to only buy “greendot fish” which are caught by line and are sustainably sourced. In fact, the hotel’s executive chef Rudi Liebenberg was invited to join the inaugural SASSI Seafood Circle which celebrates South Africa’s top chefs and restaurants who are making sustainable seafood dishes a priority. Mains included beef tournedos for me, and springbok loin for my partner, both of which were tender and tasty. We shared the chocolate fondant for dessert, beautifully plated in a little copper pot. Our waitress Lisa was friendly, amusing and warm – and really enhanced our evening. She told us that the chef’s menu is popular with locals in the winter as it offers good value, but that most of her patrons are still visitors from outside the country who are staying in the hotel. Either way, they’re in for a treat.

Glenelly Lady May 2012
Named in honour of May de Lencquesaing, founder of Glenelly and one of the most respected figures in the South African wine industry, this classically styled Bordeaux blend is the flagship wine of this Stellenbosch estate. Dominated by Cabernet Sauvignon, picked from a single block of cooler east-facing vineyards, there’s just a dash of Petit Verdot and Cabernet Franc in the blend. It’s a wine old world in character, favouring elegance and fine tannins over big, bold fruit. A fine tribute to the grande dame of Glenelly.
Neethlingshof Maria 2017 Neethlingshof is one of the most famous estates in the Winelands, and that’s largely thanks to one
Maria Magdalena Marais. She was just 18 years old when, in 1788, she and her husband purchased the farm De Wolvendans on the outskirts of the Eikestad. The couple set about planting new vineyards, constructing a cellar and, in 1814, completing the landmark manor house. Her husband Charles had died the previous year, but Maria continued to expand and improve the estate, laying the foundation for what would become modern-day Neethlingshof. Maria’s legacy is honoured in the farm’s Noble Late Harvest, a wine in the cellars acclaimed Short Story Collection. Made from Weisser Riesling and Sauvignon Blanc, there’s a perfect balance of sweetness and acidity, making it an ideal pairing with full-flavoured cheeses.
Steenberg Catharina 2015
Few wines show the cool-climate character of this Constantia estate as deftly as the wine made in honour of the formidable Catharina Ras. Arriving in the Cape in 1662, her exploits – from hunting lions to out-lasting four husbands – have become as famous as the farm she pioneered in the Southern Peninsula. The Catharina 2015 is dominated by Merlot, with spice and tannins from Syrah and Petit Verdot. Full-bodied yet fresh, it’ll keep happily in the cellar for another decade.

he Surf Emporium at Surfers Corner in Muizenberg includes an accredited Surf and SUP School, an equipment rental hub, a retail outlet of leading surf and SUP brands and a Vida e Caffè all under one roof. South African surfing champion Roxy Davis, tells us how she built the business. Q: How did your business start? A: In 2002, I started my surf school with an umbrella on Muizenberg beach and a clear vision, but I didn’t anticipate how quickly my dreams would become a reality. I went from teaching 40 girls a week to over 200 girls within the first programme intake and the umbrella soon gave way to a share of a hardware store for storage, and later into opening the Roxy Surf Club. In 2007, I launched the Roxy and Quiksilver Retail Surf Store and expanded the surf school. Now we have amalgamated the surf school and the surf shop under the brand name Surf Emporium. Q: Why did you choose this area to set up shop? A: I grew up in Kommetjie and wanted to stay close to my roots and to
my community. Muizenberg is internationally regarded as being one of the best spots in the world to learn to surf and SUP. It attracts hundreds of thousands of local Capetonians and foreign tourists.
Q: How many people visit your business each day? A: We get consistent foot traffic all year round, which increases during the summer holiday season and school holidays.
Q: How did you find your premises? A: Muizenberg beachfront has been around for many decades. Over the past 10 to 15 years, however, it has undergone a remarkable regeneration. Surf Emporium has occupied three different outlets on the strip over the years as the development and upliftment have continued, eventually being involved in the custom building of our current space in 2015.
Q: Do you have any expansion plans? A: We are always looking for ways to improve and grow while ensuring our family business values remain. We actively market online and engage with tour groups, overseas schools and other contacts all over the world. Who knows what the future holds!
Q: Why are the premises ideally suited to your business? A: Surf Emporium was custom built to encompass everything under one roof – a fully functioning surf school, surf shop and Vida e Caffè coffee shop. Q: Who are your neighbours? A: We have restaurants and surf stores on both sides. Muizenberg has become a prime surfing destination and it’s fantastic to see the sense of community continuing to grow. Q: What are the rental prices like in this area? A: In the retail sector, they are market-related and on par with mall rentals. Muizenberg, on the whole, is improving significantly and the price of property reflects this.
Q: Do you operate online as well? A: We have an interactive website and an online shop. We are the official surf and SUP partner to Discovery Vitality, so members can use their Discovery miles to make purchases in the Surf Emporium online shop. Q: What’s your most popular service? A: Surf lessons, holiday surf camps, equipment rentals, and our Learn to Surf programmes. We also get busy with birthday parties and corporate events like team-building, year-end functions, wellness, etc.

Energise your space When decorating your home or home office, you’re bound to think about your ease of movement, but what about the flow of energy? WORDS: ANNE SCHAUFFER

laine Hosiassohn is a master of feng shui. Her practice, Feng Shui Dynamics, focusses on creating environments which maximise the flow of positive energy. She says, “Feng shui means ‘wind’ and ‘water’, and together the words represent harmony and balance. It’s an ancient Chinese art, based on the flow of energy or ‘chi’ through the universe, and its influence on our daily lives.” It’s very much about creating a balance – yin and yang, the opposites – and the principles are strongly aligned with nature. Elaine says, “The compatibility with nature is accomplished by the placement of furniture and other objects in the home or office. Placed correctly, it retains auspicious energy – if the energy in our environment is compromised or not flowing correctly, it can cause disharmony.” For Elaine, it’s of no importance that we’re living in different times. “When it comes to interior design and architecture, the basic feng shui principles prove to be extremely beneficial when included in the design.” She says by adding these principles, people increase their compatibility with their surroundings in their own
private space, impacting on everything from health to relationships. “The best way to maintain auspicious energy in your home,” says Elaine, “is to follow the basic principles.” She suggests these changes to start your journey:

Remove any clutter as it hogs auspicious energy.

Place beds in the “power position”, so you can never be caught off guard. To achieve this, position your bed against a solid wall in the furthest corner of the room where you can still see the door and windows when lying down. This gives you a feeling of stability, which enables you to have a good night’s rest.
Allow fresh air to enter your home; it’s essential for the energy flow. Keep your home well maintained; anything broken has an inauspicious effect on the space.

In an office, a desk should face the door from the opposite corner, with your back against a solid wall – the “power position”.

Avoid sleeping against a shared bathroom wall that has a toilet or
water pipes. The water pipes create too much movement, and this can carry an illness energy. A bed placed against a shared toilet wall can carry extremely inauspicious energy, as it carries waste products on the wall where you are sleeping.

Carla James of CJ Interiors is a quiet exponent of feng shui principles and feels particularly strong about the effects which different colours have on us. “Pastel tones allow for more peaceful sleep – you may think an all-white bedroom (yin) would induce calm, but it doesn’t. It unsettles your nervous system. Add a few earth tones and square shapes to balance the white.” She suggests that active areas (yang) need some bold colours and even patterns to match the correct energy.

preading into the last undeveloped stretches within the Cape Town metropolitan border before the R27 heads up the West Coast, the quiet residential suburb of Sunningdale is a Garden Cities’ development. Parks and open green spaces create tranquil breathing space between curving residential streets and brand-new cul de sacs.
With further residential developments already underway beyond it, Berkshire Boulevard is planned as a new artery of retail, business and community facilities and kicked off with the opening of the shiny new Table Bay Mall last year. It will eventually connect with Wood Drive for easier access to Sandown Road and from there the N7.
On the inland side of the R27, it’s only a short drive to the Blouberg beachfront and being that much more affordable than beachfront property, is popular with families of all ages, as well as retirees.
Schooling
The first phases were developed just over 20 years ago. Then, after a hiatus for city infrastructure to catch up, more phases have been added, with the building of new homes still in progress beyond the recently completed Table Bay Mall.

The first phases of Sunningdale between Parklands and Sandown Road have an established feel with trees and mature gardens, mostly a mixture of single-storey, two- and three-bedroom homes. The middle phases on the north side of Sandown Road are quickly catching up in trees and plantings, including several gated estates and residential streets interspersed with a green belt. “Sunningdale is neat and quiet with lots of parks and trails for walking and running,” says Vanessa Meredith who moved here from Joburg two years ago. “The houses are all quite cookie cutter, all the same colour. It’s so peaceful to be able to have a house without high walls or electric fences, and you see everyone out walking their dogs. It feels safe and secure.”

Buyers who are searching in Sunningdale are wanting to buy into the quiet, suburban lifestyle that Sunningdale offers. These buyers are young and middle-aged adults who are looking to relocate or start a family, most of whom remain happy homeowners for between five and seven years. The sought-after schools located within Sunningdale are most likely the reason for our buyer demographics and their relatively short-term stay.
